양파 육질 및 껍질의 화학성분과 항산화 및 항암 활성 비교 (Effects of Onion Flesh and Peel on Chemical Components, Antioxidant and Anticancer Activities)

  • 양파 껍질의 폐기는 생리활성 물질이 손실 될 수 있으므로 양파 껍질을 이용한 연구는 폐자원을 활용한다는 면에서 의미가 있다. 이에 본 연구에서는 양파를 육질과 껍질로 나누어 이들의 총 플라보노이드 함량을 측정하였고 세포 내 활성산소종 제거 및 인체 암세포 증식 억제 효과에 대하여 비교 검토하였다. 양파 껍질은 육질과 비교했을 때 48배의 플라보이드 함량을 나타내어 양파 껍질에 플라보노이드 성분이 다량 함유되어 있음을 확인하였다. 양파 껍질의 A+M과 MeOH 추출물을 0.05 mg/ml의 농도로 HT-1080 세포에 처리하였을 때 지질 과산화물의 생성을 크게 억제시켰다. 이들 두 추출물들은 $500{\mu}M$ $H_2O_2$만을 처리한 control군과 비교하였을 때 측정 시간 120분 동안 계속적으로 높은 세포 내 지질 과산화물 생성 억제능력을 나타내었고 특히 양파 껍질에 의한 저해 효과가 양파 육질보다 높았다. 양파 육질과 껍질의 추출물로부터 얻어진 분획물들 중에서는 양파 껍질의 85% aq. MeOH 및 BuOH 분획물에 의한 저해효과가 우수하였고 양파 육질의 경우에는 85% aq. MeOH 분획물에 의한 항산화효과가 높았다. 암세포증식 억제 실험에서 양파 껍질의 A+M 추출물의 $IC_{50}$은 AGS 및 HT-29 세포에서 각각 0.07 및 0.05 mg/ml로 양파 육질보다 저해효과가 높았고 껍질 MeOH 추출물의 $IC_{50}$은 두 세포에서 각각 0.75 및 3.31 mg/ml로 AGS 세포에 대한 증식 억제효과가 우수하였음을 관찰 할 수가 있었다. 분획물들 중에서는 양파 육질 및 껍질의 85% aq. MeOH 분획물의 AGS 세포에 대한 $IC_{50}$이 각각 0.04 및 0.03 mg/ml로 가장 높은 활성을 나타내었고. 이들 분획물들도 HT-29 세포보다는 AGS 세포에 대한 증식 억제효과가 높았음을 살펴 볼 수가 있었다. 대체로 water 분획물에 의한 활성산소종 저해 및 암세포 증식 억제효과는 분획물들 중 가장 낮았다. 이상의 결과로부터 양파 부산물인 껍질에도 생리활성 물질이 함유되어 있는 것으로 판단되므로 이를 활용한 양파가공품 개발이 필요하다고 여겨진다.

양파껍질 추출물 함유 음료의 품질특성 (Quality Characteristics of Beverage Adding Onion Peel Extract)

  • This study provided basic data for the commercialization of healthy functional beverages by examining the physicochemical characteristics, nutrient content, and microbiological safety of onion peel beverage. The total acid of onion peel beverage was 0.12 mg/g and the pH was 6.07. According to the storage period, the total acid decreased and the pH increased in all temperature ranges(25℃, 35℃, and 45℃). After 30 days of storage, it showed 0.06 mg/g in all temperature sections and maintained the pH 7 range. The total phenol content, which is a nutritional component of onion peel beverage, was 0.93 mg/g, flavonoid content was 0.25 mg/g, and quercetin content was 0.17 mg/g. The flavonoid content decreased according to the storage period, and in the case of storage temperature of 25℃, it contained 50% content up to 120 days of storage, but in the case of 35℃ and 45℃, it had a flavonoid content up to 90 days and 30 days, respectively. In the case of quercetin, a residual rate of about 50% was shown for 150 days of storage at 25℃ and 35℃. In the case of 45℃, it decreased to 35% at 30 days of storage. On the other hand, onion peel beverage maintained a viable cell count of less than 5 CFU/mL for 150 days of storage, and no coliform group was detected. As a result of analyzing the quality characteristics of onion peel beverage according to storage period, quality stability was confirmed in physicochemical characteristics and microbiological safety. Research on changes in biological activity according to low-temperature distribution or storage period is necessary.

