The experiments of rice bread processing were carried out to compare the varietal difference in processing adaptability to rice bread between brown and milled rice flour, and to analyze the interrelations among chemical properties of rice grain and some characteristics relevant to rice bread processing and quality There was varietal difference in adaptability to rice bread processing in both brown and milled rice, but there was not significant adaptability difference between brown and milled rice flours to rice bread processing. However, there was remarkable adaptability difference between brown and milled rice flours to rice bread processing in some rice varieties. Three high-amylose rices AC 27, IR 44, Suweonjo showed high quality of milled rice bread among tested rice materials. Brown rice revealed better adaptability to rice bread processing compared with milled rice in all varieties except the above three varieties. Especially, the glutinous rice Hangangchalbyeo failed to normal formation of rice bread from milled rice flour, but it showed the successful formation of rice bread from brown rice flour. The interrelations among chemical components of rice grain and some characteristics relevant to rice bread processing and quality exhibited quite different tendency between brown and milled rices. In the case of rice bread processing by brown rice flour, the larger volume expansion of dough during fermentation made the more springy rice bread and the more moist rice bread showed the more soft and cohesive physical property. In the case of rice bread processing by milled rice flour, the lower protein of rice flour was closely associated with the more moistness of rice bread and the higher lipid led to the more uniformal air pore distribution, the smaller pore size and the lower springiness of rice bread. Also, the larger volume expansion of dough during fermentation made the better loaf formation and the larger pore size of rice bread. The better loaf formation of rice bread revealed the softer hardness and the lower chewiness, and the lower springiness was closely correlated with the more uniformal size distribution of air pore and the smaller pore size in rice bread.

The part Ⅰ was for developing regression models to predict the moisture content, protein content and viscosity of brown and milled rice using Near Unfrared (NIR) Reflectance analyzer. The purpose of this study(part Ⅱ) is to measure fundamental data required for the prediction of rice quality , and to develop regression models to predict the protein content of brown and milled rice, brown rice yield from undreid paddy powder by using Near Infrared (NIR) Reflectance analyzer. The results of this study were summarized as follows . The predicted values of protein contents obtained from the undried paddy powder were will correlated to the measured values from brown and milled rice. The predicted yields of brown rice from undried paddy powder were not well correlated to be lab measured values from dried paddy. Continuous study in wavelength selection and of constituent relationship is necessary for practical application.
To improve the milling condition of brown rice a continuous type conditioning equipment was developed. To validate the performance of this machine the experimental operation was done at Sa-cheon RPC(Rice Processing Complex) using short grain rough. The initial moisture contents of brown rice were 15.0∼16.5%(w.b) and the flow rate of brown rice passing through the conditioner were 4,370kg per hour. The moisture content differences of brown rice between conditioned and non-conditioned were showed within 0.5%(w.b) This results means that the water injected to brown rice were absorbed to the surface of brown rice evenly. The moisture contents of conditioned treated milled rice were showed slightly higher than that of non-conditioned ones but it was considered that the conditioning process did not affected the weight increasing of milled rice by water supply. For initial moisture contents of 15.0∼16.5%(wb) brown rice it was found that the proper water supply rate was 0.115(cc-water)/(kg·%-brown rice) and the increments of whole rice were 2.2% compared to the non-conditioned ones. it was considered that the conditioning process did not influenced the whiteness of milled rice because the whiteness differences between conditioned and non-conditioned milled rice were negligible. About 18% of electric power which drives the abrasive type rice milling machine was saved at 0.115(cc-water)/(kg·%-brown rice) of water supply rate.
The changes in water uptake rate, cooking properties, color of rice grains and gelatinization properties of brown and milled rices during storage were studied. The brown and milled rices were stored at $4^{\circ}$ and $25^{\circ}C$ for 5 and 3 months, respectively. The water uptake rate constants of rices during hydration at $30^{\circ}$ were linearly decreased during storage. The volume increase rate also showed similar trend to the water uptake rate. The terminal point of cooking of milled rice at $100^{\circ}$ in a sealed brass vessel was about a half of that of brown rice. The cooking rate of milled rice was 1.8 times faster than that of brown rice. The cooking rate constant of both brown and milled rices linearly decreased with the increase of storage time. The L(lightness) value increased for brown rice grain and remained unchanged for milled rice grain during storage. The peak viscosity of rice flours by amylograph increased during storage, but enthalpy for gelatinization decreased, as measured by differential scanning calorimetry.
To measure the moisture content, protein and viscosity of brown and milled rice with Near Infrared Reflectance(NIR) analyzer, the comparison and analysis of the data from the chemical analysis and NIR analyzer were conducted. The purpose of this study is to find out the fundamental data required for the prediction of rice qualify and taste rank, and to develop a measuring method of constituents and physical characteristics of domestic rice with NIR analyzer. The important results can be summarized as follows. 1. The $r^2$ and SEC of moisture calibration from brown rice powder were 0.87 and 0.09 respectively, those of milled rice powder were 0.95 and 0.08 respectively. 2. The $r^2$ and SEC of protein calibration from brown rice powder were 0.83 and 0.20 respectively, those of milled rice powder were 0.86 and 0.20 respectively. 3. The $r^2$ and SEC of viscosity calibration from brown rice powder were 0.36 and 15.50 respectively, those of milled rice powder were 0.55 and 12.98 respectively. Further study is required to develop better prediction model for viscosity. It is necessary the continuous study including wavelength selection, because $r^2$ is small for practical use. 4. The regression equation for one rice variety was nearly coincident with other. Therefore, it is required that the prediction model should be developed for the all rice samples.
