서울지역 아동의 철분강화 시리얼 보충과 영양교육이 영양상태 및 생활습관에 미치는 영향 (The Effect of Iron-enriched Cereal Breakfast and Nutrition Education on the Nutritional Status and Life Style of Elementary School Students)

  • The present study was conducted to investigate the effect of iron-enriched cereal supplement and nutrition education program on nutritional status and life style of children. Elementary school students(n=170) aged of 11 years old at Seoul were participated. Subjects were supplemented with iron-enriched cereal for breakfast and provided with 2 sessions of nutrition education during 3 months. Intake of carbohydrate, iron, sodium, zinc, vitamin A, vitamin $B_1$, vitamin $B_2$, vitamin C, niacin, and folic acid was significantly increased after cereal supplement. Caloric intake was similar to KDRIs during both before and after cereal supplement. There was no improvement on exercise and dietary habits after nutrition education. Male students tended to sleep later, wake up early, and ate snack less than female. Cereal supplement was effective on improving nutritional status, but short-term nutrition education had no effect on modification of life style. Thus, further studies are required to develop long-term education program effective on improving lift style and eating habits in children.

  • The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items.   • Chronic obstructive pulmonary disease(COPD) is characterized by a not entirely reversible limitation in the airflow. An airflow limitation is progressive and associated with an abnormal inflammatory response of the lung to gases and harmful particles. In COPD, the weight loss is commonly observed and there is a negative impact on the respiratory as well as skeletal muscle function. The pathophysiological mechanisms that result in weight loss in COPD are not fully understood. However, the mechanisms of weight loss in COPD may be the result of an increased energy expenditure unbalanced by an adequate dietary intake. The commonly occurring weight loss and muscle wasting in COPD patients adversely affect the respiratory and peripheral muscle function, the exercise capacity, the health status, and even the survival rates. Therefore, it is very valuable to include management strategies that the increase energy balance in order to increase the weight and fat free mass. A Better understanding of the molecular and cellular pathological mechanisms of COPD can improve the many new directions for both the basic and clinical investigations. The Nutritional supply is an important components of a multidisciplinary pulmonary rehabilitation program. Future studies combining an exercise program, the role of anabolic steroids, nutritional individualization, a more targeted nutritional therapy, and the development of new drugs including anti-cytokines is needed for the effective management of COPD.

대학 신입생과 재학생의 식습관과 생활습관 실태에 관한 연구 (A Study on the Dietary and the Living Habits of University Freshmen and Undergraduate Students)

  • The purpose of this study was to investigate the dietary and the living habits of 606 university students located in the Chonnam area. The subjects included 290 freshmen (47.9%) and 316 undergraduate students (52.1%). This survey was conducted using a self-administered questionnaire. Most students (73.9%) skipped breakfast because of lack of time (65.8%) of the cases. Self-reported eating habits problems were eating irregular meal (52.8%), overeating (21.1%), unbalance diet (13.0%) and skipping meal (7.3%). The type of favorite snack was biscuit (31.8%) and cup Ramyon(31.8%). The weight control was higher in freshmen compared to undergraduate. The rates of smoking in freshmen and undergraduate were 21.0% and 26.6% respectively. The coffee intake and alcohol drinking frequency was higher in undergraduate compared to freshmen. The living habits of undergraduate students were undesirable. Therefore they should have a nutritional program to improve their food habits and the dietary behaviors for students' health. And nutritional education program should be organized practically and systematically.

  • Diabetes mellitus is reaching epidemic proportions worldwide. The insufficiency of medication to cope with this burden has coincided with a dramatic rise in the prevalence of use of complementary and alternative therapies, especially herbal treatments. This surge in demand presents a challenge to prove the safety and efficacy of these treatments in diabetes. Korean red ginseng (steam treated Panax ginseng C.A. Meyer) is a strong candidate to succeed. It has been shown to possess a multitude of hypoglycemic effects and improve metabolic disturbances related to diabetes in in vitro and animal models. Data in humans is also emerging to support these benefits. Whether these results can be replicated in a rigorous clinical testing program is unclear. We therefore investigated the antidiabetic effects of Korean red ginseng in a series of 2 acute and 1 longterm randomized, double-blinded, placebo-controlled clinical trials. This paper provides the rationale for this program of study, expanding on the problem of diabetes, its management, and the possible role for Korean red ginseng. It then describes the design and expected findings.

