The iron nutritional status of 328(20-70 years old) women in Seoul and Puyo areas was evaluated using a dietary information and a measurement of hematological indices. The serum iron was measured by Red Blood Cell(RBC), Hemoglobin(Hb), Hematocrit(Hct), Serum Iron(S-Fe), Total Iron Binding Capacity (TIBC), Transferrin Saturation(TS) and Serum Ferritin(SF) and was analyzed with the information obtained by interviews which included socio-demographic variables and the dietary pattern of the subjects. The mean Hb was 12.6 $\pm$ 1.21g/dl(Seoul : 12.4 $\pm$ 1.14g/dl, Puyo : 13.2 $\pm$ 1.28g/dl), Hct was 38.7 $\pm$ 3.84%(Seoul: 37.5 $\pm$ 3.28%, Puyo: 4.19 $\pm$ 3.48%), S-Fe was 76.8 $\pm$ 31.49ug/dl(Seoul: 68.8 $\pm$ 27.3ug/dl, Puyo: 78.8 $\pm$ 32.3ug/dl) and TIBC was 277.7 $\pm$ 86.15ug/dl(Seoul: 354.1 $\pm$ 129.8ug/dl, Puyo: 259.0 $\pm$ 59.55ug/dl). The mean Ts(%) was 30.9 $\pm$ 17.9% (Seoul: 21.7 $\pm$ 10.52%, Puyo: 33.2 $\pm$ 18.68%) and the level was significantly higher in Puyo women(p<0.05). The mean SF was 45.4 $\pm$ 46.21ng/ml(Seoul: 53.6 $\pm$ 50.21ng/ml, Puyo: 36.1 $\pm$ 39.83ng/ml). The Red Blood Cell(RBC) showed a negative correlation with age and Hb, Hct showed a negative correlation with education and income level. However TIBC showed a and total energy expenditure per day. Energy, protein, carbohydrate, iron and vit.C intake showed a positive correlation with Hb and Hct. In particular, heme iron showed a positive correlation with RBC and nonheme iron of Hb, income level and iron intake affected on the level of Hct. In Seoul women, the age of menarche affected on the level of TIBC, total energy expenditure affected on the level of Hct. In Seoul women, the age of menarche affected on the level of TIBC, total energy expenditure affected on the level of S-Fe.

Six Holstein heifer calves weaned at 45 days-of-age were randomly allocated into high daily gain (1.1 kg/d, HDG) and low daily gain (0.56 kg/d, LDG) groups, and were slaughtered at 170 kg of live weight. Energy intake level in the feeding period was 2.4 $\times$ maintenance in 105 days for HDG and 1.4 $\times$ maintenance in 216 days for LDG calves. Total length of the small intestine was identical between groups, but both weights of the pancreas and of the small intestinal mucosa were greater (p < 0.01) for HDG calves. Alpha-amylase, lipase, proteinase, and trypsin activities of the whole pancreas were higher (p < 0.05) in HDG calves. Disaccharidase activity of the whole small intestinal mucosa was also higher (p < 0.10) for HDG than for LDG calves. However, the enzymatic activities, expressed as per gram or per protein of the pancreas and the small intestinal mucosa, were not affected (p > 0.10) by the plane of nutrition. These results suggest that the digestive enzyme activity in the small intestine varies primarily with the weight of tissues synthesizing the enzyme.
Leptin, resisitn and PAI-1 (plasminogen activator inhibitor-1) are synthesized and secreted by rodent fat cells and recently postulated to be an important link to obesity. This study was conducted to characterize the hormonal regulation of leptin, resistin, and PAI-1 gene expression in the 3T3-L1 adipocytes. The cells were treated with 0.5 $\mu$M insulin, 1 $\mu$M dexamethasone (Dex), or 0.05 $\mu$M triiodothyronine (T3) for 72 hours. The mRNA levels of each peptide were measured by semi-quantitative RT-PCR. The mRNA level of the leptin-producing ob gene was significantly increased by insulin, Dex, and T3 by 3.2-, 3.1- and 2.7-fold, respectively, compared to the control (p < 0.05). The level of resistin mRNA was increased by insulin, Dex, and T3 by 2.7-, 2.5- and 2-fold, respectively, compared to the control (p < 0.05). Likewise, the level of PAI-1 mRNA was significantly increased by insulin, Dex, and T3 compared to the control (p < 0.05). Taken together, our results suggest that insulin, Dex, and T3 may regulate the gene expression of leptin, resistin, and PAI-1 in 3T3-L1 adipocytes.
