Quality Characteristics and Antioxidant Activity of Fermented Milk containing Mushroom Extracts (버섯 추출물을 첨가한 발효유의 품질특성 및 항산화 활성)

  • This study was carried out to investigate the quality characteristics and antioxidant activity of fermented milk containing mushroom (Phellinus baumii, Ganoderma lucidum, and Lentinus edodes) extracts. As the ratio of the mushroom extract increased, the pH of the fermented milk decreased proportionally and titratable acidities increased significantly. The number of lactic acid producing bacteria was the highest in the fermented milk sample containing 1.0% Lentinus edodes extract. The DPPH and ABTS radical scavenging activities of the fermented milk containing mushroom extracts were higher than that of the controls. The quality characteristics, such as pH, titratable acidity, and the number of lactic acid producing bacteria were not remarkably different between the milk samples subjected to treatments with and without the addition of mushroom extracts during the storage period. From the sensory evaluation of the fermented milk samples containing mushroom extracts, the color, flavor, taste, texture, and overall acceptability of the fermented milk sample containing 1.0% Lentinus edodes extract was found to be considerably better than those of the other groups. In conclusion, the present study indicated that the fermented milk containing mushroom extracts could be used as a functional antioxidant containing food.

Physiological activities of extracts of wild mushrooms collected in Korea (국내 야생수집 버섯류 추출물의 생리활성 분석)

  • This study was carried out to analyze the physiological activities of wild mushroom extracts collected from the Gangwon-do, Gyeonggi-do, and Chungcheongbuk-do provinces in Korea. Among the wild mushroom extracts, those of Clitocybe robusta and Leucopaxillus giganteus (OK829) showed the highest DPPH radical scavenging activities. Nitrite scavenging activity of the L. giganteus extract (OK811) was determined to be 64.1%, which is considerably higher than those of the other mushroom extracts analyzed in this study. The total polyphenol levels in Suillus granulatus, L. giganteus (OK829), and Amanita manginiana extracts were found to be 19.7 mg GAE/g, 20.2 mg GAE/g, and 22.3 mg GAE/g, respectively. To determine their anti-inflammatory effects, nitric oxide production, and cell viability, NO measurement and MTT assays were performed using lipopolysaccharide (LPS)-treated RAW 264.7 cells. The levels of nitric oxide (NO) produced by the C. robusta and Hypholoma fasciculare extracts were remarkably lower than those produced by the others. In our MTT assay, the extracts of S. granulatus, L. giganteus (OK811), and Lactarius chrysorrheus showed high cell viabilities of 40.3%, 48.3%, and 43.2%, respectively. These results can provide the fundamental data for extracting useful compounds from wild mushrooms.

  • Mushrooms and their extracts including purified ingredients, are currently used as foods, functional foods (and/or nutraceuticals), and medicines. These products have numerous bioactive compounds such as polysaccharides (mainly ${\beta}$-glucans), glycoproteins, nucleotide analogs, terpenoids, and polyphenols, which have exhibited antioxidant, antimicrobial, anticancer, antiviral, anti-obesity, and immunomodulatory activities. In this review, we discuss the current information on the biactivities of 10 popular mushrooms in Korea. We also summarize the information on mushrooms and the active compounds derived from them, as well as mushroom-based products such as foods, functional foods, and medicines. We believe this review could provide useful information for scientists and consumers who seek to develop new products and promote healthy food habits and lifestyle.

  • Background: Hair loss related syndromes are increasing due to environmental pollution and stress. Hair care products are mainly prepared by mixing chemicals and natural extracts, such as those obtained from medicinal plants. The purpose of this study was to investigate the effects of 70% ethanol extracts from the flowers of Calendula officinalis, fruit body of Phellinus linteus, and the whole plant of Houttuynia cordata on the growth of CCD-986 cells, hair follicle dermal papilla cells (HFDPC), and 3T3-L1 cells. Methods and Results: All sample extracts at all concentrations, except for that from P. linteus fruit body at $500{\mu}g/m{\ell}$, were cytotoxic to CCD-986 cells. However, none of the sample extracts were cytotoxic to HFDPC. The lipid differentiation of 3T3-L1 cells regulates hair regeneration via secretion of platelet derived growth factor. The 70% ethanol extract of H. cordata whole plant promoted hair growth. Adipogenesis rate significantly increased in a treatment concentration-dependent manner. Conclusions: These results suggest that 70% ethanol extracts of C. officinalis flower, P. linteus fruit body and H. cordata could be used for the development of hair care products.

Chemical Constituents from Non-polar Fraction of the Fruiting Bodies of Hericium erinaceum (노루궁뎅이 버섯 자실체의 비극성 분획에서 분리된 성분들)

  • Lion's Mane Mushroom, Hericium erinaceum, is a traditional edible mushroom widely used in culinary applications. It has been also used as a medicine in East Asian countries due to its various biological activities. Chemical investigation of fruiting bodies of this mushroom afforded many aromatic compounds, which were mostly isolated from polar fraction of its extracts. Herein we tried to investigate non-polar compounds from the extracts of this mushroom. $CHCl_3$-soluble fraction of the extracts was subjected to chemical investigation, which resulted in isolation of four compounds. Their chemical structures were elucidated as ircicerebroside (1), cortenuamide A (2), 1-D-arabinitol-monolinoleate (3), and cinnamic acid (4) on the basis of spectroscopic data. To the best of our knowledge, this is the first report of compounds 1, 2, and 4 from Hericium erinaceum.

