사군자탕(四君子湯) 재료를 첨가한 식빵의 품질특성 (Quality Characteristics of White Pan Bread with Ingredients of Sagoonja-Tang)

  • This study was carried out to determine the functional works and basic ingredients of Sagoonja-Tang on white pan bread. The -experimental groups consisted of 6% mixtures of five(Ed- confirm the number) kinds powders, : B1 for Sagoonja-Tang powder, B2 for Panax ginseng, B3 for Poria cocos, Koidz, B4 for Atractylodes macrocephala, and B5 for Glycyrrhiza uralensis Fisch. The volume of white pan bread somewhat decreased after adding the ingredients, and the volume differences in order from highest to lowest, were white pan bread control>B2>B3>B4>B1>B5. For white pan bread, pH of control, B3, and B5 decreased on the 2nd day during storage, but increased on the 4th and 7th days. In the texture analyses of white pan bread, B4 and B5 showed a higher degree of hardness than that of control, while B2, and B3 were the lowest. In sensory test, the overall acceptability of regular white pan bread in order from highest to lowest was control>B3>B2>B1 ${\cdot}$ B5>B4.

Optimization of Pan Bread Prepared with Ramie Powder and Preservation of Optimized Pan Bread Treated by Gamma Irradiation during Storage

  • This study was conducted to develop an optimal composite recipe for pan bread with ramie powder that has high sensory approval with all age groups and to estimate the DPPH radical scavenging activity and the pan bread shelf life after gamma irradiation. The sensory evaluation results showed significant differences in flavor (p<0.05), appearance (p<0.01), color (p<0.01), moistness (p<0.01), and overall quality (p<0.05) based on the amount of ramie powder added. As a result, the optimum formulations by numerical and graphical methods were calculated to be as follows: ramie powder 2.76 g (0.92%) and water 184.7 mL. Optimized pan bread with ramie powder and white pan bread were irradiated with gamma-rays at doses of 0, 10, 15, and 20 kGy. The total bacterial growth increased with the longer storage time and the least amount of ramie powder added. Consequently, these results suggest that the addition of ramie powder to pan bread provides added value to the bread in terms of increased shelf life.

  • The purpose of this study was to examine the quality characteristics of white pan bread according to the different types of water (tap water (still water), purified water, still water, light water, classical water, and bold water). Pan breads were statistically analyzed using texture profile analysis, fermentation, texture, suitability, image analysis, color, moisture content, and statistical analysis. This result will contribute to the commercialization of pan bread using various kinds of water. Ultimately, we analyzed the quality characteristics of various kinds of water, depending on the carbonic acid content on the dough and the pan bread, and to derive the optimum kinds and ratios of the water to be applied to the pan bread. As a result of the study, the best findings were obtained with water containing carbonic acid content more than the classical water according to overall characteristics, durability (Width of Tail and Integral), foot efficiency, softness, volume and preference check. Therefore, when white pan bread is produced by using water containing a carbonic acid content (5~7.5 mg/L) or more of the classical water, it affects the quality characteristics and a good obtains positive response to from consumers. In this study, the quality characteristics of pan bread based different kinds of water which were not available in the past, and the quality characteristics of pan bread, which can be used as the basic data for future research, were well analyzed.

발효빵에 첨가한 Carboxymethyl Chitosan이 품질에 미치는 영향 (Effect of Carboxymethyl Chitosan on Quality of Fermented Pan Bread)

  • 식빵을 직접반죽법에 따라 제조하면서 원료의 혼합공정에 carboxymethyl chitosan (CMC)를 처리하여 제품의 품질수명을 연장시키는데 미치는 영향요인 중 노화도, 항균성 및 관능적 특성, 수분활성도를 조사한 결과는 다음과 같았다. CMC로 처리한 처리구 C-I과 C-II는 대조구 C-0에 비하여 노화가 지연되었으며, 특히 빵의 저장 중 부패의 원인이 되는 Aspergillus, Penicillium 등과 같은 곰팡이의 생육을 억제시켰다. 또한 평점법에 따라 관능검사를 실시한 결과 향, 이취, 전체적인 기호도는 저장기간동안 유의적인 차이를 나타내지 않았으나, 조직감은 C-0와 C-II 처리구 간에는 5%수준에서 유의적인 차이를 보였다.

