This study was conducted to explore socio-demographic influences on eating behaviors among adolescents in Korea. Data were obtained from the Eleventh Korea Youth Risk Behavior Web-based Survey (2015 KYRBS), a nationwide representative sample of 3,532,149 middle and high school students. The data were analyzed by descriptive analysis, t-test, and logistic regression based on complex sample design using SPSS 20.0 statistics. The results showed that intake frequency of soda, fast food, and instant noodles was higher in male than female students (P<0.001). Additionally, the frequency of eating breakfast, fruits, vegetables, and milk was higher among high school students than middle school students (P<0.001). Higher levels of economic status were associated with less skipping breakfast. Adolescents with mothers that had higher levels of education were more likely to be frequent consumers of fruits, vegetables, and milk, and to eat breakfast.
From the reports of the Korean National Nutrition Survey, the trend of fat intake was analyzed from 1969 to 1991. Total fat intake of 1991 was 2.1 times higher than that of 1,969 and animal fat intake was elevated 3.2 times during 23years. Among vegetable foods, the consumption of cereals and their products was decreased gradually, however, the amount of legumes and their products intake was increased slowly. In addition, among animal foods, the intakes of meats and their products, eggs, fishes and shellfishes, milk and milk products were increased greatly. the main fat source was gradually changed form cereals and their products in 1969 to meats and their products in 1991. In 1969, 7.2% of total energy was derived from fat wheres 16.6% was derived from fat whereas 16.6% was derived from fat in 1991. Among 1,952 households surveyed in 1991, the fat intakes of 576(29.4%) and 104(5.3%) households were over 20 and 30%, respectively, of total energy intake. The 42.7% of the households had more than 50% of the total fat from animal fat. From the above results, it is suggested that the nutrition education program is need to prevent excess fat intake.
The purpose of this study was to investigate consumption of health functional food (HFF) and dietary habits, nutrient intake, and dietary quality by HFF consumption in college students. The subjects of this study included 283 college students (179 males and 104 females) in Incheon metropolitan city. The cross-sectional study was conducted using self-reported questionnaires, including kinds of HFF consumed, motivation for purchase, reason for consumption, effect after consumption, reason for no consumption, and dietary habits. A three-day recall method was used for dietary assessment. Dietary qualities were assessed using nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and nutrient density (ND) values. The percentage of HFF consumption was 40.2% in males and 50.0% in females. The main kinds of HFF consumed by males were vitamins and minerals, red ginseng, protein, and omega-3 fatty acid, in that order. HFF consumed by females were vitamins and minerals, red ginseng, omega-3 fatty acid, and individually approved functional ingredients, in that order. The main motivation for purchase of HFF was recommendation of family and relatives (males 76.4% and females 78.8%). The main reason for consumption of HFF was health promotion (males 67.7% and females 63.5%) and the main reason for no consumption of HFF was not having a health problem (males 49.5% and females 46.2%). The dietary habit score for 'eat the milk or dairy product everyday' (p < 0.05) in females was significantly higher in HFF consumers, compared to HFF non-consumers. In males, the ND of vitamin B1 (p < 0.05) in HFF consumers was significantly higher compared to HFF non-consumers. In females, HFF consumers showed a significantly higher ND of vitamin B2 (p < 0.05) and Ca (p < 0.01), compared to HFF non-consumers. Regardless of HFF consumption, the NAR of vitamin C, folic acid, and Ca was less than 0.7. These results suggest the need for nutrition education for college students in order to improve dietary habits and for balanced nutritional status, and to provide correct information on HFF.
The dairy industry has consistently grown via the expansion of dairy-based food categories. Dairy product consumption is stable since the nutrient composition in dairy products is ideal for human health. However, dairy products are highly susceptible to food-borne pathogens. Controlling the safety of dairy products is thus important when considering the nutrient-rich matrix of this food category. Currently, immunoassays or molecular biology techniques have been used to evaluate the safety of dairy products in Korea. These methods are based on the detection of proteins and thus have low reproducibility and sensitivity. Recent techniques to detect food-borne pathogens have focused on genetic analyses. Rapid detection methods for food-borne pathogens in milk and dairy products using polymerase chain reaction (PCR) techniques, such as conventional PCR, real-time PCR, repetitive sequence-based (rep)-PCR, PCR-denaturing gradient gel electrophoresis (DGGE), and digital PCR, are reviewed in this article. The aim of this review was to contribute knowledge of the relationship between microflora and the quality of dairy products. This study will also assist in the immediate monitoring of food-borne pathogens in milk and dairy products when an outbreak related to this food category occurs.
