This experiment was carried out to obtain the fundamental data for development of digestibility and quality enhanced product of soy yogurt. Soy yogurt was processed from raw materials of soybean, defatted soybean and sprouted soybean which inoculated with Lactobacillus acidophilus and Bifidobacterium bifidum as a starter. Changes of chemical compositions, viable cell count and saccharides during processing were investigated including acceptibility of manufactured products. The results were summarized as follows; 1. Defatted soy milk ferment ed with Lactobacillus acidophilus was showed the greatest initial acid productivity and sprouted soy milk was showed the greatest growth of Loctobacillus acidophilus. 2. Acid production was accelerated when 2% glucose was used in soy milk. 3. Addition of reconstituted skim milk in soy milk and defatted roy milk increased acid production but was not showed the effect in the sprouted soy milk. 4. Sprouting soybean, the contents of raffinose and stachyose were decreased but those of glucose was increased. 5. When soy milk was fermented with Lactobacillus acidophilus. the contents of raffinose and stachyose were decreased. 6. As a result of panel test, sprouted soy yogurt which was produced by addition of reconstituted skim milk of 10% showed the greatest flavor and tastes.
The impact of storage on the neuroprotective effects against $A\beta$-induced cell death and physicochemical characteristics of milk fortified with BF-7 were investigated. The BF-7 milk exerted protection of neuronal cells SK-N-SH from amyloid beta ($A\beta$)-induced neuronal stress. Our results showed that incubation of the cell with pretreated BF-7 milk, significantly attenuated apoptotic stress by $A\beta$, considered in cell morphology and nucleus shape. The general compositions were maintained consistently in BF-7 fortified milk (BF-7 milk). The BF-7 did not make any disturbance on pH and titratable acidity. The color change was not detected, either. Also, any microorganism had not been detected with more than 7 days storage at $4^{\circ}C$. In sensory evaluation study. the average scores of each sensory attribute were quite similar with plain milk. In conclusion, our results strongly indicate that BF-7 characteristics are quite adequate to be included in milk and BF-7 milk is still working well on neuro-protection, result in enforcing our brain and delaying neurodegeneration.

Milk protein polymorphisms were genotyped by polyacrylamide gel electrophoresis (PAGE) from 109 Maiwa and 100 Jiulong yaks. The relationships between milk protein polymorphisms and 3 milking traits were studied. The results showed that $\beta$-CN, $\kappa$-CN and $\alpha$-La were monomorphic, and ${\alpha}_{s1}$-CN and $\beta$-Lg were polymorphic, with ${\alpha}_{s1}$-CN D and $\beta$-Lg E as dominant genes, respectively. The frequencies of ${\alpha}_{s1}$-CN D were 0.8073 and 0.6000 in two populations and $\beta$-Lg E were 0.9770 and 0.9700. The mean heterozygosities were 0.1021 and 0.1867 in the two populations. No significant effects on milking traits and milk protein compositions were observed except for ${\alpha}_{s1}$-CN locus on fat percentage in Jiulong yak.

The lipid and fatty acid compositions and vitamin E content were analyzed in 48 human mature milk, 3 infant formulas (modified milk powder) and 8 market milk samples. The total lipid content in modified milk powder was similar those in human milk and market milk when total solids content of modified milk powder was corrected to that of human milk. In comparison with human milk, modified milk powder contained a lower proportion of triglycerides and higher proportions of phospholipids, free fatty acids and cholesterol esters. The ratios of phospholipids/triglycerides, total cholesterol / triglycerides and total tocopherol/total lipids in modified milk powder were significantly higher than those in human milk and market milk. The American recommendation for linoleic acid (0.7 IU/g) could be satisfied with human milk, modified milk powder and market milk. The proportions of short- and medium-chain even numbered saturates were higher and the proportions of long-chain derivatives of linoleic (${\omega}6$ series) and linolenic (${\omega}3$ series)acids were lower in modified milk powder and market milk than in human milk. It is concluded that in view of their levels in breast milk, the polyenoic derivatives of linoleic and linolenic acids must be taken into account when assessing infant foods.
