Grape seed extract (GSE) was added to grape seed oil to improve the oxidative stability of the grape seed oil during storage. To measure the oxidative stability of grape seed oil, peroxide value, acid value, and conjugated diene value were measured, and changes in browning, vitamin E, fatty acid composition, and polyphenol content of oil were examined. In the case of grape seed oil with GSE, peroxide value, acid value, and conjugated diene value were lower than those of grape seed oil. The magnitude of increase in absorbance of grape seed oil with GSE was less than that of additive-free grape seed oil, whereas the magnitude of decrease in vitamin E isomers in grape seed oil with GSE was less than that of grape seed oil with no additive. Changes in fatty acid composition were also similar. However, polyphenol contents showed the greatest reduction in grape seed oil containing GSE. GSE contributes to the oxidation stability of grape seed oil, but the antioxidant capacity of GSE was lower than that of butylated hydroxytoluene.

To ensure the safety of products containing omega-3 fatty acids, twenty fish and algae oil omega-3 products available in a Gyeonggi Province, South Korea market were analyzed for eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) content, as well as for oxidative status. Of the tested products, 90% complied with the CODEX/FAO fish oil standards on a p-anisidine value (p-AV) limit of 20, and 80% complied with the CODEX/FAO fish oil standards on the TOTOX limit of 26, respectively. Fully 100% of the products complied with EPA/DHA content levels. In addition, 90% of the tested products met with a peroxide value (PV) limit of 10 meq/kg while 95% of products were within the a p-AV limit of 30. Also, 95% of the products had a calculated TOTOX value of 50, which is lower than the stringent limits used by the European and British Pharmacopeia and Australian authorities.
This clinical study evaluated the whitening effect and safety of polymer based-pen type BlancTis Forte (NIBEC) containing 8.3% carbamide peroxide. Twenty volunteers used the BlancTis Forte whitening agent for 2 hours twice a day for 4 weeks. As a control. Whitening Effect Pen (LG) containing 3% hydrogen peroxide was used by 20 volunteers using the same protocol. The change in shade (${\Delta}E^*$, color difference) was measured using $Shadepilot^{TM}$ (DeguDent) before, during, and after bleaching (2 weeks, 4 weeks, and post-bleaching 4 weeks). A clinical examination for any side effects (tooth hypersensitivity or soft tissue complications) was also performed at each check-up. The following results were obtained. 1. Both the experimental and control groups displayed a noticeable change in shade (${\Delta}E$) of over 2. No significant differences were found between the two groups (p > 0.05), implying that the two agents have a similar whitening effect.2. The whitening effect was mainly due to changes in a and b values rather than in L value (brightness). The experimental group showed a significantly higher change in b value, thus yellow shade, than the control (p < 0.05). 3. None of the participants complained of tooth hypersensitivity or soft tissue complications, confirming the safety of both whitening agents.

The auto-ignition tests of hybrid rockets with the concentrated hydrogen peroxide as an oxidizer were presented. Auto-ignition was successfully demonstrated by injecting decomposed gases from $H_2O_2$ into paraffin or polyethylene fuels. In addition, restart and instant ignition were realized with this rocket. For stable combustion, a higher $L^*$ value was required for the paraffin combustion compared with PE. On the other hand, much faster response time was demonstrated in case of a paraffin, which was 13 and 30 ms at ignition delay and rise time respectively.

