Quality changes in mustard leaf kimchi were investigated during storage for 60 days at $5^{\circ}C$. As the storage period changed from 0 to 60 days, the pH and reducing sugar content of mustard leaf kimchi decreased, while the total acidity and hunter's color increased. The vitamin C content in mustard leaf kimchi decreased gradually from 10 to 30 days and then markedly increased after 40 days. The total dietary fiber content and antioxidative activity were significantly higher in fresh mustard leaf kimchi than in fermented kimchi. The major volatile components of mustard leaf and mustard leaf kimchi were determined to be allyl isothiocyanate, 3-butenyl isothiocyanate and phenylethyl isothiocyanate. The contents of allyl isothiocyanate and phenylethyl isothiocyanate, the two major functional components, in mustard leaf kimchi were determined to be 43.72 and $36.17\;{\mu}g/g$ dry weight basis, respectively.
The antioxidant properties of mushroom and sea tangle extracts and mustard leaf added to Kimchi were investigated by total phenolic content, DPPH radical scavenging, ABTS anion scavenging, FRAP reducing power, and ORAC value. Total phenolic content of functional Kimchi (FK) was significantly higher than that of control Kimchi (CK). DPPH radical and ABTS anion scavenging activities of functional Kimchi were significantly higher than those of control Kimchi by 2.7 and 1.7 fold, respectively (p<0.05). Also, the FRAP reducing power and ORAC value of functional Kimchi increased compared to those of the control Kimchi by 1.6 and 1.1 fold, respectively (p<0.05). Our results suggest that functional Kimchi made by mushroom and sea tangle extracts and mustard leaf may be a potent antioxidant source and could be developed as a antioxidant functional food that may be for the effective treatment of oxidant conditions. Through continuous research and development of functional Kimchi by the use of mushroom and sea tangle extracts, it will be necessary to try to identify other functions that could be useful for preventing various diseases.

This study was conducted to estimate the content of antioxidant components and investigate the antioxidative activity of mustard leaf kimchi added pumpkin powder (P) and green tea powder (G). Mustard leaf kimchi added different ratios of P and G were prepared and fermented for 30 days at 5$^{\circ}C$ (properly fermented time). The contents of chlorophyll, total phenol, carotenoids and ascorbic acid in mustard leaf kimchi samples were estimated. The 30 day fermented mustard leaf kimchi added 0.3% P and 0.2% G had relatively higher content of antioxidant components than the other kimchi samples. Based on this result, antioxidative activities of mustard leaf kimchi added 0.3% P and 0.2% G and control kimchi were investigated, that is, methanol extracts of the mustard leaf kimchi samples were prepared and investigated the antioxidative activities. The antioxidative activity of mustard leaf kimchi added 0.3% P and 0.2% G was significantly (p<0,05) higher than control kimchi, and that of the 30 day fermented mustard leaf kimchi at 5$^{\circ}C$ was also significantly higher (p<0.05) than the fresh mustard leaf kimchi. Therefore, it is suggested that antioxidative activity of the 30 day fermented mustard leaf kimchi added 0.3% P and 0.2% G at 5$^{\circ}C$ was the best compared to the other kimchi samples.
Mustard Leaf Kimchi (MLK) is a traditional fermented Korean vegetable food. This study investigated the anticancer effect of partial vacuum treatment of MLK packed in glass bottles during fermentation. Prepared vacuum treated mustard leaf Kimchi (VM) and non-vacuum treated mustard leaf Kimchi (CM) were fermented at $5^{\circ}C$ for 8 weeks. The initial pH and total acidity were approximately 5.7 and, 0.36%, respectively. During fermentation, pH decreased and total acidity increased. Initial contents of reducing sugar and salt were 2.1% and were 2.7 mg/g, respectively. Reducing sugar gradually decreased during fermentation. Growth of cells from mouse cancer cell lines (L12l0 and P338D1) and human cancer cell lines (HepG2 and WiDr) were all decreased by MLK. VM and CM did not affect growth. More potent growth inhibition effects were exhibited by water versus hexane extracts of MLK, and by MLK fermented for 3 weeks versus 6 weeks. However, when applied to control NIH/3T3 cells at the same concentrations, MLK exhibited no cytotoxicity, and cell growth was unimpeded.
Mustard Leaf Kimchi (MLK) is a traditional fermented Korean vegetable food. This study was conducted to investigate the effects of part vacuum treatment on MLK packed in a glass bottle during fermentation. There have been a few previous studies that examined the chemical and microbial changes during MLK fermentation. However, the major object of this study was to investigate the antioxidative activities of vacuum treated MLK. In this study, the antioxidative activity of vacuum treated mustard leaf Kimchi (VM) and control mustard leaf Kimchi (CM) were examined. VM and CM were fermented at $5^{\circ}C$ for 8 weeks. A model system was designed to evaluate the antioxidative activity of crude chlorophylls and carotenoids (CCC) extracts from Mustard leaf Kimchi. The oxidative reaction of the linoleic acid mixture system at $30^{\circ}C$ in the dark was quantified determining the peroxide value and conjugated dienoic acid content. The effect of the CCC extracts on lipid peroxidation in a rat liver homogenate was examined. Formation of lipid peroxides was estimated by the TBA value, and the CCC extracts were found to inhibit the TBA value. Chlorophyll a and b, and carotenoids, Which are the major components in the CCC extracts of Kimchi were isolated on a DEAE-sepharose CL-6B and Sepharose CL-6B column and TLC. The effects of chlorophyll a and b, caroteins on linoleic acid autoxidation were measured by determining the peroxide value. In addition, their effects on free radical scavenging were investigated by DPPH. In this assay, chlorophyll a showed the greatest antioxidative activity followed by chlorophyll b, and carotenoids. MLK contains a sufficient content of chlorophyll a and b, and carotenoid which have strong antioxidative activities.

