  • To find out the effects of phosphatic fertilizer application levels on the botanical composition, mineral contents and mineral nutrient deprivation of grasses and the chemical properties of soil, this expriment was arranged as a randomized complete block design with six treatments(0, 50, 100, 150, 200 and 250kg $P_2O_5$/ha) and conducted at hilly land in Gwangju, Gyeonggi Province from September, 1989 to October, 1992. The results obtained are summarized as follows: The botanical composition of grasses without posphatic fertilizer application was poor but with 150kg $P_2O_5$/ha application, remarkably increased in legume of grasses and decreaed in weed. As the phophatic fertilizer levels increase, P, Ca and Mg content of grasses were increased but N and K content tended not to be regular, and Ca/p and K/Ca+ Mg equivalent ratio were lowered. Up to 150kg $P_2O_5$/ha application level, the mineral nutrient content deprived by dry matter yield was increased but with that over application, tend not to be increased. Most of applied mineral elements were accumulated at a subsurface of grassland and as the phosphatic fertilizer application levels increase, the available $P_2O_5$ and exchangeable Mg contents of the soil tended to be remarkably increased and exchangeable K content tended to be decreased, but pH, OM and exchangeable Ca content tended not to be regular.

음식모형시스템 개발 및 활용화 방안에 관한 연구 (Development of a Food Replica Information System and Its Applications to Community)

  • In the course of this research, we developed FRIS(Food Replica Information System), which calculates calories and nutrient values of foods in a very simple and interesting manner, and experienced of application to some communities. We expect that individuals will have opportunities to raise their consciousness of food, nutrients, and healthy living by participating in FRIS. 154 kinds of commonly consumed Korean foods were selected and one serving sized food replicas, having the same shapes, size, and color as the real foods, were constructed with attached bar code labels. An application program with food replicas and bar code was also developed in order to provide information on calories and nutrient values for people's meals or selected foods based on survey results of housewives' requirements related to foods and nutrients. FRIS should be a basic tool in nutrition education and consultation. Its applicability would vary according to the nutritionist's flexibility and contents of developed application programs. Technical stability should be strengthened and more useful contents of application prograln be added to spread the use of the system. Additionally, in future research, more delicate models should be developed and an analytical method should be applied to examine the effects of FRIS to individual behavioral changes in their eating habits.

국내산 대추품종의 품질특성 및 영양성분 비교 (Characteristics and nutritional compositions of two jujube varieties cultivated in Korea)

  • 대추의 품종에 따른 특성파악 및 활용을 위한 기초자료를 확보하기 위하여 현재 국내에서 가장 많이 재배되고 있는 품종인 복조대추와 국내산 재래종대추(약대추)의 외형특성과 이화학적 특성을 비교한 결과 재래종대추는 복조대추에 비하여 크기가 작고 경도가 낮았으며 당도, 조단백질, 조지방, 조회분, 식이섬유, 칼슘함량이 높았다. 한편, 복조생대추는 인과 비타민 C의 함량이 높게 나타났다. 따라서 재래종대추는 복조대추에 비하여 크기는 작으나 부드럽고 당도가 높으며 주요 일반영양성분 함량이 높은 것으로 판단된다.

  • To find out the effects of phosphatic fertilizer application level on the dry matter yield and nutrient contents of grasses, this experiment was arranged as a randomized complete block design with six treatments(0, 50, 100, 150, 200 and 250kg $P_2O_5$/ ha) and conducted at hill land in Gwangju, Gyeonggi Province from September, 1989 to October, 1992. The results obtained are summarized as follows : 1. As the phosphatic fertilization level increase, the early growth and cover degree of grasses wintered were more favorable and plant length was higher. 2. With 150kg $P_2O_5$/ ha application for three years, the average dry matter yield of grasses, 10,112kgl ha was sirnilared to that of 200kg $P_2O_5$/ ha and the yield was composed of 77.2% grasses(7,808kg/ ha), 19.2% legumes(l,937kg 1 ha) and 3.6% weeds(367kg / ha). 3. The crude protein and energy productivity of grasses increase as phosphatic fertilization level was increased, but those were not different between 150 and 250kg $P_2O_5$ 1 ha. Therefore, phosphatic fertilization level must be applied with 150kg / ha for a reasonable management in hilly grassland.

