Grape seeds and pericarp are rich in procyanidins, a class of natural antioxidants and antimicrobials that can provide phytonutrients for healthy eating and extend food shelf life. The objective of this study was to assess the effect of procyanidins as preservatives in pork meat patties for 14 d. Pork patties were treated with 0, 0.1, or 0.3% procyanidin, and meat color, pH, volatile basic nitrogen (VBN), 2-thiobarbituric acid reactive substance (TBARS) values, and microbial populations were determined during storage at 4℃ for 14 d. The color of pork patties treated with procyanidin showed lower lightness and higher redness values than untreated controls, and procyanidin treatment reduced pH values significantly (p<0.05). VBN values decreased significantly (p<0.05) with the 0.3% procyanidin treatment and increased significantly (p<0.05) during storage. TBARS values were markedly lower in procyanidin-treated meat than in the untreated control. In addition, procyanidin suppressed total bacterial colony and Escherichia coli counts significantly (p<0.05) relative to the control samples. Our findings suggest that procyanidin could be used as a food preservative in pork patties due to its natural antioxidation and antimicrobial activities, and that it may contribute to an improved healthy diet.
The edible natural pigments extracted from plant organs become steadly popular to consumer because of those physiological functions desirable for food preservation and human health in recent years. There are a number of colored rice genotypes from light brown to blackish purple via reddish brown and purple. Some researchers reported their results on extraction recipes and identification of chemical structure of the pigments from the colored rice. The pigments extracted from colored rices can be largely divided into two types of anthocyanin and tannin pigments. Anthocyanin pigments are mainly contained in purple or blackish purple rice while tannin pigments are mainly contained in brown or reddish brown rice. Some brownish purple rices showed two peaks of tannin and anthocyanin pigments simultaneously. Purple rices showed better extraction of pigments in $0.1\%$ HCl-contained $80\%$ methanol or $0.5\%$ malic-acid-contained $80\%$ ethanol, while red rices revealed better extraction of pigments in $0.01\%$ citric-acid-contained $80\%$ ethanol. The anthocyanin pigments are generally unstable to heat, light and acidity of solution. The pigments extracted from colored rice can be preserved stably under the dark and cool(<$5^{\circ}C$) condition and at pH $2.0\~4.0$. The anthocyanin pigments of purple rice are mainly composed by cyanidin-3-glucoside (chrysanthemin). The other pigment fractions in purple rice were identified to peonidin-3-gluco-side, malvidin-3-galactoside(uliginosin) and cyanidin-3-ramnoglucoside(keracyanin). The pericarp coloration of purple rices is controlled by three complimentary genes C (anthocyanin), A(activator) and $Pl^{w}$(purple leaf) genes, while the red rices are expressed by complimentary interaction between Rc(basic substance of pigment) and Rd(distribution of pigment) genes or C and $Pl^{w}$ genes. Recently, the antioxidation and antimutagenic activity in main component of anthocyanin pigments extracted from colored rice were identified. The natural pigments from colored rice can be useful for beverages, cakes, ice scream, cosmetic and so on.
On the purpose of development of antioxidative compounds from natural sources, 38 plants known to have antioxidant activity have been examined concerning DPPH radical scavenging activity. Among 13 plants exhibiting the activity, the seed of Carthamus tinctorius L, was selected as resources to search for active compounds due to rareness of study. The seed of the plant has been used as edible oil or preventive and remedial drugs for osteoporosis, arthritis. To reveal the principal component manifesting the antioxidant activity, the MeOH extracts was successively solvent-fractionated with EtOAc, n-BuOH and water. In order to isolate active component from the EtOAc fractions, application of silica gel column chromatographies and activity tests were repeated for a active component to be isolated. Its chmical structure was determined to be N-feruloylserotonin, a conjugated serotonin compound, by the interpretation of spectral data, NMR. MS and the adaptation of chemical reactions.
