Appraisement and Purchase Consciousness of Consumer on Organically Grown Products (유기농산물에 대한 소비자의 평가와 구매의식)

  • This paper focussed to find out the consumer appraisement and purchase consciousness on organically grown products since public pay more and more attention on organic food and market for organic products has been grown very rapidly. It is intended to deliver the necessary information at first time in Korea to the policy maker for environmentally sound agriculture, establishment for marketing strategy and consumer movement related with it. 66.2% of investigated consumer ever purchased the organic products, and they are inhabitant in apartment complex, belongs to high income group and eldly people, and used to buy frequently at 45.8%. For the reason why they choose the organic products ; 84.7% for health and safe, 48.6% for taste. But the reason why they not choose the organic products ; 56.7% for unconvenient to shop an organic food, 51.4% for expensiveness. On the purchasing the consumer mainly rely upon the certification label(67%), the marketing place(29.6%) and information and recommendation of shopkeeper(23.6%). Korean consumers intend to buy an organic products if variable products and crops are offered in the market and offered at reduced price. The group purchased intensively the organic goods appraise for an organic products positively, and group who do not express any careless intend never to purchase an organically grown products because of its high price. Consumer indicated the support policy and action program by government(69.2%), research & development on organic agriculture and its extension activity(48.8%) are necessary to stimulate an organic agriculture in Korea.

A Theoretic Approach to the Organic Food Market in Korea: An Estimation of Information Entropy as a Measure of Information Asymmetry for Credence Goods (우리나라 친환경농산물 시장에 대한 정보이론적 접근 : 신뢰재의 정보비대칭성 지표로서의 정보엔트로피 측정)

  • Although the size of the organic food market in Korea has increased significantly, its further development is hampered by the information asymmetry between the producers and consumers of organic food. It isn't just about revitalizing the market; it's also about Korean farmers surviving an era of trade liberalization. In order to produce more value-added products, the information asymmetry issue has to be resolved regarding the organic food market and other agricultural credence goods such as Han-woo(Korean beef). Therefore, measuring information asymmetry has become a central issue. One way to measure asymmetry is to use Game Theory. However, in practice, estimating payoffs at the industry level is hard to accomplish, and even when it is possible, the reliability of the estimated payoffs is not guaranteed. As an alternative, the concept of Information Entropy(disorder level of information), developed by Shannon(1948), was used in this study. It is proposed that this measure should be used when assessing the level of information asymmetry in the Korean organic food market. Using recent data, it was found that information entropy in the Korean organic food market has been decreasing constantly since 2003. Therefore, it was proposed that measures should be adopted by the government to improve the certification system of organic food.

Herbicidal Activity of Naturally Developed d-Limonene against Sicyos angulatus L. under the Greenhouse and Open Field Condition (온실 및 노지조건에서 천연물질 d-Limonene의 가시박에 대한 살초활성)

  • This experiment was conducted to Investigate the herbicidal activity of naturally developed d-Limonene on the control of Sicyos angulatus L. which is destructive to biodiversity and ecosystem under greenhouse and open field condition. Among the tested concentrations, most efficacy of early foliar application(leaf stage with 1.5 and 3) of d-Limonene was found in $70mg\;mL^{-1}$, followed by $35mg\;mL^{-1}$, $17.5mg\;mL^{-1}$ in that order under greenhouse condition. The higher the d-Limonene concentration, the better the effect in greenhouse condition. In leaf stage with 2, 3 and 5 under open field condition, the higher the d-Limonene concentrations, the higher the weeding effect. The remarkable effect was, particularly, found in d-Limonene with $70mg\;mL^{-1}$ while little was found in the plants with d-Limonene with $35mg\;mL^{-1}$. In the case of 15 leaf stage of S. angulatus L. treated with d-Limonene under outside treatment effect was low. The treatment effect of d-Limonene under open field compared with greenhouse condition was more significant. It can be recommended that d-Limonene with $70mg\;mL^{-1}$ could control S. angulatus L. by 5 leaf stage.

Physicochemical Characteristics of Soybeans Grown in Different Origins and Cultivation Methods Accompanying Tofu Properties (재배 조건 및 재배 지역에 따른 콩의 이화학적 특성 및 두부 품질에 미치는 영향)

  • In this study, the characteristics of soybeans with different cultivation methods depending on their origins and the properties of tofu made from these soybeans were studied. The isoflavone content was higher in the general Korean soybeans compared to the organic American soybeans. There were no significant differences among the Chinese soybean samples, so the cultivar method was considered to have a greater effect on the isoflavone contents rather than the cultivation method. The protein contents were higher in the tofu made from the general Chinese soybeans and the organic Korean soybeans. Furthermore, the tofu made from the organic Chinese soybeans contained the least amount of proteins. Isoflavone contents were not significantly different among the samples. Texture profile analyses consisting of hardness, cohesiveness, adhesiveness, springiness, and gumminess were all shown to be higher in the organic tofu than in general tofu, with the exception of adhesiveness. In sensory evaluation, color and texture were significantly different according to the samples, and the differences were found to be affected more by the origin of soybeans rather than the cultivation methods. According to this study, the physicochemical properties of the soybeans and tofu seemed to be influenced by the cultivation region rather than the methods.

Effects of the Gamma Irradiation on Composition of Free Amino Acid, Fatty Acid and Organic Acid of Soybean-Based Fermentation Food (감마선 조사가 장류제품의 유리 아미노산, 지방산 및 유기산 조성에 미치는 영향)

  • The effects of gamma-irradiation on the nutritional components of some Korean soybean-based fermentation foods were studied. Doenjang (soybean paste), kochujang (red pepper paste) and chungkukjang were prepared, irradiated at 0, 5, 10 and 20 kGy, and their compositions of free amino acid, free fatty acid and organic acid were determined. Compositions of free amino acid and free fatty acid in gamma irradiated sample were stable compared to non-irradiated control. Content of citric acid and succinic acid increased, while that of malic acid decreased in the gamma irradiated chungkookjang, but there were no significant changes in organic acid composition in organic and kochujang.

