Effects of Chlorophyll and Carotene on Lipid Oxidation and Tocopherols during Heating for Manufacturing of Perilla and Rice Porridge (들깨죽 제조를 위한 가열 중 클로로필과 카로텐이 지방질 산화와 토코페롤에 미치는 영향)

  • The effects of chlorophyll (0.33 mg/kg) and ${\beta}$-carotene (3.3, 9.9, 19.8 mg/kg) addition to a mixture of roasted perilla seeds, rice, and water (30:45:225, w/w/w) on the lipid oxidation and tocopherol contents were studied during heating at $100^{\circ}C$ for 120 min to simulate cooking of perilla and rice porridge. Lipid oxidation was evaluated with peroxide values (POV) and conjugated dienoic acid (CDA) values, and chlorophyll, ${\beta}$-carotene, and tocopherols were determined by HPLC, POV, and CDA values were increased during heating, indicating the occurrence of lipid oxidation in the perilla and rice porridge. ${\beta}$-Carotene decreased the POV and CDA values of the samples in a concentration-dependent manner, while the addition of chlorophyll did not affect them. Chlorophyll and ${\beta}$-carotene which were added, and tocopherols naturally present in samples were degraded, following the first order kinetics during heating, and ${\beta}$-carotene protected tocopherols from degradation.

  • Antioxidative activity of the extract from Caesalpinia sappan L. by various solvent was compared with several commercial antioxidants, using the Rancimat method. AI (antioxidative index; induction period of oil containing extract/induction period of control oil) of all extracts were higher than commercial antioxidants, such as BHA, ${\delta}-tocopherol$ and ascorbic acid. The ethanol extract was fractionated by liquid liquid extraction. Ethyl acetate fraction showed higher AI than the whole crude extract. When comparing POV and TBA value of palm oil and lard containing different level of each fraction, the oxidative stability of ethyl acetate fraction at 200 ppm level on palm oil and lard were similar to that of BHT at 200 ppm level, and better than BHA, ${\delta}-tocopherol$ and control.

Effects of Reusing Times on the Oxidative Stability of Frying Fat for Frozen Battered Pork (냉동탕수육의 튀김횟수에 따른 튀김유지와 산화안정성)

  • To evaluate the effect of frying times on the oxidative stability of soybean oil and shortening, they were reused up to 10 times and measured by thiobarbituric acid(TBA) value, acid value(AV), peroxide value(POV) and sensory evaluation. As the reusing time was increased, TBA value of "battered pork" fried with shortening showed more sharply increased than that with soybean oil, while the value of shortening, itself, showed more decreased than that of soybean oil. In frying fat, AV and POV increased with the increase of reusing times. Compared with soybean oil, shortening had rapidly increased for POV as reusing time was increased. Among the sensory analyses TBA of "battered pork" with soybean oil and shortening exhibited the highest correlation with flavor and texture, respectively. For the "batgtered pork" fried with soybean oil and shortening, reusing shelf-lives predicted were approximately 9 and 8 times, respectively.

The Changes of Lipid Oxidation and Fatty Acid Composition of Extruded Pellet Feed by Dietary Moisture Level and Storage Temperature (수분함량과 저장온도에 따른 배합사료의 지방산화 및 지방산 조성 변화)

  • This study investigated the effects of dietary moisture level and storage temperature on lipid oxidation and fatty acids composition of the extruded pellet feed. The diets containing the moisture levels of 5%, 15% and 25% were prepared by adding moisture (water) to the commercial extruded pellets and stored at $5^{\circ}C$, $20^{\circ}C$ (room temperature) and $35^{\circ}C$. The samples for analysis were collected at every 2 days for 10 days. Acid value (AV), peroxide value (POV), 2-thiobarbituric acid (TBA) value and fatty acid composition of the feeds were measured. No differences in the AV, POV and TBA value were observed in feed containing 5% moisture at all storage temperatures for 10 days. However, the AV, POV and TBA value of diets containing 15% and 25% moisture increased rapidly at $20^{\circ}C$ and $35^{\circ}C$ after 4 days. Fatty acids compositions of feeds containing 5% moisture did not change during the storage periods at $5^{\circ}C$ and $20^{\circ}C$. However, 5% moisture feed stored at $35^{\circ}C$ increased monoene fatty acid content and decreased the contents of polyene fatty acid, PUFA (polyunsaturated fatty acid)/SFA (saturated fatty acid) and $(C_{20:5}+C_{22:6})/C_{16:0}$ after 4 days. Also, 15% moisture feed stored at $35^{\circ}C$ showed increased monoene fatty acid content and decreased $(C_{20:5}+C_{22:6})/C_{16:0}$ after 2 days. The diet containing 25% moisture showed increased monoene fatty acid content and decreased contents of PUFA, PUFA/SFA and $(C_{20:5}+C_{22:6})/C_{16:0}$ at all temperatures after 2 days. In this study, lipid oxidation can occur in the extruded pellet feeds of 15% and 25% moisture at room temperature after 2 days.

