A Study on the Various Characteristics of Ultrasonic-Energy-Added W/O Type Emulsified Fuel ( I ) - attaching importance to stability and spray characteristics - (초음파에너지 조사 W/O type 유화연료의 제반특성에 관한 연구(I) - 안정성 및 분무특성을 중심으로 -)

  • This study is concerned about the characteristics of ultrasonic-energy-added W/O type emulsified fuel. The distilled water was mixed with diesel oil by using ultrasonic energy fuel feeding system and then the SMD of sprayed droplets was measured to find out atomization characteristics of emulsified fuel by using the Malvern 2600 system. The capacitance value was measured to verify stability of the same specimen by using the digital LCR meter, EDC1630 additionally. The main results are as follows; 1) The more measuring distance increases between one hole nozzle tip and analyser bearm, the more SMD increases. 2) The more water content increases, the more capacitance value increases depending on the time. Main Parameters of the study are the amount of water content $0{\sim}30%$ by 5% in emulsified fuel, and the measurement distance, $20{\sim}140mm$ by 10mm or 20mm between nozzle tip and analyser beam.

A study of Stability of Emulsion Fuel (에멀젼 연료의 안정성에 대한 연구)

  • In this study, emulsion fuel which contained water of 10 ~ 20% was prepared mixed with water and MDO(Marine Diesel Oil) which largely used in near sea. Diffusion stability of emulsion fuel was measured. Diffusion stability was measured at 30℃, 45℃, and 60℃ for 10 days respectively. The stability of the emulsion fuel was stabilized in the order of MDO-10 > MDO-13 > MDO-16 > MDO-20 and it means that the stability of the emulsion fuel was found to be stable in the order of low water content. Meanwhile, an engine dynamo-meter was used to test whether the manufactured emulsion fuel was actually available in the engine. The emulsified MDO emulsion fuel could be used as fuel for ships. For samples with more than 16% water added emulsion fuel, smoke was reduced by more than 50% in the load area of more than 50%, and nitrogen oxides were reduced by 20%.

Sensory and Physical Characteristics of Hwajeun Depended on the Various Levels of Oil Amounts and frying Time (기름의 양과 지지는 시간에 따른 화전의 관능적 및 물리적 특성)

  • The aim of this study was to standardize the various methods and recipes of Hwajeun (glutinous rice pancake with flower) appeared in the literature. For this purpose, the effects on the sensory and rheological characteristics of Hwajeun in terms of the various levels of oil and frying times were investigated. This experiment consisted of a sensory evaluation in terms of the acceptance (color, flavor, oily feeling, softness, chewiness, adhesiveness, taste and overall preference) and objective evaluation performed by a texture analyzer, a color difference meter and measurements of the water content and oil absorption. The moisture content of the treatments as a function of the frying time, S7, showed a significantly(p<0.01) low value, and the oil absorption of the Hwajeun made with different frying times increased in proportion to the increment of the frying time(p<0.001). In terms of color, the b value of the Hwajeun made with 16g oil for frying showed a higher value than the others. In the two bite compression test, the hardness of the Hwajeun made with 4g oil for frying showed a significantly (p<0.001) high value among the S2 and S3 samples. As a result of the sensory evaluation for the Hwajeun made with various amounts of oil and frying times, the Hwajeun made with 16g oil for frying and a 2 min frying time for each side (S6) was the most preferred in terms of the softness, chewiness, taste and overall preference of the sensory evaluation

Comparison of Characteristics Related with Soybean Sprouts between Glycine max and G. soja (콩의 재배종과 야생종의 콩나물관련 특성)

  • Soybean sprout trails were evaluated for soybeans for sprout (Glycine max) and wild soybeans (Glycine soja). Soybeans for sprout are characterized with small seed size of 10-14 grams per 100 seeds and are traditionally used only for producing sprouts. No difference was observed in hypocotyl length and sprout yield between two types of soybean. (However total length, hypocotyl hypocotyl, body weight, and the rate of good quality were greater in soybeans for sprout.) Number of lateral roots and root length were greater in wild soybeans. Contents of crude oil, oleic acid, and sucrose were higher in soybean for sprout, while that of protein and linoleic acid were higher in wild soybeans. There was no difference in sprout isoflavone content. Out of 17 amino acids analyzed, 10 amino acids such as aspartic acid, lysine, and arginine. etc. showed significantly Higher content in wild soybeans. Hypocotyl color of sprouts estimated by color meter based on the degree of L(brightness), a(red), and b(yellow) values were better in wild soybeans than soybean for sprout.

Standardization of the Preparation Methods for Hwajeun (I) - focused on the volume and temperature of water added- (화전 조리법의 표준화를 위한 조리과학적 연구 (I) - 첨가하는 물의 양과 온도를 중심으로 -)

  • The purpose of this study was to develop a standardized recipe of Hwajeun(glutinous rice pancake with flower) by evaluating various methods appeared in the literature. For this purpose, the effects of the volume and temperature of water used to make dough on the sensory and rheological characteristics of Hwajeun were investigated. This experiment consisted of sensory evaluation in acceptance and intensity(appearance, color, moistness, softness, chewiness, adhesiveness, taste and overall preference), objective evaluation by using texture analyser, color difference meter and measurement of water content and oil absorption ratio. The loss ratio of moisture contents between dough and cooked Hwajeun were 2.4 ~2.8%, and the oil absorption ratio of Hwajeun made by 2$0^{\circ}C$water for kneading increased in proportion to the increment of water added(p<0.01). In terms of color, b value of Hwajeun made by 104$^{\circ}C$ salted water for kneading showed higher value compared to the others. In the two bite compression test, adhesiveness, springiness, gumminess and chewiness of Hwajeun made by 2$0^{\circ}C$ water(36%) for kneading showed significantly(p<0.05) high value among the samples. As a result of sensory evaluation, Hwajeun made with 27% of 104$^{\circ}C$ salted water for kneading was most preferred in softness, chewiness, taste and overall preference

Effect of Solvents Washing on Chemical and Physical Properties of Dried Soymilk Residue (용매처리에 의해 건조(乾燥)된 두유(豆乳)비지의 이화학적 성질(性質)에 관한 연구(硏究))

  • Soymilk residue was washed separately with acetone, ethanol, isopropyl alcohol and n-hexane, and then dried at $45^{\circ}C$. The dried residues were evaluated for drying rate, color and chemical and functional properties. Washing with acetone resulted in the shortest drying time (1hr) and the highest in protein content (48.8%) and in Hunter 'L' value. The dried residues after treatment with acetone and alcohols showed relatively high values of 4.3-4.7g/g and 8.5-8.7g/g in oil and water absorption, respectively. Addition of the acetone treated residue to wheat flour at a level of 10% affected little in Amylograph viscosity while those treated with other solvents caused a significant decrease in the viscosity.