The water conditioning experiments of brown rice were performed to analyze the variation of the milled rice recovery using a continuous type conditioner at Jin-ju, Yeo-ju, and Yong-in RPC(Rice Processing Complex). About 8,000 kgf, 6,000 kgf and 10,000 kgf of the brown rice of 13-14 %(wb) initial moisture contents were used as experimental materials at Jin-ju, Yeo-ju, and Yong-in respectively. The broken rice and rice bran were collected and weighted to calculate the milled rice recovery. The amounts of broken rice with water conditioned occurred lower than that of broken rice without water conditioned. And the milled rice recovery of water conditioned ones were increased as 1.22%, 0.87%, and 1.00% compared with those of the non water conditioned ones at Jin-ju, Yeo-ju. and Yong-in respectively. Especially, the result of the experiments of Jin-ju RPC showed that about 33% and 35% of total increased milled rice recovery were the portion of the moisture content increment and the broken rice reduction respectively.

The water conditioning experiments of brown rice were performed to verify the effect of brown rice conditioner and to decide the optimum operating variables for the conditioner. The initial moisture contents of 13-14%(wb) brown rice were used as experimental samples. The flow rate of brown rice passing through the conditioner was 2,940 kg/hr and water was supplied proportionally from 80 cc/min to 240 cc/min. The differences between expected and measured moisture contents were neglected except 0.25%(wb) of the maximum differences at 0.2920((cc/min)-water/(kg/min)'%-brown rice) of water supply rate. For the initial moisture contents of 13-14%(wb) brown rice, it was found that a proper water supply rate was 0.2415((cc/min)-water/(kg/min).%-brown rice) and the increments of whole rice was 2.3% compared to non conditioned ones. It was considered that the conditioning process did not influence the whiteness of milled rice because the whiteness differences between conditioned and non-conditioned milled rice were negligible.
Thirteen varieties of Tongil type and ten of Japonica type which were produced in Korea, in 1985, were campa red in namely, width, thickness, length and weight of rice grains. Thousand-grain weight of paddy, brown rice and milled rice were not significantly different between Tongil type and Japonica type, but difference of paddy-brown rice and brown rice-milled rice had significant (p<2,859** and 4.316***, respectively), and the ratio of difference of paddy-brown rice was higher Tongil type than Japonica type. Width, thickness and length of paddy, brown rice and milled rice was significant (width : p<5.189***, 5.289** and 5.466***, thickness: p<3.371** 4.074*** and 5.988***, length: p<3.016**, 4.419*** and 5.492*** in paddy, brown rice and milled rice, respectively) between the Tongil type and Japonica type, and then the width and thickness of Japonica type were thicker than Tongil type, but length of Japonica type was shorter than Tongil type width/thickness ratio of paddy wes significant (p<2.396*) between the Tongil type and Japonica type, but its brown rice and milled rice was not. And length/width and length/ thickness ratio of paddy, brown rice and milled rice were significant (length/width : p<5.525***, 5.495*** and 5.863***, length/thickness: p<4.734***, 6,863*** and 8.425*** in paddy, brown rice and milled rice) between the Tongil type and Japonica type, and then its ratio were higher Tongil type than Japonica type.
The effect of milling on the nutrients of raw and parboiled rice grain samples was investigated. Parboiling treatments of choo chung paddy decreased head rice yields and pressure parboiling proved to be more beneficial in reducing white belly rice. Except PP sample mean length/width ratio of parboiled milled rice kernels(8% milling degree) were more larger than raw milled rice and the extent depended on severity of parboil heat treatment. Parboiling had no effect on the protein content of browm rice(0% milling degree) but increased in 4%, 8% milling degree and in PL40 sample. Parboiled rice had a lower fat and the extent depended on degree of milling. Ash content of parboiled brown rice decreasd compared to raw brown rice and generally decreased according to milling degrees were high. Nevertheless, PP, PT40 and PL40 parboiled milled rice samples(0% milling degree) contained more ash than raw milled rice. Parboiling increased total sugar and reducing sugar and increased according to milling degrees were high. Parboiled rice had a high reducing sugar content than raw rice except for PT sample, and more contained as higher milling degree. Total amino acid content of parboiled brown rice increased compared to raw brown rice except for PL40 sample. Parboiled rice of 4% milling degree had a lower total amino acid content and then 8% milling degree had a higher than raw rice. Ca content of parboiled rice was lower than raw rice and tended to have lower as milling degree were high. Parboiled rice of 0 and 4% milling degree had a lower Fe content degree but higher in 8% milling degree. PP and PT40 samples contained more Fe than any other parboiled rice. Parboiled milled rice contained more thiamin than raw milled rice. Rice of milling degree 6% and PL sample contained most thiamin.