Higher bone mineral density (BMD) at a young age, calcium intake, and exercise are important for prevention of osteoporosis later in life. We examined familial effects of BMD between mothers and children and adolescents aged 8-19 in Cheonan, Korea and the relationships between BMD and lifestyle parameters, including: food and nutrient intake and exercise. For daughters and sons, significant differences in BMD were observed at the three bone sites (total femur, femur neck, and lumbar spine) according to age, gender, body mass index, exercise, and milk consumption, compared to the reference value for each classification category. Mean differences in children's BMD were observed according to maternal BMD. Energy and calcium intake were lower in both children and mothers in comparison to the estimated daily energy requirement; however, their protein intake was much greater than the daily recommended intake. After adjusting for age and gender and for mother's age, body mass index, and total calorie intake, results of the food frequency test showed an association of a higher intake of meat, meat products, milk and milk products with greater BMD of total femur, femur neck, and lumbar spine of children. In addition, exercise was positively associated with higher BMD. Regression analysis showed a positive association of BMD with age, male gender, exercise, and mother's BMD. In conclusion, after adjustment for environmental parameters, maternal BMD had a positive influence on BMD in daughters and sons. This finding suggests that parents need to check their BMD in order to determine whether their children are at increased risk of low BMD.

Cacao, a major ingredient for making chocolate, has been shown to have potent antioxidant effects. The consumption of raw cacao has beneficial effects on health. This study determined the fermentation properties of yoghurt that was manufactured with cacao nibs (Theobroma cacao L.). The pH of the yogurt containing the cacao nibs was lower than that of the control, and this reduction was both concentration and fermentation time-dependent. Furthermore, the number of lactic acid bacteria in the yogurt made with cacao and its viscosity increased in a cacao nibs dependent manner. In particular, the yoghurt with 5% cacao nibs added had the highest number of lactic acid bacteria at 48 hours at the end point of the fermentation. Whey protein degradation in yogurt containing cacao nibs increased with the fermentation time, and the organic acid production, especially lactic acid, in the yogurt containing cacao nibs increased significantly after 16 hours of fermentation. In addition, the total polyphenol content of the yogurt containing cacao nibs increased, which was proportional to the amount added. Sensory evaluations of the yogurts indicated that overall taste was less desirable as cacao nib loadings increased from 1 to 5% compared with controls. This result is due to the excessive acidity, which was strongly perceived in the absence of added sugar. The development of yogurts with cacao nibs is expected to contribute much to the appeal of fermented milk.
BACKGROUND/OBJECTIVES: Depression and anxiety are common mental health problems. Anthocyanins from berries might have an inhibitory effect on monoamine oxidase (MAO) enzymes and alleviate various mood and anxiety symptoms. This study examined the effects of a daily supplement of an anthocyanin-rich product on mental health problems. SUBJECTS/METHODS: This study was a secondary analysis from a randomized, 6-week, open-label trial in 300 healthy participants aged 18-60 years who consumed 1 or 2 servings of anthocyanin-rich mulberry milk daily. The General Health Questionnaire-28 (GHQ-28) and Hospital Anxiety and Depression Scale (HADS) were used to monitor mental health problems. In addition, the saliva activity levels of MAO-A, MAO-B, and cortisol were examined at the baseline and after 6 weeks. RESULTS: The total scores of the GHQ-28 and HADS and all their subscales decreased in both groups (all P < 0.05). The cortisol, MAO-A, and MAO-B activities decreased significantly (all P < 0.05), but there were no significant differences between the groups (all P > 0.05). Significant correlations were noted between the decreased activity level of MAO-A enzyme and decreased scores from the GHQ-28 somatic subscale and the HADS depression subscale (all P < 0.05). CONCLUSIONS: Daily consumption of anthocyanin-rich mulberry milk possibly improves mental health problems by reducing depressive and anxiety symptoms in the working population. The suppression of MAO-A activity is a possible underlying mechanism.
