아밀로오스 함량이 다른 현미의 품종별 가공 처리에 따른 품질 특성 비교 (Effect of Processing Treatment on Physicochemical Characteristics of Brown Rice Varieties with Different Amylose Content)

  • 아밀로오스 함량의 차이가 있는 품종별 현미를 대상으로 frying 처리와 파보일링 처리를 통해 품질 특성을 조사하였다. 품종별 현미의 용융 흡열 곡선을 관찰한 결과 amylose 함량이 증가할수록 호화 엔탈피가 감소되는 경향이 관찰되었으며, amylograph 측정결과 현미 중 효소의 불활성화를 위해 $HgCl_2$ 처리와 전분입자의 팽윤정도에 따라 영향을 미치는 것을 확인할 수 있었다. Gelatinization temperature는 Ilpumbyeo가 가장 높은 것으로 나타났으며, Goami가 maximum viscosity와 breakdown 값이 가장 높은 수치를 보여주었다. X-선 회절도 분석 결과 일품벼 백미의 경우 결정형이 소실된 V형, 일품벼 현미의 경우 B형의 결정체에 가까운 것이 관찰되었다. 가공처리에 따른 주사전자현미경 측정결과 파보일링 처리 후 튀긴 경우 amylose 함량이 높을수록 표면이 둥근 형태를 띠는 것을 확인할 수 있었다. 또한, 수침 후 파보일링 처리 후 튀긴 경우가 수침처리만 한 후 튀긴 경우보다 전체적으로 강도와 경도 측정결과 더 높은 것을 확인 할 수 있었다.

양질 조사료의 보충과 황토의 첨가수준이 한우의 성장성적, 육질 등급 및 경제성에 미치는 영향 (Effect of Cubed Roughage Supplementation and Red Clay Levels on Growth Performance, Meat Quality and Economic Benefits in Korean Native Cattle)

  • 본 연구는 6개월령의 한우 36두를 이용하여 양질 조사료의 보충(Rice straw;RT, Rice straw +cubed roughage;RCT)과 황토의 첨가수준(0%, 1%, 2% 황토)이 생산성, 육질 및 경제적 효과에 미치는 영향을 규명하기 위하여 실시하였다. 실험기간 동안 볏짚에 양질 조사료의 보충(cubed roughage, RCT)은 볏짚단독 처리(RT)에 비하여 일당증체, 사료효율 및 출하체중에서 각각 10%, 6.8%, 8.2%로서 유의적으로 증가되었으나(P$<$0.05), 황토의 첨가는 한우의 성장성적에 뚜렷한 효과는 없는 것으로 나타났고, 2%의 첨가수준은 오히려 감소되는 경향을 보였다. 육질 및 경제성 분석에서는 RCT구는 뚜렷한 개선효과를 보였지만, RT구에서는 황토 1%에서만 첨가 효과가 있는 것으로 나타났다. RCT구에서는 1%, 2% 모두가 0%에 비하여 보다 개선된 결과를 나타내었다. 이와 같은 결과들은 한우 비육에 있어서 황토의 첨가는 성장성적에는 뚜렷한 효과가 나타나지 않았지만 육질과 경제적 효과에서는 1%의 첨가는 개선효과가 있는 것으로 사료되며, 고급육 생산을 위한 황토의 첨가시에는 양질의 조사료 보충이 경제적 효과성을 더욱 향상시킬 것으로 사료된다.

우리나라 재래벼와 잡초벼의 식미 특성 평가 및 고식미 우수자원 탐색 (Screening of High-Palatability Rice Resources and Assessment of Eating Quality Traits of Korean Landraces and Weedy Rice Germplasms)

  • 우리나라 밥쌀용 벼 품종의 협소한 유전적 다양성을 극복하기 위해 재래벼 26품종, 잡초벼 21품종, 국내 육성 24품종과 일본 육성 5품종 등 76품종을 공시하여 국내 고유 유전자원의 식미 특성을 평가하고 재래벼와 잡초벼 중 식미 특성이 우수한 유전자원을 선발하였다. 1. 재래벼와 잡초벼의 간장은 국내 품종 및 일본 품종 보다 큰 편이어서 도복에 약하였으나, 쌀 수량은 일본 품종보다 높았다. 2. 식미 특성은 유전자원군별로 유의적인 차이를 보였는데, 윤기치, 기대식미치, 물리·화학적 특성 및 식미관능평가에서 일본품종보다 식미 특성이 우수한 재래벼와 잡초벼 유전자원이 다수 탐색되었다. 3. 분자육종법과 식미관능검정 및 밥의 윤기치를 종합적으로 평가하여 재래벼인 상도, 왜벼와 잡초벼인 횡성앵미 3, 남제주앵미6, 완도앵미6 등 5개의 우수한 고유 유전자원을 선발하였다. 4. 완도앵미6은 전체 유전자원 중에서 기대식미치는 가장 낮았으나 밥맛과 윤기치가 가장 좋은 결과를 보여 새로운 핵심 육종소재로 기대되었다. 5. 밥맛과 윤기치 등 식미 특성을 전체적으로 고려할 때 재래벼와 잡초벼는 종자주권이 강조되는 현실에서 유전적 배경이 다양한 밥쌀용 품종 개발을 위한 고유 육종소재로서 가치가 매우 크다고 판단된다.

