This study was carried out to investigated the actual state of rice milling at local milling plants and to find out sources for elevating their milling recoveries in both quantity and quality. At 36 local milling plants located in Gyeongnam and Jeonnam , milling recoveries and head rice recoveries were measured with respect to their different milling systems and rice varieties. Then, the same samples of rice were milled by experimental milling equipments at laboratory, and the two experimental results were compared in order to determine the amount of milling recovery possibly to be increased. The results of this study are as follows ; 1. Milling recoveries of rice at local milling plants were proved to have no relationship with milling systems, and were 68.1% per ent and 72.6percent on an average with new variety and native variety, respectively. 2. The milling recoveries above stated can be elevated 4.5 percent and 2.9percent with new variety and native variety, respectively, by developing and extending technologies of manufacturing and handling rice milling machinery. 3. The head rice recovery of new variety at local milling plants has insignificant differences among milling systems, and was 54.8 percent on the average. With native variety, the recovery by friction type rice polisher was 0.9percent higher than that of friction-abrasive type polisher, and was 64.9 percent on the average. 4. The head rice recoveries of new variety and native can be elevated 5.1percent and 3.9percent, respectively, by the same stimulation above mentioned.
Fifty-four Korean native and 28 foreign varieties harvested in 1998 and 1999 were examined for superoxide dismutase (SOD) and peroxidase (POD) activities. The SOD and POD activities of leaves extracts in Korean native and foreign rice varieties showed variation at the heading stage. The activities of SOD and POD changed with growth stage. In comparison of storage duration, the SOD and POD activities of the extract from three months stored seeds in Korean native (CV=53.3%) and foreign rice (CV=57.9%) varieties were higher than that of stored rices for a year in seed extracts although the activities among varieties did not show significant variation. Also, the averaged activity of foreign rice varieties (SOD=12.9%) was relatively higher than that of korean native rice varieties (SOD=10.7%). The test of activity at the enzymatic level related to antioxidative activity suggests that the rice varieties with higher antioxidative potentials can be developed and also may provide information with rice breeder to breed rice variety with a high antioxidative activity.
This study was conducted to investigate the hypoglycemic effects and the production conditions of the Korean organic native rice cultured by Ganoderma lucidum. The broth culture of Ganoderma lucidum, the innoculation and culture of Ganoderma lucidum to the Korean organic native rice, and the oral administration of the Korean organic native rice cultured by Ganoderma lucidum to the streptozotocin-induced diabetic rats, were carried out. Then, the blood glucose level, the serum total cholesterol and triglyceride, and the activities of alanine aminotransferase and aspartate aminotransferase, were analyzed. The pH 4.5 at $30^{\circ}C$ was the optimal condition of the broth culture of Ganoderma lucidum. When the physical shape and the smell of the produced rice were considered, the optimal conditions to produce the Korean organic native rice cultured by Ganoderma lucidum, were the seeding of Ganoderma lucidum to Korean organic native rice in the rate of 7.5% weight, and the culture period of 9days at $28^{\circ}C$. In streptozotocin-induced diabetic rats, the blood glucose level of the dieted group by the Korean organic native rice cultured by Ganoderma lucidum for 2 weeks, were significantly decreased when compared with the control. And, the levels of the total cholesterol and triglyceride in serum were ranked less than those of the control. Also, in streptozotocin-induced diabetic rats, the activities of alanine aminotransferase and aspartate aminotransferase in the serum of the dieted group by the Korean organic native rice cultured by Ganoderma lucidum for 2 weeks, were lower than those of the control.
Physicochemical properties of cross-linked rice starches were investigated. Swelling power of cross-linked rice starch increased at relatively lower temperature $(60^{\circ}C)$ than native rice starch $(70^{\circ}C)$. Cross-linked rice starch showed lower solubility $(1.7{\sim}6.1%)$ than native rice starch $(2.2{\sim}13.8%)$ and solubility is not significantly different with the amount of phosphorus oxychloride. Pasting temperature $(69.2{\sim}70.6^{\circ}C)$ and peak viscosity $(2,874{\sim}3,175\;cp)$ of cross-linked rice starch were lower than native starch $(71.6^{\circ}C,\;3,976\;cp)$, but holding strength $(2,177{\sim}2,708\;cp)$ and final viscosity $(3,424{\sim}3,826 \;cp)$ of cross-linked rice starch were higher than native starch (1,000 cp, 2,312 cp). DSC thermal transitions of cross-linked rice starches were shifted to a lower temperature than native rice starch but there was no significant difference in gelatinization enthalpy between native and cross-linked rice starches. X-ray diffraction pattern of both native and cross-linked rice starches showed typical A-type crystal indicating that cross-linking had not affected the crystalline region of starch.

