A Study on the Korean Food Adaptation and Utilization of University Foodservice According to the Religion of International Students in Busan (부산지역 외국인 유학생의 종교에 따른 한국 식생활 적응도 및 대학급식소 이용행태 조사)

  • This study was conducted to investigate dietary adaptations and use of university foodservice in Korea according to the religion of international students. The survey was conducted from April to June in 2017 and included 609 subjects studying at a university in Busan. Muslims showed the highest percentage of eating three meals per day (42.4%) but the highest rate of eating unbalanced meals (64.7%) and midnight meals (41.8%). The most frequent problematic eating habit among Buddhists was irregular mealtimes (46.0%). Adaptation frequency to Korean diet was lowest among Muslims and highest among Christians. Securing halal foods was difficult for Muslims in Korea, and demand for halal foods as a school restaurant menu was high. The response rate for experiencing Korean food at university foodservice was highest among Christians (79.7%) and lowest among Muslims (45.3%). The main reason for not using university foodservice for Muslims was "no menu to eat" for religious reasons, and other religious groups cited "lack of menu variety." Preferred types and recipes of meats, fish, and vegetables also showed significant differences according to religion. As a result, efforts should be made to increase adaptation to life abroad in Korea, including changes in university foodservice management, considering the religious characteristics of international students.

Twenty-four-hour Variation of Plasma Leptin Concentration and Pulsatile Leptin Secretion in Cattle

  • We conducted this study to investigate 24 h leptin profiles and to ascertain whether leptin secretion occurs in a pulsatile manner in cattle. Plasma leptin concentrations were measured every 10 min for 24 h in five Holstein steers aged 10 months. Simultaneously, feeding behavior was recorded every 5 min during this experiment. In two of the five cattle, leptin showed diurnal rhythmicity, which could be described by a cosine, with peaks between 15:00 and 16:00 and nadirs at around midnight. Pulsatile leptin release was quantified by model-free Cluster analysis. Plasma leptin showed a pulsatile pattern in all cattle, with an average number of pulses at 15 peaks/24 h. The daily number of pulses was not related to total time spent eating, ruminating or chewing. However, when divided into six 4 h time intervals, time spent ruminating was positively related with pulse number (p=0.05) in cattle showing no diurnal plasma leptin variation. These results suggest that cattle may have unique diurnal variation and pulsatile patterns of plasma leptin, differing from those of monogastric animals.

  • This study proposes an electric vehicle (EV) smart panel board and its control method on the basis of charging scheduling. The proposed system consists of batteries, a three-phase battery charger, three single-phase inverters, transfer switches for electric power distribution, and a controller. The three-phase battery charger usually charges the batteries at midnight when electric rates are cheap and in light load. When the electric power consumption of the EV standard chargers connected to one phase of the power line is relatively large or when a blackout occurs, the electric power stored in the battery is supplied by discharging through the inverters to the EV standard chargers. As a result, the value of peak load and the charging electric power quantity supplied from a utility grid are reduced, and the current unbalance is improved. The usefulness of the proposed system is confirmed through simulations, experiments, and case studies.

Circardian rhythm of cardiac nonlinear dynamics in healthy human

  • In this study, we investigated the circardian rhythm of complexity of cardiac dynamics in humans. Dynamic 24-hour electrocardiographic recordings were obtained from 30 healthy ambulant subjects aged 41 to 50 years. or each recordings, normalized low frequency (0.04-0.1 hertz) and high frequency (>0.15 hertz) component are calculated. our different indexes obtained from separate algorithms of nonlinear dynamics - approximate entropy, correlation dimension, Lyapunov exponent and fractal dimension - were calculated. During early morning, low frequency component rose rapidly with concomitant withdrawl of high frequency component. All the our indexes of nonlinear dynamics showed remarkably same circardian rhythm: an early morning dip preceded by a steep decline during late night, a gradual recovery during evening and a peak around midnight. These data indicate that the simultansous losses of all of the our different mechanisms of nonlinear control of heart rate during early morning, concomitent with the surge of symapathetic activity and reduction of vagal activity, may contribute to the increased incidence of cardiovascular events during morning hours.