The Effect of Mushroom Extracts on Carbon Tetrachloride-Induced Hepatotoxicity in Rats (버섯 추출물이 사염화탄소 유발 간손상에 미치는 영향)

  • The effect of mushroom extracts from Pleurotus ostreatus and Lentinus edodes on carbon tetrachloride(CCl4)-induced hepatotoxicity was investigated. Rats were administered orally each mushroom extract at the dose of 150mg/kg, foolwed by treatment with CCl4. Liver damage was produced in male Sprague-Dawley rats, after 21hrs from dosing with CCl4(0.25ml/kg) which were given intraperitoneally. Liver damage without renal injury was confirmed by measuring plasma enzyme, creatinine and blood analysis and liver analysis. Plasma aminotransferase activity, and levels of cholesterol and triglyceride were analyzed. Plasma alanine aminotransferase and aspartate aminotransferase activities were decreased by 34% and 61.5% in pretreatment group of Lentinus edodes compared with CCl4 treated group, respectively. The adminstration of all mushroom extracts led the plasma cholesterol and triglyceride levels decrease more than the CCl4-treated rats. These results suggest that Lentinus edodes extract protect liver from damage induced by CCl4.

  • The fruiting bodies of Ganoderma lucidum extracted by water and ethanol extraction. we are analyzed antioxidant effects and cancer cell growth inhibition rate. ASI 7004, 7014 was higher antioxidant effects than Trolox, BHA as control. Generally, the rest of strains was higher antioxidant effects than ABTs as control. Water extracts and ethanol extracts was treated to the Liver cancer cell(HepG2) and stomach cancer cell(AGS). Inhibition activities of Liver cancer cell(HepG2) is a high in D.W. extracts of ASI 7002, 7011, 7014, 7020. Inhibition activities of Liver cancer cell(HepG2) is a high in EtoH extracts of ASI 7011, 7019. Inhibition activities of Stomach cancer cell(AGS) is a high in D.W. extracts of ASI 7001, 7002, 7019, 7020. Inhibition activities of Stomach cancer cell(AGS) is a high in EtoH extracts of ASI 7001, 7002.

Comparison of physiological activity of medicinal mushrooms produced in Korea and China using different extraction solvents (한국 및 중국산 약용버섯류의 추출용매에 따른 생리활성 성분 비교)

  • In the present study, physiological activities of hot water extracts and 70% ethanol extracts of three types of medicinal mushrooms (Hericium erinaceus, Cordyceps militaris, and Ganoderma lingzhi) produced in Korea and China were investigated. Both the hot-water and 70% ethanol extracts of H. erinaceus and C. militaris from Korea displayed the highest 2,2-diphenyl-1-picrylhydrazy radical scavenging activities. Nitrite scavenging activities of hotwater extracts of G. lingzhi from Korea and China (41% and 39%, respectively) were higher than the activities of 70% ethanol extracts. Total polyphenol contents of hot water extracts of H. erinaceus and C. militaris from Korea were higher than those of 70% ethanol extracts. The ethanol extracts of G. lingzhi from Korea displayed the highest total polyphenol content. C. militaris from Korea displayed the highest ${\beta}-glucan$ level (45.11%). ${\beta}-glucan$ content of H. erinaceus from China (30.87%) was higher than H. erinaceus from Korea (16.94%). The findings indicate that healthy ingredients can be maximally extracted using the optimal solvents for each mushroom. These results will be useful in understanding the difference in physiological activities between the solvents used for the extraction of medicinal mushrooms from Korea and China.

Comparisons of biological activities and amino acid contents of edible mushrooms extracted using different solvents (주요 식용버섯의 추출용매에 따른 생리활성 및 아미노산 성분 차이 비교)

  • The aims of this study were to investigate the biological activities and amino acid contents of fermentation ethanol and sodium extracts from five edible mushrooms (Pleurotus eryngii, Pleurotus ostreatus, Flammulina velutipes, Lentinula edodes, and Agaricus bisporus). DPPH radical scavenging activities in 30% fermentation ethanol extracts of P. eryngii and P. ostreatus were significantly higher than those in sodium extracts (p<0.05). Nitrite scavenging activities were also higher in the 30% fermentation ethanol extracts of P. eryngii and P. ostreatus. The total polyphenol contents of P. eryngii, P. ostreatus, and F. velutipes were high in 70% fermentation ethanol extracts. The analysis of amino acids revealed that the 70% fermentation ethanol extract of P. eryngii had the highest content of total amino acids, with higher phenylalanine, leucine, isoleucine, valine, and tyrosine contents higher than the other extracts. In all the extracts of P. ostreatus, glutamic acid was the most abundant amino acid. The 5% NaCl and 30% fermentation ethanol extracts of F. velutipes contained abundant glutamic acid, alanine, and proline. Glutamic acid was the most abundant amino acid in the 70% and 30% fermentation ethanol extracts of L. edodes. In the 5% NaCl extracts of A. bisporus, glutamic acid and alanine were abundant. Thus, maximum biological and nutritional ingredients can be extracted using the optimal solvents for each type of mushroom.

Effects of Cordyceps ophioglossoides extracts on the neuronal death and memory dificits

  • We investigated whether the mushroom extracts can protect neuronal death and ameliorate memory deficits in Alzheimer"s disease induced by $\beta$-amyloid peptide[A$\beta$(25-35)]. Cellular model of Alzheimer"s disease was produced by using SK-N-SH human neuronal cells treated with $A\beta$. Treatment with 40uM $A\beta$ for 48hours caused a 46% loss of cell viability. First, we examined the effects of 22 mushroom extracts on neuronal death using MTT assay. We found that 3 mushroom extracts increased viability of the cells from 46% to 87%. (omitted)
