To assess the food habits, nutrient intake and diet quality of preschool children aged 1 to 6 in Pusan by their meals and snacks, dietary survey was conducted with 176 subjects by a questionnaire and 24hr recall method. 63.1% of the subjects often skipped meals and 72.1% of those skipped breakfast in the main. 94.5% had snacks over once per day. The mean energy intake was 1406.4kcal, with 57.7% of energy intake being supplied by carbohydrate, 13.7% by protein, 28.6% by fat. 54.9%, 71.7% and 26.5% of intakes of protein, calcium and iron were supplied respectively by animal food. Most of iron intake came from plant origin. The percent of calcium intake from animal origin was low significantly in a group aged 4 to 6(p<0.05). The mean intakes of calcium, iron and niacin of total subjects were below Recommended Dietary Allo wance(RDA) for Koreans. The mean intakes of iron and niacin of a group aged 1 to 3 were below RDA as well as those of energy, caicium, vitamin B2 and niacin of the group aged 4 to 6. For calcium, iron, vitamin A, niacin and vitamin C, proportions of subjects with intake levels less than 75% of RDA were all over 36%. For most nutrients, proportions of subjects with intake levels less than 75% of RDA were higher in the group aged 4 to 6 than in the group aged 1 to 3. Nutrient adequacy ratios(NAR) were the lowest in iron in case of the group aged 1 to 3 and in calcium in case of the group aged 4 to 6. NAR of iron increased and that of vitamin B2 decreased significantly along increase age(p<0.05). The mean adequacy ratios(MAR) were 0.82 for total subjects, 0.83 for the group aged 1 to 3 and 0.80 for the group aged 4 to 6. The indexes of nutritional quality(INQ) of calcium, iron and niacin of the group aged 1 to 3 were below 1 as well as those of calcium, vitamin B2 and niacin of the group aged 4 to 6. Both of the age groups received 31.6~59.0% of daily intakes of energy, fat, calcium, phosphrous, vitamin B2 and vitamin C from snacks. So snacks clearly play an important role in dietary intake. Both of the NARs of most nutrients and MAR were higher in snacks than in three meals. The INQs of calcium and iron from three meals and those of iron, vitamin A, vitamin B1 and niacin from snacks of the group aged 1 to 3 were all below 1. The INQs of calcium and vitamin B2 from three meals and those of vitamin A and niacin from snacks of the group aged 4 to 6 were all below 1. In conclusion, nutritional characteristics were different between the two age groups. More attention should be paid to improve adequacy of nutrient intake through meals. And dietary management for snacks is needed especially in the group aged 1 to 3.
The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ii ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by two different types of Korean style restaurants. A total of 27 restaurants participated in this study, 7 restaurants from the luxurious hotels in Seoul and 20 restaurants from the City of Changwon. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance (RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) Compared with 1/3 or the Korean RDA, all the nutrients were oversupplied. The average nutrient ratios were about 3.7 times higher than 113 of the Korean RDA in calories, about 9 times higher in proteins, 10 times higher in phosphorus, 7 times higher in Vitamin Bl, and 12 times higher in Vitamin E. 2) Seventy-five percent (n = 20) of the restaurants served within the range of thirty to forty dishes, whereas most of the hotel restaurants (70%) served twenty dishes or fewer. 3) The average carbohydrate: protein: fat (CPF) ratio of caloric nutrients was 40:26 : 34. This study concluded that: i) Korean style full course meals provide too much food, nutrients, and calories, resulting in an over- or unbalanced nutrient intake, and ii ) the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. Such over -or unbalanced nutrient intake could cause chronic degenerative problems such as cancer and cardiovascular disease. These findings indicate that restaurants serving Korean style full course meals should carefully plan their menus in order to provide their customers with balanced meals. They should also be strongly encouraged to play an active role in improving their customers' nutritional status, as well as reducing the restaurants wastage of food. To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. The purpose of the present study was aimed to identify dish items applicable in developing dish?based food frequency questionnaire (DFFQ) for a hypertension study of Koreans. The 24-hour recall data of 4,401 subjects aged $20{\sim}65$ years from the 2001 Korean National Health and Nutrition Examination Survey were used for the analysis. Logistic regression model was used to identify the nutrient related with hypertension. Energy, fiber, sodium, calcium, carotene, vitamin B1 and vitamin C were associated with hypertension. Selection the top 30 dish items for these seven nutrients was performed based on their degree of contribution in supplying nutrients in terms of the cumulative percent contribution (cPC), as well as on their degree of explanation for between?person variation, in terms of the cumulative regression coefficient (cMRC). Rice supplied 43% of total energy consumption. Korean cabbage and radish kimchi were two major sources of sodium and it also covered the 27% of between person variation of sodium intake. Soybean paste soup and single item of orange?colored fruits supplied 43% of total vitamin C intake for Koreans and it covered the almost 79% of between person variation among the Korean population. Korean cabbage kimchi was the major source of fiber, calcium, sodium, carotene, and vitamin C for Koreans. In summary, the top 30 selected dish items supplying the 78% to 89% of the 7 nutrients. Those items also covered the 79% to 94% of between person variation of the 7 nutrients consumption. Therefore, the selected 30 dish items in each categories of nutrient could be applicable in developing dish based food frequency questionnaire for hypertension study.