제2형 당뇨병 환자의 영양섭취와 당뇨 합병증 위험도 (Nutritional Intake Status according to the Risk of Diabetic Complications in Type 2 Diabetes Patients)

  • Purpose: The purpose of this study was to investigate the nutritional intake status, according to the risk of diabetic complications in Type 2 diabetes patients. Methods: This was a secondary data analysis study that included 83 patients. The nutritional intake was assessed, using 24-hour dietary recall. The risk of diabetic complications was measured, using the Framingham Risk Score (FRS) and Michigan Neuropathy Screening Instrument Questionnaire (MNSIQ). The nutritional intake was analyzed using the CAN-pro 4.0 program. Data were analyzed using descriptive statistics, Chi-square test, and Independent t-test, using the SPSS WIN 26.0 program. Results: The mean FRS and MNSIQ scores for the participants was 14.46± 4.09 and 2.30± 2.22, respectively. Thirty two participants (38.6%) were in the high-risk groups for cardiovascular disease and peripheral neuropathy. The participants consumed high amounts of grain and low amounts of vegetables, fruits, and dairy products when compared to the recommended intake. However, the nutritional intake did not differ according to FRS or MNSIQ levels. Consumption of vegetables and fruits were significantly different between high and low risk groups of MNSIQ. Conclusion: It is necessary to consider the composition of dietary intake to improve the imbalanced diet in Type 2 diabetes patients and prevent diabetic complications. Type 2 diabetes patients should reduce the intake of grains and sodium, and increase vegetable intake. More deliberate future studies are needed, to investigate the relationship between food intake and the risk status for diabetic complication.

원주지역 초등학교 아동의 영양지식과 식생활 태도에 관한 연구 -급식학교와 비급식학교 아동의 비교- (A Comparative Study on Nutritional Knowledges and Dietary Behaviors of Children in Elementary School by School Lunch Program in Won-Ju Province)

  • This study was to investigate the children's understanding level of nutritional knowledge and the degree of knowledge application into the actual living not only in the with-lunch school but also in the without lunch school. Having expected their obtaining of nutritional knowledge and practical applicating, we compared the with-lunch school children's understanding level of nutritional knowledge, dietary attitude, and completeness of diet life with those of without-lunch school children. In addition to this, we surveyed healthiness, Physical condition, and BMI (Body Mass Index) and compared these factors. The results are as follows. 1. Almost all of the children were standard in physical condition, however they recognized themselves fatty than normal. Mealtime consumption(p<0.05), BMI(p<0.05), and diet attitude points(p<0.001) showed significant difference in the children who regarded the themselves healthy. 2. High correlation was observed between parent's physical shape and mealtime consumption (p<0.05), quantity of eating food (p<0.001), children's BMI(p<0.001) and diet attitude(p<0.05) respectively. 3. The points of itemised nutritional knowledge test was different in accordance with the children's year grade (p<0.05), children's understanding level of health and physical condition(p<0.05), parent's physical shape (p<0.05), and mother's education level(p<0.05) respectively. The points of nutritional knowledge test in both schools showed no difference except the item of vitamin.

태안군 어린이집에서 제공하는 간식의 영양 평가 (Nutritional Assessment of Snacks Consumed in Child Care Centers in Tean-Gun)

  • This study evaluated the evaluate nutrient knowledge of child care teachers and assessed the nutritional level of snacks served in 18 child care centers in Tean-Gun. The survey sample was 18 child care teachers working in 18 child care centers of Tean-Gun. The questionnaire requested information about demographic factors, nutritional knowledge, management status of snacks, and the kinds and serving size of snacks served for 1 week. Data were analyzed using SPSS for windows(version 12.0) and nutritional values were assessed using Can-pro 2.0. The mean score of teachers' nutritional knowledge was 22 out of 30 points. The scores were low in the questions regarding the ease with which Ca and re deficiencies can be developed in infants. The contents of most nutrients supplied from the snacks exceeded 15% of RI(Recommended Intake) but there were significant differences in the contents of energy (p<0.05), protein (p<0.05), fat (p<0.05), carbohydrate (p<0.05) and calcium (p<0.001) between the child care centers. Especially, the difference of calcium between the child care centers was 344.84 mg. These results indicate that a program of relevant nutritional education focusing on snacks needs to be developed for child care teachers, with a special recognition on correct calcium level.