Effect of bamboo grass (Tiliacora triandra, Diels) pellet supplementation on rumen fermentation characteristics and methane production in Thai native beef cattle

  • Objective: The objective of this study was to investigate the effect of bamboo grass (Tiliacora triandra, Diels) pellet (Bamboo-Cass) supplementation on feed intake, nutrient digestibility, rumen microbial population and methane production in Thai native beef cattle. Methods: Four Thai native beef cattle bulls ($190{\pm}2kg$) were randomly allotted to four respective dietary treatments in a $4{\times}4$ Latin square design. Treatments were the varying levels of Bamboo-Cass supplementation at 0, 50, 100, and 150 g/head/d, respectively. Rice straw was fed ad libitum and the concentrate offered at 0.5% of body weight. Results: Under this experiment, the findings revealed that acetate and butyrate production were decreased (p<0.05), propionate increased (p<0.05), whilst ruminal $NH_3-N$ concentration was decreased (p<0.05) by supplementation of Bamboo-Cass at 150 g/head/d. Moreover, rice straw intake, and microbial population were linearly increased (p<0.05), while methane production was decreased (p<0.05). Conclusion: The results from the present study indicate that supplementation of Bamboo-Cass at 150 g/head/d significantly enhanced feed intake, decreased protozoa and increased bacterial population, rumen fermentation efficiency while decreased methane production. Therefore, Bamboo-Cass as a supplement is promising as a rumen enhancer in beef cattle fed on rice straw.

Antioxidative Activity of Rice Grain using FI-CL and ESR Methods

  • Fifty-four Korean native and 28 foreign rice varieties harvested in 1998 and 1999 were examined for antioxidative activity that is measured to a chemiluminescence and superoxide radical intensity, by the flow injection chemiluminescence (FI-CL) system and an electron spin resonance (ESR) spectrophotometer, respectively. In the chemiluminescence measurement by FI-CL, radical scavenger activity did not differ significantly among rice varieties between origin types of rice varieties, and between storage periods. GinSun and Hongchoengdo, colored rice exhibited high electron scavenging effect by ESR. Therefore, these results indicate that the pigments of rice varieties may play important antioxidative roles and that it may be possible to breed rice varieties with higher antioxidative potentials.

Isolation and characterization of native plasmids carrying avirulence genes in Xanthomonas spp.

  • Most major plant pathogenic bacteria in Korea belong to Xanthomonas spp.. Xanthomonas oryzae pv. oryzae is a major pathogen in rice, X. campestris pv. vesicatoria in pepper, X. axonopodis pv. giycines in soybean, X. campestris pv. campestris in cabbage, and X. axonoposid pv. citri in tangerin. Host specificity of the bacterial pathogen depends on the avirulence gene in the pathogen and the corresponding resistance gene in host plants. Many avirulence genes in bacteiral pathogen located on the native plasmids. However, the presence of the native plasmids in Xanthomonas spp. was not investigated well. In order to study the host specificity, we isolated native plasmids from Xanthomonas spp. and compared those plasmids each other, The presence of the native plasmids and the characteristics of the plasmids depended on the bacterial strains. In the X. axonopodis pv. glycines, most strains carried native plasmids but some strains did not. Some strains carry about 60 kb native plasmids including 3 different aviurlence genes. We will discuss the characteristics of the native plasmids isolated from the Xanthomonas spp.

The growth and productivity of native Indonesian rice progenies and its relationship with root development during dry-season

