This study was conducted to investigate the effects of chemical treatments and electric and magnetic field treatments on germination and seedling growth of onion (Allium cepa L.). Germination ratios of the onion seed were not much different among the tested species. However, germination ratio was much higher in species of small and medium size seed than that of large one. Moisture content of the seeds was shown to be more suitable in the range of 10-15% for seed germination compare to that of 20%. The germination ratio of onion seeds was found to be increased by the chemical treatments in the order of GA<$NaNO_3$<$KNO_3$. In particular, the treatments with 0.1 and 0.2% $KNO_3$ increased the germination ratio by 13 and 15% compared to that of the non-treatment. The seeds treated with electric or magnetic field resulted in much higher germination ratio and better initial growth. Germination ratios of 86 and 88% were found in the 10 kV and 4 Gauss treatments, respectively. The length and weight of the seedlings grown for 40 days after transplanting were increased by 23-45% with 8 kV and 12 Gauss treatments compared to those of non-treatment.
This study was intended to evaluate the relationship environmental condition and growth characteristics of seed treatment seed in direct sowing with different sowing date, and to suggest new cultivation model. The emergence percentage and hours were down as the delayed sowing date. Optimum sowing time was Sep. 10, and sowing must end before Sep. 20 for safety yield. When did sowing ended before Sep.20 in direct sowing cultivation, the seedling growth(SG) and No of roots of direct sowing seedling were larger than transplanting cultivation . At March 8 evaluated seedling, the SG of direct sowing seedling was higher than transplanting, and at Sep. 2(1 those were similar. The missing plant rate in transplanting cultivation was under 3 %, and that in direct sowing cultivation was about 13∼18%, and the extent were sever as delayed sowing date. The bulb fresh weight was decreased as delayed sowing, and those in direct sowing and transplanting cultivation were 230, 217g, respectively. The blot rate was high in direct sowing cultivation, and that was decreased as delayed sowing. The yield in direct sowing and transplanting cultivation were 5,134, 5,300kg, respectively, and those were decreased as delayed sowing. The average yield in early and medium-late maturity cultivars were 3,750, 4,908kg, respectively, and Sonic was highest yield in early maturity cultivars and Nongwoodego was highest in medium-late maturity cultivars. Volatile flavor compounds of onions were analyzed and compared during storage at $0.5^{\circ}C$, which harvested in 6 regions, such as Muan, Buan, Andong and 3 regions of Changnyeong (Yueo, Jangma and Seongsan). A total of 45 compounds were detected in samples by solid phase microextraction (SPME)/GC/MSD, consisting mainly of sulfur-containing compounds (21), aldehydes (13), ketones (2) and miscellaneous compounds (9). The sulfur-containing compounds were major compounds with ranges of $66.9{\sim}86.9%$ of total volatiles in 0 day of storage as regardless of harvested regions. Three regions (Yueo, Seongsan and Muan) had high amounts of over 4,043 ng/g in 0 day of storage, whereas 2 regions (Muan and Yueo) only had amounts of over 2,400 ng/g after 60 days of storage. Five sulfur-containing compounds known as having antioxidant activity (2,4-, 2,5-dimetylthiophene, 2-vinyl-1,3-dithiane, 5-methoxy thiazole and 3,5-diethyl-1,2,4-trithiolane and isomer) were the high levels in 3 regions (Yueo, Seongsan and Muan) during 60 day of storage. These 3 regions had also the highest amounts in 5 sulfur-containing compounds known as having anticarcinogenic activity ((Z)-, (E)-methyl propenyl disulfide, (Z)-, (E)-propenyl propyl disulfide, and di-2-propenyl disulfide) and kept same trend after 60 days of storage.