빵에 첨가한 녹차가 품질에 미치는 영향 (Effect of Green Tea Extract on Quality of Fermented Pan Bread)

  • 기능성을 갖고 있는 녹차가 빵의 품질 특서에 미치는 영향을 알아보기 위해 녹차를 첨가한 식빵을 제조하여 품질 변화를 조사하였다. 녹차빵은 녹차 물추출액 0%, 50%, 70%, 100%를 첨가하여 제조하였고, 3$0^{\circ}C$로 저장하면서 24시간 간격으로 7일간의 수분, pH 및 산도, 총세균수 등의 변화, 그리고 관능검사 등을 실시하였다. 녹차 물추출액의 첨가는 수분의 손실을 감소시켜 식빵의 노화속도를 감소시켰다. pH 및 산도의 변화는 5일 후에 큰 변화가 나타났는데, 녹차 물추출액의 첨가량이 많을수록 변화폭이 적었다. 총 세균수의 경우 녹차 물추출액 첨가구에서는 대조구에 비해 세균수의 증가폭이 적게 나타나 부패시기가 적어도 1~2일 정도 늦어지는 것을 알 수 있었다. 관능검사에서는 녹차물추출액 첨가가 식빵의 기호에 큰 영향을 미치지 않았다. 이는 기존의 식빵에 대한 관념 때문인 것으로 판단된다. 그러나 수명 연장의 효과가 있었다. 결국 녹차 성분은 식빵에 있어서 천연보존료로서의 이용 가능성을 보여 주었다.

Kamut (Triticum turgidum spp.) 식빵 급여가 고지방식이 유도 비만 C57BL/6 마우스에 미치는 효과 (Effects of White Pan Bread Added with Kamut (Triticum turgidum spp.) on High Fat Diet-Induced Obese C57BL/6 Mice)

  • Objectives: The purpose of this study was to investigate the effect of white pan bread added with Kamut (Triticum turgidum spp.) on high fat diet (HFD)-induced obese C57BL/6 mice. Methods: The white pan bread or white pan bread with Kamut (BK) were administered for 8 weeks in HFD-induced obese C57BL/6 mice. To evaluate the effect and its mechanisms of BK on obese mice, we measured body weight change, serum lipid profiles, histopathological analysis, and protein expression of CCAAT/enhancer binding protein-α (C/EBPα) in the liver. Results: Administration of BK significantly decreased body weight in HFD-induced obese mice. In addition, BK-administered group significantly reduced serum total cholesterol, glucose, and high-density lipoprotein cholesterol levels compared with the HFD-induced control group. The HFD-induced mice had damaged liver tissue and increased the size of adipose tissue, but BK-administered group attenuated liver damage and decreased the size of adipocyte. Furthermore, administration of BK significantly down-regulated C/EBPα in the liver compared with HFD-fed mice. In particular, BK-administered group has higher inhibited body weight, serum lipid profiles, and C/EBPα expressions than white pan bread-administered group. Conclusions: This study demonstrated that administration of BK attenuated HFD-induced obesity by regulation of C/EBPα than consumption of white pan bread. Therefore, BK could be developed as a bread for prevention of obesity.

김치 유산균으로 제조한 preferment 첨가 수준에 따른 white pan bread의 품질특성 (Study on the Properties of White Pan Bread Made by Adding Preferment Prepared by Lactic Acid Bacteria Isolated from Kimchi)

  • 김치에서 분리한 L. brevis를 접종하여 제조한 preferment를 첨가한 식빵의 품질 특성을 살펴보았다. Preferment의 첨가수준이 증가할수록 pH를 감소시켰고, 산도는 증가시키는 경향을 보여주었다. 식빵의 품질 평가에 있어서 비용적은 preferment의 함량을 20%까지 하였을 때 높게 나타났으며, 25% 첨가하였을 때에는 오히려 낮은 비용적을 나타내었다. 그러나 수분함량 및 수분활성도에서는 대조구와 preferment 첨가구간의 유의적 차이를 보이지 않았다. 물성특성에서는 hardness와 gumminess에서 preferment 첨가함량이 증가함에 따라 감소하였고, spinginess는 증가시켰다. 그 외 cohesiveness와 색도(L, a, b값)은 모두 대조구와 유의적인 차이를 나타내지 않았다. 관능검사에서는 preferment가 신맛과 감칠맛을 증진시켰고, 20%의 preferment를 첨가하였을 때, 부피, 감칠맛, 조직에서 탄성에 우수한 영향을 주었다. 따라서 식빵을 제조하는데 있어 김치 유산균의 preferment의 첨가 수준은 식빵의 품질 특성 및 관능검사가 우수하게 나타난 20%의 첨가구가 바람직한 것으로 사료된다.