Although a generation-related difference in nutrient and food-group intake has been broadly recognized in the Japanese population, few studies have examined the difference and correlation of intakes with consideration of a family line and co-habitation status. We conducted a dietary survey using female college students in dietetic course in Aichi, Japan, and their mothers and grandmothers. A validated self-administered diet history questionnaire was used for assessment of intakes. Data from 110 families were included in the analysis. The means of 13 nutrients and 10 food groups (of the 15 and 14, respectively) showed significant differences among the three generations. A significant difference was observed in the carbohydrate, protein, saturated fatty acid, cholesterol, and fish intakes between the students living with their mothers and those apart. In the correlation analyses between generations, moderate correlation was observed for most nutrients and food groups between the students and their mothers living together (correlation range = 0.30-0.61 for nutrients, and = 0.21 -0.56 for food groups). A wide variation with no consistency was observed for the correlation between the students and their grandmothers (-0.18 -0.59 and -0.33 -0.65, respectively), No meaningful correlation was observed between any two generations living apart. Among the food groups examined, pulses, fish, and vegetables showed relatively large differences for the correlation between two groups with different living conditions. When living together, the correlation coefficients for nutrients and food groups between the students and their mothers decreased according to the increase in frequency of eating out by the students. These results suggest that living together and eating together were an important factor for the resemblance in dietary habits between generations in the population with a marked generation-related difference in intakes. Objective: This study aimed at studying the potential use of Flemingia (Flemingia macrophylla) as a protein source fodder to improve nutrients digestibility and ruminal fermentation efficiency in beef cattle. Methods: Four, Thai native beef cattle were randomly assigned in a 4×4 Latin square design. Four levels of Flemingia hay meal (FHM) were used to replace soybean meal (SBM) in the concentrate mixtures in four dietary treatments replacing levels at 0%, 30%, 60%, and 100% of SBM. Results: The experimental findings revealed that replacements did not effect on intake of rice straw, concentrate and total dry matter (DM) intake (p>0.05). However, the apparent digestibilities of DM, organic matter, crude protein, acid detergent fiber, and neutral detergent fiber were linearly increased up to 100% replacement levels. Moreover, the production of total volatile fatty acids, and propionate concentration were enhanced (p<0.05) whereas the concentration of acetate was reduced in all replacement groups. Consequently, the CH4 production was significantly lower when increasing levels of FHM for SBM (p<0.05). Furthermore, rumen bacterial population was additionally increased (p<0.05) while protozoal population was clearly decreased (p<0.05) in all replacement groups up to 100%. In addition, microbial nitrogen supply and efficiency of microbial nitrogen synthesis were enhanced (p<0.05), as affected by FHM replacements. Conclusion: The findings under this experiment suggest that 100% FHM replacement in concentrate mixture enhanced rumen fermentation efficiency, nutrients digestibilities, bacterial population, microbial protein synthesis, and subsequently reduced CH4 production in beef cattle fed on rice straw.
