The antioxidant activity of steamed ginger and its protective effects on obesity induced by high-fat diet in C57BL/6J mice

  • BACKGROUND/OBJECTIVES: Ginger, a root vegetable, is known to have antioxidant and antiobesity effects. Preparation, such as by steaming, can affect the chemical composition of prepared root vegetables or herbs and can change their functional activities. In the present study, we investigated the protective effects of steamed ginger against oxidative stress and steatosis in C57BL/6J mice fed a high-fat diet. MATERIAL/METHODS: The levels of polyphenols and flavonoids in two different extracts of steamed ginger, i.e., water extract (SGW) and ethanolic extract (SGE); as well, their antioxidant activities were examined. Forty male C57BL/6J mice were fed a normal diet (ND, n = 10), high-fat diet (HFD, 60% fat, w/w, n = 10), HFD supplemented with 200 mg/kg of SGE or garcinia (GAR) by weight (SGED or GARD, respectively, n = 10) for 12 weeks. Serum chemistry was examined, and the expressions of genes involved in lipid metabolism were determined in the liver. Histological analysis was performed to identify lipid accumulations in epididymal fat pads and liver. RESULTS: The SGE had higher contents of polyphenols and flavonoids and higher DPPH and $ABTS^+$ free radical scavenging activities compared to those of SGW. Treatment with SGE or GAR significantly decreased the HFD-induced weight gain. Both SGE and GAR significantly reduced the high serum total cholesterol (TC), triglyceride (TG) and low-density lipoprotein levels induced by HFD. Compared to ND, HFD significantly increased hepatic TC and TG levels. SGE or GAR supplementation significantly decreased the increase of hepatic lipids by HFD. Interestingly, SGE had a more significant effect in reducing hepatic TC and TG levels than GAR. Furthermore, hepatic genes involved in lipogenesis and lipolysis were altered in both the SGED and GARD groups. CONCLUSIONS: The present study indicates that steamed ginger supplementation can decrease plasma TC and TG and can inhibit liver steatosis by regulating the expressions of hepatic genes.

대학 축구선수에서 일회성 무산소 운동에 따른 운동 유발성 스트레스 반응의 변화 (Changes of Exercise-induced Stress Response with an Acute Anaerobic Exercise in Elite Soccer Players of University)

  • This study was conducted to investigate the changes of exercise-induced stress response with acute anaerobic exercise in elite soccer players of university. The subjects were divided into elite soccer players of university (SG, n=10) and control group (CG, n=10). Subjects were tested three consecutive Wingate test for 30 seconds involving 2 times of 3 mins of resting time. In addition, whole blood and capillary blood were collected at rest, immediately post-exercise and 60 mins. of recovery time. Obtained results were as follows: Evaluated mean power and peak power of SG group was significantly higher than that of CG group in the all phase of Wingate test, respectively (p<.01). Although resting serum TG, TC, HDLC levels were not significant difference between SG and CG group, resting serum glucose of SG group was significantly lower than that of CG group. In addition, serum CRP levels of SG group were significantly lower than that of CG group at rest, immediately post-exercise and 60 mins of recovery time, respectively (p<.01). In serum cytokines, in spite of no significant differences in IL-1β levels between SG and CG group, IL-6 levels of SG group were significantly lower than that of CG group at immediately post-exercise and 60 mins. of recovery time, respectively (p<.05, p<.01). From these results, long-term combination training have a crucial role in amelioration of acute exerciseinduced stress response in elite soccer players.

위탁급식소 영양사와 조리종사원의 HACCP 적용지식 및 직무수행수준에 대한 인지도 평가 (Assessment of Hygiene Knowledge and Recognition on Job Performance Levels for HACCP Implementation for Dieticians and Employees at Contract Foodservices)

  • The purpose of this study was to provide basic data for practical HACCP training. A survey was conducted and analysed on 46 contract foodservices: 13 "Appointed" foodservices (appointed by Korean Food & Drug Administration), 17 "Voluntary Applying" foodservices (voluntarily applied HACCP, but not appointed), 16 "Non-applying" foodservices (not applied HACCP). Hygiene knowledge and recognition on job performance levels for HACCP application for 46 dieticians and 361 employees were surveyed. According to the survey, 61.5% of the "Appointed" dieticians took HACCP training from outside the company, 58.8% of "Voluntary Applying" dieticians took in-house HACCP training, and 62.4% of "Non-applying" dieticians have not taken any HACCP training. As for the comparison of hygiene knowledge, total mean of employees (6.38) showed significantly lower average than that of the dieticians (7.82) (p<0.001). From the result for recognition on job performance levels, total mean of dieticians (3.91) indicated generally good performance while employees (3.41) (p<0.001) showed considerably lower recognition. Hygiene knowledge and recognition on job performance levels of both dieticians and employees showed considerably close correlation (p<0.01 or p<0.05).