Livestock products like meat, milk and egg have been principal food sources for human beings since the historic periods of time. Low cholesterol eggs and high omega-3 eggs can be produced in several different ways, but popular way to increase is feeding the feeds with different oil sources containing high omega-3 and 6 fatty acids such as fish oil, perilla oil, linseed oil and lecithin etc. But proper compositon of feed formula should be found and economically beneficial. Brand eggs fortified with vitamin, mineral, unknown growth factors are also manufactured. Low cholesterol and high $\omega$-3 PUFA milk are marketed recently Cholesterol removal technology is not completely established and has several limitations to be overcome. Milk fortified with $\omega$-3 fatty acids is made by incorporating high &13 fatty acid foods in feed despite of extraordinary way of fatty acid metabolism In cow. All these biologically active products will be very beneficial and useful for human consumption when limitations of manufacturing technology such as safety and lowered sensory qualities are resolved. Furthermore, thorough and precise tests and quality control for these products should be performed to ensure the effectiveness and usefulness in terms of improving health and nutritional status in general. However one caution should be pointed out to lay people informing that these items are nothing but a food and not panacea. 국민소득의 증가와 수입자유화에 따라 치즈 소비량도 매년 증대되어 1991년 8천 5백톤에서 2001년에는 5만 3천여톤으로 10년간 6배 이상의 소비증대를 나타내었으며, 같은 기간 신선한 치즈(H.S. 0406.10.1000)의 수입량도 2톤, 3만 달러에서 2만톤, 4천 9백만 달러로 양으로는 만 배, 금액으로는 1,600여배 증가하였다. 또한, 가공 치즈에 있어서도 1991년 4,790톤에서 2001년 24,973톤으로 5.2배의 소비증가를 나타내었으나 성분규격 및 분류체계는 적절하지 못하게 규정되어 있다. 자연치즈의 경우 정의에 따라 총고형분이 유고형분과 차이가 없을 것으로 생각되며, 한 종의 연성치즈를 제외하고는 모두 규격을 만족시켰으나 유고형분 함량에 따라 '생치즈'와 '연성치즈'가 구별되지는 않았다. 따라서, CODEX의 규정을 참조하여 지방을 제외한 성분중 수분함량(MFFB)에 따라 초경질, 경질, 반경질, 연질로 구분하는 것이 치즈의 조직적 특성을 고려할 때 적절하리라 생각되며, 건물중 지방함량에 따라 60% 이상을 '고지방', 25∼60%를 '중지방', 25% 이하를 '저지방'으로 분류하는 것이 바람직하리라 생각된다. 가공치즈는 소비자의 기호에 따라 다양한 제품이 개발되고 있으며 앞으로도 더욱 소비확대가 기대되는 제품으로서, 유고형분 15∼34% 제품을 '치즈가공품'으로 분류하여 규정하는 것이 가공치즈의 개발 및 소비촉진을 위해 필요하다고 생각된다.
원자력 시설의 정상 운영중 오염 음식물 섭취에 의한 피폭선량 평가모델 (미국 원자력규제위원회의 규제지침 1.109 모델)의 입력변수에 대한 민감도 분석을 3가지 음식물 (쌀, 엽채류, 우유)과 2가지 핵종 $(^{137}Cs,\;^{131}I)$에 대해 수행하였다. 입력변수 값의 표본추출은 Monte Ca린o 방법에 근거한 Latin hypercube sampling 기법을 사용하였다. 모델 예측결과에 대한 입력변수의 영향력 또는 중요도를 나타내는 민감도지수는 partial rank correlation coefficient 의해 정량적으로 나타냈다. 평가결과, 고려된 음식물과 핵종에 대해 농작물의 수율에 대한 차단계수의 비와 음식물의 소비율은 중요한 입력 변수로 나타났다. 그외 우유의 경우 사료에서 우유로의 전달계수와 젖소의 사료 섭취율도 한 중요한 입력변수로 나타났다. $^{137}Cs$ 침적의 경우에는 기후에 의한 핵종의 제거 반감기가, $^{131}I$ 침적의 경우에는 생산에서 소비까지의 지연시간이 상대적으로 중요한 입력변수였다.
