Nutritional Characteristics of the Major Commercial Frozen Seafood Products in Korea (국내 시판 주요 냉동수산식품의 영양 특성)

  • We investigated the nutritional components of the major commercial frozen seafood products (MCFSP) [sliced frozen-skipjack tuna (ST), -bigeye tuna (BET), -bluefin tuna (BFT), -yellowfin tuna (YT), fish steaks (FST), fish pancakes (FP), fish cutlets (FC), seafood cake balls (SCB), fried shrimp (FS), shrimp patties (SP), shrimp cutlets (SC)] in Korea. All species of sliced frozen tuna and FST were classified as low-calorie foods; the other frozen seafood products were classified as medium-calorie foods. The MCFSP were significant sources of nutritional and functional minerals: the SCB and SC provided calcium; the FST, FC, and SCB provided phosphorus; the BET, YT, and FST provided potassium; the FST, FC, and BFT provided magnesium; the FST, FP and SC provided iron; the SCB, FS, SP, and SC provided zinc; the YT and SCB provided copper; and the FC provided manganese. The total amino acid contents of the MCFSP were in the range of 6.85-26.34 g/100 g. Glutamic acid was the major amino acid in the SCB, FS, SP, and SC. Fatty acid contents were in the range of 386-2,925 mg/100 g; the major fatty acids in the ST, BFT and YT were 16:0, 18:1n-9, 22:6n-3. The MCFSP were not a significant source of vitamin A or riboflavin.

Effect of lactic acid bacteria and yeast supplementation on anti-nutritional factors and chemical composition of fermented total mixed ration containing cottonseed meal or rapeseed meal

  • Objective: This study aimed to determine the appropriate supplementation level of lactic acid bacteria (LAB; Lactobacillus plantarum and Bacillus clausii), yeast (Saccharomyces cariocanus and Wickerhamomyces anomalus) for degrading free gossypol and glucosinolate in the fermented total mixed ration (TMR) containing cottonseed meal (CSM) or rapeseed meal (RSM), to improve the utilization efficiency of these protein sources. Methods: For LAB, L. plantarum or B. clausii was inoculated at 1.0×108, 1.0×109, 1.0×1010, and 1.0×1011 colony-forming unit (CFU)/kg dry matter (DM), respectively. For yeast, S. cariocanus or W. anomalus was inoculated at 5×106, 5×107, 5×108, and 5×109 CFU/kg DM, respectively. The TMR had 50% moisture and was incubated at 30℃ for 48 h. After fermentation, the chemical compositions, and the contents of free gossypol and glucosinolate were determined. Results: The results showed that the concentration of free gossypol content was reduced (p<0.05), while that of the crude protein content was increased (p<0.05) in the TMR containing CSM inoculated by B. clausii (1×109 CFU/kg DM) or S. cariocanus (5×109 CFU/kg DM). Similarly, the content of glucosinolate was lowered (p<0.05) and the crude protein content was increased (p<0.05) in TMR containing RSM inoculated with B. clausii (1×1010 CFU/kg DM) or S. cariocanus (5×109 CFU/g DM). Conclusion: This study confirmed that inclusion of B. clausii with 1.0×109 or 1.0×1010 CFU/kg DM, or S. cariocanus (5×109 CFU/kg DM) to TMR containing CSM/RSM improved the nutritional value and decreased the contents of anti-nutritional factors.

S5 Lipase : An Organic Solvent Tolerant Enzyme

  • In this study, an organic solvent tolerant bacterial strain was isolated. This strain was identified as Pseudomonas sp. strain S5, and was shown to degrade BTEX (Benzene, Toluene, Ethyl-Benzene, and Xylene). Strain S5 generates an organic solvent-tolerant lipase in the late logarithmic phase of growth. Maximum lipase production was exhibited when peptone was utilized as the sole nitrogen source. Addition of any of the selected carbon sources to the medium resulted in a significant reduction of enzyme production. Lower lipase generation was noted when an inorganic nitrogen source was used as the sole nitrogen source. This bacterium hydrolyzed all tested triglycerides and the highest levels of pro-duction were observed when olive oil was used as a natural triglyceride. Basal medium containing Tween 60 enhanced lipase production to the most significant degree. The absence of magnesium ions ($Mg^{2+}$) in the basal medium was also shown to stimulate lipase production. Meanwhile, an alkaline earth metal ion, $Na^+$, was found to stimulate the production of S5 lipase.

