This study examined the hygiene practices of contract foodservice employees and investigated the influence of education and work environment on these hygienes practices. A questionnaire was distributed to 250 contract foodservice employees and a total of 232 responses were received and analyzed. The overall score for hygiene practices of contract foodservice employees was 3.89 based on a 5-point scale. Cross-contamination was prominent (highest score at 4.46) and the heating temperature was less prominent (lowest score at 3.49). The factors most affecting contract foodservice employees were their work period, the size of the contract foodservice management company, the number of meals served daily, the frequency of meal service per day and the frequency of hygiene education. Compared to small and medium-sized contract foodservice management companies, the major contract foodservice management companies showed higher scores for refrigerator/freezer control (P<0.001), vegetable/fruit disinfection (P<0.001), thawing (P<0.001), heating temperature (P<0.001), cleaning/disinfection (P<0.01), and personal hygiene (P<0.05). The frequency of hygiene education had a significant effect on the performance levels for refrigerator/freezer control (P<0.001), vegetable/fruit disinfection (P<0.001), thawing (P<0.001), heating temperature (P<0.001), cleaning/disinfection control (P<0.001), food supply control (P<0.05), and personal hygiene (P<0.05). From these results, to increase the sanitation quality of contract foodservice operations, hygiene practice levels need to increase and hygiene education systematically should be enforced for foodservice employees.
Background: The purpose of the present study was to gather basic data necessary for developing an educational program regarding the protection of patients' personal information. Such a program would stress the importance of the protection of patients' personal information for dental hygiene students obtaining clinical practice. Methods: A self-reported questionnaire-based survey was conducted targeting dental hygiene undergraduates who were obtaining clinical practice in the capital region. A total of 543 questionnaires were included in the analysis. Results: The results of this study were as follows: 1) the average score for awareness of the Patient Privacy Act was 2.93 on a 4-point scale; 2) the average score for the recognition of the protection of patients' personal information was 3.22 on a 4-point scale; 3) the area-based perception of the protection of patient's personal information was 3.37 points for communication, which scored highest, followed-by the linked-work area at 3.27 points, the patient's information management at 3.22 points, and the direct dental hygiene work at 3.18 points; 4) with regard to awareness of the protection of patients' personal information according to general characteristics, the perception was higher in the advanced academic year (p < 0.01), in those who had education regarding the protection of patients' personal information at both the university and the clinical practice institution (p < .05), and in those with higher grades (p < 0.01). Conclusions: Based on the above findings, the development and application of an educational program to improve awareness of the protection of patients' personal information are considered to be necessary by both universities and clinical practice institutions.
Objectives: The purpose of the study was to investigate factors affecting the awareness of internet ethics and intention to practice internet ethics in dental hygiene students. Methods: A self-reported questionnaire was completed by 254 dental hygiene students in the Jeonnam area from September 1 to 22, 2017. The data were analyzed by exploratory factor analysis, Pearson's correlation analysis and multiple regression analysis using the SPSS 12.0 program. Results: Factors affecting the awareness of internet ethics were personal information sensitivity (${\beta}=0.242$, p<0.01) and ethical identity(${\beta}=0.185$, p<0.05) (Adjusted $R^2=0.143$). The factor related with intention to practice internet ethics was personal information sensitivity (${\beta}=0.464$, p<0.001) (Adjusted $R^2=0.212$). Conclusions: To improve the awareness of internet ethics and intention to practice internet ethics in dental hygiene students, it is necessary to promote internet ethics education in as a part of curriculum and develop internet ethics education's program to enhance personal information sensitivity and ethical identity.
Objectives: This study aimed to understand the knowledge, attitude, and wearing of four types of personal protective equipment among dental hygienists based on to the COVID-19 infection control guidelines and to provide basic data on the need to wear these equipment by dental hygienists in dental medical institutions. Methods: Between March 31 and April 26, 2022, 285 dental hygienists working at dental institutions in Busan and Gyeongsang Provinces participated in the study. Results: The higher the knowledge on personal protective equipment, the higher the glove-wearing rate; and the higher the attitude toward personal protective equipment, the higher the KF94 mask-wearing rate. Furthermore, the higher the rate of wearing face shields, the higher the rate of wearing gloves and full-body protective suits; and the higher the rate of wearing gloves, the higher the rate of wearing a full-body protective suit. Conclusions: To prevent cross-infection by dental hygienists in dental medical institutions, it is necessary to have the four types of personal protective equipment at all times and to strengthen comprehensive education on these equipment
This research aimed to survey foodservice hygiene management practices performed by principals and teachers as well as examine foodservice employees' hygiene knowledge in kindergartens. Surveys were administered to principals, teachers, and foodservice employees at 392 kindergartens. The total average score of six categories was 4.28 out of 5.0. Average score of the production process management category was the lowest at 3.90 while safety management was the highest at 4.69. Other average scores were as follows: facilities and equipment 4.20, personal hygiene 4.14, food ingredient control 4.35, and environmental sanitation 4.39. Teachers' foodservice hygiene management practices scored 3.8 points out of 5 on average. Hygiene knowledge of foodservice employees was also tested. The mean score of foodservice hygiene knowledge was 76.29%. The lowest scoring category was personal hygiene, suggesting that foodservice employees require more knowledge on proper personal hygiene practices. Possession rates of dish sterilizer, ultraviolet sterilizer, and hand washing facilities in the kitchen were low. These equipment installation rates should be raised accordingly. To enhance control of foodservice hygiene, kindergarten management should pay more attention to education and training related to foodservice sanitation.
