To investigate nutritional and biochemical values of buckwheat, amino acids and minerals in buckwheat harvested from Kangweon-do were analysed. Mixed flour between buckwheat and wheat were made to be used for buckwheat noodle and were also analysed minerals and major nutrients in composite flours. When three different levels of flour mix were compared, major nutrients were about same among those mixes but minerals were higher by adding more buckwheat flour, especially by adding more imported buckwheat flour. From this mixed flour, 9 minerals and 16 amino acids including 9 essential amino acids were analysed. Contents of selenium, sodium and magnessium were very high in buckwheat flour, Therefore, nutritional value of domestic buckwheat was highly evaluated. BAP method was used to determine the change of gelatinization in the noodles prepared by extruder at 8$0^{\circ}C$, and in the noodles during freeze drying and refrigeration. 70% of gelatinization was done during noolding process and retrogradation was severe during refrigeration.

Seaweeds are large algae that grow in a saltwater or marine environment. There are over 400 species of seaweeds in the bay of Korea. Most seaweeds are divided into three groups according to their color : the green seaweeds(division Chlorophyta), the brown(Phanphyta) and the red(Rhodophyta), Seaweeds have been harvested for use as food, fertilizer, animal feed and medicines for thousands years. In the past decade, there has been increasing interest in using seaweeds for animal feedstuffs and feed supplements as their health qualities are becoming better known. In this review some perspectives on nutritional values and the role of functionality ingredients of various seaweeds will be also discussed. Ecklonia cava kjellman(EC), a perennial seaweed, is one of the main components of the marine forests along the East and South coasts of Korea. We conducted three experiments to evaluate the nutritional values of EC and the crude lectin extracted residues from EC(LEEC) and to investigate their dietary effects on productivity and immunocompetence in poultry. The crude protein content of EC was relatively low(about 10 %) and its amino acids were poorly available. But, the results of our study suggested that EC can be used into broiler feed up to 3 % without any adverse effect, if its nutritional values are well evaluated prior to use. Similar results of dietary LECC up to 1.0 % level on egg production and egg quality have been obtained in layers. The concentrations of serum TNF-${\alpha}$ after Salmonella challenge were rapidly increased in accordance with the level of LEEC. These results indicated that LEEC can be used as a feed additives for enhancing of immunocompetence in poultry.
Spirulina is a microscopic and filamentous cyanobacterium that contains essential amino acids, essential fatty acids, vitamins, minerals and anti-oxidative components. The purpose of this study was to examine effects of spirulina intervention in Korean patients with type 2 diabetes. The subjects were 37 type 2 diabetic patients who visited a diabetic clinic in Seoul and randomly assigned into spirulina (8 g/day) or control group. During the intervention period of 12 weeks, subjects were asked to keep usual diet and prohibited to take any functional foods or dietary supplements. Spirulina supplementation for 12 weeks did not affect anthropometric parameters, however, lowered plasma triglycerides level significantly (p<0.05). Spirulina supplementation also resulted in a significant reduction in plasma malondialdehyde level (p<0.05) and an increase in plasma adiponectin level (p<0.1). The lipid lowering effect of spirulina supplementation was different according to serum lipid levels of the subjects before entering the intervention. The subjects with higher initial triglyceride level showed higher reduction in plasma triglyceride and blood pressure. The subjects with higher initial total cholesterol and LDL-cholesterol level showed higher reduction in plasma concentrations of total cholesterol, LDL-cholesterol, IL-6, and blood pressure. It seems that spirulina supplementation is more effective in subjects with dyslipidemia. This study provides the evidence for beneficial effects of spirulina supplementation on blood lipid profiles, inflammatory variables, and antioxidant capacity in Korean patients with type 2 diabetes. The results suggest that spirulina is a promising agent as a functional food for diabetes management.