This study was conducted to examine the effect of different types of milking instrument and season on milk composition (fat, protein, non-fat milk solids, milk urea nitrogen and somatic cell count) on Holstein-Friesian lactating cows. Raw milk samples were collected from 20 automatic milking system (AMS) installed dairy farms and 85 conventional milking system (CMS) installed dairy farms. Milk fat, protein, NFMS and MUN contents did not changed between AMS and CMS and different seasons. On the other hand, the average SCC in AMS was $239{\times}10^3cells/mL$ which was lower than in CMS ($373{\times}10^3cells/mL$, (p<0.05). In conclusion, present results indicated that SCC in milk might be influenced by AMS. However, this area needed more study to confirm the reason of reducing SCC content from AMS.
This study was performed to investigate the effect of dietary protein level throughout gestation and lactation on milk composition and on postnatal growth in infants, using rats as an animal model. Female Sprague-Dawley rats were provided with either high(25% ISP(Isolated Soy Protein)diet) or low protein diet(10% ISP diet) throughout gestation and lactation. Milk samples were taken for analysis from the lactating rats at days of 7, 14, 21, of lactation. Dams and some pups were killed after 4 weeks from parturtion (Experiment 1). Pups from dams of each diet groups were randomly selected and reared with 25% or 10% ISP diet for 4 more weeks (Experiment 2). In experiment 1, maternal protein intake and body weight gain throughout gestation and lactation was higher in 25% ISP group. Serum protein, Ca, Fe, Zn, K concentrations were significantly higher in 25% ISP group. There was no difference in birth weight between two groups, however the mean body weight at 4 weeks postpartum were significantly higher in 25% ISP group. Serum profiles of pups at weaning were similar to that of dams. Milk compositions were changed during lactation processes and were affected by dietary protein level. Lactose and Ca, Cu, Fe concentrations in milk were higher in 25% ISP group, whereas, lipid, triglyceride were higher in 10% ISP group. In experiment 2, food intake was higher in milk were higher in 25% ISP group but was unaffected by pup's dietary protein level after weaning. The weights of liver and kidney were affected by maternal protein intake. The weight of intestine was affected by pup's dietary protein level after weaning. The weight of femur and scapula were affected by maternal protein intake. There were no differences between four groups in serum profiles. Therefore, as mentioned above, it seemed that the effect of maternal protein malnutrition to fetus was able to be overcome to some extent by high protein diet intake after weaning. In conclusion, 1) Dietary protein level throughout gestation and lactation affected both nutritional status of dams and pups and milk composition: 25% ISP groups supported better nutritional status than 10% ISP group 2) It seemed that effect of dietary protein level after weaning on pups was able to be overcome the influence of maternal diet in fetus to some extent.

This study was conducted to determine a proper feeding regime for lactating Holstein cows during the warm season in Taiwan. In Feeding Trial, 21 lactating Holstein cows were randomly allotted into three feeding regimes in a Completely Randomized Design. The feeding regimes were roughage fed ad libitum along with concentrate fed either twice daily (2C) or four times daily (4C), and total mixed ration (TMR) for 8 weeks. No significant differences among the three feeding regimes were found in body weight changes, and intakes in terms of dry matter, crude protein and net energy. For milk yield and 4% FCM yield, 4C were higher than the other two feeding regimes (p<0.05). No significant differences were found in milk compositions or differences noted in the yields of the respective milk components. TMR was worse than 2C and 4C (p<0.05) in milk production efficiencies in terms of dry matter intake per kg milk yield, crude protein intake per kg milk protein yield, as well as dry matter intake, net energy intake and crude protein intake per kg 4% FCM yield. Three ruminally fistulated Holstein dry cows were randomly assigned into the same three feeding regimes in a 3${\times}$3 Latin Square Design. No significant differences were found among the feeding regimes in ruminal pH, ammonia nitrogen, total VFA concentration, molar percentages of VFA, and acetic acid: propionic acid ratio (C$_2$/C$_3$). Taken all together, roughage fed ad libitum and concentrate fed four times daily was the better feeding regime for lactating cows during the warm season in Taiwan.
