  • According to the rising of national economic level, domestic consumption of vegetables having high additive values is increased continuously due to increased consumption of meat in last decade. These vegetables are produced almost in this country and are limited to import from neighbor countries in due of high transportation expenses for storing in refrigerated container. It is very important to mechanize the harvest work, forming more than 30% for their production cost, in order to cultivate variable vegetables at the same time according to their harvesting seasons. In this state its former harvest methods, with using of human power or semi-automatic harvest, caused to increase their production cost due to high labor cost and low working efficiency.

  • This study was performed to investigate 172 samples of fried food in fast food store. The free fatty acid value of 22 samples exceeded standard of fried-food. These samples were 10 fried chickens, 6 fried potatoes and 5 fried onions. Fatty acid composition differed from each company. The correlation between free fatty acid value and double bond index was very low. New standard of fried food in fast food store is needed for thorough hygiene management, because of being not existed standard. The fried potato containing many carbohydrate and fat appeared higher calory than fried chicken containing many protein. The fried food had high fat comparatively, so that attention in regard to excess intake is demanded. The trace materials were included Mg, Ca, Mn, Fe, Zn, Cu and Cr in order of quantity, and the harmful heavy metals-Pb, Hg and Cd- were included small quantity.

  • We compared three nations' diets on Year 2000 Korean, American and Mediterranean in the aspect of contribution of each to the development of cardiovascular diseases. We searched all the available evidences published. Korea has a very low incidence of cardiovascular diseses compared to the other countries even though they are increasing recently. In addition to many risk factors to these defenerative diseases such as diabetes millitus, hypertension, smoking, hyperlipidemia, sedentary lifestyle, etc., dietary factors are also contributing a lot to their development. High calorie, trans fatty acids, cholesterol, saturated fatty acids, alcohol, salt intakes are examples. Korean diet has superiority of low calorie, low fat, good fat proportion, high omega-3 fatty acids, vegetables, beans, and garlic and onions These are believed to contribute to low incidence of cardiovascular diseases in Korea. Korean diets was also found to have some issues for improvement such as high salt, low calcium, and higher use of barbequed meats. We concluded Korean people stay better off with Korean diet with some modifications.

  • To convert the analog signal from the drying process into the digital signal, the interface circuit was designed and built. To measure the weight and temperature during drying process, strain gauge type load cell and temperature transducer composed of pt 100 $\Omega$ thermometers and wheatstone bridge circuits were built and used. The temperature control device was composed of photocoupler and triac. Microcomputer aided experimental convective drying system was built with above cricuits and devices. Drying characteristics of onions can be estimated using this system.

  • This study was carried out investigate the storability of onions on calcium spraying, after cutting foliage, 6 different treatemnt , the dilution spraying of calcium nitrate 9 3%, 6%) , calcium carbonate(3%, 6%), dust scattering and the controls were evaluated for rotting, sprouting, healthy bulb and total weight loss ratio during storage. Rotting ratio on the dilution spraying of 6% calcium carbonate was lower than that of the control after 4 months storage by 16.7%. Sprouting and total weight loss were decreased in the dilution spraying of 6% calcium carbonate.

  • Differ number of seismograph to the composition dam by recently frequent earthquake and analyzed responsiveness. Therefore, by PMP (PMF) of dam and increase of domestic earthquake occurrence, need research about earthquake resistant nature ability estimation of water resources facilities. Because responsiveness analysis applies number 0.154 ~ 0.25 g of seismograph, seismic wave that use in analysis is being suitable in dynamic analysis of construction such as Rockfill dam from representative chapter cycle faction and recommend in domestic internal examination design workbook, and use results applied much Hachinohe wave onions in van abroad.

  • In order to fad out an efficient way of topdressing nitrogen fertilizer in mulch-cropping system of onion(Allium cepa L.), solid, slow-release, and liquid forms of nitrogen fertilizers were allied to cv. 'Changnyungdaego' various number of times at different time, with 5 topdress applications of solid fertilizer serving as a control. Whole basal application of conventional solid fertilizer and 2 slow-release fertilizers were labor-saving and showed improved storage quality of bulbs, but resulted in poor plant growth and considerably low yield due to fertilizer shortage from early April. This suggests that topdress application is necessary. Liquid form of nitrogen fertilizer was more effective for plant growth and yield and saving labor than the solid form. Early applications was effective for increasing yield and storage quality of onion bulbs harvested. Thus two applications of liquid form of nitrogen fertilizer in February and March at rome month interval are recommended in mulch crowing system of onion.