경남일부 성인에서 양파껍질 유래 건강기능식품 개발에 대한 소비자 인식 및 선호도 - 창원지역 성인을 중심으로- (Research on Perception of Health Functional Foods and Preference of Desired Onion Peel Products - Focused on adults in Changwon -)

  • The purpose of this study was to investigate the perception of health functional foods and preference for desired onion peel products. Questionnaires were distributed to 582 adults (34.2% male, 65.8% female) living in Gyeongnam province. The major information sources on biological effects of onions cited by respondents were TV/radio (37.1%), followed by nearby people (32.8%) and Internet (11.0%), in that order. Reducing cholesterol effect was the most important factor in terms of perception and concerns relating to biological function of onions. Over 73% of subjects had experience of eating processed onion products, and among all types of onion products, onion juice (53.5%) was the most frequently eaten. The most considered factors for processing onion peel-derived functional foods were taste & odor (29.6%), convenience of eating (28.9%), and nutrition value (27.1%), in that order.

전자선 조사와 양파껍질 추출물 및 향미물질 첨가가 돈육포의 미생물학적 및 관능적 품질에 미치는 영향 (Combined effects of electron beam irradiation and addition of onion peel extracts and flavoring on microbial and sensorial quality of pork jerky)

  • The objective of this study was to investigate the combined effect of electron beam irradiation (EB) and onion peel extracts and selected flavorings on microbiological and sensory quality of pork jerky. Total aerobic bacteria were detected in the range of $3.87{\pm}0.30{\sim}4.60{\pm}0.12$ log CFU/g in all samples. Addition of both onion peel extract and flavoring showed the decrease of total aerobic bacterial count in pork jerky. No viable cells were observed after EB at 4 kGy. Sensory evaluation indicated that the EB-treated pork jerky with 0.5% barbecue flavoring did not show any difference in overall acceptability compared with the control. Therefore, combined use of EB with onion peel extracts and barbecue flavoring may enhance the safety of pork jerky with proper sensory quality.

수은(水銀)이 Lactobacillus bulgaricus의 젖산 생성(生成)과 생육조해작용(生育阻害作用)에 대한 양파 추출물(抽出物)의 효과 (Effect of Onion Extracts on the Growth and lactic Acid Production of Lactobacillus bulgaricus in Medium Containing Mercury)

  • Onion extracts were tested for effects on the growth and lactic acid production of Lactobacillus bulgaricus in the medium containing mercury. The media containing mercury were added with onion extracts and inoculated with the bacterium and then incubated at $39^{\circ}$ for four days. All of the onion extracts examined increased the growth and lactic acid production of the bacterium in the medium containing mercury. At the addition of the edible portion extract of onion to the medium containing 5 ppm, 10 ppm and 20 ppm mercury, the higher the concentration of the onion extract was added, the greater the increasing effect on the growth and lactic acid production. The brown peel extract of onion increased the growth and lactic acid production of the bacterium in the medium containing mercury at all concentrations. The higher the concentration of the extract added, the more effective the increasing effect. The onion solutions of edible portion and brown peel extracted at $90^{\circ}\;to\;100^{\circ}$ showed more desirable effects than those extracted at the room temperature. Among four kinds of the onion extracts, the brown peel solution extracted at $90^{\circ}\;to\;100^{\circ}$ was the most effective in increase of the growth and lactic acid production in the medium containing mercury.

