Brewing Rutin-Enriched Lager Beer with Buckwheat Malt as Adjuncts

  • Brewing with buckwheat as an ingredient has been proven to be successful in several previous studies. However, few studies have focused on the effects of buckwheat on the rutin content and antioxidant activity of beer. In order to develop a lager beer with high rutin content and desirable sensory characteristics, tartary buckwheat malt was used as a brewing adjunct. The results showed that the rutin-degrading enzyme was the key factor affecting the rutin content in the wort and beer. Compared to beer made using the common mashing method, the rutin content in the buckwheat beers produced using an improved mashing method was approximately 60 times higher. The total flavonoid contents in buckwheat beers also depended strongly on the mashing methods, ranging from 530.75 to 1,704.68 mg QE/l. The rutin-rich beers also showed better oxidative stability during forced-aging. Meanwhile, the buckwheat beers were found to be acceptable in terms of the main quality attributes, flavor, and taste.

Oxidative stability of omega-3 dietary supplements according to product characteristics

  • The objectives of the present study were to assess the oxidative stability of South Korean n-3 (omega-3 fatty acid) supplements carried out from 2018 to 2019 and evaluate the influence of product characteristics on oxidative safety. A total of 76 n-3 supplements were analysed for oxidation safety by four markers, including acid value (AV), primary oxidation (peroxide value, PV), secondary oxidation (p-anisidine value, pAV) and total oxidation value (TOTOX). Among the supplements tested, 5.3 %, 55.3 %, 28.9 % and 46.1 % exceeded the international voluntary recommended levels for AV, PV, pAV and TOTOX, respectively. Purity (%) of products, remainder of expiration date (suggested shelf life), package in press through package (PTP) and products with additives had statistically significant differences oxidation assessment levels (p < 0.05). In addition, n-3 group found in Algae oil had significantly lower AV levels than the group that did not, and product with Alaska pollack oil, had significantly higher pAV levels than without group (p < 0.05). The high oxidation status of South Korean n-3 products in the present study could not be considered a public health problem right now. However, the levels of oxidation may affect a lot the efficacy and safety of using n-3 supplements. Thus, current oxidation safety limits should be reestablished by regulatory bodies to ensure the safety and efficacy of n-3 supplements, so that the standards could be applied to the products available to consumers.

  • Sulfonated poly(arylene ether sulfone) (SPAES)-3-mercaptopropyl silica gel (3MPTSG) composite membranes with improved oxidative stability were prepared for polymer electrolyte fuel cell application. It has been reported that ether part of main chain of aromatic hydrocarbon based membranes were weak to radical attack to decrease membrane durability. In this study, the hydrophilic inorganic particles were introduced by minimizing a decrease in ion conductivity and increasing an oxidative stability. The composite membranes were investigated in terms of ionic conductivity, ion exchange capacity (IEC), FT-IR, TGA and contact angle, etc. As a result, increasing amount of the 3MPTSG resulted in decrease in proton conductivities and water uptakes at 100% R.H. but enhanced thermal and oxidative stabilities.

Effects of Roasting Process and Antioxidants on Oxidative Stability of Perilla Oils (볶음공정과 산화방지제가 들기름의 산화안정성에 미치는 영향)

  • The effects of different concentrations of ${\alpha}-tocopherol,\;{\delta}-tocopherol$, BHA, BHT and TBHQ on the oxidative stability of perilla oils undergoing autoxidation during storage at $50^{\circ}C$ were studied. ${\alpha}-\;and,\;{\delta}-tocopherols$ were added as concentrations of 100, 200, 300 and 400 ppm to the perilla oils from the unroasted seeds or the roasted seeds at $190^{\circ}C$ for 20 min. BHA, BHT and TBHQ were also added to the perilla oils described above as concentrations of 50, 100, 150 and 200 ppm, respectively. The oxidative stability of perilla oils was estimated by the antioxidative index (AI: the induction periods of oils with antioxidants/the induction periods of oils without antioxidants) on the basis of the peroxide values. The roasted perilla seed oil was more stable than the unroasted seed oil in autoxidation. The addition of ${\alpha}-\;and,\;{\delta}-tocopherols$ accelerated the autoxidation of perilla oils. BHA did not show antioxidant effects, but BHT showed very weak antioxidant effects. The autoxidation of perilla oils, however, was effectively prevented by the addition of TBHQ. TBHQ showed activity in preventing 5 times on the autoxidation of perilla oils. Therefore, the oxidation stability of perilla oils seemed to be depend both on the roasting process and the kind of antioxidants.