Shallot is a foreign crop introduced from France in 1995 as a new overwintering field crop with an aim to develop as an export crop. During the introductory cultivation trials, several problems were raised such as premature growth depression in early summer, sensitivity to summer moisture, and weakened vigor of the seed bulbs following successive propagations. This study was conducted to develop proper cultural methods based on annual productivity and adaptability of growing area to address and suggest solutions to some of these problems. Bulb weight was 18.7 g and bulb yield per 10a was 4,113 kg in 1995. In 1996, bulb weight increased to 25.8 g, while bulbs yield per 10a deceased to 2,013 kg. This trend continued in 1997 so that bulb weight increased, and yield per 10a decreased as compared to those in 1996. However, in 1998, both bulb weight (21.1 kg) and yield per 10a (1,246 kg) decreased significantly as compared to those of the previous years. Plant growth from planting to April in the coastal area was better than in other areas. However, the plant growth thereafter until early July was better in the semi-highland area. As a result, the bulb yield in the semi-highland area was 57% more than that in the lowland areas such as the coastal area.
One hundred thirty nine bacteria were isolated from rotten onions collected from main producing districts, Chang-Nyung, Eui-Ryung, and Ham-Yang in Korea. The $18\%$ (25 strains) of bacterial isolates have carboxymethylcellulase (CMCase) activity and the $53\%$ (74 strains) have polygalacturonase (PGase) activity. Thirty one among randomly selected 45 strains of PGase producing bacteria have pathogenicity to onions. The isolates were classified into Pseudomonas sp. (18 strains), Bacillus sp. (11 strains), Yers-inia sp. (7 strains), and others (9 strains) on the basis of FAMEs patterns. Eighteen strains of Pseudomonas sp. were mainly divided into three cluster in the dendrogram and only the two clusters of them showed pathogenicity to onions. CMCase and PGase activities of Pseudomonas sp. weaker than those of Bacillus sp.. However, the pathogenicity of pseudomonas sp. to soften onions was stronger than that of Bacillus sp. Inoculation of $10^{2}$ cfu of Pseudomonas sp. gives rise to softening of onions. Pseudomonas sp. was identified as Pseudomonas gladioli by biochemical and physiological characteristics. P. gladioli is the first reported bacterium as a pathogen of onion in Korea. In low temperature, P. gladioli showed better growth and higher PGase activity than those of Bacillus sp. identified as Bacillus subtilis. And pH 9.0 is optimal pH for PGase activity of B. subtilis while that of P. gladioli is pH $5.0\∼6.0$ which is the acidity of onions. Taken together, P. gladioli may be a main pathogene of onion rot during the cold storage condition.
Central composite design along with response surface methodology (RSM) was applied to improve the fermentation process in onion (Allium cepa) wine production. The effects of different fermentation parameters (time, temperature, and initial sugar content) were found to be significant with respect to the physicochemical and sensory properties of wine. The maximum score for the alcoholic content was obtained at $29.27^{\circ}C$ fermentation temperature, 103.43 h fermentation time, and $27.52^{\circ}Brix$ initial sugar content. The maximum score for overall palatability was obtained at $39.27^{\circ}C$ fermentation temperature, 57.28 h fermentation time, and $22.14^{\circ}Brix$ initial sugar content. The coefficients of determination ($R^2$) were 0.9620 and 0.9060 for alcoholic content and overall palatability, respectively. The ranges of the optimum fermentation conditions ($28{\sim}32^{\circ}C$, 80~90 hr, and $20{\sim}25^{\circ}Brix$) were obtained by superimposing the response surfaces with regard to the alcoholic content and overall palatability of onion wine.
The aim of this study was to investigate the effect of supplemental lighting with different lighting intensity during growth on the sugar and pyruvic acid content of onion bulbs. As the result of comparison with growth, the content of pyruvic acid and sugar at harvest, supplemental lightening condition showed better growth, lower pyruvic acid content and higher sugar content than control. As to the growth at harvest according to lightening condition, 'Josaeng-ssundeobol' showed better growth as the lightening increased and 'Damrojunggab' had no difference above $12{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR. 'Josaeng-ssundeobol' contained much more content of pyruvic acid and sugar than 'Damrojunggab'. 'Josaeng-ssundeobol' had the lowest pyruvic acid content in $24{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR and 'Damrojunggab' had no difference above the $12{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR. The sugar content of 'Josaeng-ssundeobol' had no big difference above $18{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR and that of 'Damrojunggab' had no big difference above $12{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR. Desirable indicator to select individuals for the onion breeding is to select individuals that has low pyruvic acid content and high sweetness. Therefore, it will be possible to produce sweet onion conditioned on light supplement over $18{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR in 'Josaeng-ssundeobol' and over $12{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ PAR in 'Damrojunggab'.