영양교육과 운동중재 프로그램이 성인비만여성의 신체성분과 식이섭취, 혈중지질 및 기초체력에 미치는 효과 (2) - 비만관리 프로그램의 참여율과 프로그램 효과와의 상관성 - (The Effect of Nutrition Education and Excercise Program on Body Composition and Dietary Intakes, Blood Lipid and Physical Fitness in Obese Women (2) - Relationship between Participation Rates and Effectiveness of Obesity Management Program -)

  • This study examined how the participation rates contribute to subjects' outcomes after a nutrition education (once/week) and exercise (3 times/week) intervention program for 12 weeks in 44 obese female subjects. The subjects were divided into two groups: high-participator (HP) or low-participator (LP) groups according to their participation levels based on the median visit value (30 visits out of a total of 48 visits). Daily nutrient intakes assessed by a 24-hour recall, body composition, blood lipid profiles and physical fitness were measured at baseline and after 12 weeks. After the intervention, weight, BMI, percent body fat, and the waist-hip ratio were significantly decreased in the HP group. In addition, the HP group had a greater rates of changes in weight (HP group: -6.6% and LP group: -3.1%, p < 0.01), BMI (-7.0% and -3.2%, p < 0.01), percent body fat (-7.8% and -4.2%, p < 0.05), and waist-hip ratio (-3.1% and -0.4%, p < 0.01) compared to the LP group. Energy-adjusted protein, fiber, potassium, vitamin $B_1$, vitamin $B_6$, and vitamin C were significantly increased in the HP group. The HP group showed a significant increase in HDLcholesterol and a decrease in blood pressure, total cholesterol, LDL-cholesterol, triglycerides, and atherogenic index (AI). While the muscle endurance, muscle strength, power, agility and flexibility were significantly increased in the HP group, agility and balance were improved in the LP group. In addition, dietary behavior score was significantly increased and stress score decreased in the HP group compared to the LP group. High participation rates were correlated with the improvement of the nutrient density (protein, fiber, potassium, Vitamin $B_1$, Vitamin $B_2$, Vitamin $B_6$ and folate), anthropometric parameters (body weight, BMI and percent body fat), serum lipid profiles (HDL-cholesterol, Triglyceride, and AI) and physical fitness (muscle endurance) adjusted for age, menopausal status, alcohol drinking, nutritional supplement use and baseline BMI. Our results suggest that high participation in nutrition education and exercise program was effective not only for weight reduction but also for the improvement of physical fitness in obese women.

경기지역 유치원 아동을 위한 영양교육 프로그램의 효과 평가 (The Effect Evaluation of Nutrition Education Program for Preschool Children in Gyunsggi-do)

  • The following study has been conducted by carrying out the nutrition education program for preschool children and measuring the change in their food preference and nutritional knowledge. The 28 boys and 22 girls with the average height of $117.4{\pm}5.1cm$ and weight $21.8{\pm}3.5kg$ participated in the study. The favorite foods of the children were: meat (51.1%) being the highest, fruits (38.3%), carbohydrates (23.4%), while the least favored food was vegetables (75%). It indicated that 36.2% of the children were having unbalanced diets. The change in food preference after the implementation of the nutrition education program was the significant increase in preference in vegetables and fruits (p<0.01) and proteins such as meat, fish, eggs and beans (p<0.05). The differences in food preference among boys and girls were that the boys showed significant increase in vegetables and fruits (p<0.01) while there was a decrease in the simple sugar groups (p<0.01). Regarding girls, there were significant increases in vegetables and fruits as well as protein groups of meat, fish, eggs and beans (p<0.01). The changes in the nutritional knowledge of the preschool children after the implementation of the nutrition education program were scores for the fruits and vegetables group and carbohydrates group showed a significant increase while the scores for the oil and nuts group had decreased considerably. The average score on nutritional knowledge has significantly increased from 9.07 to 10.17 (p<0.01) and the score on the roles of the nutrients increased from 3.02 to 3.48 (p<0.05). The changes in eating habits of the children after the nutrition education were the answer for the change in eating habits of the children after the nutrition education was 'slight change' 61.4%. Also, the change in food preference was 'slight change' 61.4% and the improvement in nutrition education was 'slightly' 50%. According to the results of this study, it is evident that the change in eating habits and the acquisition of nutritional knowledge is very difficult, thus requiring consistent and prolonged education. Therefore, it seems to be best to include a more systematic and professional nutrition education program in preschool education. Also, the education for the parents should be implemented since the effect of education on children is greater when it is closely connected with the education at home.
