To investigate the nutritional contents of lunchbox of students of elementary school located in Sokcho city Kangwon province, the survey was conducted from April 23 to April 26, 1991. Main dishes and side dishes in lunchbox were weighed and nutrients were analyzed from food composition table. Total daily energy and nutrients intake were reach to RDA's, except for intake of calcium, iron, vitamin A, vitamin Be and vitamin C. Children's height was positively correlated with energy and protein Intake. Fat intake was positively correlated with monthly income and intake of vitamin A was positively correlated, with number of family, This survey suggests that it need nutritional education program and school feeding to improvement of nutritional status for children.
The purpose of this study was to compare differences in the main food components of quinoa (Chenopodium quinoa Willd.) cultivated in Hongcheon after steaming, boiling, and roasting. Among the general components, crude protein, fat, and ash content were the highest in raw quinoa. Dry matter and carbohydrate content was the highest in steamed quinoa, while total dietary fiber content was highest in roasted quinoa. Total amino acid contents were the highest in boiled quinoa and lowest in steamed quinoa. Fatty acid content was highest in raw quinoa and lowest in boiled quinoa. The mineral (calcium, potassium, and phosphorus) and vitamin content was most enriched in raw quinoa, while iron, magnesium, zinc, and manganese were highest in boiled quinoa. For free sugars, the fructose and sucrose levels were highest in raw quinoa, while glucose level was highest in roasted quinoa. The water-soluble vitamin and free sugar contents were lowest in boiled quinoa. In summary, nutritional levels of vitamins vulnerable to heat and unsaturated fatty acids decreased after cooking with heat, while those of amino acids and saturated fatty acids increased after cooking with heat, although there were variables based on different cooking methods.
Moringa oleifera leaves, seeds, pods, roots, and flowers have been widely used for their medicinal and nutritional properties. Many studies have been conducted on the chemical composition and effectiveness of M. oleifera. In fact, almost every part of M. oleifera has been found to contain essential nutrients and medicinal value. Especially, the leaves of M. oleifera are known to have various nutrients and diverse efficacy. Several studies have assessed the potential toxicity of the leaves when prepared by various methods. The results showed that the M. oleifera leaves when prepared differently were safe in locally used doses and amounts. Moreover, M. oleifera is known to contain various physiological efficacies, including antioxidant, anti-inflammatory, antidiabetic, and anticancer effects and so on. In the latest research, many attempts are being made to utilize the diverse effects of M. oleifera. This research seems to be bringing a promising view of M. oleifera as a therapeutic functional food for various diseases.
The major goals of the poultry industry are to increase the carcass yield and to reduce carcass fatness, mainly the abdominal fat pad. The increase in poultry meat consumption has guided the selection process toward fast-growing broilers with a reduced feed conversion ratio. Intensive selection has led to great improvements in economic traits such as body weight gain, feed efficiency, and breast yield to meet the demands of consumers, but modern commercial chickens exhibit excessive fat accumulation in the abdomen area. However, dietary composition and feeding strategies may offer practical and efficient solutions for reducing body fat deposition in modern poultry strains. Thus, the regulation of lipid metabolism to reduce the abdominal fat content based on dietary composition and feeding strategy, as well as elucidating their effects on the key enzymes associated with lipid metabolism, could facilitate the production of lean meat and help to understand the fat-lowering effects of diet and different feeding strategies.
In this study, the nutritional composition of colostrum milk obtained from 22 mothers delivering perterm infants and 17 mothers delivering term infants was analyzed. The energy content of colostrum was yielded based on nitrogen, lactose, and lipid data. Preterm milk is more close the nutritional needs of the preterm infant than dose other breast milk. The results are as follows : 1) Protein concentration was significantly higher, but carbohydrate and lipid concentration were lower in preterm milk than fullterm milk. Energy content yielded from total nitrogen, lactose and lipid concentration was higher in the fullterm milk than preterm milk. 2) Calcium was higher in the preterm milk than fullterm colostrum. Phosphate was lower in fullterm milk than pretem milk. Calcium/Phosphate ratio were 2.61/1 in the preterm and 2.06/1 in the fullterm milk. Magnesium was higher in the preterm milk than fullterm milk. Zinc, Copper and Manganese concentrations were tended to lower in the preterm milk than fullterm milk.

