The sound dietary habit is formed in childhood, which is basic foundation for keeping health. The school foodservice is practiced to provide proper nutritions, to establish the sound dietary habit. Continuous evaluation and improvement are necessary to operate school foodservice effectively. This study was conducted to evaluate the quality of meals served in elementary school based on nutrient content, food diversity. A questionnaire was mailed to dietitian of each school requested for menus of one week. Menus served in 77 schools from each province and major cities in Korea were analyzed. The results of this study were summarized as follows; Compared to 1/3 of RDA for children, many schools provide lower amounts of energy, calcium and Vitamin A. Proportions of energy from carbohydrate, protein and fat were 59.64%, 17.43% and 20.11%, respectively and were not significantly different by the area, the foodservice system, and the number of persons served. NAR(nutrient adequacy ratio) were lowest for calcium(0.67) and Vitamin A(0.65). MAR(mean adequacy ratio) was 0.83. The results of comparison of NAR and MAR by the area, the foodservice system, and the number of persons served were similar to those of nutrient contents. Comparing foods served by the nutrient density were different by nutrient contents, NAR and MAR. Mean nutrient density per meal were higher in large cities than in small cities and rural area, in conventional than in commissary foodservice system. Mean number of dishes and food items per meal were 5.86 and 19.87, respectively. The mean of total quantity of each food group per meal was 352g. The mean of total quantity of each food group per meal were higher in small cities and rural area than in large cities, in commissary than in conventional foodservice system. This study is based only on served menus, and the evaluations of meals based on actual consumption of children are needed. These results suggest that in order to improve the quality of school food service, realistic standard should be suggested and basic study should be done continuously.