Measuring the Effects of Belief, Subjective Norm, Moral Feeling and Attitude on Intention to Consume Organic Beef (유기농 쇠고기에 대한 신념, 주관적 규범, 도덕 관념과 태도가 소비 의도에 미치는 영향 평가)

  • The purpose of this study was to assess the causal relationships among belief, subjective norm, moral feeling, attitude, and the intention to consume organic beef. A total of 326 questionnaires were completed by adult in Jeonnam area. Structural equation modeling was used to measure the causal relationships among the constructs. The structural analysis results indicated an excellent model-data fit. The covariance effects of belief and subjective norm, and belief and moral feeling were statistically significant. The effects of belief and moral feeling on attitude and intention to consume were also statistically significant. As expected, attitude had significant effects on intention to consume. Moreover, attitude played a mediating roles in the relationship between belief and intention to consume. Finally, based on structural analysis, a model was proposed for the interrelations among belief, subjective norm and moral feeling towards organic food, attitude and intention to consume. It should be noted that the original organic food consumption model was modified, and should preferably be validated by future research. Other constructs, such as perceived behavior control and consumption, may be incorporated to form models that consist of new antecedent and consequence pairs.

  • This study explores the development process of an farmers' group in Asan City that now plays an important role in the development of organic farming of the region. While increase in income in general may be one of main purposes making farmers join or form a group, the farmers group in Asan, instead, has tried to form a cooperative of local organic farmers. In doing so, they experienced a lot of difficulties and leant by trial and error. As a result, the farmers' group has recently developed in terms of business and organisational growth. The growth is not merely due to the growth of organic food markets but also due to the strong internal ties and trust that made possible to expand into food processing as well as to do social and cultural activities fur the rural residents. It implies that trust and cooperative identity between farmers should be the most important thing to be locally embedded farmers groups in a specific region.

  • This work is described as an fresh effort to study environmental sustainable management in organic products retailing markets. Sustainable management means creating value for business, nature and society. The main point of this thesis is about the concept, the content and the target of environmental sustainable management, and the technical method and basis to achieve it. Also this thesis shows the strategy of sustainable management as well as the realization of sustainable development by carrying out organic agricultural production. The main content of sustainable management is that: - Rationalize the utilization of resource and energy. - Maximize economic benefit. - Minimize harm to humans and the environment. Examines business strategies that have successfully targeted markets, such as advertising, labeling, gaining consumer trust, partnerships, and diversifying operations. These included management skills, and marketing organic and other sustainably grown products to determine strategies for developing new markets for these products. Suggests that consumers are becoming more aware of the importance of environmentally sound methods for growing food, the health benefits of wholesome food, and are willing to pay more for these products.

Inhibitory Effects of Organic Acids against Pectinolytic Yeasts Isolated from Decayed Citrus (연부현상이 발생한 감귤로부터 분리한 효모에 대한 유기산의 생육 저해 효과)

  • Organic acids are known as natural sanitizers. We examined the sanitizing effects of five organic acids (acetic acid, propionic acid, citric acid, malic acid, and lactic acid) and their persistence on three pectinolytic yeast strains isolated from decayed citrus, and the persistence of their sanitizing effects was determined during storage at $4^{\circ}C$ and $16^{\circ}C$. The 7~8 log CFU/mL of the mixed three yeast mixture was exposed to various concentrations of each organic acid for 1 min. The yeast mixtures decreased under detection limit(1 log CFU/mL) in 1% of acetic acid, followed by in 3% of propionic acid with the reduction of 5 log CFU/mL. The citric acid, malic acid, and lactic acid decreased the number of yeasts under detection limit at 7.5%. When treated with deionized water and 1~5% of organic acids were treated on the surfaces of citrus contaminated by yeasts, total numbers of the yeasts decreased under detection limit(3 log CFU) at 5% of acetic acid and 4 log CFU/piece at 5% propionic acid compared with deionized water. When treated with acetic acid and propionic acid on the stem ends of the contaminated citrus, total numbers of the yeasts significantly decreased 0.5 log CFU/piece at 3% of both organic acids. During storage at $4^{\circ}C$ and $16^{\circ}C$ for 20 days, total number of yeasts significantly decreased at 2% acetic acid compared with deionized water. This study suggested that organic acids could be used to sanitize microbial contaminants from citrus for storage and transportation.

Separation of Lactoferrin from Model Whey Protein Mixture by Reverse Micelles Formed by Cationic Surfactant

  • The selective extraction behavior of lactoferrin (Lf) from whey protein mixture was examined using reverse micelles formed by the cationic surfactant, cetyldimethylammonium bromide (CDAB). The major whey proteins, including ${\beta}$-lactoglobulin, ${\alpha}$-lactalbumin and bovine serum albumin, were solubilized from aqueous phase to organic phase while Lf was recovered in the aqueous phase. The solubilization behaviors of the proteins were manipulated by the process parameters such as the pH and salt concentration of the aqueous phase and the surfactant concentration in the organic phase. Efficient forward extraction was achieved with sodium borate buffer (50 mM, pH 9) containing 50 mM KCl and organic phase containing 100 mM CDAB. Based on SDS-PAGE and densitometry, about 96% of the initial Lf remained in the aqueous phase after forward extraction. The dialyzed Lf fully maintained its bacteriostatic activity against E. coli O157:H7.