양파껍질 추출물 급여가 비만 유도쥐의 소장내 변화에 미치는 영향 (Supplementation Effect of Onion Peel Extracts on Small Intestine of Obese Mice)

  • 본 연구는 양파껍질을 발효주정 에탄올 70%와 95% 농도로 추출하여 항균활성, 항산화활성 및 비만쥐의 소화기관에 미치는 영향에 대하여 알아보고자 실시하였다. 각 주정 추출물 5%는 E. coli와 Listeria monocytogens에서 유의적인 감소를 나타내었다. 각 주정 추출물 내 총 페놀함량은 각각 $166.89{\pm}0.03$ mg/g과 $160.89{\pm}0.13$ mg/g을 나타내었다. 항산화효과를 살펴본 결과 DPPH 라디칼 소거능과 SOD 유사 활성은 100 ug/ml의 농도에서 높은 수준을 나타내었다. 고지방식이를 급여하여 유도한 비만을 유도한 마우스에 70%와 95% 주정으로 추출한 양파껍질 추출물을 1, 3, 5%의 농도로 4주간 급여한 후 체중, 사료섭취량, 사료효율, 소장무게, 길이 장내 융모의 길이, 소장 내 미생물수를 측정하였다. 각 주정으로 추출한 양파 추출물 5%의 농도로 급여하였을 때 대조군에 비해 체중이 유의적으로 낮은 수준을 나타내었으나(p<0.05) 사료섭취량은 증가함을 나타내었다. 실험동물 마우스 소장의 무게와 길이는 양파 껍질추출물 급여에 따른 유의적인 변화는 보이지 않았으나 소장 융모의 길이는 대조군보다 유의적으로 증가함을 나타내었다. 총균수, Cl.perfringenes와 E.coli는 5%의 농도로 양파껍질 주정 추출물을 처리했을 때 유의적으로 감소함을 나타내었으나 젖산균은 증가함을 나타내었다. 이러한 결과는 추후 부가적인 추가 연구가 필요하겠지만 70%와 95%의 주정으로 추출한 양파껍질 추출물을 5% 수준으로 이용하면 체중조절 첨가제로서 그리고 장의 건강을 증진시키기 위한 첨가제로 사용할 수 있는 잠재성이 있는 것으로 기대된다.

양파껍질을 이용한 우육포의 항산화 활성 및 품질 특성 (Antioxidant Activities and Quality Characteristics of Beef Jerky Supplement with Onion Peel Extract)

  • The objective of this study was to reduce the waste rate of onion peel, which has excellent functionalities, and to promote its industrial utilization. The methodology involved preparing beef jerkies using liquid seasonings with 0% (OPE0), 50% (OPE50) and 100% (OPE100) onion peel extract (OPE) of domestically produced onion, respectively; and assessing their antioxidant activities and quality characteristics. As the amount of added OPE increased, the contents of crude protein and crude ash increased, while those of crude fat decreased. As for color values, increase in the amount of added OPE led to increase in L value and b value, but decrease in a value. The measurement of mechanical texture showed that hardness and cohesiveness decreased as the amount of added OPE increased. TBARS (thiobarbituric acid reactive substance) content decreased as the amount of added OPE increased. And the amount of added OPE increased, all the antioxidant activity of beef jerky increased. Acceptability test showed the highest preference for OPE50 with regard to flavor, taste texture and overall acceptability. Quantitative descriptive analysis (QDA) showed that increase in the amount of added OPE led to increase in meat color, salty taste, sweet taste, meat flavor and chewiness and decrease in off-flavor. According to principal component analysis (PCA), OPE50 and OPE100 had high levels of the sensory attributes that increase preference-such as meat color, salty taste, sweet taste, meat flavor and chewiness. Based on such results, it was established that 50% is the optimal mixing ratio of OPE for preparing a beef jerky of high preference that also has excellent quality characteristics and antioxidant activity.

