한국 연안산 방사무늬김(Porphyra yezoensis)의 일반성분 및 미네랄 함량 (Proximate Composition and Mineral Content of Laver Porphyra yezoensis from the Korean Coast)

  • To measure the proximate composition and mineral content of laver Porphyra yezoensis, we collected 30 raw and 30 dried laver from the major production area of the south coast of Korea (Busan, Goheung, Haenam, Wando). The approximate composition of a 100 g edible portion of raw laver was $89.9{\pm}1.4$ g moisture, $3.7{\pm}1.0$ g protein, $0.5{\pm}0.2$ g lipids, $2.1{\pm}1.8$ g carbohydrate and $3.9{\pm}0.6$ g ash. The approximate composition of a 100 g portion of dried laver was $8.9{\pm}1.6$ g moisture, $31.5{\pm}6.5$ g protein, $1.9{\pm}0.3$ g lipids, $48.4{\pm}6.5$ g carbohydrate and $9.3{\pm}1.1$ g ash. No clear regional variation in laver composition was observed. The mineral content of laver was expressed as dry weight. The mean macro mineral content per 100 g portion of raw laver was (in descending order): K ($1,979{\pm}863.0$ mg), Na ($1,063.2{\pm}498.8$ mg), P ($658.7{\pm}101.8$ mg), Mg ($432.3{\pm}83.5$ mg) and Ca ($394.2{\pm}136.5$ mg). In comparison, the mean micro mineral content of raw laver was (in descending order): Fe ($243.72{\pm}154.75\;{\mu}g/g$), Zn ($72.76{\pm}30.61\;{\mu}g/g$), Mn ($41.53{\pm}15.33\;{\mu}g/g$), Cu ($4.16{\pm}1.66\;{\mu}g/g$) and Ni ($0.43{\pm}0.70\;{\mu}g/g$) No clear regional variation in the mineral content of laver was observed; however, raw laver contained a higher mineral content than dried laver.

  • 본 연구는 조리 방법에 따른 시금치, 배추, 양배추의 무기질 손실에 대한 기초 자료를 얻기 위하여 채소를 데치기, 압력조리, 찌기, microwave 가열하여 각 조리방법에 따른 무기질 잔존율, 색도 및 관능적 특성 등의 변화에 대하여 조사하였다. 그 결과 시금치, 배추, 양배추 모두 찌기나 microwave 가열이 무기질 잔존율 면에서나 기호적 특성 면에서 양호하게 나타나, 채소 조리시 데치기 위주의 종래 방법 보다 찌기나 microwave 가열을 활용하는 것이 바람직하다고 사료된다. 또 긴 시간 데치거나 압력 조리의 경우 무기질 손실이 크고, 물러져 기호도가 떨어지므로 엽채류 조리시 이 방법은 적합하지 않은 것으로 사료된다.

Palm Vitamin E Prevents Osteoporosis in Orchidectomized Growing Male Rats

  • Testosterone deficiency increased bone resorption, giving rise to osteoporosis. Testosterone deficiency also increased lipid peroxidation and free radical formation. Free radicals have been shown to be toxic to osteoblasts as well as to activate osteoclasts. In this study, the effects of giving an antioxidant, i.e. vitamin E-rich extract from palm oil on bone mineral density and calcium content was studied. Palm vitamin E prevented the loss in bone mineral density due to orchidectomy, seen in the whole femur, proximal amd midshaft regions, as well as L4 vertebra. Similar observations were seen in bone calcium content of the L5 vertebra. Giving palm olein also prevented the loss in bone mineral density in the femoral midshaft and L4 vertebra; and bone calcium content in the L5 vertebra. In conclusion, vitamin E-rich extract from palm oil was effective in preventing the loss in bone mineral density and calcium content of orchidectomized male rats. This action is probably due to its role as an antioxidant.

시판 고등어의 지방산 조성 및 무기질 함량 (Fatty Acid Composition and Mineral Content of Marketed Mackerels)

  • We investigated the general composition, fatty acid composition and mineral content of ten kinds of marketed(3 domestic and 7 imported) mackerels. The moisture contents of domestic mackerels ranged from $62.9{\sim}67.8%$, and those of imported mackerels ranged from $61.1{\sim}74.7%$. Ash content was less than 2% in all mackerels. Crude protein content was greatest in Oman mackerel(24.1%) and lowest in UK mackerel(19.7%). Lipids contents ranged from 1.4%(Chile mackerel) to 19.7% (UK mackerel); mackerels with high lipid content tend to have low moisture content. Saturated fatty acids ranged from 18.2% to 31.1% of the total fatty acids content. The mackerel imported from Chile(26.8%) contained the least monoenes, while UK mackerel monoene content(48.7%) was highest. Polyenes were lowest in Tong-yeong mackerel(30.9%) and highest in Chile mackerel(50.0%). DHA content was highest in Chile mackerel(36.4%) and lowest in USA mackerel(14.6%). The mineral content of mackerels were in increasing order; K, Na, Mg, Ca, Fe, Zn and P. The K, Na, Mg and Ca content ranged from $261{\sim}420$, $261{\sim}420$, $37{\sim}176$, $34{\sim}49$ and $5{\sim}22mg/100g$, respectively.