본 연구의 목적은 충남지역 남녀대학생의 식품위생안전인식, 식품위생태도, 개인위생관리에 관한 실태를 조사하여 식품위생안전교육에 필요한 기초자료를 제공하는 것이다. 2019년 5월 16일부터 6월 30일 까지 충남지역 H 대학교의 학생을 대상으로 수집한 총 1,048부를, SPSS 23.0을 이용하여 통계 분석하였다. 본 연구 결과, 식품위생안전인식부분에서, 남학생은 여학생보다 유의하게, 우리나라에서 판매 유통되는 농축수산물(남, 여)(3.37, 3.08)과 가공식품(3.40, 3.00)이 더 안전하다고 생각하고, 식품안전에 대한 정보를 얻기가 더 쉽고(3.33, 2.98), 안전한 식품을 고를 자신이 더 있다(3.30, 2.97)고 응답하여, 남학생이 여학생보다 식품위생안전인식이 더 높은 것으로 나타났다. 그러나 식품위생태도 부분에서는 여학생이 남학생보다 더 식품구입 시 유통기한을 확인하여야 한다(남, 여)(4.11, 4.40), 식품의 특성에 맞게 냉장 냉동보관 저장하여야 한다(4.08, 4.30)고 응답하였고, 개인위생관리부분에서도 여학생이 남학생보다 화장실을 사용한 후 손을 씻어야 한다(4.23, 4.53)에 더 높게 응답하여, 여학생이 남학생보다 식품위생태도와 개인위생관리에 대한 인식이 더 높은 것으로 나타났다. 본 연구 결과 충남지역 대학생들의 식품위생안전, 식품위생태도, 개인위생관리에 대한 인식은 성별 간 유의미한 차이를 보였으며, 남학생이 여학생보다 식품위생안전인식은 더 높은 반면, 식품위생태도와 개인위생관리에 대한 인식은 오히려 더 낮은 것으로 나타나, 이러한 성별 간 차이를 고려한 차별화된 식품위생안전교육이 필요함을 제언한다.
본 연구의 목적은 남녀 고등학교 학생들의 식품위생 태도와 개인위생 관리에 관한 교육 프로그램의 개발을 위한 기초 자료를 제공하는 것이다. 2015년 7월 16일부터 10월 15일 까지 충남지역 16개 고등학교의 학년 당 30명씩에게 설문지를 배포하였고, 미회수 및 불충분한 설문지를 제외한, 총 1,214 부(남 618, 여 596)에 대해 SPSS(ver 18.0)을 사용하여 통계처리하였다. 연구 결과, 여학생은 남학생보다 식품을 살 때 유통기한을 더 확인하고(3.78, 3.57), 가열했던 식품을 보관한 후 그대로 먹는다는 응답이 적었고(2.83, 3.02), 식품의 특성에 맞게 보관 저장한다(3.92, 3.72)고 하였다. 반면, 남학생은 여학생보다 식품포장 표시사항을 자세히 살피고(3.34, 3.22), 음식을 먹을 때 개인접시를 꼭 사용한다(3.43, 3.32)고 응답하였다. 여학생이 남학생보다 화장실 다녀온 후 항상 손 씻기(4.25, 3.94)를 잘하였고, 정수기 이용할 때 개인 컵을 더 사용(3.45, 3.32)하고, 손톱을 더 청결하게 관리(3.61, 3.49)하였으며, 식사도중에 돌아다니거나(2.14, 2.53) 화장실에 간다는(2.22, 2.57)응답이 낮았다. 남학생은 여학생보다 식사 전 손 씻기(3.64, 3.50)와 올바른 방법으로 손 씻기(3.58, 3.46)를 잘하고, 기침을 할 때 휴지, 손수건 또는 소매로 잘 막는 편(3.55, 3.37)이라고 응답하였다. 본 연구에서, 고등학생은 식품위생태도와 개인위생관리 부분에서 성별에 따라 유의적 차이를 보였고, 각각 개선이 필요한 부분이 다른 것으로 조사되었다. 따라서 본 연구는 성별에 따라 차별화된 식품위생태도와 개인위생관리에 대한 교육이 필요함을 제언한다.