  • The optimized RAPD-PCR conditions, which can be utilized as a basic information for the analysis of the genetic characteristics were investigated with four onion varieties, named Changryungdaego, Yeoeuijuhwang, Yakwangju, and Dabonghwang using Operon primers, OPR01 (TGCGGGTCCT) and OPZ20 (ACTTTGGCGG). We tested several concentrations of DNA, primer, and MgCl2, annealing temperature, number of PCR cycle, and presence/absence of pre-heating time at the begining of PCR reation in the 25${mu}ell$ volume. The best RAPD profiles were obtained using 50ng of DNA, 5mM of primer, 1.5mM of MgCl2, 45$^{\circ}C$ of annealing temperature and an absence of pre-heating time. An establishment of the stable and reproducible RAPD-PCR conditions are expected to be useful for the subsequent RAPD-related investigation, such as genetic characterization of the onion strains, re-establishment of phylogenetic relationships and development of new varieties.

Batch Scale Storage of Sprouting Foods by Irradiation Combined with Natural Low Temperature - III. Storage of Onions - (방사선조사(放射線照射)와 자연저온(自然低溫)에 의한 발아식품(發芽食品)의 Batch Scale 저장(貯藏)에 관한 연구(硏究) - 제3보(第三報) 양파의 저장(貯藏) -)

  • In order to develop a commercial storage method of onions by irradiation combined with natural low temperature, two local varieties of onions, precocious species and late ripening, were stored at natural low temperature storage room ($450{\times}650{\times}250cmH.$; year-round temperature change, $2{\sim}17^{\circ}C$; R.H., $80{\sim}85%$) on batch scale following irradiation with optimum dose level. Precocious and late varieties were all sprouted after five to seven months storage, whereas $10{\sim}15$ Krad irradiated precocious variety was $2{\sim}4%$ sprouted after nine months storage, but sprouting was completly inhibited at the same dose for late variety. The extent of loss due to rot attack after ten months storage were $23{\sim}49%$ in both control and irradiated group of precocious variety but those of late variety were only $4{\sim}10%$. The weight loss of irradiated precocious variety after ten months storage was $13{\sim}16$, while that of late variety was $5.3{\sim}5.9%$ after nine months storage. The moisture content, during whole storage period, of two varieties were $90{\sim}93$ with negligible changes. The total sugar content differed little with varieties and doses immediatly after irradiation, but decreased by the elapse of storage period. 33.6% of its content was decreased in control and 12.5% in irradiated group but $20{\sim}26$ decreased in both control and irradiated group of late variety after nine months storage. No appreciable change was observed immediately after irradiation irrespective of variety and dose, but decreased slightly with storage. Ascorbic acid content of precocious variety was increased slightly with dose immediately after irradiation, but those of late variety decreased slightly. Ascorbic acid content were generally decreased during whole storage period. An economical preservation method of onions appliable to late variety, would be to irradiate onion bulbs at dost range of $10{\sim}15$ Krad followed by storage at natural low temperature storage room.

Growth, Storage and Fresh-cut Characteristics of Onion (Allium cepa L.) in Unstable Environmental Condition and Storage Temperature (양파의 이상 재배조건에서 생육과 저장온도에 따른 저장성 및 포장한 신선편이 특성)

  • The purpose of this study was investigated the quality changes before and after harvesting, storage and, processing of onion. Experiments were carried out to compare the effect on the characteristics of the postharvest from preharvest factors using onion. This experiment had identified the characteristics of harvested onions after cultivating with several preharvest factors such as the light and water conditions. These tests were conducted in an onion growth in the field, storage, and processing of fresh-cut during a laboratory periods of 2 years. In first year, onion cultivars ('Kars' and 'Pop') were produced under stable or unstable environment conditions, these onions were stored at low temperature(0?). Measurement was evaluated by the growth amount after harvesting, and the fresh weight loss and respiration rate during storage. According to different culture conditions and storage temperatures, it was investigated the properties of the fresh-cut onion. Growth of onion was varied depending on the cultivars and culture conditions. The amount of growth on 'Kars' and 'Pop' onions were decreased by excessive soil water conditions with shading. These influences were found the morphological differences resulting for the cell tissue of onion being rough and large. Onion cultivated in excessive soil water with shading affected the degree of its respiration rate and fresh weight loss during storage. Ones in excessive soil water with shading were higher than the control in fresh weight loss and respiration rate, respectively. However fresh-cut onion could not investigated to clarify the difference due to effects of cultivation condition and storage temperature on some measure items such as electrolyte leakage and microbial number change. There was a change of only electrolyte leakage depending on the storage temperature, rather than cultivated conditions before harvesting factor. The results showed that the onion grown on in the good environment was represented to a good quality produce even after harvesting.