Zinc status and dietary quality of type 2 diabetic patients: implication of physical activity level

  • The purpose of this study was to analyze the relationships among zinc status, diet quality, glycemic control and self-rated physical activity level of type 2 diabetic patients. Dietary intakes for two non-consecutive days were measured by 24-hour recall method for seventy-six diabetic patients. Fasting blood glucose and HbA1c were measured for the assessment of glycemic control. We evaluated the extent of dietary adequacy by the percentage of subjects with a dietary intake of a nutrient less than the estimated average requirement(EAR), the dietary diversity score(DDS) and the dietary variety score(DVS). Zinc status was assessed from serum levels and urinary excretion. Dietary inadequacy was serious for five nutrients: riboflavin, calcium, thiamin, zinc and vitamin C. Dietary intakes from the meat, fish, and egg food groups and the milk food group were below the recommended level. Effects of Dietary Pectin, Tangerine Pulp Meal, Propionate, Lactate or Fumarate on Serum and Liver Cholesterol Levels, and Dietary Pectin on Cholesterol Absorption in Bats

  • The effect of dietary pectin, tangerine pulp meal, propionate, lactate or fumarate on cholesterol (C) and triacylglycerol(TG) levels in the serum and liver, and the effect of pectin on dietary C absorption were studied in a series of three experiments. Mature female Sprague Dawley rats were fed a control diet or diets containing 5% pectin, 5% tangerine pulp meal, 3% propionate, 3% lactate 3% fumarate, or 10% pectin. Serum total C levels were lower(p<0.05) in rats fed the diet containing 5% pectin than in control rats after a 4-week feeding period(93.8 vs 119.2mg/100mL). Serum HDL, LDL+VLDL C levels were not different among diet groups. Liver total C level was also lower(p<0.05) in rats fed the diet containing 5% pectin than in control rats, but liver TG level was not influenced by diet. Dietary propionate, lactate or fumarate did not reduce serum C, indicating that propionate is not a regulator of serum C. However, dietary pectin(10%) increased fecal excretion of dietary C(or its metabolites) more than 70% over a control value. Our data indicate that dietary pectin reduces serum and liver C levels by increased fecal secretion of dietary C, but not by its fermentation product propionate or other gluconeogenic substrates. Circulating levels of vitamin D, vitamin D receptor polymorphisms, and colorectal adenoma: a meta-analysis

  • Growing evidence suggests an elevated risk for colorectal neoplasia among individuals with low levels of vitamin D, the biological actions of which are mediated by the vitamin D receptor (VDR). To investigate the association among vitamin D status, VDR polymorphisms (FokI, and BsmI), and colorectal adenoma, we conducted a meta-analysis of nine studies of circulating levels of 25-hydroxyvitamin D (25(OH)D) and five studies of FokI or BsmI polymorphisms in relation to colorectal adenomas. Study-specific relative risks (RRs) and 95% confidence intervals (CIs) were pooled using a random-effects model. A total of 3398 coloreetal adenomas for 25(OH)D and 1754 colorectal adenomas for VDR were included in the meta-analysis. We identified a significant inverse association between colorectal adenoma (combined RR, 0.93; 95% CI, 0.87-0.98 per 10 ng/mL increase in 25(OH)D levels). When we examined FokI and BsmI polymorphisms in the meta-analysis, we found no association for either FokI (combined RR, 1.00; 95% CI, 0.95-1.06) or BsmI (combined RR, 0.99; 95% CI, 0.93-1.05) in the additive model. These data suggest an inverse association between circulating 25(OH)D levels and colorectal adenoma risk.

  • The present study was designed to compare the effect of soybean oils and corn oils on serum levels of total cholesterol, HDL-cholesterol and free cholesterol in cholesterol-fed rats. The results are as fellows: 1. The average body weight gain in soybean oil diet group was lower than that of the control group. 2. The food efficiency ratio in soybean oil diet group was lower than corn oil diet group. 3. The serum levels of total cholesterol in soybean oil diet group than that in corn oil diet group. 4. The serum levels of free cholesterol in soybean oil diet group was lower than that in corn oil diet group. 5. The serum levels of HDL-cholesterol in soybean oil diet group than that in corn oil diet group. 6. The serum levels of VLDL-, LFL-cholesterol in soybean oil diet group was lower than that in corn oil diet group.

