1. The major components of Omija were found as moisture (16.12%) crude fat (10.5%) crude protein (8.66%) crude ash (3.47%) reducing sugar (5.32%). 2. Omija jelly receipe were summarized as follow; (1) 5% of gelatin concentration was shown to be the most desirable. (2) 15% of sugar concentration was shown to be the most desirable. (3) 12, 15, 18 hrs. of extract time was not significantly different in Omija extract. (4) It was the most desirable for 30g of Omija to boil during 30 minutes in boiling Omija extract. 3. Result of Omija jelly by Instron that Hardness, Adhesiveness, Gumminess tend to increase as the addition level of gelatin concentration increased but Cohesiveness was changed irregularly. 4. Appearance of Omija jelly had significant relationship with Cohesiveness by gelatin concentration and texture of Omija jelly had significant relationship with Adhesiveness by gelatin concentration. 8. Appearance of Omija jelly had significant relationship with Cohesiveness and texture of Omija jelly had significant relationship with Gumminess by boiling Omija extract.
In order to improve the quality and preservation of nabakkimchi, omija was added as an ingredient to determine its effect on the physicochemical characteristics of kimchi during fermentation, as well as the optimum level of omija extract. Omija extract was prepared from omija seeds by extraction with water for 9 hr at room temperature in concentrations (w/v) of 0.5, 1.0, 1.5, and 2.0% for use as an ingredient in nabakkimchi. The physicochemical characteristics of nabakkimchi containing omija extract were analyzed during fermentation of the product for up to 25 days. Delayed fermentation was observed, particularly in the early stage of fermentation, and was dependent on the concentration of the omija extract, as shown by stabilization of pH decreases and increases in the total acidity. An increased concentration of omija extract also raised the initial total vitamin C content and the reducing sugar content, which both then stabilized thereafter. Delayed development of turbidity within the optimum fermentation period of 16 days, increased redness and total color difference, and an electron-donor effect were also promoted by the omija extract. However, the omija extract also triggered extra tannin production, which leads to an astringent taste, especially at the 1.5 and 2.0% treatment levels.
This study was conducted to investigate the antioxidant activity of Kochujang following the addition of Omija (Schizandra chinensis Baillon) by-product extract powder. This study specifically investigated the total levels of phenolics and flavonoids, the activities of DPPH and ABTS radical scavenging, and FRAP (ferric reducing antioxidant power). Our results showed that the total phenolic and flavonoid contents of unmodified Kochujang were 4.06 mg TAE/g and 2.87 mg TAE/g, respectively, and that the total phenolic and flavonoid contents of Kochujang with added Omija by-product extract powder were 3.89~5.19 mg TAE/g and 3.11~5.35 mg TAE/g, respectively. As more Omija by-product extract powder was added, the more the total levels of phenolic compounds and flavonoids increased. This study found that DPPH radical scavenging activity in unmodified Kochujang was 25.8% and that in Kochujang with added Omija by-product extract powder was 27.1~39.7% each. These results indicate that Omija by-product extract powder has possibility not only in Kochujang products but also as a functional food with antioxidant activity characteristics. These results also indicate that adding Omija by-product extract powder to Kochujang had significant effects on overall acceptability. Thus, the addition of 5 or 10% of Omija by-product extract powder is desirable for making Kochujang.