The present paper was investigated to elucidate the nitrite-scavenging ability of vegetable extracts. Vegetable extracts possessed the scavenging ability of nitrite. By fractionatioh of vegetable extracts,nitrite-scavenging ability of garlic (Allitum sativum for. Pekinense), chinese pepper (Zanthexylum schinifolium), onion (Allium cepa), welsh onion (Allium fistulosum) and ginger (Zingiber officinale) extracts were effective in the water-soluble fraction, but carrot (Daucus carota uar. sativa) in the methanol-soluble fraction. Nitrite-scavenging ability of vegetable extracts was also pH-dependent, highest at pH 1.2 and lowest at pH 6.0. Particularly, nitrite-scavenging abilities of water-soluble fractions obtained from garlic and chinese pepper were similar to that of L-ascorbic acid at pH 1.2. After vegetable extracts were treated with sodium borohydride, nitrite-scavenging ability was remarkably decreased at pH 1.2. It is assumed that reducing powers of vegetable extracts participated in their nitritescavenging abilities.
This study was conducted to determine the optimal working conditions when a recently developed blower-type onion stem cutter is utilized for cutting onion leaves at harvest time. The June 20 leaf cutting treatment group had the highest leaf dryness among the treatment groups (leaf dryness: 66.3%; leaf moisture content: 50.5%); the residual leaf length was 6.7 ± 3.5 cm. It is considered to have the best mechanical leaf cutting performance among the treatment groups because it is included in the optimal range of 4-10 cm. The average working speed of mechanical onion leaf cutting using the stem cutter was 0.17 m·s-1, which is approximately 3.4 times faster than the average working speed of 0.05 m·s-1 in the human leaf cutting treatment group. This is expected to save approximately 2.6 hours compared to human labor (based on one person) when working on a 10a area using this machine. In addition, the incidence of damaged bulbs in the machine leaf cutting treatment group was 1.3%, compared to 0.0% in the manual leaf cutting treatment group. This suggests that the mechanical leaf cutting treatment group had a higher average onion bulb decay rate during storage than the manual leaf cutting treatment group. When the storage characteristics of each treatment group were examined, the decay rate by bulb part (leaf connected or root connected) after 8 months of storage was higher in the treatment group with a residual leaf length of less than 5.0 cm after mechanical leaf cutting than in the treatment with a residual leaf length of more than 5.0 cm. This is thought to be due to the fact that treatments with a residual leaf length of less than 5.0 cm are more susceptible to infection by pathogens that cause decay during storage than treatments with a residual leaf length of 5.0 cm or more. Based on the results of this experiment, performance target of the experimental machine (residual leaf length after operation: 5 cm), and existing research on the optimal residual leaf length for onion harvesting, it is recommended to cut onion leaves so that the residual leaf length is 5-10 cm when using the stem cutter.

To examine the cognitive function of onion (Allium cepa L.) beverages (odourless and fortified), we analyzed in vitro neuronal cell protection against $H_2O_2$-induced cytotoxicity and performed in vivo tests on amyloid beta ($A{\beta}$)-induced cognitive dysfunction. Cellular oxidative stress and cell viability were evaluated by DCF-DA assay and MTT assay. These results show that fortified beverage resulted in better neuronal cell protection than odourless beverage at lower concentration ($0{\sim}100{\mu}g/mL$). Fortified beverage also showed more excellent acetylcholinesterase (AChE) inhibitory activity ($IC_{50}$: 4.20 mg/mL) than odourless beverage. The cognitive functions of odourless beverage and fortified beverage in $A{\beta}$-induced neurotoxicity were assessed by Y-maze, passive avoidance, and Morris water maze tests. The results show improved cognitive function in both groups treated with beverages. After in vivo tests, cholinergic activities were determined based on AChE inhibition and acetylcholine levels, and antioxidant activities were measured as SOD, oxidized glutathione (GSH)/total GSH ratio, and MDA levels in mouse brain tissue. In a Q-TOF UPLC/MS system, main compounds were analyzed as follows: odourless beverage (five types of sugars and three types of phenolics) and fortified beverages (six types of phenolics and two types of steroidal saponins).