  • One of the problems in increasing rice production is getting lines or varieties that have high adaptability so that able to produce maximum production in a variety of environmental conditions. One strategy that can be done to get adaptive varieties is through the improvement of native varieties. This research was conducted in rain fed paddy field, Aceh province, Indonesia from June to September 2014. The texture of the soil was clay-loam with the soil pH ranged from 6.5-6.7. Five potential progenies of rice from crossing between native Indonesian rice with introduced rice varieties consist of C3, C4, S3, S5, S6 were used in this study. Besides that, one national rice variety Ciherang also used as a comparison. The plants were growth in the plot with the size of $2m{\times}1.4m$ with plant distance was $20cm{\times}20cm$. The fertilizers used in this study were Urea, NPK, and KCl. Randomized block design with 6 rice progenies/variety and 3 replications were used in this study. There were 18 experimental units and each experimental unit had 10 samples for the sources of data. The variables that were observed in this study including plant height at harvesting time, number of productive tiller, the percentage of empty grains and filled grain per panicle, weight of filled grains per hill, weight of filled grain per plot and yield potential per hectare. Analyzed were also conducted for the depth of root penetration, dry-root weight, dry-shoot weight, shoot-root weight ratio and its correlation with the weight of filled grain per hill. The research results show that there was significant difference on plant height at harvesting time, number of productive tillers, the percentage of empty grains and filled grain per panicle, weight of filled grains per hill, weight of filled grain per plot and yield potential per ha (p>0.01) among the treatments. In addition, depth root penetration, dry-root weight, dry-shoot weight, shoot-root weight ratio also had significant difference (p>0.01) among the treatment. The highest plant at harvesting time was found in S6, reaching 129.8 cm and the shortest plants was found in C3 reaching 107.5 cm. The largest number of productive tillers and the highest percentage of filled grains per panicle were found in Ciherang reaching 10.5 tillers and 80.7% respectively. Ciherang also had the heaviest weight of filled grains per hill and per plot reaching 21.1 g and 2.18 kg respectively. Whereas, S6 had the lowest number of tillers and the lowest percentage of filled grain per panicle.. The highest yield potential per ha was found in Ciherang reaching 7.79 tons. Among the progenies, S5 had the highest yield potential reaching 5 tons/Ha. The result also showed significant relationship between shoot-root weight ratio with weight of filled grains per hill. The highest value of shoot-root weight ratio (1.57) in Ciherang is thought had closed relationship with its yield potential.

The Effect of Different Flaked Lupin Seed Inclusion Levels on the Growth of Growing Korean Native Bulls

  • Seventy-two Korean native bulls, with an average initial body weight of $247.2{\pm}2.34kg$ were used to determine the effect of different flaked lupin seed inclusion levels (0%, 15% and 30%; Control, LS15, LS30, respectively) on growth with a $3{\times}3$ randomized complete block design at the experimental farm of TS Corporation in Korea for 150 days. There were no significant differences in average daily gain (ADG) and feed:gain among treatments, However, LS30 increased concentrate intake and total feed intake (p<0.05) and decreased rice straw intake compared with Control and LS 15 (p<0.05), With inclusion of flaked lupin seeds, concentrate intake and total feed intake increased (p<0.01) and rice straw intake decreased (p<0.05) compared with Control. There were no specific changes in the health status of animals used in this experiment with inclusion of flaked lupin seeds in concentrates. Inclusion of flaked lupin seeds in the concentrates showed a tendency of reduced average daily total feed cost per kg weight gain compared with Control by 1.6% and 3.4%, respectively, in LS15 and LS30.

멥쌀과 찹쌀전분의 초미립분쇄 후 특성변화연구 (Characterization of pulverized normal and waxy rice starches)

  • Separated normal and waxy rice starches were pulverized, and the physicochemical and digestive properties of the starches were determined. The size of both starch granules significantly decreased (less than $8{\mu}m$) after pulverization. For pasting properties, significant decreases of peak and setback viscosity were observed in both of pulverized starches than in native ones. The lower pasting temperature as well as increased solubility and water binding capacity of pulverized starches imply molecular degradation of starch by pulverization. For thermal properties, onset temperature and melting enthalpy significantly decreased after pulverization, especially in normal rice starch, however there was no difference in amylose-lipid complex before andafter pulverization. The slowly digestible and resistant starch portion of normal rice starch increased after pulverization, however, in waxy rice starch, the rapidly digestible portion increased.

전통 떡살문양과 조각보를 조합한 스카프디자인 개발 (A Study on Scarf Design Development with a Combination of Traditional Korean Rice Cake Pattern and Jogakbo Patchwork)

  • The purpose of this research is to suggest a scarf design which reflects the traditional culture native to Korea by making use of the combined pattern of jokgakbo patchwork and ddeoksal(rice cake). For research methodology, the computer design programs of Adobe Illustrator CS3 and Adobe Photoshop CS3 were used along with the related literature. For the combined sets of motif pattern, the following were consider: first, a combination of jogakbo in square shape and chrysanthemum in a rice cake mold; second, a combination of radius jogakbo and geometrical pattern; third, a combination of vertical and horizontal forms of jogakbo and rice cake pattern; fourth, a combination of yeouijumunbo and butterfly pattern in rice cake mold. For the scarf design with these applications, technical skills such as repeat, rotation, symmetry, free setup, and distortion were used for the combination motif. In terms of the shape of the design, there are two, square and lengthwise tetragons.