This study was performed to see the effect of nutritional status on fatty liver. Subjects were 219(male : 174, female : 45) fatty liver patients living in cities, and 10-60yrs old. Nutrient and alcohol intakes, health state and medical history were investigated by individual interview, and blood sample was taken. Results were as follow; Most subjects were obese an overweighing and suffering from hepatitis. Calorie and carbohydrate intakes of male and females patients were lower than mean intakes of normal citizens. Protein and fat intakes of male patients were higher than mean intakes of normal citizens. Proportions of protein and fat to total calorie intake in patients were higher than those of normal citizens. Alcohol intake was markedly higher in patients than normal group, and increased with increasing body weight. Serum total cholesterol, HDL-cholesterol, total lipid, total protein and albumin conc.s and Hb and Hct levels were in normal ranges, But serum TG level of patients was higher than normal level. Serum total fatty acid level, $\omega$-3/$\omega$-6 and P/S FA ratios were higher in patients than normals. Serum total EAAs, NEAAs and all AAs levels of patients were higher than normals. It is plausible that high animal food and alcohol intakes, excess body fat and hepatitis were associated with fatty liver.
Patients undergoing peritoneal dialysis are at risk for protein-energy malnutrition because of nutrient losses during dialysis. This study determined the nutritional status of patients undergoing continuous ambulatory peritoneal dialysis (CAPD). Forty-four patients receiving CAPD were divided into two groups according to dialysis period. We investigated the nutritional status of the patients by measuring anthropometric and biochemical parameters, as well as food intake, self-appetite, dietary habits, a subjective global assessment, and a total nutritional status assessment. Group I subjects (7 males, 13 females) had received dialysis for < 2 years, whereas the group II subjects (18 males, 6 females) received dialysis for ${\geq}$ 2 years. Energy intake with added dextrose in the dialysate per kg of body weight was $30.3{\pm}5.8$ kcal in group I and $29.0{\pm}8.1$ kcal in group II. The average protein intake per kg of weight was $1.0{\pm}0.3$ g in group I and $1.0{\pm}0.4$ g in group II, which were less than the recommended protein intake for patients undergoing CAPD (1.2-1.5 g/kg). Mean serum albumin level was significantly lower in group II than that in group I (p < 0.05). A recent self-appetite score was significantly higher in group II than that in group I (p < 0.01). The dietary habits score was significantly lower in group II than that in group I (p < 0.05). The subjective global assessment was significantly higher in group I (85.0%) than that in group II (54.2%) under normal nutrition status (p < 0.05). The dialysis period was significantly and negatively correlated with the subjective global assessment (r = -0.502, p < 0.01) and the total nutritional status assessment (r = -0.575, p < 0.01). These results demonstrated that patients undergoing CAPD for ${\geq}$ 2 years had worse nutritional status than those who had been undergoing dialysis for < 2 years. Good nutritional status can predict the long-term survival of patients undergoing peritoneal dialysis. Additionally, the exact evaluation of nutritional status before 2 years will be important to maintain long-term dialysis therapy in patients undergoing CAPD.
The purpose of this study was to investigate the dietary habits, the nutritional knowledge and the consumption patterns of convenience foods of 618 university students located in the Gwangju area, from November twentieth to November thirtieth, 2002. The subjects included 301 males (48.7%) and 317 females (51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index (BMI) was 3.7, 88.0 and 8.3 far the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time (65.1%) of the cases. Self-reported eating habit problems were eating irregular meal (52.4%), overeating (21%), prejudiced meal (12.4%) and skipping meal (7.4%). The type of favorite snack was biscuit (31.9%) and cup Ramyon (31.9%). The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 28% respectively. Males ate fiequently cup Ramyon (2.08 $\pm$ 2.95), fries (pork cutlet, fried potato) (1.91 $\pm$ 2.58), Ramyon (1.81 $\pm$ 3.00) and kimbab (1.70 $\pm$ 3.17) more frequently, while females ate kimbab (2.25 $\pm$ 3.26), cup Ramyon (1.89 $\pm$ 2.09), fries (pork cutlet, fried potato) (1.77 $\pm$ 2.67), Ramyon (1.46 $\pm$ 1.1.95) and fish paste (1.45 $\pm$ 2.22) more frequently. The nutritional knowledge score was higher in females than in males. The mean consumption patterns of convenience foods of students living in home were lower than that of students living in dormitory and boarding w/cooking. When the amount of pocket money available and the body mass index increased and the nutritional knowledge level was low, the mean consumption of convenience foods increased. The mean consumption of convenience foods correlated negatively with nutritional knowledge (p < 0.01). Therefore, nutritional education for university students is needed so as to improve their health and nutritional education program should be developed to meet the various needs of these students. BACKGROUND/OBJECTIVES: Atopic dermatitis (AD), a chronic inflammatory skin disease, is accompanied by disruption of the epidermal lipid barrier, of which ceramide (Cer) is the major component. Recently it was reported that vitamin C is essential for de novo synthesis of Cer in the epidermis and that the level of vitamin C in plasma is decreased in AD. The objective of this study was to determine the associations among clinical severity, vitamin C in either plasma or epidermis, and Cer in the epidermis of patients with AD. SUBJECTS/METHODS: A total of 17 patients (11 male and 6 female) aged 20-42 years were enrolled. The clinical severity of AD was assessed according to the SCORAD (SCORing Atopic Dermatitis) system. Levels of vitamin C were determined in plasma and biopsies of lesional epidermis. Levels of epidermal lipids, including Cer, were determined from tape-stripped lesional epidermis. RESULTS: The clinical severity of patients ranged between 0.1 and 45 (mild to severe AD) based on the SCORAD system. As the SCORAD score increased, the level of vitamin C in the plasma, but not in the epidermis, decreased, and levels of total Cer and Cer2, the major Cer species in the epidermis, also decreased. There was also a positive association between level of vitamin C in the plasma and level of total Cer in the epidermis. However, levels of epidermal total lipids including triglyceride, cholesterol, and free fatty acid (FFA) were not associated with either SCORAD score or level of vitamin C in the plasma of all subjects. CONCLUSIONS: As the clinical severity of AD increased, level of vitamin C in the plasma and level of epidermal Cer decreased, and there was a positive association between these two parameters, implying associations among plasma vitamin C, epidermal Cer, and the clinical severity of AD.