An experiment was carried out to study the effect of monensin administration on mammary functions in crossbred Holstein cattle. Fourteen non-pregnant late lactating crossbred Holstein cattle, approximately 270 days postpartum, were selected for the experiment. They were divided into two groups of 7 animals each. Seven animals in the treated group were given sodium monensin orally in a slow-release capsule. Animals in both control and treated groups were fed the similar diet to maintain milk production and body score at 2.5. Rice straw was fed as a source of dietary fiber throughout the experimental period. After monensin administration, a significant increase in the molar percent of ruminal propionate (p<0.05) and a significant decrease in the molar percent of ruminal acetate (p<0.05) were apparent in comparison to the pretreated period. The ratio of acetate to propionate concentration decreased significantly after monensin administration (p<0.05), while it was maintained at the similar level throughout the period of experiment in the control group. Monensin did not affect the molar percent of ruminal butyrate and valerate. The concentration of milk allantoin between the control group and monensin treated group was not different. An excretion rate of allantoin in milk decreased in animals treated with monensin (p<0.05). Mammary blood flow did not show significant difference between control and monensin treated groups. The plasma glucose concentration, arteriovenous concentration difference and mammary gland uptake of glucose remained constant in both groups. Milk yield of the later stage of lactation in the control group declined during lactation advance while a tendency to increase in the milk yield was apparent after 21 days monensin administration. Milk compositions for concentration of lactose, fat and protein in both control group and monensin treated group did not change throughout the experimental periods. From these results, it can be concluded that the action of monensin could affect the ruminal fermentation pattern. Monensin could not increase milk yield in the late lactating period.
The most abundant long-chain polyunsaturated fatty acid in brain lipids is docosahexaenoic acid(C22 : 6 N-3, DHA). It is incorporated into nerve tissues mostly in utero and during the first year of life. DHA in brain is derived from either pre-formed DHA in human milk or by infant hepatic synthesis from linolenic acid in milk. This study was designed to investigate the effects of DHA supplementation on fatty acid profiles in maternal plasma lipid and breast milk. Twenty lactating women participated in the study. Seven women took 3g of fish oil per day and vitamin E for 28 days starting from the day of giving birth. Five women consumed 1.5g of fish oil as well as tivamin E, and the rest took vitamin E supplements for the same period of time. Dietary questionnaires and 3 consecutive 24-h recalls were collected to evaluate theri nutritional status and food habits. Finding that DHA intake from fish was not significantly different among three experimental groups, the partcipants were instructed to continue eating their usual home diets. Milk samples were taken on the day of giving birth, as well as the 7th, 14th and 28th day being the supplement phase, and finally 2 weeks after the cessating of DHA supplements. The amounts of the fish oil supplements produced significant dose-dependent increased in the DHA content of milk and plasma, but to a lesser degree. Base-line for 28 days raised the level to 2.05$\pm$0.43% and 1.5g/day supplement produced DHA levels of 1.02$\pm$0.19%. The results of this study indicated that relatively small amount of dietary DHA supplementation significantly elevats DHA content in milk. This would clearly elevate the infant's DHA intake which in turn may have implications for the infant's brain development.
Lipidomic analyses of transient breast milk are far more limited than those of other dairy products. As a preliminary analysis of breast milk lipidomes, analytical methods for polar and nonpolar lipids from transient breast milk were developed, and detailed fatty acid profiles were determined in this study. The newly developed methods include solvent fractionation of phospholipids and acyl glycerol, one-pot derivatization to FAMEs and pyridylcarbinol esters, and instrumental analysis, including GC-FID and GC-MS. The results indicate that breast milk contains 16 major common fatty acids with 8-22 carbons. Additionally, 29 minor fatty acids were identified, including odd-numbered fatty acids and branched analogues with 11-23 carbons. Their detailed concentrations in different fractions were measured using the internal standard method. In addition to ordinary fatty acids, breast milk contains several branched fatty acids, including iso/anteiso acids with 15-18 carbons. Structural studies have been performed on selected minor fatty acids via chemical synthesis.