All the parts of lotus, including the seed, rhizome, leaf, stalk, petal, anther, pericarp, and fruit receptacle, have been used in traditional medicine system as a health beneficial supplement. However the most usually used from lotus plant is only the root. Therefore in this study, it will be discussed more the utilization of other parts of the lotus, namely the flower of lotus. The petals and stamens of lotus actually are also rich in bioactive components such as flavonoids and alkaloids, are used in the treatment of tissue inflammation, cancer, skin disease, and also for us as antidotes. One of the biotechnological process that can be used to improve the nutritional content, sensory, and also antioxidant activities is fermentation process. The final product desired from the fermentation process in this study is vinegar. The microbial strain powder used is Uinkin fermented powder with three variations of fermentation. The variations given in this study were initial sugar 32%, 24%, and 14% with the same fermentation temperature, $35^{\circ}C$ for 3 months. The results obtained showed that the pH value and sugar content of products during the fermentation process were decreasing during the fermentation process, with total polyphenol content of $283.7{\pm}97.6mg/100g\;QAE$, and total flavonoid content of $3.3{\pm}0.0mg/100g\;QAE$. For the DPPH radical scavenging ability of the fermentation product also increased in a concentration dependent manner, with ORAC activity of the product showed a high activity of $20.7{\pm}0.41{\mu}M$ TE. Therefore, fermentation process can be the one of method for improving the product. The efficiency of lotus flower vinegar fermentation can be reached with an initial sugar condition of 25% (sample B).
Soybean quality is determined based on protein content, lipid content and fatty acid composition, and several functional components including isoflavones, anthocyanins and functional activity. Because the level of each component changes during seed development, it is necessary to know the concentration of quality-related components in developing seeds. Little is known of the pattern of changes in quality-related components. Seeds from field-grown soybean was harvest from the $R_6$ stage to the $R_8$ stage in 2004. Seed characteristics and the level of nutritional components were examined. Seed moisture content was dropped rapidly after the $R_7$ stage in the tested varieties. Seed growth rate was the highest from the beginning of the $R_6$ stage to the mid-$R_6$ stage. Chlorophyll content was decreased rapidly in pods and seeds. However, seed growth period from the $R_6\;to\;R_8$ was 35 days. The crude protein content was. increased dramatically between 63 DAF and 70 DAF and then increased slightly. The pattern of isoflavone accumulation was nearly similar to that of seed weight increase. From the late $R_6$ stage to the $R_7$, the accumulation rate was higher as compared to other stages. The angiotensin inhibitory activity was increased according to seed development from 63 ($R_6$) to 84 DAF ($R_8$). The difference of inhibitory activity in heated soybean powder, however, was not great among stages. The inhibitory activity was affected by heating treatment. The most effective heating time was 10 min. Excessive heating longer than 30 min resulted in a lowered inhibitory activity of soybean on ACE.
Flavan-3-ols are a subclass of flavonoids found in a variety of foods including teas. The effects of flavan-3-ols on the risk of metabolic syndrome (MetS) have been investigated, generally focusing on tea catechins or individual flavan-3-ol rich foods, but there is little information on dietary flavan-3-ols intake and risk of MetS in population-based studies. In this cross-sectional study, we examined the association between dietary flavan-3-ols intake and the risk of MetS in Korean adults. Subjects comprised 1,827 men and 2,918 women aged 20-69 years whose data was included in the 2008 Korean National Health and Nutrition Examination Survey. This survey was conducted between January 2008 and December 2008. Total flavan-3-ols intakes were calculated from 24-hour dietary recalls using a flavonoids database. Thirty percent of the male subjects and 24% of the female subjects were reported as having MetS. In the female subjects, flavan3-ols intake was inversely associated with the risk of MetS after adjusting for potential confounders (5th vs. 1st quintile, OR=0.64, 95% CI=0.45-0.91, P for trend=0.384). The main food source of flavan-3-ols was green tea followed by apples and grapes. Among MetS components, flavan-3-ols intake was inversely associated with the risk of high blood pressure after adjusting for potential confounders (5th vs. 1st quintile, OR=0.64, 95% CI=0.45-0.90, P for trend=0.005). No significant association between flavan-3-ols intake and risk of MetS was found in the male subjects. After stratified analysis by obesity (BMI ${\geq}$ 25 or BMI < 25), however, flavan3-ols intake was inversely related to the risk of hypertension in non-obese men. These results suggest that dietary flavan-3-ols intake may have beneficial effects on MetS risk by reducing the risk of hypertension. The effects of flavan-3-ols intake dependent on obesity need further investigation.

To identify and compare the nutritional composition of different kinds of citrus, three examples (Citrus fruit, Kumquat, and Hallabong) were taken from Jeju island in Korea at the same time and their nutritional compositions were measured using the Association of Official Analytical Chemists (AOAC) method. The proximate components (moisture, protein, fat, fiber, ash, and carbohydrates), mineral and vitamin contents were measured. The Nutrient composition revealed some significant differences among the Citrus. The Citrus fruit has more moisture and Fe content than those of the Kumquat. The Kumquat contained more ash, Ca, Na, Mg, Zn, Vitamin A, and B1 than the other Citrus specimens, while the Hallabong had the most protein and Fe. However, fiber, K, Vitamin B₂, C and niacin contents were not significantly different among the specimens. The results demonstrate that the three kinds of citrus used in this study have different nutritional compositions, but they can all be used as a good food for supplementation of K, vitamin A and C. We hope the nutritional analysis of Citrus specimens will be helpful in meeting the consumer's interest in these Citrus, and increase the export of our Citrus produce.
