The purpose of this study was to examine the usefulness, attitude for using on food labeling such as nutrition labeling, organic food labeling and food additives labeling, and purchase intention in Korean housewives and university students. A total of 320 subjects participated in study from October to November in 2008. They answered to developed questionnaire and 300 subjects (149 housewives, 151 students) completed all questions. The statistical analyses were performed using by SPSS 17.0 package program. The rates of checking the nutrition labeling, organic food labeling and food additives labeling were 57.3%, 57.2% and 63.3%, respectively. Comparing housewives with university students, housewives showed significantly more positive usefulness, attitude for using, purchase intention in some questions about nutrition labeling, organic food labeling and food additives labeling (p < 0.05). Subjects who checked each food labeling on purchasing had more positive usefulness, attitude for using and purchase intention in all questions (p < 0.01). For nutrition labeling and organic food labeling, usefulness (each value of ${\beta}$ was 0.362, 0.354) and attitude for using (each value of ${\beta}$ was 0.336, 0.301) were independent factors for purchase intention (p < 0.001). For food additives labeling, only usefulness had an effect on purchase intention. In conclusion, usefulness, attitude for using food labeling and purchase intention were different between housewives and university students. Moreover, usefulness and attitude for using food labeling affected positively on purchase intention.
Japan launched its regulatory certification system for organic foods based on the amended JAS laws in June 2000, followed by the implementation of regulations on organic agricultural products and organic processed foods in January 2001 and with the implementation of the standards on organic animal husbandry and organic feed by the Ministry of Agriculture, Forestry & Fisheries in 2005, organic foods have been under integrated and systematic supervision. Certification of organic foods can be undertaken by registered accredited bodies (private certification bodies) or legal entities conforming to the regulations of the Ministry of Agriculture, Forestry & Fisheries. However, with the amendment of the JAS laws in March 2006, only legal entities conforming to the regulations of the ISO/IEC GUIDE 65 are eligible as certification bodies. Foreign organic products imported to Japan must be certified organic under JAS regulations and must be manufactured or produced by foreign manufacturers certified by local or foreign registered accredited organizations and distributed with the Organic JAS Mark affixed or through importers certified by local registered accredited organizations and distributed with the Organic JAS Mark affixed on the products. It can be implied from the Japanese case study that it necessary to reform the diverse agricultural products certification systems to set up an integrated certification system, and the restructuring of government organizations, reforms of environmentally-friendly agricultural products certification system and the integration of the organic food certification systems are needed in order to integrate the control of the standards and certification systems.
This paper is aim to report the core aspects of Codex guideline for organically grown food which is finalized by FAO/WHO Codex Alimentarius Commission on May 2000 in 28th session of the Codex committee on food labelling. The chapter of animal production had discussed for a long time before it was finalized in Ottawa/canada as well as use of GMO(Genetically modified organism), manure from factory farming, animal welfare, and fodder inputs consisting of at least 85% for ruminants and 80% for non-ruminants. As the guideline for Codex set out the several things which is very difficult for Asian country, Organic farmer in Korea should pay an attention to maintain/increase the fertility and biological activity by cultivation of legumes, green manures or deep-rooting plants in an appropriate multi-annual rotation programme, and incorporation in the soil of organic material from holding producing in accordance with the guidelines. Pest, diseases and weeds should be controlled by choice of appropriate varieties, appropriate rotation, mechanical cultivation, diversified ecosystems, flame weeding, animal weeding and steam sterilization. The use of plant growth hormone, GMO and manure from industrial management system are not allowed, and closed recycling system, rotation, resistant seeds again pest and disease should be practiced in organic farming. But these are not unfortunately practiced in the country. In the conclusion it was strongly suggested to enact the Basic Standard for Korean organic agriculture which contains the core principles of Codex guidelines, and to try the importation of the most advanced theory, skills and technology from leading country in organic farming.

Andong Sikhe in Korea was prepared and fermented at 5$^{\circ}C$ and the taste and flavor compounds were evaluated. Major flavor components were identified by gas chromatography-mass spectrometer as camphene, sabinene, 1-(1, 5-dimethyl-4-hexyl)-4-methyl-benzene, alpha-zingibirene, farnesene, 2, 6-bis(1, 1-dimethylethyl)-4-metethyl-phenol, beta-sesquiphellandrene, calalene, tetradecanoic acid, and 9, 12-octadecanoic acid. The concentration of nonvolatile organic acid such as lactic acid, oxalic acid and citric acid were 18.10mg/100g, 1.04mg/100g and 1.37mg/100g, respectively, and those of other nonvolatile organic acid were a little. The pH and acidity of Andong Sikhe were 4.06 and 0.32 during fermentation and storage.
The effects of organic acids mix (0.4%) and modified atmosphere packaging (MAP) on the storage quality of sliced bacon were investigated. Pork bellies were treated with or without organic acids at the curing stage. The organic acids mix comprised 35% sodium acetate, 25% salt, 15% calcium lactate, 11% trisodium citrate, 7% ascorbate, and 7% citric acid. The cured pork bellies were smoked and packaged with 50% $CO_2$ + 50% $N_2$ (50% $CO_2$-MAP) and 100% $N_2$ (100% $N_2$-MAP), and stored at $5^{\circ}C$ for 14 d. The 50% $CO_2$-MAP showed a higher pH value (p<0.05) up to 10 d, a lower protein deterioration (p<0.05) as measured by volatile basic nitrogen (VBN) from 6 to 14 d, and a higher color value of lightness (CIE $L^*$) compared to 100% $N_2$-MAP. The development of lipid oxidation measured by thiobarbituric acid reactive substance (TBARS) values seemed to be effectively controlled throughout the storage period in both 50% $CO_2$-MAP and 100% $N_2$-MAP regardless of the application of organic acids. The 50% $CO_2$-MAP inhibited the growth of aerobic and anaerobic bacteria (p<0.05) both in non-added and bacon added with organic acids mix. The 50% $CO_2$-MAP alone seemed to be effective in delaying the growth of bacteria since the use of organic acids mix gave no additional effects. The addition of organic acids mix lowered the pH value (p<0.05), effectively retarded the protein deterioration (p<0.05), and showed a higher color value of lightness (CIE $L^*$) value (p<0.05) and lower color value of redness (CIE $a^*$) value (p<0.05). In conclusion, 50% $CO^2$-MAP showed better quality and self-life of sliced bacon during storage. However, the beneficial effect of organic acids mix was not noticed in the concentration used in this experiment.