The physicochemical and antioxidant properties of cookies prepared using powders of barley sprout (BS), lemon balm (LB), and green tea (GT) were studied. The same dough density was maintained in all the sample groups. The experimental group to which the natural ingredients containing antioxidants were added did not show any significant change in the appearance of cookies compared to the control. LB and GT cookies showed significantly lower hardness compared to the control (p<0.05). Control showed the lowest antioxidant effect when assessed with 2,2-diphenyl-1-picrylhydrazyl. (DPPH) and this gradually increased in the order of BS, LB, and GT. The antioxidant activity of GT was 7 times higher as compared to the control (p<0.05). The antioxidant activity assessed using 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) also showed results similar to that seen with DPPH. GT showed a significantly higher total phenol content, about 2-3 times higher compared to the control (p<0.05). GT had significantly higher total flavonoid content than that of the control (p<0.05). Thus, the addition of natural antioxidant ingredients such as sprout barley, lemon balm and specifically green tea, in the preparation of cookies, resulted in excellent antioxidant activity with similar physicochemical quality characteristics. The study suggests that it is possible to develop cookies that are competitive in terms of nutritional and physiologically active functions.

Algal fucoidan is a marine polysaccharide containing sulfur with a wide variety of biological activities including anti-inflammatory and anti-thrombotic effects. Although antioxidants can inhibit inflammatory signals through inhibiting activator protein-1 and/or nuclear factor-kappaB activation, it is obscure whether fucoidan directly scavenges oxy-radicals or indirectly regulates oxidant production and/or antioxidant defense system. The antioxidant activities of fucoidan against peroxyl radicals, peroxynitrites and hydroxyl radicals were determined by the total oxy-radical scavenging capacity (TOSC) assay. The specific TOSC values of fucoidan against peroxyl radicals, peroxynitrites or hydroxyl radicals were $282{\pm}60$, $43{\pm}1$ or $40{\pm}1\;TOSC/mg/mL$, respectively. These specific TOSC values against peroxyl radicals, peroxynitrites or hydroxyl radicals are 23, 12, or 13% of the specific TOSC values of glutathione, a positive control, respectively. These results suggest that fucoidan has direct oxy-radical scavenging capacity, which may be related with anti-inflammatory effect of fucoidan.

Topical natural antioxidants are a useful strategy for the prevention of oxidative stress mediated cardiovascular disease including atherosclerosis. From the viewpoint of this underlying principle, the screening of natural plant extracts with scavenging activity for pro-oxidant reactive species is a primary requirement for the development of new topical antioxidant formulations. Euryale ferox Salisbury (EF) is botanical name and it's pharmaceutical name is EURYALES SEMEN (ES). The stems and branchs of EF have been used as a traditional herbal medicine for the treatment of dysentery, diarrhea, leucorrhoea, incontinence and paralysis of joint. In this study, the antioxidant activity of extract from EF was studied in vitro methods by measuring the antioxidant activity and free radical scavenging activity by TEAC and DPPH, measuring the scavenging effects on reactive oxygen species (ROS) [superoxide anion, hydroxyl radical] and on reactive nitrogen species (RNS) [nitric oxide and peroxynitrite] as well as measuring the inhibitory effect on $Cu^{2+}$-induced human LDL oxidation. The EF extracts were found to have a potent scavenging activity, as well as an inhibitory effect on LDL oxidation. In conclusion, the EF extracts have antioxidative effects in vitro system, which can be used for developing pharmaceutical drug against oxidative stress and chronic degenerative disease such as atherosclerosis.