Food Functionality of Opuntia ficus-indica var. Cultivated in Jeju Island

  • Opuntia ficus-indica, commonly known as prickly pear cactus, is commercially grown as a food and medicinal plant in Jeju Island, Korea. The crushed pads and fruits of Opuntia ficus-indica were dried in a freeze-dryer and ground into flour to be used for food materials. The major components of proximate compositions were part of a nitrogen free extract. The major minerals were Ca (4391.2-2086.9㎎%), K (1932.1-2608.7㎎%), and Mg (800.6-1984.8㎎%). The major amino acid was glutamic acid, comprising 16.3% of total amino acids in fruit and 25.2% in pad. Dihydroflavonols were identified as (+)-trans-dihydrokaempferol and (+)-trans-dihydroquercetin. Citric acid methyl esters extracted from fruits showed inhibitory activities against monoamine oxidase-B. The presence of trimethyl citrate has been reported in other plants, but 1,3-dimethyl citrate and 1-monomethyl citrate have not been previously reported. The results of pharmacological efficacy tests, including serum biochemical and hematological parameters, autonomic nervous system, anti-inflammatory, analgestic activity, anti-diabetic activity, antithrombotic, anticoagulant, dopamine beta-hydroxylase, monoamine oxidase activity, hyperlipidemia, the respiratory system, antigastic, and anti-ulcerative actions indicate that the fruit and pad of the Opuntia ficus-indica are rich sources of food and medicinal materials.

Bioconversion of Acrylonitrile to Acrylic Acid by Rhodococcus ruber Strain AKSH-84

  • A new versatile acrylonitrile-bioconverting strain isolated from a petroleum-contaminated sludge sample and identified as Rhodococcus ruber AKSH-84 was used for optimization of medium and biotransformation conditions for nitrilase activity to produce acrylic acid. A simple and rapid HPLC protocol was optimized for quantification of acrylic acid, acrylamide, and acrylonitrile. The optimal medium conditions for nitrilase activity were pH of 7.0, temperature of $30^{\circ}C$, agitation of 150 rpm, and inoculum level of 2%. Glycerol as a carbon source and sodium nitrate as the nitrogen source provided good nutritional sources for achieving good biotransformation. Nitrilase activity was constitutive in nature and was in the exponential growth phase after 24 h of incubation under optimal conditions without addition of any inducer. The substrate preference was acrylonitrile and acetonitrile. The present work demonstrates the biotransformation of acrylonitrile to acrylic acid with the new strain, R. ruber AKSH-84, which can be used in green biosynthesis of acrylic acid for biotechnological processes. The nitrilase produced by the isolate was purified and characterized.

Intake Patterns and Information-seeking Behaviors of the Elderly Regarding Health Foods (노인들의 건강식품 섭취 실태 및 정보 탐색 행동 관련 요인에 관한 연구)

  • This study examined the intake patterns and information-seeking behaviors of elderly individuals with regard to health foods, according to sociodemograhic characteristics, awareness of health, and concerns and awareness about health foods. The data were collected from 421 elderly living in Seoul, Busan, Daegue, Daejon, and Gwangju, between January 17th and February 23rd, 2006. Frequencies and chi-square tests were conducted using SPSS Windows. The results are as follows: The respondents were highly concerned about their own health as well as health foods, and individuals primarily took nutritional supplements and glucosamine containing products. In addition, they had taken various health-improving foods. Most had intentionally consumed at least one health food, in order to maintain a condition of health. According to chi-square tests, women were more likely to consume health foods than men. The most important sources of information regarding health foods were family, relatives, and friends. Some respondents answered they had difficulties in obtaining and understanding health food-related information. Many respondents desired to get health food information regarding efficacy from TV, radio, and newspapers, as well as doctors, pharmacists, and dieticians.