Vocal hygiene education is an indirect training approach to improve vocal function by educating all facets of optimal vocal health. Satisfaction levels of participants might be an important component of this indirect therapy for voice disorders. The authors aimed to investigate the satisfaction levels of vocal hygiene education in 51 patients with voice problems. We classified voice disorders of the participants according to three etiological categories (subgroups): organic, neurogenic, and functional. The survey consisted of three parts: 1) a condition of vocal hygiene education, 2) a degree of satisfaction of the present education, and 3) a request for future education. Participants responded to each item of the survey using a five-point Likert scale of 1 to 5 (1 being not at all and 5 being extremely). They also wrote down personal comments of improvement. Participants scored the vocal hygiene education offered by the speech-language pathologists between '3' and '4'. Specifically, the participants were highly satisfied with the specific and comprehensible explanation/instruction given by their speech-language pathologists. However, they were less satisfied with the tuition fee for the therapy sessions. Vocal hygiene education is offered individually to people in a clinical setting. Our results support the notion that vocal hygiene education can be an integral aspect of the treatment of voice problems in most cases.
The purpose of this research was to investigate perception, knowledge, and practice level for school food hygiene and need for hygiene education with 300 students of elementary schools in Daegu. The average of correct answer percentage on knowledge about food hygiene of the respondents was 65.3%. For practice level of personal hygiene in school food, the average score was 3.75 out of 5 points. The ratio of educational experience of hygiene and dietary behaviors at home was 73.2%. Almost half of the respondents answered that 'food ingredients' should be the most hygienic. About 90% of the respondents recognized 'hand washing' had effect on prevention of foodborne illness. In addition, the respondents wanted to get the information about food hygiene from 'cooking practice at school', 'school broadcasting', 'education program on TV', and 'school newsletter' in order. These results suggest that continuous education on food hygiene for elementary school students are required and supervision to let them have proper hygiene habit is needed.
본 연구는 부산지역 10개 고등학생 634명을 대상으로 학생개인 급식 위생 및 학교 급식 위생에 대한 중요도 및 수행도 조사를 통해 급식 위생의 문제점을 파악하여 학생들의 급식 위생 향상에 기초자료를 제공하고자 시도되었다. 본 연구결과에서 조사대상 학생의 49.1%가 위생교육 경험이 있었다. 개인 급식 위생 중요도 전체 평균점수는 3.81/5.00점, 수행도 3.48/5.00점이며, 학교 급식 위생에 대한 전체 평균점수 중요도 4.37점, 수행도 3.67점으로 개인 급식 위생이 학교 급식 위생보다 중요도와 수행도 점수가 낮았다. 개인급식 위생 중요도는 남학생이 여학생보다 '식사 전 손 씻기'와 '올바른 방법대로 손 씻기'(P<0.05), '식사 중 이동하거나 화장실 가지 않음'(P<0.01)에서 유의적으로 높음 점수를 보였다. 개인 급식 위생 수행도는 남학생이 여학생보다 '올바른 방법대로 손 씻기'에서 유의적(P<0.01)으로 높은 점수를 보였다. 학교 급식 위생 중요도는 여학생이 남학생보다, 2학년이 1학년보다 음식 위생과 환경 위생을 유의적(P<0.05)으로 높게 평가하였고, 학교 급식 위생 수행도에서는 여학생이 남학생보다, 2학년이 1학년보다 음식 위생, 기기 시설 위생을 유의적(P<0.05)으로 높게 평가하였다. 위생교육 경험자가 미경험자보다 개인 급식 위생의 중요도와 수행도 점수가 유의적(P<0.05)으로 높았고, 학교 급식 위생 중요도 평가점수도 경험자가 미경험자보다 환경 위생(P<0.05), 기기 시설 위생(P<0.05)에서 유의적으로 높은 점수를 보였다. 중요도 수행도의 격자도 분석에서 중요도는 높으나 수행도가 낮은 영역으로 개인 급식 위생은 '식사 전 손 씻기', '정수기 이용 시 지정된 컵 사용', '잔반통 주위에 음식 흘리지 않기'가 해당되었고, 학교 급식 위생은 '식판에 이물질 없음'이 해당되었다. 이상의 결과를 살펴볼 때 학생들의 손 씻기 실천을 비롯한 개인 급식 위생 실천이 미흡하므로 학교에서는 다양한 캠페인 및 홍보물 부착을 통한 위생교육을 강화시켜야 하겠다. 학교급식 위생에서는 식기류가 청결하지 않았으므로 이에 대한 원인 파악 및 개선과 더불어 급식 시설 환경 관련 항목들에서 수행도가 평균점수보다 낮은 항목들에 대한 영양(교)사들의 집중적인 관심이 필요하겠다. 무엇보다도 중학생들에 대한 위생교육 실시가 부족한 실정이므로 학생들의 개인 및 학교 급식 위생에 대한 중요도 인식 부각 및 실천 증진을 위해서는 학교에서의 집중적인 위생교육이 실시될 수 있도록 정책적인 방안도 필요하겠다.