The purpose of this study was to evaluate total sugars intake and determine its relationship with nutrient density and obesity degree in elementary school children. A total of 1,292 elementary school students (638 boys, 654 girls) in Chungnam participated in this study. Daily total sugars intake of subjects was analyzed using the USDA database of sugars after a questionnaire survey using 24-hour recalls. The average age of subjects was 9.7 years, daily energy intake was 1,834.0 kcal, and total sugars intake was 37.6 g/day, which was 8.3% of total energy intake. Sugars intake from the milk group was highest at 18.4 g/day, followed by fruits, cereals, sugars and sweeteners, and beverages. Nutrient density of protein as well as Na, Fe, and Zn levels were significantly lower according to total sugars intake level. There was no significant difference between overweight and obesity risk among the sugars intake quartile groups. In conclusion, total sugars intake of subjects was not significantly high and not associated with obesity risk; however, high sugars intake in children was associated with decreased consumption of protein, Fe, and Zn, which are important for growth.
This study was conducted to investigate the anthropometric data, bone density, serum profiles, nutrient intakes and diet quality of premenopausal and postmenopausal women. For the study, we obtained data for analysis from the combined 2008~2011 Korean National Health and Nutrition Examination Survey (KNHANES). The height and weight were 157.8 cm and 58.7 kg in premenopausal women and 155.5 cm and 58.3 kg in postmenopausal women, respectively. The obesity rate was 27.49% in premenopausal women and 34.98% in postmenopausal women (p<0.001). Total cholesterol, LDL-cholesterol, triglyceride, GOT, GPT and alkaline phosphatase in postmenopausal women were significantly higher than those in premenopausal women (p<0.001). The prevalence of osteoporosis was 0.0~0.89% in premenopausal women and 0.48~13.22% in postmenopausal women (p<0.001). In postmenopausal women, rates of hypertension, stroke, myocardial infarction, depression, and diabetes were significantly higher than those in premenopausal women. Water, fat. ash, sodium, retinol, thiamin, riboflavin and niacin intakes in premenopausal women were significantly higher than those in postmenopausal women. Water, fiber, Ca, and, K intakes were below KDRIs (Dietary Reference Intakes for Koreans) in both groups. The mean adequacy ratio (MAR) of premenopausal women was higher than that of postmenopausal women (p<0.001). The index of nutritional quality (INQ) in premenopausal women was also higher than that of postmenopausal women except iron and vitamin C. Therefore dietary guidelines and an education program should be developed for desirable improvement of health, bone density, nutrient status and dietary quality of postmenopausal women.
BACKGROUND/OBJECTIVES: The intake of sugar has increased worldwide, and it is well established that childhood experiences and food preferences affect lifelong eating habits. To discourage sugar intake, nutrition education was imparted, and the effectiveness of the nutrition education program was investigated by considering the nutrient density and major dietary sources of sugar intake. SUBJECTS/METHODS: Twenty four-hour dietary recall and sugar intake frequency of 96 pre-school children (educated n = 47; non-educated n = 49) were collected on 3 consecutive days (1 weekend day, 2 weekdays) after 11 weeks of imparting nutrition education. Dietary intake of nutrients and total sugar were analyzed, and the intake frequency of sugar source foods were identified. All nutrition education programs were focused on a hands-on education program, and consisted of cooking lab, play, activity, animation, and visual materials. The difference between the two groups was verified by the Chi-square test or t-test. All statistical analysis was performed with significance level at P < 0.05. RESULTS: Compared to the non-educated group, the intakes of protein (P < 0.001), fiber (P < 0.01), potassium (P < 0.05), iron (P < 0.05), zinc (P < 0.05), and iodine (P < 0.001) were significantly higher, and the intakes of carbohydrate (P < 0.01) and total sugar (P < 0.05) were significantly lower in the educated group. The cumulative percent of sugar intake of top 20 sugar source foods in the educated group (82.80%) was lower than that of the non-educated group (85.75%). The contribution of beverages on total sugar intake was lower in the educated group. The average frequency of consuming sugary foods was significantly lower in the educated group (P < 0.05). CONCLUSIONS: Our results indicate that nutrition education on discouraging sugar intake is effective in reducing the amount of total sugar consumed, resulting higher nutrient density in the diets of pre-school children.
Objectives: This study was carried out to investigate bone mineral density (BMD), blood pressure, age and biochemical index and nutrient intakes, and to analyze the relationship between BMD, blood pressure, biochemical index, nutrient intakes of Korean women. Methods: The study subjects were 499 women with a age range of 30-79 years living in Seoul and Kyunggi area who participated in 2011 KNHANES. The study subjects were divided into 5 age groups : 30 years (145), 40 years (110), 50 years (102), 60 years (85) and 70 years (57), and 3 BMD groups: normal 258 (50.4%), osteopenia 163 (32.9%) and osteoporosis 78 (16.7%). Results: The average waist circumference, BMI and body fat increased with age, but fat free mass decreased with age. Average BMD and T-score was decreased from 0.84, $0.74g/cm^2$ in 30 years to 0.05, $-1.05g/cm^2$ in 70 years. The rates of osteopenia and osteoporosis increased significantly 22% in 30~40 years, 47% in 50 years and 56% in 60~70 years. Systolic blood pressure and cholesterol were significantly increased with age. The rates of hypertension was significantly increased 2.1% in 30 years, 30.4% in 50 years 89.5% in 70 years. Average nutrient intakes such as protein, calcium, iron, vitamin A and C were significantly decreased with age. There were significant negative correlations between age and calcium, systolic blood pressure, triglyceride. Conclusions: In this study, we found the risk of osteoporosis and hypertension were significantly increase with over 50 years age. Calcium and protein intake decreased with age. Therefore, in order to prevent osteoporosis and hypertension, adult women need to be educated regarding the importance of protein, calcium and other nutrients in their diet.
The System of Rice Intensification (SRI) is a new concept of increasing the yield of rice produced in farming. Therefore, we investigated the impacts of planting density on nutrient uptake as affected by SRI under no-till cropping system. The field was prepared as a randomized complete block design with three treatments: $10{\times}10$ cm, $20{\times}20$ cm and $30{\times}30$ cm planting densities. The root dry mass was significantly increased in the wider planting densities (p<0.05%). The highest grain yield was obtained in $20{\times}20$ cm planting density plot (p<0.05%) due to higher plant density per unit area and spikelets number per panicle. The total uptake amounts by rice plant were significantly higher in $20{\times}$20 cm planting density plot as 94.8 kg $ha^{-1}$ for T-N and 29.9 kg $ha^{-1}$ for P than other planting densities plots, but K and Mg uptake were significantly higher in $10{\times}10$ cm planting density plot (p<0.05%). In this study, our findings suggest that SRI should be considered as a new practice for the rice productivity.
Adolescents grow rapidly and have lots of schoolwork for entrance examination, so good nutrition is very important to them. However, adolescents tend to have a poor dietary behavior including frequent consumption of empty calorie foods and skipping breakfast. In particular, frequency of drinking milk has been low among Korean adolescents, thus their dietary calcium intakes has been low. Undesirable dietary behavior of adolescents is a risk factor for poor nutrition, obesity and chronic disease of them. Milk is a good source for calcium, high quality of protein, vitamin and bioactive compounds including anti-obesity component, thus it has been reported that milk helps improvement of dietary nutrient adequacy and physical growth, increment of bone mineral density, and prevention of obesity and chronic diseases. Therefore, milk consumption of adolescents should be encouraged in order to help their nutritional status, physical growth and health.
This study was designed to investigate the effect of nutrient intake on bone mineral density (BMD) of the lumbar spine(L2longrightarrowL4) in 41 postmenopausal women. From this analysis in subjects aged 50~59 years fat intake only in subjects aged 60~69 years niacin intake Ca/P in total subjects fat riboflavin intake were signifiant independent predictors of BMD In the group of menopausal significant independent predictor of BMD This study suggests that dietary calcium is a major constituent affecting lumbar spin BMD in postmenopausal women whose menopausal period is over than 5 years.

Near future dynamics of water qualities (nutrient concentration) of the Han River was predicted, based on a mathematical model representing the relationship between the nutrient concentration in th river wagter and environmental factors (population density, land-use types, rock compositions and nutrient accumulation) in the basin. The population density and land-use types were forecasted to change distinctly in the downstream area, especially in Seoul City area in 1985~1990 whereas any environmental factor was not expected to change its level significantly in both upstream and middle reaches areas. It was indicated by the model that the nutrients concentration in the up- and mid-streams would keep its level in future as it was, but it would increase drastially in the downstream area. For the preservation of the water qualities in the downstream at least to keep its level as it was in 1980, practical countermeasures were proposed, based on the assessment of the contribution of each environmental factor to the water qualities.

To determine optimal plant density of forage rape in southern areas of Korea, Velox, the highest yielding variety among seventeen introduced varieties of forage rape, was grown under five different plant densities. The results obtained are summarized as follows: 1. Yield components such as stem diameter, number of main stem,leaves, number of branches and number of branch leaves and fresh yield were highest at the plots with 50cm row spacing and 30cm plant spacing. 2. Dry matter yield, content of crude protein, IVDMD and digestible dry matter yield were highest at the plots of broadcasting. 3. Since plants under high density were high in plant length and small in stem diameter, contents of crude fiber such as NDF, ADF, cellulose and lignin were lowest at the plots of broadcasting.