Inhibition of Lipid Autoxidation by the Extract of the Submerged-liquid Culture of Mushrooms in the Medium Containing Mulberry Tree Powders (뽕나무 첨가 배지에서 배양한 버섯균사체 배양물의 자동산화 억제 효과)

  • Effect of mulberry tree powders on the antioxidant activity of submerged -liquid culture of mushrooms was investigated. Agaricus blazei (AB), Hericicum erinacium (HE), Pleurotus ostreatus (PO), Phellinus linteu (PL) and Paecilomyces japonicus (PJ) were cultured in a shaking incubator (200 rpm, $25^{\circ}C$) for 7 days in culture media: 1) basal medium (BM) and 2) BM+1% mulberry tree powders (BMM). Hot water extracts from the submerged-liquid cultures of mushrooms and BMM were freeze-dried for the measurement of antioxidant activity, of which reaction mixture (25 mL: 10 mL of 0.2 M sodium phosphate buffer, pH 8.0; 4.5 mL distilled water; and 10.5 mL ethanol) contained 275 $\mu$mol linoleic acid and one mg test sample. The reaction mixture was incubated in a shaking incubator (200 rpm, 4$0^{\circ}C$) for 16 days. Peroxide value (POV) was measured for a period of over 16 days, and malonaldehyde (MA) was determined only for samples from the day 16 of incubation. Mycelial weight of mushroom strains cultured in BMM was greater than BM. The antioxidant activities of AB-cultured in BW (AB-BMM) and HE-cultured in BMM (HE-BMM) were superior to those of other mushroom strains-cultured in BMM or BM and of BMM. These results suggest that mulberry tree powders enhance the antioxidant activity of submerged-liquid culture of mushroom strains. The AB-BMM and HE-BMM were the most active cultures.

  • This study was to carried out to estimate the relationship between acceleration storage and room temperature storage of gangjung (control unit) and dried insam gangjung (experiment unit), by acid value and peroxide value. The result were summarized as follows. : 1. Test for acid value of control unit, every 1 hour after acceleration storage is similar to each 7 days after room temperature storage is imilar to each 7.5 days after room temeprature storage. 2. Test for peroxide value of control unit, evry 1 hour after acceleration storage is similar to each 7.5 days after room temperature storage but to test peroxide value of experiment unit, every 1 hour after acceleration storage is imilar to each 7.7 days after room temperature storage. 3. In case of the oxidized flavor, control unit is not detected during storage stability but the experiment unit is detected unit is detected 1 hour ahead of acceleration storage than room temperature storage.

Changes of Fatty Acid Composition and Lipid Oxidation in Anchovy During Fermentation with Salt (멸치젓 숙성중 지질의 산화와 지방산 조성의 변화)

  • Anchor Engraulis japonica was fermented with $10\%$ and $20\%$ salt at $10^{\circ}C$ ($10\%$ 5A) and $20^{\circ}C$ ($20\%$ SA), respectively, and the changes in lipid content, fatty acid composition and lipid oxidation was observed for 105 days. Peroxide value (POV) in $10\%$ SA reached to the maximum (46.4 meq/kg) on 30 days of fermentation, while in $20\%$ SA, it reached the maximum (54.7 meq/kg) on 45 days of fermentation, and then decreased in both samples during fermentation. Thiobarbituric acid values revealed a similar tendency with the change of POV during the fermentation. These results indicated that lipid of the anchovy was oxidized faster in lower salt than high salt in the early stage. Total lipid (TL) content during the fermentation for 105 days decreased approximately $16\%$ in $10\%$ SA and approximately $33\%$ in $20\%$ SA. Phospholipid (PL) content also decreased in both samples and the content of neutral lipid (NL) was unchanged in $10\%$ SA, while it decreased in the same amount as PL in $20\%$ SA. The prominent fatty acids in TL of the anchovy sample were 14 : 0, 16 : 0, 16 : In-7, 18 : in-9, 20 5n-3 and 22 : 6n-3. After fermentation for 105 days, approximately $87\%$ and $67\%$ of the prominent fatty acids remained in $10\%$ SA and $20\%$ SA, respectively, but the kind of the fatty acids was unchanged.