The association of dietary quality and food group intake patterns with bone health status among Korean postmenopausal women: a study using the 2010 Korean National Health and Nutrition Examination Survey Data

  • BACKGROUND/OBJECTIVES: Osteoporosis and osteoporosis-related disease are drawing a lot of attention in Korea as one of the serious health problems. Bone health status may be influenced by the general dietary quality and dietary pattern. SUBJECTS/METHODS: To determine the relationship between dietary quality and intake patterns and bone health status, the %RNI, NAR, DDS, and food group intake patterns were assessed according to their bone health status for 847 postmenopausal women using the 2010 KNHANES data after eliminating those of likely changing their diet under the advice of doctors or those taking estrogen. RESULTS: Bone health became worse as dietary quality deteriorated. All NAR and %RNI values were highly associated with bone health levels and the consumption frequency of Ca sources, DDS and the food group intake patterns also confirmed the findings. CONCLUSIONS: This study confirmed that dietary quality and dietary patterns were important for bone health. Nutritional education on eating foods from the five basic food groups has to be emphasized to prevent osteoporosis among older women.

Improved Astaxanthin Production of Xanthophyllomyces dendrorhous with Carotenogenesis Stimulating Factors (Carotenogenesis의 생성 자극 인자를 이용한 Xanthophyllomyces dendrorhous에 의한 astaxanthin 산물의 증가)

  • To improve biomass and astaxanthin production by wild-type Xanthophyllomyces dendrorhous simultaneously in shake flask culture, physical factors, nutritional factors and carotenogenesis stimulating factors affecting astaxanthin production were studied on base of HPLC quantitative analysis. The results suggested that carotenogenesis precursor composition acetic acid, mevalonic acid, tomato extract, and carrot extract could increase the productivity of astaxanthin markedly based on the optimized temperature, initial pH value, carbon and nitrogen sources conditions.

A Study on Usage of Dietary Supplements and Related Factors in College Students Attending Web Class via Internet (인터넷 Web 강의 수강 대학생의 특수영양 및 건강보조식품 섭취실태 및 섭취 요인분석)

  • This study was performed to investigate the dietary supplement use and related factors by college students attending in web class. One thousand four hundred college students(male: 632, female: 768) were participated in this study. The questionnaire about dietary supplements use, demographic characteristics, eating behavior, health-related lifestyles, nutrient intake was self-administered and the data were obtained via internet or mail. Dietary supplements were taken by 63.6%(male : 62.2%, female : 64.2%) of subjects. The higher concern about nutrition and health, the higher the incidence of dietary supplements taking was(p < 0.05). Dietary supplement users were satisfied more than non-users about meal served(p < 0.05). Supplements used by most male students were lactic acid beverage, Chinese medicine, geigogi geisoju and multivitamin, Chinese medicine, fiber-processed flood for female students. Most of dietary supplement users answered that the sources of information on supplements were 'friend, family or relatives' and 'TV or radio'. Dietary supplement users were taking significantly more nutrients compared to non-use. Therefore, it may be necessary to provide nutrition information and education which show that balanced diet is the best nutritional strategy for health promotion and diet supplements can be helpful in deficient state nutrients.

Comparisons of Nutritional Knowledge, Perception of Body Image and Dietary Behavior between Adolescent Boys and Girls in the Daegu$\cdot$Kyungbuk Area (대구, 경북지역 남녀 중학생들의 영양지식, 체형인식 및 식행동에 관한 비교연구)

  • This study was undertaken to compare the obesity related dietary factors among rural middle school students living in the Daegu.Kyungbuk area. Anthropometric data showed that mean height and weight were 162.7$\pm$8.6cm and 53.9$\pm$9.8kg in 220 male students and 158.4$\pm$6.2cm and 51.0$\pm$7.6kg in 210 female student. Mean BMIs for boys and girls were 19.00$\pm$2.35 and 19.30$\pm$2.45, respectively. 71.36% of male students and 71.9% of female students were underweight by the BMI index. Students who skipped the breakfast were up to 66.8%. The reasons for skipping a meal for both sexes were significantly different. Compared to males, more female respondents felt guilty and depressed related to eating. Furthermore, females were more significantly concerned about body image, diet and body weight (p<0.001), and they were not satisfied with their weight. The sources of information on obesity and diet were radio and TV in males, while females gathered information from magazines and friends. The ideal body weight of male students was heavier than the actual body weight while female students desired a thinner body shape. In conclusion, a different approach for nutrition education based on sex should be developed, and implemented fur adolescents.