Antioxidant and Anticancer Properties of Methanolic Extracts from Different Parts of White, Yellow, and Red Onion

  • Antioxidant and anticancer effects of methanolic extracts from the flesh (WFME) and peel (WPME) of white onion, the flesh (YFME) and peel (YPME) of yellow onion, the flesh (RFME) and peel (RPME) of red onion were studied. The content of total phenolics in WFME, WPME, YPME, YFME, RPME, and RFME were $0.260{\pm}0.01$, $4.480{\pm}0.23$, $0.319{\pm}0.02$, $719.12{\pm}37.36$, $0.248{\pm}0.01$, and $806.21{\pm}26.38\;mg/g$, respectively. The quercetin content of WFME, WPME, YFME, YPME, RFME, and RPME were $12.56{\pm}0.19$, $3.57{\pm}0.14$, $15.24{\pm}0.65$, $755.29{\pm}22.24$, $5.70{\pm}0.23$, and $774.03{\pm}29.48\;mg$/100 g, respectively. Like total phenolics, the highest 2,2'-diphenyl-1-picrylhydrazyl (DPPH) scavenging activities were found in RPME. However, inhibitory effects on lipid oxidation of RPME were similar to those of WPME and YPME. In addition, inhibitory effect of WPME, YPME, and RPME for human breast cancer cell (MCF-7) growth were 78.43, 81.90, and 96.52% while those on human prostate cancer cell (LNcap) were 71.58, 77.93, and 98.47% at $100{\mu}g/mL$, respectively. Total phenolics, quercetin content, antioxidant, and anticancer activities exhibited significant variation among the 3 onion varieties in this experiment. Therefore, it is assumed that antioxidant and anticancer activities were affected by the total phenolics and quercetin level of onion.

고지방식이를 섭취한 흡연 흰쥐모델에서 양파껍질 추출물의 혈액지질 대사 개선 효과 (Hypolipidemic Effect of Onion Peel Extract in Rats Exposed to Cigarette Smoke Extract with a High-Fat Diet)

  • 본 연구에서는 양파껍질 추출물이 흡연동물모델에서 고지방식이로 유도된 고지혈증의 혈액지질 대사에 어떤 영향을 미치는지를 조사하였다. 흡연모델을 유도하기 위하여 담배연기(CS) 추출액을 공급하였으며, 일반식이를 공급받는 동물군을 대조군(CT), 일반식이와 담배연기 추출액을 공급받는 동물군을 대조흡연군(CT+CS), 고지방식이를 공급받는 동물군을 고지방식이군(HF), 고지방식이와 담배연기 추출액을 공급받는 동물군을 고지방흡연군(HF+CS), 고지방식이와 담배연기 추출액과 더불어 양파껍질(OP) 추출물을 공급받는 동물군을 고지방흡연양파군(HF+CS+OP)으로 6마리씩 5그룹으로 나누어 6주간 사육하였다. 실험 시작 전, 3주, 6주에 혈액을 채취하였다. 6주 동안 양파껍질 추출물의 공급으로 혈액 중성지방, 총콜레스테롤, non-HDL-콜레스테롤 농도는 HF군과 HF+CS군에 비해 유의적으로 감소하는 경향을 나타냈다. 또한 HF+CS보다 HF+CS+OP에서 혈액의 AST, ALT 농도가 유의적으로 감소한 것으로 나타났다. 본 실험을 통해 양파껍질 추출물의 공급이 담배연기 추출액과 고지방식이로 증가한 혈중지질 수준과 간 기능 지표 수준을 개선하는 것을 확인하였다. 이러한 지표들을 바탕으로 양파껍질의 섭취는 흡연자들의 간 기능 손상과 고지혈증 증상을 완화할 수 있을 것으로 판단된다.

  • In order to development of culture goods I made works with various color's silk fabrics dyed with water extract or methanol extract of plants. The Plants used for dyeing as dyeing material were indigo, safflower, amur cock tree, onion's Peel, citrus peel, mugwort, gromwell, sappan wood. Each of Plants were extracted by each of temperature and time. The mordants used for various color chanties are aluminium sulfate, cupric acetate mono hydrate, ferrous chloride. With fabrics of various color dyed like this I made works which give expression to an easy and natural image of the Korean nation of fabrics.