식품원가 분류에 따른 산업체급식의 식단관리 및 영양공급량평가 (Evaluation of Menu Management and Nutrition Supply in Industrial Foodservice by Food Cost)

  • Unit price of meal provision in industrial foodservice differs with each business. It is believed that menu management work, contents of menu, and nutrition supply performed by dietitian are different with unit price of meal provision. In this sense, purposes of this study are to examine meal management work and contents of menu, by food cost, at industrial foodservice in Taegu, Kyungbuk area and to evaluate variety of menu and nutrition supply. Results of the study are as follows: 1. Average number of side dishes provided at meal, including Kimchi, was 2 at low unit price, 3.0 at middle unit price and 3.1 at high unit price. 2. Possession ratio of account books using for menu management was low. 3. With regard to kind of menu, high unit price was most various and showed more various, compared to low unit price, especially in cooking oil-used cook methods such as broil, pan-fried food, fry, and roast. 4. High unit price was found as the highest in kind of used food and supply volume. 5. Sugar, Mineral, Vitamine, and Protein were satisfied with standard food content, but fat and calcium were not. 6. Supply volume of food was positively correlated to supply volume of nutrient, but kinds of cook methods and food type were not correlated to that of nutrient.

공주밤을 이용한 고추장의 영양 특성 및 활용 가능성 (Study on nutritional property and use potential of Gochujang using Gongju chestnuts)

  • Purpose: Gongju is a famous area for chestnuts, which contain various nutrients and phytochemicals. This study aimed to develop gochujang items using Gongju chestnuts and analyze nutritional properties for the best item by sensory evaluation in order to increase marketability of chestnut processed foods. Methods: Gochujang was prepared, and nutrient contents of gochujang were analyzed according to the methods of the food fair by Korea Food Research Institute. Three kinds of gochujang, including general (control)-, dried chestnut powder-, and chestnut syrup- were prepared. Sensory evaluation was performed on three kinds of gochujang by 45 adults, including males and females (20's~60's years of age). Results: Chestnut syrup-gochujang was evaluated as significantly higher than general- or dried chestnut powder-gochujang by sensory evaluation. Thus, nutrition facts were produced for chestnut syrup gochujang. Nutrient contents per 100 g of chestnut syrup gochujang and traditional gochujang in the literature were similar in terms of total carbohydrates and fat, whereas protein content was higher and sodium content was lower in chestnut syrup gochujang than in traditional gochujang in the literature. Conclusions: The results imply that chestnut syrup gochujang has nutritional benefits such as higher content of protein and lower content of sodium than traditional gochujang in the literature, in addition with its good taste. Therefore, chestnut syrup gochujang may have high usage potential. There is a need to improve the quality and storage of chestnut syrup gochujang through future study.

종합편성채널 식생활관련 프로그램의 식품영양정보 분석 - 전문가 출연자를 중심으로 - (Analysis of Food and Nutrition Information of Diet-related Programs in Comprehensive Programming Channels: Focus on Professional Panelists)

  • We analyzed information provided by diet-related programs of comprehensive programming channels and the relationship between composition of professional panelists and quality of provided information. We selected 82 items among eight programs by MBN, JTBC, and TV chosun. All 82 items provided information about food & nutrition and health & disease, but only 32 items (39.0%) and 35 items (42.7%) provided information on food culture and food safety, respectively. Among the food ingredients, phytochemicals (81.7%) were the most frequently mentioned, and the contents of functional ingredients occupied a large part. The inappropriate information on programs were broadcast on an average of 1.2 episodes per program, and the most pointed out item was information that could confuse viewers with drugs (29.3%). Among the professional panelists, medical doctors (38.9%) and Oriental medicine doctors (16.6%) had the highest number of appearances, and professors of food & nutrition constituted only 7.1%. However, the increase in the number of appearances of professors showed a positive effect on the quality of program information. Contents focused on balanced nutrient intake and dietary culture of Korea should be increased rather than focusing on the function of each nutrient in comprehensive programming channels.

N-P-K 양분 수준이 토마토의 오존 감수성에 미치는 영향 (Influence of N-P-K Nutrient Levels on Ozone Susceptibility of Tomato Plants)