가자 분말 첨가량에 따른 식빵의 품질 변화 (Effects of the Amounts of Terminalia chebula Retz Powder on the Quality of White Pan Breads)

  • This study was carried out to investigate the quality of white pan breads as affected by various amounts of Terminalia chebula Retz (TC) powder, in which the breads were prepared with 0, 2, 4, and 6% TC powder. The samples and a control bread were compared in terms of bread quality characteristics, including pH, baking loss rate, loaf volume index, moisture content, TBARS values, texture, color, and sensory qualities in order to determine the optimal amount of TC powder in the formulation. The pH levels of the bread samples containing TC powder ranged from 5.30 to 5.44, while the control bread had a pH of 5.68. The loaf volume index values of the samples prepared with 2~6% TC powder were lower than that of the control. After 7 days storage, the moisture content of the control bread had decreased by 14.4%, while the moisture contents of the breads with added TC powder had decreased by approximately 8~10%. The breads with TC powder had lower TBARS values as compared to the control bread. For texture characteristics, hardness increased with the addition of TC powder, and was especially increased in the sample containing 6% TC powder. Cohesiveness and springiness, however, decreased with the addition of TC powder. For color, lightness of the bread crust and crumb decreased with the addition of TC powder, whereas redness and yellowness increased. In terms of sensory quality, the bread containing 2% TC powder was preferred over the control bread, as estimated by appearance, crust color, taste, and overall quality, while the 6% TC bread had the lowest preference scores. These results suggest that the addition of 2% TC powder to white pan bread had optimal effects for improving shelf-life and enhancing bread quality.

효소와 유산균으로 전처리한 밀싹분말을 첨가한 식빵의 품질 특성 (Quality Characteristics of White Pan Bread Added with Wheat Sprout Powder by Enzyme and Lactic Acid Bacteria Pretreatment)

  • The purpose of this study was to evaluate the quality characteristics of white pan bread added with wheat sprout powder without treatment (WP) and wheat sprout powder with only enzyme treatment (WPE), only lactic acid bacteria treatment (WPL) and enzyme and lactic acid bacteria treatment (WPE&L). The three different powder concentration levels of 1%, 3%, and 5% were added to flour to produce the white pan bread. The bread volume and specific volume of the WPE&L group were the highest among all the addition groups. The bread weight, a-value, and b-value of the WP group was highest among all the addition groups, but the bread baking loss and the L-value of the WP group was the lowest among all the addition groups. The texture measurements indicated that the hardness, gumminess, and chewiness values of the bread were the highest in the WP group. The sensory evaluation test showed that bread in the WPE&L group with 3% wheat sprout powder was the best among all the samples studied. Based on our findings, we suggest that the enzyme and lactic acid bacteria pretreated wheat sprout powder is an effective ingredient for improving the overall quality of white pan bread.

상황현미 분말이 첨가된 식빵의 품질 특성 (Quality Characteristics of White Pan Bread Containing Brown Rice Fermented with Phellinus linteus)

  • This study was carried out to investigate the quality characteristics of breads with added Phellinus linteus grown in brown rice (BRPL). For color values, with increasing added BRPL powder, "lightness" decreased in the crumb while "redness" and "yellowness" increased ($^{***}$ p<0.001). The highest scores in volume and specific volume were observed in white pan bread with 5% BRPL powder added. When 10%, 15%, and 20% BRPL powder were substituted for equal amounts of strong flour, the volume and specific volume ratios of white pan bread decreased ($^{***}$ p<0.001). In texture measurements for white pan breads, hardness decreased slightly with the addition of 5% BRPL powder, but significantly ($^{***}$ p<0.001) increased with addition of 10%, 15%, and 20% BRPL powder. The addition of the BRPL powder significantly increased the springiness, gumminess, and brittleness of the white pan bread. The highest sensory scores for color, flavor, taste, and overall acceptance were obtained from white pan bread with 5% BRPL powder added ($^{***}$ p<0.001). By the results of these experiments, we can conclude that the hightest quality of bread with added BRPL powder has no more than 10% added BRPL powder content.