This study was performed to investigate the effect of dietary protein level throughout gestation and lactation on milk composition and on postnatal growth in infants, using rats as an animal model. Female Sprague-Dawley rats were provided with either high(25% ISP(Isolated Soy Protein)diet) or low protein diet(10% ISP diet) throughout gestation and lactation. Milk samples were taken for analysis from the lactating rats at days of 7, 14, 21, of lactation. Dams and some pups were killed after 4 weeks from parturtion (Experiment 1). Pups from dams of each diet groups were randomly selected and reared with 25% or 10% ISP diet for 4 more weeks (Experiment 2). In experiment 1, maternal protein intake and body weight gain throughout gestation and lactation was higher in 25% ISP group. Serum protein, Ca, Fe, Zn, K concentrations were significantly higher in 25% ISP group. There was no difference in birth weight between two groups, however the mean body weight at 4 weeks postpartum were significantly higher in 25% ISP group. Serum profiles of pups at weaning were similar to that of dams. Milk compositions were changed during lactation processes and were affected by dietary protein level. Lactose and Ca, Cu, Fe concentrations in milk were higher in 25% ISP group, whereas, lipid, triglyceride were higher in 10% ISP group. In experiment 2, food intake was higher in milk were higher in 25% ISP group but was unaffected by pup's dietary protein level after weaning. The weights of liver and kidney were affected by maternal protein intake. The weight of intestine was affected by pup's dietary protein level after weaning. The weight of femur and scapula were affected by maternal protein intake. There were no differences between four groups in serum profiles. Therefore, as mentioned above, it seemed that the effect of maternal protein malnutrition to fetus was able to be overcome to some extent by high protein diet intake after weaning. In conclusion, 1) Dietary protein level throughout gestation and lactation affected both nutritional status of dams and pups and milk composition: 25% ISP groups supported better nutritional status than 10% ISP group 2) It seemed that effect of dietary protein level after weaning on pups was able to be overcome the influence of maternal diet in fetus to some extent.
This study investigated the dietary behaviors and consumption of convenience foods among salaried men in Busan, Korea, and compared them based on the men's nutritional knowledge level. A questionnaire was developed based on the review of literatures and was distributed to 250 office workers in Busan in February 2013. A total of 224 data were used for the analyses. ${\chi}^2$-tests were employed for the nominal data while Mann-Whitney' U-tests were used for the ordinal data. Leven's tests were first performed before the t-tests for the interval data. Almost 60% of the respondents were female, 50% were in their 30s and 68% lived with other family members. The mean score of the nutritional knowledge test was 13.78 out of 20. Women and those who graduated from college or higher were likely to get a better score than men and those who graduated from high school or below. The respondents were divided into two groups for further analyses: Low (LK) vs. High (HK) knowledge score groups. LKs were more likely to consume 20 convenience foods than HKs. Although the respondents recognized the nutritional disadvantages of consuming convenience foods for an extended period, they continue to eat them because they lack time and further, it is quick and easy to consume convenience foods instead of preparing meals from scratch.
This study was conducted to improve the nutritional status of high school girls via lunch menu intervention. Surveys were carried out twice to evaluate basal status and status after lunch menu intervention. In the first survey nutrient intakes of 24-hour and school lunch were each estimated by 24-hour recall dietary survey and self-recording, respectively. Calcium intake was the lowest among nutrients, and stir-frying was the most preferred cooking method. Five dishes of school lunch menus which were included in the first survey were replaced with recipes containing foods with higher calcium level; anchovy stir-fried with red pepper paste, anchovy stir-fried with almond, pork stir-fried with shredded kelp, crab meat soup, and tteokbokki with cheese. In the second survey calcium intake from school lunch was significantly (p < 0.001) increased from 45.5% to 50.2% of one thirds of recommended intake (RI) after calcium enriched lunch menu intervention. Intakes of vitamin A and E were also significantly increased, whereas those of energy, thiamin, and vitamin C were decreased. Index of nutritional quality values of nutrients of 24-hour intakes (except thiamin, vitamin B6, vitamin C) is increased by intervention; however, those of calcium, folic acid, iron are still very low. Even though this study shows a possibility of improving nutrient intakes of students through school lunch menu intervention, lunch intervention by itself is not enough action to improve nutritional status of micronutrient for adolescents.