  • 양액조성의 차이에 따른 토마토의 오존 감수성을 구명하고자 1/2농도의 Hoagland 용액을 표준으로 하여 양액을 조성하였다. N-P-K의 수준을 $N_{100}$ $P_{100}$ $K_{100}$(대조구), $N_{47}$ $P_{100}$ $K_{100}$(질소 감량구), $N_{93}$ $P_0$ $K_{100}$(인산 제거구), $N_{100}$ $P_{100}$ $K_0$(칼륨 제거구), $N_{153}$ $P_{100}$ $K_{100}$(질소 중량구), $N_{107}$ $P_{200}$ $K_{100}$(인산 2배구), $N_{140}$ $P_{100}$ $K_{200}$(칼륨 2배구) 등으로 나누어 수경재배한 후 $0.25{\mu}l/L$의 오존에 접촉시킨 결과 다음과 같은 결론을 얻었다. 1. 지상부 생육은 질소 감량구와 인산 제거구에서 가장 저조하였고, 인산 및 갈륨 제거구에서 인산가 칼륨의 엽중함량이 극히 낮았다. 시비수준의 차이에 따른 가시피해율은 칼륨 제거구에서 가장 심하게 나타났다. 인산 제거구, 질소 감량구 및 중량구 또는 인산과 칼륨 2배구의 피해율은 표준구와 비슷한 경향을 보였다. 2. 오존접촉 후 칼륨 제거구에서 다른 처리구에 비하여 ethylene발생량, 전해질 유출량과 MDA함량이 증가하였으며 엽록소의 함량은 크게 감소였다. 3. 가시피해가 가장 심했던 칼륨 제거구에서 SOD의 활성이 가장 낮았으며 오존접촉 후에도 활성 증가율이 가장 낮게 유지되었다.

수경재배시 Ca 및 K 이온의 조성비율 차이가 마죠람과 오레가노의 생육 및 품질에 미치는 영향 (Effects of $Ca^{2+}\;:\;K^+$ Ratio in Nutrient Solution on the Growth and Quality of Marjoram(Origanum majorana) and Oregano(Origanum vulgare) Grown in Hydroponic Culture)

  • 마죠람과 오레가노 수경재배시에 생육과 정유함량에 미치는 양액내 $Ca^{2+}\;:\;K^+$의 적정비율을 구명하고자 시험을 수행하였다. 양액은 유럽채소연구소의 0.5배액을 사용하였다. $Ca^{2+}\;:\;K^+$의 비율은 3.5;13, 4.5:11(표준용액), 5.5:9, 6.5:7 mM${\cdot}L^{-1}$ 4가지 농도로 처리하였다. 그 결과 마죠람의 생육은 5.5:9와 6.5:7 mM${\cdot}L^{-1}$구에서 우수하였다. 비타민 C는 6.5:7구에서 그리고 정유함량(%)과 정유수량은 5.5:9구에서 높았다. 오레가노의 경우는 생육과 비타민 C의 함량은 5.5:9와 6.5:7구에서, 정유성분과 수량은 6.5:7구에서 높았다. 따라서 마죠람은 5.5:9 그리고 오레가노는 6.5:7로 조절하여 가꾸는 것이 생육과 수량 그리고 정유 생산량을 증가시킬 수 있다고 본다.

  • 사초용유채의 품종선별선급실험과 유채용유채와 사초용유채품종들 간에 있어서 생산성과 영양가치를 비교한 실험에서 사초용유채 도인품종중 우리나라 남부지역의 특성에 적합한 품종으로 Velox가 사초생산성 및 영양가치면에서 가장 유망하다고 생각되었다. 따라서 Velox를 공시하여 고립적배와 실행群落培 사이에 생산성과 영양가치에 있어서 어떤 차이가 있는가를 비교하였으며 또한 생육과정중의 영양가치의 변화를 조사하였는데 그 결과를 요약하면 다음과 같다. 1. 수당 생산성에 있어서 생체중과 건물중의 개체간 변이가 매우 컸으나 고립적배가 군락적배보다 1%수준의 유의차로 우수하였다. 孤립적배에 있어서 생체중과 건물중의 구성은 분지에 크게 의존되었으며 군락적배에 있어서는 분치와 주경이 비슷한 영향을 주었다. 건물율은 고리적배와 군락적배사이에 큰 차이가 없었으며 부위별로는 주경이 가장 높았다. 2. 粗蛋白質含量은 生育期間이 經過됨에 따라 점차 저하되었으며, 播種後 90일부터 120일까지에는 孤立적배가 群落적배보다 높은 반면 180일以後 개화기까지는 군락적배가 고립적배보다 높았다. NDF, ADF, cellulose 및 lignin등의 鐵維含量은 生育초기에는 낮은 水준이었으며 생育期間이 經過됨에 따라 점차 높아지면서 생育後期에는 孤立적배가 군락적배보다 높게 變化되었다. 3. In vitro 乾物소화率은 줄기나 잎 모두 生育기간이 경과됨에 따라 점차 저하되었으며, 줄기는 군락적배가 고립적배보다 높았으나 잎은 고립적배와 군락적배간에 유의차가 인정되지 않았다.