This study used Omija extract as a natural congelation to compare and analyze soybean curd's physicochemical and sensory quality characteristics in order to improve functional benefits and taste of soybean curd. When Omija extract concentration increased, protein content went up considerably while crude fat and yield significantly decreased. In the pH change, the group with Omija extract were lower than control and the change was not much noticeable but slightly checked as the storage period was extended. The turbidity tended to increase as the storage period was longer. In the acidity change, the group with 0.5% Omija extract showed rapid increase on the 4th day after starting storage, and it can be interpreted that decomposition started at the moment. As the storage period was extended, brightness and yellowness remarkably decreased and redness considerably enhanced: higher concentration Omija extract worked to decreased brightness and to increase yellowness and redness. In accordance with the storage period, hardness, brittleness and gumminess increased and springness decreased, but there was no considerable change in cohesiveness: in accordance with the concentration, hardness, brittleness and gumminess significantly increased, but there was no considerable change in cohesiveness. In terms of sensory quality, the group with 1% of Omija extract showed the best appearance, flavor, taste and after swallowing results. The group with 1% Omija extract was the most preferred, $4.89{\pm}0.32$ in the overall preference. In conclusion, adding Omija extract can improve soybean curd's physicochemical and sensory quality characteristics. Moreover, the extracts can be expected to play an important role in encouraging Omija's value and widening its appliances to various food.
The protective effect of omija methanol extract on benzo(a)pyrene induce liver injury was studied in rats in vitro and in vivo. In vitro experiment, primary cultured hepatocytes(5${\times}$105cells/$m\ell$) were cultured for 20∼24 hours after adding omija methanol extract(5.1$\mu\textrm{g}$/$m\ell$) and B(a)P(50$\mu\textrm{m}$) in culture medium. In vivo experiment, omija methanol extract(0.1g/kg/day, per os) was administered for 7days and B(a)P(0.1mg/kg body weight, intraperitoneally) was given to the rats after the last administration of extract. Omija methanol extract significantly recovered serum enzyme activities(AST, ALT and LDH) and lipid contents(total cholesterol, triglyceride and HDL-cholesterol) changed by benzo(a)pyrene (B(a)P) to normal levels in vivo. In vitro experiment, as a result of 3-(4, 5-dimethlythiazol-2-yl)-2, 5-diphenyl tetrazolium bromide(MTT) assay, omija methanol extract showed a little hepatotoxicity compared with group I (normal) but significantly recovered enzyme activities(AST, ALT and LDH) changed by B(a)P in comparison to group IIadministered B(a)P only. It was suggested that omija methanol extract has a protective effect on liver injury induced by B(a)P.
Omija component was known to possess natural odor, taste, color, and various general characteristics. Omija extraction was extracted using ethanol as a solvent. Omija extract showed a red-purple color of some viscous liquid state. Some conclusions from natural Omija extract were obtained as follow. The result of antimicrobial experiment to add Omija extract, the number of microbial population showed negative reaction from 3 days after it cultivated. This phenomenon could confirm that Omija component affected to antimicrobial effect. The result of dyeing experiment to add Omija extract, fiber dyeing effect showed with some ivory color after dyed to cotton and silk. Also, this phenomenon could confirm that Omija component affected to natural dyeing effect from observated dye state with biological microscope(BM). The result of instrumental analysis, inorganic components of K(109.60ppm), Na(3.500ppm), Ca(1.205ppm), Mg(0.900ppm), Li(0.350ppm), Si(0.380ppm), Cu(0.250ppm), Fe(0.125ppm), Zn(0.090ppm), etcs from Omija were ascertained with ICP/OES, and organic components of benzene(10.808), borny lacetate(11.289), phenol(14.183), ${\beta}$-terpinene(15.840), ${\alpha}$-terpinolene(17.616) etcs from Omija were ascertained with GC/MSD.
This study was carried out to investigate the possibility of improving the texture and the flavor of Dasik made of the Omija extract, various sugars and rice powder. Sensory quality and mechanical characteristics of Dasik were compared. The moisture content of the Croup of tile Dasik added with Omija extract was higher than that with non-Omija extract The Omija Dasik containing molasses showed the highest value (23.5%) in moisture content. In sensory quality, Omija Dasik containing honey and symp showed the highest score in overall acceptability (6.2 and 6.0, respectively). The Rice Dasik containing syrup showed the highest values in lightness (L) and yellowness (b) in color. The Omija Dasik containing syrup showed the highest values in redness (a) in color. The Dasik added with honey and syrup were lower in hardness, but higher in cohesiveness, springiness, gumminess and brittleness of textural characteristics. When sensory quality and mechanical characteristics of the Dasik were compared with, the gumminess and brittleness in mechanical characteristics were positively correlated with the appearance and the taste acceptability in sensory quality (p<.01, p<.05). The springiness was negatively correlated with the tooth packing in sensory quality (p<.001). The Omija Dasik was more desirable in flavor, taste and overall acceptability, especially those added with honey and syrup. From the above results, the honey might be replaced by the less expensive syrup, when making the Omija Dasik.