Stabilization of Covalently Cross-Linked SPEEK/Cs-Substituted HPA Composite Membranes for Water Electrolysis ($Cs^+$치환에 따른 수전해용 공유가교 SPEEK/HPA 복합막의 안정화)

  • To improve the mechanical properties, such as durabilities and antioxidative characteristics, the covalently cross-linked (CL-) SPEEK (sulfonated polyether ether ketone)/Cs-substituted HPA (heteropoly acid) organic-inorganic composite membranes (CL-SPEEK/Cs-HPAs), have been intensively investigated. The composite membrane were prepared by blending cesium-substituted HPAs (Cs-HPAs), including tungstophosphoric acid (TPA), molybdophosphoric acid (MoPA), and tungstosilicic acid (TSiA) with cross-linking agent content of 0.01 mL. And composite electrolytes composed of Cs-HPAs, prepared by immersion (imm.) and titration (titr.) methods to increase the stability of HPAs in water, were applied to polymer electrolyte membrane electrolysis (PEME). As a result, the proton conductivity of Cs-substituted composite membranes increased rapidly over $60^{\circ}C$ but mechanical properties, such as tensile strength, decreased in accordance with added Cs content. The bleeding-out of Cs-TPA membranes by titration method (50 vol.% Cs) decreased steadily to 2.15%. In the oxidative stability test by Fenton solution, the durability of membranes with Cs-HPA significantly increased. In case of CL-SPEEK/ Cs-TPA membrane, duration time increased more than 1200 hours. It is expected that even though CL-SPEEK/Cs-MoPA membrane shows the high proton conductivity, electrocatalytic activity and cell voltage of 1.80 V for water electrolysis, the CL-SPEEK/Cs-TPA (imm.) is more suitable as an alternative membrane in real system with the satisfactory proton conductivity, mechanical properties, anti-oxidative stability and cell voltage of 1.89 V.

Effects of Astaxanthin on the Oxidative Stability and Quality Characteristics of Emulsified Sausages during Cold Storage (아스타잔틴 첨가가 유화형소시지의 저장 중 산화 안정성 및 품질 특성에 미치는 영향)

  • Consumers are interested in natural ingredient that replace synthetic antioxidants in meat products. This study was carried out to investigate the effects of astaxanthin (AX) on the oxidative stability and quality characteristics of emulsified sausages during cold storage. Emulsified sausages were prepared as follows: manufactured without AX and BHT (Control), added with 500 mg/kg of BHT (BHT), and added with 80 mg/kg of AX (AX). Addition of AX showed no significant difference in pH, emulsion stability and cooking yield of emulsified sausages (p>0.05). However, the initial color retentivity was the same as that of synthetic antioxidant such as BHT treatment, and the redness was higher when AX treatment was added (p<0.05). The lipid oxidation showed the lowest value in the BHT treatment at the end of storage and the AX treatment also was significant lower than that of control (p<0.05). Hardness was lower in the all treatments at the end of storage than in the control (p<0.05). Therefore, astaxanthin can be used as a color enhancing agent for meat products as well as an natural antioxidant in replacing of BHT which is as synthetic antioxidant.