  • 부산 신항만 및 녹산공단 지역을 포함하는 낙동강 하구 유역에는 두꺼운 점토질퇴적물이 퇴적되어 연약지반을 구성하고 있다. 이곳의 4개의 시추공에서 채취한 점토퇴적물에 대해 광물성분과 공학적 토질물성을 분석하여, 깊이에 따른 변화를 검토하고 그들의 상관관계를 검토하였다. 그 결과 점토퇴적물 속에 함유된 일부 광물조성은 토질물성과 약간의 상관관계가 있는 것으로 나타났다. 즉, 석영의 함량은 습윤단위중량과 정의 관계이고, 액성한계와는 부의 상관관계를 보였다. 함수량은 장석의 함량과는 부의 관계이고, 점토광물의 함량과는 정의 관계를 나타냈다. 습윤단위중량은 점토광물의 함량과는 부의 관계를 나타냈다. 그리고 복합적 인자에 의한 상관분석 결과에서 소성지수는 점토광물, 스멕타이트, 점토입토의 함량과 일정의 관계식을 가지는 것으로 나타났다.

  • The experiment was canied out to investigate the effects of cutting frequencies (3, 4 and 5 cuts per year) in relation to fertilization of mineral nitrogen on crude protein yield and the contents of crude protein and acid detergent fibre in orchardgms(Dacty1is glomerata L.). Tne results are as follows : 1. The content of crude protein increased according to the increase in cutting frequency and showed the highest in the 1st cut in all treatments. At 4 and 5 cutting frequencies per year, the content of crude protein increased in a large extent according to the increased fertilization of mineral nitrogen. However at 3 cutting frequency, the content of cmde protein appeared higher for no application of mineral nitrogen than for the treatments with fertilization. 2. 'Ihe content of acid detergent fibre(ADF) was considerably reduced at 4 and 5 cutting frequencies and in all treatments, the lowest were recorded in the 1st cut or in the last cut. At 3, 4 and 5 cutting frequencies, the highest ADF were shown in the 2nd cut, 3rd cut and 3rd cut respectively. However, the general trend was that the content of ADF was greatly reduced according to increased level of mineral nitrogen fertilization. 3. The yeild of cmde protein was the highest at 5 cutting frequency(l.2 ton DMIha) and it indicated that the yield of cmde protein increased in accordance to the increase in fertilization of mineral nitrogen and cutting frequency. 4. 성장기 암컷 쥐에서 Arginine 첨가가 골밀도에 미치는 영향 (Effects of Arginine Supplementation on Bone Mineral Density in Growing Female Rats)

  • The aim of this study was to define an arginine effect when added to a diet. The influence of arginine supplements on bone mineral density and content were studied in young female Sprague-Dawley rats fed either an arginine supplemented diet or control diet. Twenty four rats (body weight $83{\pm}5g$) were randomly assigned to one of two groups, consuming casein or casein with supplemented arginine diet. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks. Bone mineral density (BMD) and bone mineral content (BMC) were measured using PIXImus (GE Lunar Co, Wisconsin, USA) in spine and femur 3, 6, and 9 weeks after feeding. The serum and urine concentrations of Ca and P were determined. Diet did not affect weight gain and mean food intake. The serum concentration of Ca and P were not changed by arginine supplementation. Urinary Ca excretion was significantly decreased by arginine supplementation. Spine BMD was significantly increased by arginine supplementation on 3 and 6 weeks after feeding. Femur BMD was significantly increased in the group of arginine supplementation on 3, 6, and 9 weeks. Rats fed the arginine-supplemented diet had better bone mineral content than did control diet rats in the experimental period. Therefore, arginine supplementation may be beneficial on spine and femur BMD increment in growing female rats. These are thought to be associated with an arginine-induced growth hormone release. The exact mechanism of this effect remains to be elucidated.