This study aimed to analyze the effect of demographic characteristics of consumers and quality recognition factors on purchase intention of organic wine, and to provide preliminary data necessary for the development of wine industry. By factor analysis of collected surveys, quality recognition factors of both the experienced and non-experienced group of organic wine environment/health, varieties of grapes, price, and four brand elements. First, among demographic characteristics, only income level hae a significant influence on the changes in quality recognition causes. Each of quality recognition causes of organic wine had a significant relation with purchase intent. The result of our analysis suggested that 'environment/health' was most influential for the experienced group, and 'health' was most influential for the non-experienced group. Therefore, this hypothesis is supported.
This study was conducted to evaluate the microbial contamination levels in the processing company of Nuroong-ji. Microbial contamination levels were examined for sanitary indication bacteria such as aerobic plate count, coliforms and fungi, and pathogenic bacteria such as Escherchia coli O157:H7, Salmonella spp., Staphylococcus aureus, and Listeria monocytogenes. Contamination levels were detected differently according to handling materials and purposing work-space. The equipments and raw materials were not seriously contaminated but there were necessary to attend the cross-contamination. A high contamination level was detected at the process where the interference of the employees was relatively higher than the other process. Standardization of the roasting process (l20~$170^{\circ}C$, about 10 min) could be necessary to control the microbial organism effectively on Nuroong-ji manufacturing process. At small/medium size foodstuff manufacturers, it is the most important to improve the recognition level of individual hygiene but also expand a hygiene facility.
In Korea there is still no basic standard for organic agriculture and organic farmers in Korea do not follow the minimum requirements of IFOAM basic standard Most of them just practice the organic agriculture applying organic fertilizer, commercial seed without legume, rotation and green manure. But they believe this system is a absolutely environmental friendly agricultural system and it produce a safe agricultural product since they are not aware of the basic standard of organic agriculture at all. The overuse of organic fertilizer by some organic farmer have caused some severe problems risk for nitrate and phosphate leaching. In soil profile showed the potential risk for nitrate and phosphate leaching. In the paper, it is discussed on the environmental friendly function and the safe vegetable production by european organic agriculture which keeps the internationally recognized basic standards of organic agriculture. Therefore it is strongly recommended that korean organic farmer have to follow the IFOAM it is strongly in order to practice the environmental agriculture and produce the safe food. And it is also necessary to introduce to Korea the basic standard of organic agriculture which coincides with IFOAM's and Codex of FAO/WHO immediately if they really want to practice an organic agriculture in the country.
With increasing global concern that intensively synthetic-chemical based farming systems accelerated the decline in environmental quality, the sustainability of modem agriculture became the subject of great concern. It is well known that the movement of Community Supported Agriculture(CSA) has been contributed significantly to the development of organic agriculture in USA and Japan. It was supposed that CSA could be one of the best way to promote the movement of organic agriculture since there is little reliability on the organically grown food by consumer. In this paper it was focussed to study the movement of CSA in USA and Europe in order to provide an idea for establishment and movement of CSA in Korea to support the organic agriculture. In a CSA system, the farmer grows food for a group of shareholders who pledge to buy a portion of the farm's crop that season. This arrangement gives growers up-front cash to finance their operation and higher prices for produce, since the middleman has been eliminated. For most shareholder for CSA saving money is a secondary consideration, but fresh safe products and environmentally sound farming system. People become shareholder of CSA since they expect an organic farming which can ; \circled1protect the environment, minimize pollution, promote health, \circled2replenish and maintain long-term soil fertility by providing optimal conditions for soil biological activity, \circled3maintain diversity within the farming system and its surroundings and protect plant and wildlife habit, \circled4recycle materials and resources to the greatest extent possible within the farm and its surrounding community, \circled5maintain the integrity of organic food and processed products through each step of the process from planting to consumption, \circled6develop and adopt new technologies with consideration for their long range social and ecological impact. In all CSAs, the farmer develops a crop plan and a budget, which details costs for a growing season, including fair wages for the farmers. This study was conducted to determine the effects of microorganism inactivation using 3 ppm of aqueous ozone (AO), 1% citric acid, 1% lactic acid, and 1% acetic acid alone, as well as the combinations of AO and organic acid, for washing the raw materials of saengsik (carrot, cabbage, glutinous rice, barley) with or without agitation. The combination of AO and 1% of each organic acid significantly inactivated spoilage bacteria in both the vegetables and the grains (p<0.05). However, in the glutinous rice, no inhibitory effects were shown for total aerobic bacteria by using water, ozone, or the combination of AO with citric acid or lactic acid, without agitation. Microbial inactivation was enhanced with agitation in the grains, whereas dipping (no agitation) treatments showed better inhibitory effects in the vegetables than in the barley, suggesting that washing processes should take into account the type of food material.