Three new rice farming systems, i.e. (1) straw-mulched no-till rice cropping system(SMNTRCS), (2)straw-mulched no-till rice-vetch cropping system (SMNTRWCS), (3)conventional rice-barley cropping system(CRVCS) have been established and compared with (4)conventional rice cropping system(CRCS). Grain appearance of brown rice of Korean native rice cultivars in SMNTRCS and SMNTRVCS were better than those in CRBCS and CRCS. Grain appearance of milled rice in SMNTRCS was better than those of other cropping systems. Korean native rice cultivars showed more white belly and broken rice than those of recommended rice cultivars. Mg and K contents of Korean native rice cultivars were the highest in SMNTRVCS. Protein contents of all the cultivars tested were the highest in SMNTRCS. Protein contents of Korean native cultivars were higher than those of recommended cultivars. Amylose contents of the cultivars tested were from 16 to 22 percent, while those of Aedal and Jenmjo were significantly higher than those of the other cultivars. Alkali digestibility values(ADV) of milled rice grain, tested in $1.2\%$ potassium hydroxide for 23 h at $30^{\circ}C$, showed varietal differences and the cultivars grown in CRBCS were the highest and the lowest in CRCS.

Brown rice grains are increasingly attended by consumers due to their potential health benefits of antioxidant capacity. Therefore, this research was carried out to evaluate the antioxidant activity of brown rice in Korea-native weedy rice germplasm. Two hundred and twenty one accessions of weedy rice used in this study were received from the National Agrobiodiversity Center of RDA, and were regenerated in the experimental field of Chonbuk National University. The sampled seeds were extracted using methanol and the extracts were analyzed using the 1, 1-dipheny-2-picrylhydrasyl (DPPH) free radical scavenging assay for antioxidant capacity determination. Among the all germplasm, the samples of seed coat in red colour, white colour, red -white mixing colour and brown colour were 171 (81%), 26 (12%), 12 (6%) and 2 (1%), respectively. The antioxidant activity values of all samples were varied in the range from 22.31% to 95.53 % and mean value was 82.09%. Depend on the seed coat colour, the average antioxidant activity of the extract of weedy rice seeds indicated that the following order in seed coat colour: red colour (89.11%) > the red-white mixing colour (70.67%) > brown colour (53.16%) > white colour (45.99%). The antioxidant activity of red coloured weedy rice were significantly higher than those of the others. It is suggested that Korea-native weedy rice accessions with high antioxidant activity could be developed as a potential functional food material by further research of component analysis.
In this study, three different experiments were conducted to evaluate the nutritional value of apple pomace produced in southern areas of the Republic of Korea (South Korea). The effects of combining apple pomace in different ratios with commercial concentrates and rice straw in the diets of Korean native goats (Capra hircus) were examined. In experiment I, in situ DM and CP disappearances from nylon bags incubated in the rumen of goats showed that greater amounts of DM and CP were released from apple pomace than those from concentrates at the later stages of incubation, but only after 48 h for DM and CP, respectively. This was reflected in the higher 'b' value of the slowly degradable fraction of the apple pomace compared to the concentrates. Prior to these times the trend was reversed. In experiment II, Korean native goats were fed a diet containing apple pomace with either rice straw or rice straw and concentrates, and the in vivo nutrient digestibilities compared to animals receiving an alfalfa hay. DM digestibility in the animals given apple pomace plus concentrates with rice straw (66.86%) were similar to the goats given alfalfa hay only (69.09%) but significantly greater than for a diet of rice straw plus concentrates. In experiment III, an in vivo study was conducted to investigate the inclusion of 30 to 60% apple pomace pre-mixed with rice straw, rice bran and concentrates on the nutritional value for Korean native goats. Apple pomace mixed diets had higher DM intakes, nutrient digestibility and nitrogen retention than diets without apple pomace, which may have been due to the higher non-structural carbohydrates (NSC) and less ADF and NDF than those in other treatments. Replacement of concentrates with apple pomace in rice straw based diets of Korean native goats fed either separately (experiment II) or by pre-mixing (experiment III) gave satisfactory feed intake, digestibility, pH of ruminal fluid and production of $NH_3$-N and VFA in the rumen of goats. The results of this study infer that apple pomace can be included at levels of up to 60% in the diets of goats without dramatic effect on the animal.