산약 추출물의 리포좀 처리가 Streptozotocin으로 유발된 당뇨 마우스의 혈당 강하 효과와 혈장 인슐린 및 지질에 미치는 영향 (Effects of Coated Liposome from Discorea rhizoma Extract (DRE) -on Hypoglycemic, Serum Insulin, and Lipid Levels in Streptozotocin-Induced)

  • To investigate the effects of coated liposome from Discorea rhizoma extract (DRE) in streptozotocin (STZ)-induced, we evaluated changes in body weight, fasting blood glucose, blood insulin and blood lipid concentrations in mice. Mice were divided into four groups: (DC), diabetic DRE at 10 mg/kg (DRE-1), diabetic DRE at 50 mg/kg (DRE-2), and diabetic DRE at 250 mg/kg (DRE-3). Mice had free access to water and diet (10 weeks). The DC group showed higher blood cholesterol than the DRE-1, DRE-2, DRE-3 groups. In glucose tolerance test, the DRE-1, DRE-2, and DRE-3 groups increased after 30 minutes in decremental glycemic response area under the curve. Fasting blood glucose levels in the DRE groups significantly decreased through 4 weeks. Plasma total cholesterol, triglyceride and LDL-cholesterol concentrations were also lower in the DRE groups. On the other hand, the DRE-1, DRE-2 and DRE-3 groups showed higher HDL-cholesterol and insulin levels than the DC group. Moreover, blood glucose and lipid levels significantly decreased in streptozotocin (STZ)-induced diabetic mice treated with DRE. These results indicate that DRE may reduce elevated blood glucose levels and serum lipid concentrations in hypoglycemic and diabetic mice, suggesting its usefulness as a functional food.

임신말 모체 및 제대 혈청의 엽산 농도와 임심결과 (Serum Folate Levels of Maternal-Umbilical Cord Blood and Pregnancy Outcomes)

  • This study was out to evaluate the folate nutritional status of Korean pregnant women and to investigate the relationship between serum folate levels of maternal-umbilical cord blood and pregnancy outcomes. Folate intakes of the pregnants was estimated by dietary folate intakes obtained from semiquantitative frequency questionnaire and supplementary folate intakes. The serum folate levels in both maternal blood and umbilical cord of 29 pregnant women at delivery and 13 nonpregnant controls were measured by redioimmunoassay. The total folate intakes(dietary and supplementary)of the pregnant women was 465. 4$\mu\textrm{g}$/d which was 93% of the Korean RDA for folate. Maternal mean serum folate levels of the pregnants was 6.1$\mu\textrm{g}$/ml, significantly lower than that of nonpregnant women(8.9ng/ml). Mean serumfolate level of umbilical cord blood was 14.2ng/ml, which was 2.3 folds higher than that of maternal blood. This finding indicates that the uptake of folate in the fetus may be due to an active placental transport mechanism. Maternal serum folate level correlated positively with that of umbilical cord blood, showing that folate concentration of umbilical cord blood is affected by maternal status. There was no significant correlation between the serum folate levels in maternal-umbilical cord blood and the pregnancy outcomes.(Korean J Nutrition 33(8) : 840-847, 2000)

영유아의 식행동, 발달 수준 그리고 어머니의 영양 태도 및 영양 지식에 관한 연구 (A Study on Eating Behavior, Developmental Outcomes of Young Children, and Nutritional Attitude and Knowledge Levels of Mothers)

  • The objective of this study was to examine the eating habit characteristic and developmental outcomes of young children (ages 24 months through 42 months) as well as their mothers' nutritional attitudes and maternal levels of nutrition knowledge. The study also analyzed relationships among the children's eating habits and developmental outcomes and the mothers' nutritional attitudes and nutrition knowledge levels. The subjects included 164 young children who were enrolled in early childhood education and care settings in Seoul and Gyunggi province. The main results were as follows. There were significant correlations among the young children's eating habits and developmental outcomes, specifically between their attitudes towards meals and fine motor skills, communication, social-emotional aspects, and cognitive areas (p<0.01). In addition, there were significant correlations among the young children's eating habits, the mothers' nutritional attitudes and their nutrition knowledge levels (p<0.01).