In this study, the effects of feeding citrus byproducts on nutritional components of Korean native chickens were investigated. Two samples of Korean native chickens were used for this study: T0 (chickens fed with only feed for laying hen until they became 39 weeks old, not with citrus byproducts) and T1 (chickens fed with citrus byproducts). The feed for T1 was the same as T0 for the first 16 weeks, and then was made by adding 4% of citrus byproducts to the feed for T0 between $17{\sim}39$ weeks. The chicken used for the experiment was obtained by chilling them for 2 days after slaughter. There was no significant difference between T0 and T1 regardless of feeding citrus byproducts, in terms of their breast/thigh's calorie, contents of moisture, protein, fat and ash, total structural amino acid, total free amino acid and composition of saturated/unsaturated fatty acids. The breast's cholesterol amount of T0 and T1 were 48.4 mg/100 g and 47.6 mg/100 g, respectively, while that of thigh for T0 and T1 were 75.7 mg/100 g and 72.8 mg/100 g, respectively, which implies that T1 showed lower amount of cholesterol than T0. T1 showed significantly higher amount of phosphorus, potassium, magnesium and vitamin B2 for thigh than T0 (p<0.05).

Cirsium setidens Nakai, a wild perennial, is widely consumed as a food and traditional medicine in Korea. In addition, diverse functionalities of C. setidens Nakai, including anti-inflammatory and antioxidant effects, have been reported. However, whether or not C. setidens Nakai and its major compound, pectolinarin have high nutritional value and functional properties remains unknown. This paper investigated the proximate compositions, mineral contents, hepatoprotective activities, hepatic fat accumulation inhibitory activities, and anti-inflammatory and anti-oxidant activities of C. setidens Nakai and its component parts, including of pectolinarin. The result showed that C. setidens Nakai and its major compounds have potential as a functional food material with natural antioxidant and anti-inflammatory activities.
Korea has produced large quantities of Panax Ginseng roots which have a stimulating effect on the metabolisma of protein, lipid and nucleic acids in the body. Authors believe that the lear and trunk of Panax Ginseng might have some components possessing a similar activity to Panax Ginseng root although the quantity and quality of the functional components may be somewhat different. Therefore, this study was designed to observe the nutritional effects of diet supplemented with the leaves or trunks of Panax Ginseng. Weanling(body weight; $82{\pm}3g$) male albino rats were subjected to six different dietary groups as followings; A groups; dietary groups which were treated with steam for 30 min at $115^{\circ}C}$. B Groups; dietary groups which were not treated with steam. A-C (or B-C) dietary group; Control for A groups(or B groups) containing 99% wheat flour. A-1 (or B-1) dietary group; dietary group supplemented with 2% leaf of Panax Ginseng, which replaced 2% wheat flour of control diet. A-2 (or B-2) dietary group; dietary group supplemented with 2% trunk of Panax Ginseng, which replaced 2% wheat flour or control diet. Each group of rats was maintained with the corresponding diet for 40 days. And then they were sacrificed. The growth rate, protein efficiency ratio, and the contents of lipid and cholesterol in organs were determined. The results obtained are summarized as follows;1) The gained body weights of dietary group supplemented with 2% leaf(A-1 and B-1) or 2% trunk(A-2 and B-2) of panax Ginseng were more increased in comparison to the corresponding control group(A-C and B-C). 2) The gained body weight of each group in A-group(A-C, A-I and A-2) was higher than that or each corresponding dietary group in B-group(B-C, B-1 and B-2). 3) The protein efficiency ratios of A-1 and A-2 dietary group, and B-1 and B-2 dietary group were more improved in comparison to the corresponding control group(A-C and BC). 4) The lipid contents in the liver of A-1 and B-1 dietary groups were lower than in that of A-C and. B-C dietary group, respectively. According to the above results, it could be suggested that the nutritional value of the wheat flour can be improved by supplement of 2% leaf or 2% trunk of Panax Ginseng.