Objective: Oilseeds and nut co-products can be used as alternative feed ingredients in animal diets because they may have a lower cost than traditional ingredients. A study was, therefore, conducted to determine the chemical composition of copra, palm kernel, and nut co-products from South-East Asia or Australia. The hypothesis that country of production influences nutritional composition was tested. Methods: Oilseed meals included 2 copra expellers, 3 copra meals, and 12 palm kernel expellers. One source of almond hulls and cashew nut meal were also used. Samples were obtained from suppliers located in South-East Asia or Australia. All samples were analyzed for dry matter, gross energy, nitrogen, amino acids (AA), acid-hydrolyzed ether extract (AEE), ash, minerals, insoluble dietary fiber, and soluble dietary fiber. Copra and nut co-products were also analyzed for total starch and sugars. Results: Copra expellers had greater (p<0.05) concentrations of dry matter and AEE compared with copra meal. However, copra meal had greater (p<0.05) concentrations of total dietary fiber (soluble and insoluble) and copper than copra expellers. Palm kernel expellers from Indonesia had greater (p<0.05) concentration of histidine and tyrosine compared with palm kernel expellers from Vietnam. Almond hulls was high in dietary fiber, but also contained free glucose and fructose, whereas cashew nut meal was high in AEE, but low in all free sugars. Conclusion: Copra expellers have greater concentration of AEE, but less concentration of total dietary fiber when compared with copra meal, and except for a few AA, no differences in nutrient composition of palm kernel expellers produced in Indonesia or Vietnam were detected. According to the chemical composition of nut co-products, cashew nut meal may be more suitable for non-ruminant diets than almond hulls.

Objective: Information about the chemical composition of cassava-based feed ingredients is needed to accurately formulate animal diets. A study was conducted to determine the chemical composition of cassava-based feed ingredients and to test the hypothesis that there is variation in chemical composition among cassava products originating from different South-East Asian countries. Methods: Sources of dried peeled and unpeeled cassava roots, cassava chips, cassava meal, high-ash cassava meal, and cassava residue were used. All samples were analyzed for dry matter, gross energy, nitrogen, amino acids (AA), acid-hydrolyzed ether extract (AEE), ash, minerals, total starch, insoluble dietary fiber, and soluble dietary fiber. Samples of peeled and unpeeled cassava roots, cassava chips, and cassava meal were also analyzed for sugars. Results: High-ash cassava meal had greater (p<0.05) dry matter and ash, but lower (p<0.05) total starch and gross energy than all other cassava products. Peeled cassava roots, unpeeled cassava roots, and cassava chips had greater (p<0.05) total starch than the other cassava-based ingredients. Cassava residue had greater (p<0.05) concentrations of lysine, insoluble dietary fiber, and soluble dietary fiber compared with the other cassava products, but tryptophan and glutamic acid were greater (p<0.05) in peeled cassava roots, cassava chips, and cassava meal samples compared with the other ingredients. Concentration of most minerals was greater (p<0.05) in high-ash cassava meal than in the other cassava products. Conclusion: Cassava-based ingredients sold as peeled roots, unpeeled roots, chips, or meal have chemical compositions that are not different from each other, and peeling has little impact on chemical composition. High-ash cassava meal has lower nutritional quality compared with other cassava products due to low starch and gross energy. The high fiber content in cassava residue makes this ingredient more suitable for ruminants and sows than for younger pigs or poultry.
This study compared the nutritional composition and antioxidative activities of different parts (aerial part and root) of Taraxacum coreanum and Taraxacum officinale. To identify the nutrient composition of different parts of Daedelion species, nutrient contents were analyzed. Crude ash, protein, and fat contents of T. coreanum and T. officinale were higher in the aerial part compared to the root. There was no significant difference in crude ash, protein, or carbohydrate content of the aerial part depending on the Daedelion species. Aerial part contents of vitamin A, E, and C were significantly higher in T. coreanum than T. officinale. The K content of the aerial part of T. coreanum and T. officinale was highest, although there was no significant difference among Daedelion species. Contents of oxalic acid, citric acid, and acetic acid in the aerial part of T. coreanum were highest. Contents of total polyphenols, total flavonoids, and DPPH radical scavenging activity of the aerial part were significantly higher in T. coreanum than T. officinale. In conclusion, the aerial part of T. coreanum and T. officinale could be used as antioxidative functional food sources.
This study was performed to investigate the effectiveness of nutritional education and exercise intervention on reduction and maintenance of weight. The subjects were 24 obese women whose body mass index(BMI) was over $25kg/m^2$. Nutritional education was performed once a week and swimming was done three times a week throughout this 12 week program. The subjects were recalled 1 month after the program was complete. Nutrient intakes were assessed by 24 hour recall method. Also food habits, dietary behaviors and nutritional knowledge were investigated by self-administered questionnaires before and after the weight control program and one month after completing the program. Height, weight, body composition and blood levels were measured before and after the weight control program and one month after completing the program. During the 12 weeks of the weight control program, body weight significantly decreased from an average of 69.7kg to 65.8kg and to 65.1kg after one month(p<0.05). Body fat and BMI also significantly decreased(p<0.01). Cholesterol and blood sugar levels decreased after 12 weeks and increased one month after completing the program. After taking nutritional education, the nutritional knowledge scores increased. Calcium intake significantly increased after completing the education and one month after completing the program(p<0.01). Iron intake significantly decreased from an average of 12.1g to 11.3g after completing the program and increased to 15.5g one month after completing the progrom(p<0.001). We concluded that our nutritional education and exercise program was effective for reducing and maintaining weight.