This study was to investigate antioxidative activity of rice grain using 1, 1-Diphenyl-2-picrylhydrazyl(DPPH) and thiobarbituric acid (TBA) method and germination ability for screening rice varieties with high antioxidative activities on korean native and foreign rice varieties harvested in 1998 and 1999. The average antioxidative activity of foreign rice varieties (DPPH 63.5% and TBA 55.2%) was significantly higher than that of native rice varieties (DPPH 47.2% and TBA 45.6%) on varieties harvested in 1999. The promptness index (PI) of native rice varieties was higher in stored rices for three months (mean PI=160.7) than that of stored rices for a year (mean PI=141.6). On the other hand, the PI of foreign rice varieties was higher in stored rices stored for a year (mean PI=176.7) than that of stored rices for three months (mean PI=157.5). Varieties with high redness of hulled rice (a-value) showed significant lipid peroxidation inhibitory activity to DPPH in a stored rices for a year (r=${0.5744}^**$) and stored rices for three months (r=${0.5630}^**$) . These results indicate that the pigments of hulled rice varieties may play important antioxidative roles and colored rice varieties with higher antioxidative potentials can be developed and also may provide information with rice breeder to breed rice variety with a high antioxidative activity for a rapid screening of a small amounts of a large number of samples using color value.
In this study, waxy rice starch was chemically modified using phosphorous oxychloride ($POCl_3$, 0.002-0.008%). Then the physicochemical properties of resulting cross-linked waxy rice starches were investigated in order to reduce the steeping time of Yukwa (a Korean oil-puffed rice snack) processing. The swelling powers of the cross-linked waxy rice starch samples were higher than the native waxy rice starch at temperatures above $60^{\circ}C$, and their increases were proportional to the $POCl_3$, concentration. The solubility of the cross-linked waxy rice starch was lower (1.6-3.4%) than the native waxy rice starch (2.7-6.1%). However, the moisture sorption isotherm of the cross-linked waxy rice starch was not significantly different from the native waxy rice starch. The rapid visco analyze. (RVA) pasting temperatures $(65.4-67^{\circ}C)$ of the cross-linked waxy rice starch were lower than those of the native starch $(67^{\circ}C)$. The RVA peak viscosities (287-337 RVU) of the cross-linked waxy rice starch were higher than that of native starch (179 rapid visco units (RVU)), and increased with increasing $POCl_3$ concentration. For the differential scornning calorimeter thermal characteristics, although Tc shifted toward higher temperatures with cross-linking, the To, Tp, and amylopectiin melting enthalpy of the cross-linked waxy rice starch showed no differences compared to the native waxy rice starch. The X-ray diffraction patterns of both the native and cross-linked waxy rice starches showed typical A-type crystal patterns, suggesting that cross-linking mainly occurs in the amorphous regions of starch granules. Therefore, the cross-linking reaction did not change the crystalline region, but altered the amorphous region of the waxy rice starch molecules, resulting in changes of solubility and RVA pasting properties in the cross-linked waxy rice starch. In summary, since cross-linked waxy rice starch has a high puffing efficiency and no browning reaction, it may be applicable for Yukwa processing without a long steeping process.
This study attempted to research the local food of various regions at a personal level by discovering how food has developed das part of a region's culture base. Discovery of the characteristic story behind the making of a region's characteristic food as local delicacies can inspire self-esteem in the culture, and enhance the real-life image as appropriate to a region, and thereby be made a part of local tourism and thus contributing to the local economy. For this reason, the native foods of the region of Chungcheongnam-do were researched in terms of the cultural sensibilities that inform the unique history of that region. The study was designed so as to aid in understanding food's characteristic value in Chungcheongnam-do and to give a historical representation of Chungcheongnam-do's image by means of storytelling techniques; thus, the local food's character can be presented alongside a story that appeals to the five senses. For this purpose, Chungcheongnam-do's representative native rice table was cast as the 'Hyunchoong rice meal table' - after the figure of admiral Yi Sun Shin of Asan area region, a representative image of Chungcheongnam-do - and 'Choosa rice meal table', after the figure of 'Choosa' Kim Jeong Hee of Yesan region, of which various literary works form a representative image of Chungcheongnam-do. 'Hyunchoong rice meal table' was composed of a health food centered menu which could supply sufficient nutrition as a food ration in times of war or winter shortage, thus providing an image of nutrition and power as appropriate to these situations. Also, to assess the health effectiveness of each rice table, the functionality of the ingredients were investigated as reported in 'Sik-ryo-chan-yo : a dietary treatment' which was published by Soon-Ui Cheon in the Chosun era and by which the foods of the early Chosun era won recognition as being both healthy profitable.