A study on the Property of Oxidation Stability in Biodiesel by the Additives (첨가제에 따른 바이오디젤 산화안정 특성 연구)

  • Some materials of fatty acids in the biodiesel affect the physical/chemical properties like density, kinematic viscosity, total acid number and oxidation stability by forming an organic fatty acid in combination with oxygen in the air. To solve the problem of the oxidative stability of biodiesel, various kinds of antioxidant has added and analyze the characteristics of the physical/chemical property changes by the addition of antioxidant. Oxidation stability increased by the increase of additives content. The TBHQ among the seven kinds of the additives showed the best performance. Also, 4 kinds of additives like propyl gallate, butyl-amine and pyrogallo has showed above 10 hr of oxidation stability at the addition of 500 ppm. In case of pyrogallo, this is not appropriate as an additive to suitable quality standards of total acid number. TBHA, DTBHQ of hydroquinone was satisfied with the quality standard of oxidation stability but the target of this research(above 10 hr) did not satisfied with oxidation stability. Propyl gallate is also a suitable at the quality standards of total acid number but it was shown not to be an appropriate to the additives due to increasing the total acid number by increasing of the content of additives at the addition of 500 ppm.

Evaluation of Protective Effects of Houttuynia cordata on H2O2-Induced Oxidative DNA Damage Using an Alkaline Comet Assay in Human HepG2 Cells

  • To evaluate the protective effect of Houttuynia cordata on hydrogen peroxide-induced oxidative DNA damage in HepG2 cell line, we used an alkaline single-cell gel electrophoresis (SCGE; comet assay). The DNA damage was analyzed by tail moment (TM) and tail length (TL), which used markers of DNA strand breaks in SCGE. The $100{\mu}g/ml$ of methanolic extract of Houttuynia cordata root showed significant protective effects (p < 0.01) against hydrogen peroxide-induced DNA damage in HepG2 cells and increased cell viability against hydrogen peroxide. The results of this study indicate that Houttuynia cordata root methanol extract acts as a potential antioxidant, and exhibits potential anticancer properties, which may provide a clue to find applications in new pharmaceuticals for oxidative stability.

Current Status and Prospects of Quality Evaluation in Sesame (참깨의 품질평가 현황과 전망)

  • Sesame (Sesamum indicum L.) is probably the most ancient oilseed crop known in the world. Sesame seed is known for its high nutritional value and for having oil (51%) and protein (20%) content. The fatty acid composition of sesame oil is palmitic acid (7.8%), stearic acid (3.6%), oleic acid (45.3%), and linoleic acid (37.7%). Sesame oil is characterized by a very high oxidative stability compared with other vegetable oils. Two lignan-type compounds, sesamin and sesamolin, are the major constituents of sesame oil unsaponifiables. Sesamol (a sesamolin derivative) can be present in sesame seeds and oils in very small amount. Other lignans and sesamol are also present in sesame seeds and oils in very small amount as aglycones. Lipid oxidation activity was significantly lower in the sesamolin-fed rats, which suggests that sesamolin and its metabolites contribute to the antioxidative properties of sesame seeds and oil and support that sesame lignans reduce susceptibility to oxidative stress. Sesaminols strongly inhibit lipid peroxidation related to their ability to scavenge free radical. The sesame seed lignan act synergistically with vitamin I in rats fed a low $\alpha$-tocopherol diet and cause a marked increase in a u-tocopherol concentration in the blood and tissue of rats fed an $\alpha$-tocopherol containing diet with sesame seed or its lignan. The authors are reviewed and discussed for present status and prospects of quality evaluation and researched in sesame seeds to provide and refers the condensed informations on their quality.

  • In order to study the stability of herbal oil(Yoo-Je), the Yoo-Je from walnut and safflower measured their rancidity by gas chromatographic analysis. The use of specificity of column for estimating the oxidative deterioration of Yoo-Je was attempted. These results suggested the possible implication of pentanal and hexanal as an stability index for rancidity evaluation of Yoo-Je.