Natural plant extract has been the subject of intense research aiming in elucidating the underlying mechanisms of their chemopreventive effects upon various forms of human cancers. The objective of our study was to evaluate the natural antioxidants and anticancer agent potential of Phyllostachys. The chemical composition of steam extract from Phyllostachys was carried out using GC-MS. The steam extract of Phyllostachys was dominated by monoterpenes (62.96% - 71.36%) and sesquiterpenes (23.58% - 33.13%) as the main compounds. The antioxidant activities of the steam extract was determined using a DPPH scavenging and hydrogen peroxide scavenging activity test systems. Furthermore, the amounts of total phenolics in steam extract were determined spectrometrically The steam extract of P. pubescens and P. bambusoides were presented the high activity (69.4% and 64.0%, respectively.). The steam extract from Pyllostachys species showed a hydrogen peroxide scavenging activity of approximately 50.4% - 54.6% when compared to that of the standard gallic acid. The anticancer activities of steam extract were determined using a MTT assay. Assessment of the cytotoxic effect of the steam extract on PC-3 cells showed that the P. bambusoides (20.85%) and P. pubescens (20.41%) were superior in induced cytotoxicity compared with the steam extract of P. nigra var. henonis (1.15%). Findings from this study indicated that steam extract of P. bambusoides and P. pubescens possessed potential as medicinal drug especially in prostate cancer treatment.

This study was designed to investigate the possible utilization of Castanopsis cuspidata as a source of antiseptic agents. The leaves of C. cuspidata, extracted by 80% ethanol, were sequentially fractionated with n-hexane, dichloromethane, ethylacetate, and n-butanol. In order to effectively screen for a natural preservative agent, we first investigated the antioxidant activities such as DPPH radical scavenging capacity, superoxide radical scavenging capacity, and xanthine oxidase inhibitory activity of the C. cuspidata ethanol extracts and fraction. Using a screening system, we found that the ethylacetate fraction had the strongest antioxidant activity, which followed a dose-dependent manner. The antimicrobial activities were shown in the ethylacetate fraction of C. cuspidata. Among the five fractions, the ethylacetate fraction showed the highest antimicrobial activities against microorganisms tested, which were Bacillus sublitis, Listeria monocytogenes, Staphylococcus aureus, Escherichia coli, Salmonella enteritidis and Salmonella typhimurium. In addition, leaf extracts of C. cuspidata could be suitable for the development of food preservatives.
Lotus (Nelumbo nucifera Gaertn.) is an economically important aquatic ornamental herb with multiple uses, including food, tea, natural pigments, and/or healthcare product. The objective of this study was to evaluate the physicochemical properties and antioxidant potential of lotus sprouts grown in three media: sprouting machine (LSSG), soil (LSSC), and mud (LSMC). The longest sprout was obtained in LSMC (4.79 and 26.79 cm) followed by LSSC (1.95 and 5.4 cm), and LSSG (0.60 and 2.85 cm) at 5 and 10 days, respectively. Higher amounts of total free amino acids were found in cotyledons (33.96, 21.45, and 38.90 mg/g) than in hypocotyls (15.77, 7.90, and 15.29 mg/g ) for LSSG, LSSC, and LSMC, respectively. The ratios of total essential to total non-essential amino acids were higher in hypocotyls (0.36, 0.31, and 0.46) than in cotyledons (0.34, 0.25, and 0.40), respectively. Similarly, the total polyphenol content of the hypocotyl of LSMC (50.33 ㎍ GAE/g) was the highest and that of the husk of LSSG (24.08 ㎍ GAE/g) was the lowest. Overall, the antioxidant potential of hypocotyl was higher than that of husk and cotyledon. The results indicated that the lotus sprouts grown in mud could be a good source of nutritional and natural antioxidants.
The aim of the study was to evaluate the physiological activity of Lycium ruthenicum to investigate their potential as a raw material that can be used in the cosmetic industry. L. ruthenicum fruit extracts were obtained using 70% methanol(LRM) and hot-water(LRW). The DPPH and ABTS radical scavenging abilities were higher in the LRM extract than in the LRW extract. The FRAP value of LRM was about 1.3-fold greater than that of LRW. The polyphenol contents of LRM and LRW were 31.883±1.395 mg/g and 27.748±2.741 mg/g respectively. LRM inhibited the generation of NO in LPS-stimulated RAW264.7 cells. LRM also attenuated the expression of COX-2, PGE2, IL-6, and TNF-α induced by LPS. These results suggests that L. ruthenicum fruits could be use as a source of natural antioxidants and anti-inflammatory agent in cosmetic products.