Kimchi contains various antioxidative components, therefore it is expected that kimchi have the inhibitory activity on aging. Among the many factor related to aging, UV radiation is the easiest way to induce skin aging. This experiment was designed to demonstrate the antioxidative activity of dietary kimchi with and without UV radiation in tissues. Lyophilized Korean cabbage kimchi, mustard leaf kimchi and buchu kimchi were used for measurement of the contents of antioxidative components. Chlorophyll contents in buchu and mustard leaf kimchi were higher than cabbage kimchi, and the contents of carotene and ascorbic acid were higher in the mustard leaf kimchi. To clarify the antioxidative activity of various kimchi diets in vivo system, hairless mice were fed the diet containing 10% lyophilized kimchi for 20 weeks. Contents of superoxide anion and hydroxyl radical in liver were not shown significant differences, however hydrogen peroxide were significantly decreased in mustard leaf and buchu kimchi diet groups. Supplementation of all kinds of kimchi diets attenuated the hepatic NDA accumulation, especially in mustard leaf and leek kimchi group. In the skin, the contents of MDA were decreased in kimchi groups compared to control group, especially the buchu kimchi diet significantly inhibited the lipid peroxidation. To elucidate the effect of kimchi diets on photooxidation, the extent of oxidative damage in liver and skin was measured after UVB radiation treatment. The contents of lipid peroxides was decreased in mustard leaf kimchi group and cabbage kimchi group compared to control, while lipid peroxidation was increased in buchu kimchi diet group. It suggests that chlorophylls and other antioxidative nutrients in the various kimchi diets are related to antioxidation or photooxidation and it might be needed further study to certify the exact mechanisms.
In vitro cytotoxicity and antioxidative effects of water extracts prepared from Mustard Leaf Kimchi (MLK) during its fermentation period were investigated. The cytotoxicity against HepG2 (human hepatic cancer) by water extracts from the well fermented Mustard Leaf Kimchi was higher than others (fermented for 0 to 6 days at 18$^{\circ}C$), and IC50 of water extracts at the points of 6, 8, 10, and 14days during fermentation were 213.4, 99.2, 99.9, and 109.8${\mu}{\textrm}{m}$/ml, respectively. Antioxidative activity of water extracts from MLK during various fermentation periods was higher than that of blank distilled water. However, the antioxidative activity of well-fermented water extracts of MLK (fermented for 8-14 days) did not show any difference from that of others (fermented for 2-6 days). Thus, water extracts of well-fermented MLK (fermented during 8-14 days) significantly inhibited the growth of cancer cells in vitro, but little antioxidative activity was influenced by the various fermentation periods.
Fourteen volatile compounds isolated by distillation under reduced pressure from Mustard Leaf(Brassica juncea) Kimchi were identified by the GC/FID and GC/MSD. They were composed of 63% of hydrocarbons and acid and 30% of isothiocyantes and their related components in relative amount; Volatile isothiocyanates and their related components such as 2-phenylethyl isothiocyanate, benzothiazole, 2-methyl benzothiazole and 2-(3H)-benzothiazolone, which are reported to be responsible for the pungent flavor of mustard products, were found in Mustard Leaf Kimchi. These volatile components were remarkably decreased during the fermentation of Mustard Leaf Kimchi.
Nutritional composition and physicochemical properties changes in mustard leaf kimchi were investigated during fermentation of up to 3 months. The pH decreased, and the titratable acidity gradually increased according to increase of fermentation periods. Fructose and glucose were the major free sugars in mustard leaf kimchi, and their amounts were significantly decreased with fermentation periods (p<0.05). Lactic acid content showed a significant increase with maximum increase at 3 months. All types of kimchi contained 20 amino acids, but the content of most amino acid fluctuated during fermentation. Except for K and Zn, the content of other ingredients including Ca, Fe, Mg, Na, Se were the highest in kimchi fermented for 2 months. The unsaturated fatty acid of mustard leaf kimchi was higher than that of saturated fatty acid, and total fatty acid of kimchi significantly decreased after 2 months (p<0.05). Most vitamin contents showed a tendency to decrease with fermentation, in particular, vitamin B complex except for $B_2$ significantly decreased after 3 months (p<0.05). The results provide fundamental data for determining the appropriate fermentation period to improve the quality of kimchi.

Skin is the most frequently exposed tissues to oxidative stress from exogenous and endogenous sources. Dietary antioxidants, which suppress oxidative stress including reactive oxygen metabolites, play an important role in protecting skin from deleterious reactive oxygen species. Kimchi containing lots of antioxidative compounds shows anti-aging effect on skin. Therefore the morphologic changes on the skin of hairless mice fed diets containing Korean cabbage, mustard leaf, and buchu kimchi for 16 weeks were determined. Although epidermal thickness was decreased with age, kimchi prevented this thinning of epidermis compared to control group. In kimchi groups, the staining area of cytokeratin was smaller and stratum corneum was thinner than control group. It suggests that various kinds of kimchi diets prevent the increase of keratinization in epidermis with aging. Type Ⅳ collagen, a major structural protein of basement membrane supporting matrices, existed greater amount in kimchi groups than control group, especially in mustard leaf kimchi group. Rough endoplasmic reticulum (RER) of fibroblast was well developed in dermis of Korean cabbage and mustard leaf kimchi groups, which means collagen synthesis at dermis increased in those kimchi groups. This morphological changes of skin suggest that kimchi consumption can retard skin aging due to the presence of antioxidant and anti-aging compounds, especially some components of mustard leaf kimchi may largely affect on the skin rejuvenescence.