This study attempted to examine the effect on sensory characteristcs and physiochemical properties of Omija jelly in various volume of adding carrageenan. The pH of Omija extract was 3.02. The viscosity was increased and the turbidity was decreased according to the increase concentration Omija extract. the sensory evaluation of Omija jelly was the best with the ratio 0.5% carrageenan.
The objective of this study was to determine current consumer awareness of Omija (Schizandra chinensis Bailon) fruit in order to develop ready-to-drink (RTD) Omija-flavored beverages using qualitative consumer analysis. A series of four different focus group interview sessions were conducted using carefully chosen consumers with specific demographics, and each group involved eight respondents. Consumer's qualitative reactions regarding Omija fruit, Omija extract products, ready-to-drink beverages and Omija-flavored RTD beverages were explored. Distinct differences in consumer awareness and consumption patterns of Omija extract and RTD beverages were observed between consumers in their 20s and consumers in their 30s to 50s. The expected sensory characteristics of Omija-flavored RTD beverages were also different based on participants' age. Findings from the current study can aid product developers utilizing Omija fruit by providing valuable insights into current consumer behavior and consumer awareness regarding Omija.
녹두전분, 동부전분, 옥수수전분 등 3종류의 전분을 증류수 또는 오미자추출액에 분산시켜 겔을 제조하여(각각 전분젤리, 오미자젤리라 칭함) RVA에 의한 점도특성, 겔의 색도, 이수율, 파단특성 및 TPA특성의 텍스쳐특성을 조사하고, 관능검사를 실시하였다. 점도특성은 오미자추출액분산 전분현탁액의 호화온도가 세 전분 모두 상승하여 오미자추출액이 호화를 지연시키는 것으로 나타났으나 최종점도가 저하하여 전분의 결정화가 억제되는 것으로 나타났다. 또한 동일 농도에서 비교하면 세전분 중에서 옥수수전분의 점도치가 가장 낮아서 녹두, 동부전분보다 더 높은 농도로 사용해야함을 나타내었다. 색도는 옥수수전분겔의 L값이 가장 높아 백색도가 가장 높은 것을 나타내었으며, 이수율은 오미자젤리의 이수율이 전분젤리보다 저하하여 오미자추출액이 전분겔의 안정성을 높여주는 것을 나타내었다. 텍스쳐 특성은 오미자 젤리는 파단응력, 파단변형 등의 파단특성이 전분젤리보다 감소하여 오미자추출액에 의해 겔이 약화되고 탄력성이 적은 겔로 되며, 부착성이 커져서 끈적임이 커지는 것을 나타내었다. 옥수수전분의 오미자젤리는 응집성이 낮으면서 부착성이 커서 풀과 같은 텍스쳐를 나타내었다. 관능적 특성은 기계적 특성과 대체로 일치하는 경향이었으며, 전반적 바람직성은 녹두전분 7, 8%, 동부전분 8, 9%에서 높았으며 옥수수전분은 모든 농도에서 전반적 바람직성이 떨어졌다. 이상의 결과로 오미자젤리 제조시 녹두전분 사용시는 7, 8%, 동부전분 사용시는 8, 9%의 농도가 적당하며, 옥수수전분 사용시는 텍스처를 개선시킬 수 있는 방도가 필요하다고 생각되었다.