Milk mineral과 α-tocopherol 첨가가 유화형 소시지의 지방산화와 무기물 함량에 미치는 영향 (Effects of Addition of Milk mineral and α-tocopherol on the Lipid Oxidation and Mineral Contents of Emulsion-type Sausages)

  • 본 연구는 유화형 소시지 제조 시 milk mineral과 α-tocopherol을 첨가하여 소시지를 제조한 다음 소시지의 지방산화와 무기물 함량에 미치는 영향을 비교하고, 또 이들의 시너지 효과를 구명하고자 실시하였다. 소시지의 pH값은 milk mineral 첨가와 milk mineral과 α-tocopherol 혼합 첨가 소시지가 전 저장기간 동안 대조구와 α-tocopherol 첨가 소시지에 비해 높았다(P<0.05). POV값은 milk mineral과 α-tocopherol 혼합 첨가 소시지가 대조구와 α-tocopherol 첨가 소시지에 비해 낮았다(P<0.05). TBARS는 milk mineral 첨가와 α-tocopherol과 milk mineral 혼합 첨가 소시지가 대조구와 α-tocopherol 첨가 소시지에 비해 낮았다(P<0.05). 마그네슘, 칼슘 및 인 함량은 milk mineral과 α-tocopherol 혼합 첨가 소시지가 대조구, milk mineral 및 α-tocopherol 첨가 소시지에 비해 현저히 높았지만, 나트륨과 칼륨 함량은 α-tocopherol 첨가 소시지가 높았다(P<0.05).이상에서 milk mineral과 α-tocopherol 혼합 첨가 소시지는 대조구와 α-tocopherol 첨가 소시지에 비해 POV와 TBARS가 낮아 지방산화 억제 효과가 있었지만, 현저한 시너지 효과는 없었다. 또한 milk mineral과 α-tocopherol 혼합 첨가 소시지는 각종 무기물 함량을 증진시킬 수 있는 육제품 생산이 가능하다고 사료된다.

  • To find out the effects of phosphatic fertilizer application levels on the botanical composition, mineral contents and mineral nutrient deprivation of grasses and the chemical properties of soil, this expriment was arranged as a randomized complete block design with six treatments(0, 50, 100, 150, 200 and 250kg $P_2O_5$/ha) and conducted at hilly land in Gwangju, Gyeonggi Province from September, 1989 to October, 1992. The results obtained are summarized as follows: The botanical composition of grasses without posphatic fertilizer application was poor but with 150kg $P_2O_5$/ha application, remarkably increased in legume of grasses and decreaed in weed. As the phophatic fertilizer levels increase, P, Ca and Mg content of grasses were increased but N and K content tended not to be regular, and Ca/p and K/Ca+ Mg equivalent ratio were lowered. Up to 150kg $P_2O_5$/ha application level, the mineral nutrient content deprived by dry matter yield was increased but with that over application, tend not to be increased. Most of applied mineral elements were accumulated at a subsurface of grassland and as the phosphatic fertilizer application levels increase, the available $P_2O_5$ and exchangeable Mg contents of the soil tended to be remarkably increased and exchangeable K content tended to be decreased, but pH, OM and exchangeable Ca content tended not to be regular.

하동화력발전소 비산재의 입도크기와 미연탄소 함량이 지오폴리머의 압축강도에 미치는 영향 (Effect of Particle Size and Unburned Carbon Content of Fly Ash from Hadong Power Plant on Compressive Strength of Geopolymers)

  • Fly ash is one of the aluminosilicate sources used for the synthesis of geopolymers. The particle size distribution of fly ash and the content of unburned carbon residue are known to affect the compressive strength of geopolymers. In this study, the effects of particle size and unburned carbon content of fly ash on the compressive strength of geopolymers have been studied over a compositional range in geopolymer gels. Unburned carbon was effectively separated in the $-46{\mu}m$ fraction using an air classifier and the fixed carbon content declined from 3.04 wt% to 0.06 wt%. The mean particle size ($d_{50}$) decreased from $22.17{\mu}m$ to $10.79{\mu}m$. Size separation of fly ash by air classification resulted in reduced particle size and carbon residue content with a collateral increase in reactivity with alkali activators. Geopolymers produced from carbon-free ash, which was separated by air classification, developed up to 50 % higher compressive strength compared to geopolymers synthesized from raw ash. It was presumed that porous carbon particles hinder geopolymerization by trapping vitreous spheres in the pores of carbon particles and allowing them to remain intact in spite of alkaline attack. The microstructure of the geopolymers did not vary considerably with compressive strength, but the highest connectivity of the geopolymer gel network was achieved when the Si/Al ratio of the geopolymer gel was 5.0.