Effect of Storage Temperature and Humidity on Water Adsorption and Rancidity of Peanuts (저장 온습도가 땅콩의 흡습 및 산패에 미치는 영향)

  • Water adsorption characteristics and lipid rancidity of fresh and roasted Peanuts were investigated at $25{\sim}60^{\circ)C$ and $11{\sim}85%$ relative humidity. peanuts of 50g were reached to the equilibrium water content in 14 days at $40^{\circ}C$, in 30 days at $25^{\circ}C$, respectively, in all of the relative humidity. BET monolayer water contents were $2.19{\sim}2.69%$ in fresh peanuts and $2.47{\sim}2.67%$ in roasted ones as dry basis at $25{\sim}40^{\circ)C$. Zero order reaction rate of peroxide value(POV) were $8{\sim}21times$ lower as $0.032day^{-1}$ and $0.142day^{-1}$in fresh peanuts than those of $0.663day^{-1}$ and $1.120day^{-1}$ in roasted peanuts at water activity of 0.51, but those were showed the relatively smaller differences according to the water activity and temperature. The critical peroxide value(POV) and carbonyl value(CV) were determined as 15.0meq/kg and 4.7meq/kg at $60^{\circ}C$ $0.51a_w$ by the regression analysis between chemical and sensory evaluation.

The Effect of Fresh Paprika and Paprika powder dried by far-infrared ray on Inhibition of Lipid Oxidation in Lard Model System (돈지 모형계에서 생 파프리카와 원적외선 건조 파프리카 분말의 지질 산화 억제 효과 비교)

  • This study was conducted to determine the antioxidant activity of paprika in a lard model system. The effect of paprika (ground fresh paprika (FP) $3\%$, $50^{\circ}C$ far-infrared ray dried Paprika Powder (PP) $3\%$ and $5\%$) on the inhibition of lipid oxidation in lard was examined by pH, peroxide value (POV), thiobarbituric acid (TBA) value and fatty acid composition during 8 days of storage at $4^{\circ}C$. With paprika, POV and TBA values in lipid oxidation of lard were significantly lower than those of the control without paprika. Especially, in lard with FP $3\%$, there was hardly any change of lipid oxidation values such as POV, TBA values and destruction of unsaturated fatty acid inhibiting lipid oxidation. Heating of paprika during far-infrared ray drying decreased the inhibition effect on lipid oxidation in the lard model system probably due to loss of antioxidant substances, such as vitamin C, polyphenols and carotenoids including capsanthin, by heating. Therefore, FP containing a hish amount of antioxidant substance could be used as a good antioxidant in Pork Products containing large amounts of lard.

Shelf-life Extension of Yukwa (oil puffed rice cake) by $O_2$ Preventive Packing (유과 저장성 향상을 위한 산소 차단 포장시험)

  • For extending the shelf-life of Yukwa (oil puffed rice cake) which is one of the most favorable Korean traditional rice snack, the Yukwa was packed in $O_2$ preventive container and substituted the air with $N_2$ gas or packed with $O_2$ absorbent (ageless sachet). The quality of Yukwa stored at $35^{\circ}C$ was evaluated by POV, AV and TBA including sensory evaluation. The POV of oil in Yukwa of $N_2$ substitute pack and absorbent sachet included were 5.3 and 11.9 meq/kg, respectively, while no packing (control) was 195.5 meq/kg after 90 days storage at $35^{\circ}C$. AV and TBA were also same trend but the gap with the control was not so big. The Yukwa, $N_2$ gas substituted, was better in quality than absorbent treatment in sensory evaluation and no difference was detected in quality of 90 days storage Yukwa at $35^{\circ}C$ with 15 days. The main reason for lower sensory score of absorbent treatment was that the $O_2$ absorbent also absorbed the flavor component of Yukwa.