In order to develope the method of quantitative determination of lipid hydroperoxide in human blood serum, we tried the ferrothiocyanate method to total lipids extracted by Bligh-Dyer method and obtained the results as follows. 1. The maximum absorbance showed at the concentration of Mohr's solution, 0.127M at pH 1.70 and ammonium thiocyanate solution, 3.95M in the ferrothiocyanate method. 2. When hydrogen peroxide, cumene hydroperoxide, and oxidized linoleic acid were added to serum, and extracted them by Bligh-Dyer method to examine the extraction efficiency, we confirmed that cumene hydroperoxide and oxidized linoleic acid were extracted in $CHCI_3$ phase, and hydrogen peroxide in $MeOH-H_2O$ phase, respectively. 3. The concentration of lipid hydroperoxide of total lipids extracted from normal adult serum was $2.0{\times}10^{-5}M$, and increased proportionally the concentration of lipid hydroperoxide by increasing the amount of serum. 4. When we compared the total lipids extracted by Bligh-Dyer method and total lipids extracted after lipoprotein is precipitated by Yagi method in human blood serum, the concentration of lipid hydroperoxide was showed nearly the same value. From our results, we concluded that the concentration of lipid hydroperoxide in human blood serum could be determined quantitatively by ferrothiocyanate method.
Quality stability of the herb pill coated with edible oils containing rosemary was investigated. Herb pills were made of herb powders such as Panax ginseng, Cinnamomum cassia, Lycium chinense, Zyzyphus jujuba and Zingiber officinale. Rapeseed oil and lubriol were used as edible coating oil. After herb pills coated with edible oils with or without rosemary were stored at $40^{\circ}C$ for 180 days, the microbial viable cell counts and peroxide values(POV) of the herb pill were investigated. After 180 day storage, POVs of herb pills with only rapeseed oil or lubriol were 0.51 and 0.49 meq/kg, respectively. However, when rosemary was added in herb pills the POVs were decreased to 0.30 and 0.39 meq/kg, respectively. The addition of rosemary to the rapeseed oil and lubriol tended to decrease the microbial viable cell counts of the herb pill. The microbial viable cell counts of rapeseed oil and lubriol were 940 and 820CFU/g, respectively after 180 days of storage. However, these levels were suppressed to 720 and 640CFU/g by the resemary addition. On the other hand, the ginseng saponin content of herb pills was not affected by the rosemary addition during storage.
This study examined the degradation behavior of SB(standard berberine) dye and SB dyed silk using HPLC-MS instrument after degradation in the hydrogen peroxide/ultraviolet ray radiation/oxygen system up to 9 days and 40 hours respectively. In the degraded samples, berberine was detected at 5.2 min in the SB dye and 5.3 min in the SB dyed silk with its molecular ion=336 and the UV spectra of quaternary alkaloid. Degradation product 3(m/z=102) newly appeared after 5 day degradation treatment with continued increase till the end of degradation treatment. The amount of berberine in the degraded dye decreased with degradation progression. In the silk dyeings, berberine was detected only up to 21 hour degradation sample. The amount of berberine decreased dramatically during the first 6 hours of degradation treatment. The CIELAB color measurement of the silk dyeings showed dramatic change in the b* value, near zero in the 40 hour degraded silk. CIELAB and Munsell color measurements were in agreement with the HPLC-MS results of the dyed silk in the change of berberine content that the degraded silk became white and lost yellow color.
The effects of various dietary fats on plasma lipids. liver lipids, and Plasma Peroxide levels were studied in rats fed for 6 wk with diets containing 15 wt% fat, as sesame oil. raw perilla seed oil. roasted perilla seed oil, heated perilla seed oil. mackerel oil or beef tallow. TBA values of these lipids during 4 wk storage, and linolenic acid contents of three kinds of perilla seed oil were also measured. Linolenic acid contents of raw perilla seed oil. roasted perilla seed oil and heated perilla seed oil were 62.3%, 61.6% and 53.1% respectively. Raw perilla seed oil showed the lowest rate of lipid peroxidation after 4 wk storage at 4$^{\circ}C$, and mackerel oil showed the highest peroxidation rate. The plasma cholesterol levels of rats consuming diets in which the carbohydrate was rice were not affected by n-3 PUFA. Rather, the degree of peroxidation seems to have a direct effect on cholesterol levels as shown by the hypocholesterolemic effect of raw perilla seed oil and beer tallow. However. the HDL-cholesterol level was greater in rats fed either roasted perilla seed oil or mackerel oil. Rats fed roasted perilla seed oil and raw perilla seed oil had lower levels of plasma triglycerides than rats fed beef tallow. In rats fed roasted perilla seed oil, the total lipid and cholesterol contents of liver were significantly lower than in those fed the other kinds of perilla seed oil. The plasma lipid peroxide levels were lower in rats fed either roasted perilla seed oil or beef tallow.
The effect of carrot powder on Maejakgwa was investigated by examining the physical, sensory, and oxidative properties of Maejakgwa after addition of varying amounts (0, 5, 10, 15, and 20%, based on wheat flour) of heat-treated carrot powder. Increasing carrot powder content led to an increase in hardness and color properties (based on ${\Delta}E^{\ast}$ as well as $a^{\ast}$ and $b^{\ast}$ values) of Maejakgwa, with no significant difference in brittleness. Moreover, a significant decrease in the measured acid and peroxide values was observed with increasing amounts of carrot powder, thus indicating that carrot powder had an antioxidant effect. In the sensory test, the sample containing carrot powder was more preferred in taste, flavor, and crispiness, with 15% of carrot powder being the most acceptable. In summary, carrot powder displayed a positive correlation with all variables of Maejakgwa, indicating that its addition leads to a qualitative enhancement of Maejakgwa.

Semi-dried conger eel Conger myriaster is considered as a health food in Korea due to its richness in vitamins, minerals, proteins and omega-3 fatty acids. This study characterize the sanitary quality of commercial semi-dried conger eel for developing high quality semi-dried products and suggested the guideline for controlling the quality. Moisture content ranged from 41.2% to 73.4% (mean: 61.5%), volatile basic nitrogen ranged from 16.1 to 93.6 mg/100 g (mean: 55.1 mg/100 g), and peroxide value ranged from 15.2 to 69.8 meq/kg. Viable cell counts ranged between 6.51 and 8.53 log CFU/g, while the Escherichia coli count ranged from undetectable to 4.6 log CFU/g. Based on these chemical and microbial findings, we suggest that provisions be established for development of high quality semi-dried conger eel as follows: 50-68% for moisture content, < 50 mg/100 g for volatile basic nitrogen content, < 60 meq/kg for peroxide value, and negative for E. coli. Among the 16 commercial semi-dried conger eel products used in this study, the standard-passed product was only GS-L.