Few studies have conducted the bone health benefits of usual dietary isoflavone intake in Korean college-student women. To elucidate this benefitial effects and correlations between dietary isoflavone and nutrients intake and bone formation marker (ALPase, osteocalcin), questionnaires, anthropometric measurements, serum mineral (Ca, P, Mg) concentrations were analyzed. Fifty three subjects were used in this study. The average age, height, body weight, BMI, body fat content and triceps skinfold thickness were 21.43 year, 161.07 cm, 52.81 kg, 20.48 kg/$m^2$, 20.72% and 17.59 mm respectively. Soy food intake frequencies were soybean > soybean curd > soypaste stew > soybean milk. The average calorie, protein and Ca intake were 1766.21 $\pm62.54 kcal\;66.45\pm2.00 g\;and\; 549.62 \pm 27.55 mg$ respectively. Serum ALPase activity and osteocalcin concentration were 115.74$\pm3.6u/L$ and 7.15 ng/$m\\ell$ respectively. Usual dietary isoflavone intake was positively related to calory, protein, Ca, P intake and serum Ca, Mg concentration. Serum osteocalcin concentration was negatively correlated with isoflavone intake ($r^2$=0.28, p < 0.05). In these results, usual dietary isoflavone can support an additive effect to bone health and Ca nutrition.
The association between nutrient intake and nutritional status was investigated with anthropometric measurements, body composition and blood biochemical indices in 56 healthy young men fed balanced diet for two years. Compared with Korean recommended dietary allowances (Korean RDA), all nutrient intakes were adequate. Height and body weight were significantly (p < .01 - p < .05) positively correlated to the intakes of energy, protein, sodium, potassium vitamin A and vitamin $B_1$. The lean weight was significantly (p < .001 - p < .05) correlated to the intake of energy, protein, sodium, potassium, vitamin A, vitamin B$_1$. niacin and vitamin C. The skinfold thickness of triceps and suprailiac was significantly (p < .01 - p < .05) correlated to the intake of energy, sodium, potassium, but that of thigh was not correlated. The significant correlations neither between nutrient intake and blood biochemical indices nor between nutrient intake and blood pressure were shown. These results suggest that nutritional status as anthropometric indices and body composition is associated with nutrient intake in young healthy adults on balanced diet, however, the nutritional status as blood biochemical indices of active people is neither endangered nor improved in comparison with less active ones.
The purpose of this paper is to investigate the nutrients intake situation and the physical growth and development of junior high school girls in cheju island, the peculiar area in Korea, and to study every possible correlation ketween daily food intake and growth rate of them. Further, it made an attempt to research nutrition problems for them in this area and assist in their growth and development through proper nutritional marragement. The survey was conducted in seven sample schods selected randomly from all three districts -this is Bukcheju-gun, Namcheju-gun and cheju city-of cheju Island. Four hundred eighteen girls, aged thirteen years ald, in second year grade of junior high schools, were provided with prepared questionnaires. For six days, July $16{\sim}21$ in 1975, the respondents filled out the questionnaires. They were asked to keep record of what they ate each meat. Their mitrients intake were analyzed in accordance with their daily food intake records during a six day period. On the other side, including physical growth index calculated by means of weight and hight of the respondents, their school records were also investigated. Critical Ratio as well as percentage calculation were included for statistical analysis. The findings and results abtained are summarized as follows: (1) Living circumstance a) Average numbers of brother and sister in sampled pupils' family were five. b) Niety percent of the respondents were brought up by mother's milk at their infants and 45 percent of them were weaned at the age of 13 to 24 months. c) Fourty-six percent of them revealed irregulity in their meal time. d) The most favorite main dish was boiled rice mixed other cereals (34%), next bread (31%) and boiled noodle (26%), and kimchi was the most papular side dish (64%). (2) Nutrition survey a) The average calorie intake of a pupil per day was 1,783 cal. and the total calorie intake was composed of carbohydrate 73%, pratein 15%, fat 12% respectively. b) Carolie and nutrients were lower than the recommended level, except vitamins A,$B_1$ and Niacin, c) Average protein intake per day was 68g, which was relatively near to the recommended level, but in fact, most of them came from grain which is lacking in essential amino acids. The ratio of animal protein intake to tatal protein intake was 36%. d) Their average animal food intake was proportionated in 14% in their total food intake and the cereals consumed in the largest quantity at the level of 63% out of whole food groups. (3) The results of statistical analysis a) The correlation between the calorie intake and the physical growth index revealed statistical significancy at the level of P<.005. b) The correlation between the protein intake and the physical growth index revealed statistical significancy at the level of .01