Study of the Dietary Behaviors and Adaptation for Korean Foods among International Students in Busan (부산지역 외국인 유학생의 식습관 및 한국 식생활 적응 실태 연구)

  • Despite the rapid increase in the number of foreign students, there has been a lack of research to help them adapt to Korean food culture and develop healthy eating habits. This study examined the dietary habits and problems of foreign students studying in universities of Korea. Although 97.0% of the 604 people surveyed live in dormitories, the visiting rate of the school cafeteria was low. In addition, only 30.2% of them ate three meals a day, and the frequency of eating midnight snack and convenience store foods was high. International students were positive about experiencing new Korean food, but food satisfaction in Korea was not high because of the difficulties in food selection due to religious problems and maladjustment to Korean sauces and seasonings. Information on Korean eating habits was obtained mainly from other foreign students from the same country (49.5%) and the Internet (33.8%), and there was very little interaction with Korean students at meals. The ratio of subjects who ate halal foods was 33.3%, and they were shown to have difficulty obtaining halal foods in Korea. Therefore, based on the results of this study, a support program should be developed in order to improve the dietary habits of international students.

Studies on Dietary Habits and Residence Students' Satisfaction with University Dormitory Foodservice in Jeollabuk-do Iksan Area (전라북도 익산 지역 대학교 기숙사 학생의 식습관 및 기숙사 급식 만족도 조사)

  • The purpose of this study was to investigate eating habits and dormitory foodservices' satisfaction in university students using dormitory foodservice in the Jeollabuk-do Iksan area. Self-administered questionnaires were completed by 195 students (86 male, 109 female). Many students (58.5%) ate less than two meals per day and spent around 30 min eating meals. The results show that snack and midnight meals were the main reasons (37.9%) for unhealthy eating habits. Main source of nutritional knowledge and information were TV and the Internet (58.5%), followed by friends and people (25.1%), nutrition books (10.3%), elective courses (4.6%), and newspapers and magazines (1.5%). Men had significantly higher satisfaction scores for nutrition, taste, diversity of menu, as well as hygiene of dormitory food court compared to women (p<0.05). Salty taste was the most important factor in evaluation of taste satisfaction, whereas sour taste was opposite. The reason for taste dissatisfaction in the dormitory food court was not salty enough, and it may be related with their eating habits. The results show that students need education for adequate knowledge and information about the relationship between health and nutrition.

Obesity Stress, Eating Behavior and Eating Habits of Elementary School Students (초등학교 아동의 비만 스트레스와 식행동 및 식습관에 대한 연구)

  • This study was conducted to investigate the influence of obesity stress on the eating behavior of elementary school students. Using a questionnaire, 300 students in the sixth grade from 2 schools in Kyunggi-do were surveyed (Boys: N=145, Girls: N=155). Data analysis was managed by SPSS software (version 13.0). The link between obesity stress and eating habits or behaviors was dependent on physical discomfort. There was also a large group of students experienced irregularity in their meal times during the day. Furthermore, there were significant differences in mealtime among boys under psychic stress caused by obesity. In the case of dairy intake during breakfast, the significant signs of obesity stress for were physical discomfort for boys and psychic stress for the girls. It was found for both boys and girls that more frequent midnight snacking decreased the efforts to overcome obesity stress. Therefore, a professional nutrition program that can educate school children must be implemented both in school and at home. In addition to overweight or obesity children, normal weight and underweight children can also benefit from this program that includes health counseling for weight and eating behaviors.

Three Dimensional Computer Modeling of Magnetospheric Substorm

  • Magnetospheic substorm in the magnetotail region is studied numerically by means of a three dimensional MHD code. The analytic solution for the quiet magnetotail is employed as an initial configuration. The localized solar wind is modeled to enter the simulation domain through the boundaries located in the magnetotail lobe region. As a result of the interaction between the solar wind and the magnetosphere, the magnetic field lines are stretched, and the plasma sheet becomes thinner and thinner. When the current driven resistivity is generated, magnetic reconnection is triggered by this resistivity. The resulting plasma jetting is found to be super-magnetosonic. Although the plasmoid formation and its tailward motion is not quite clear as in the two dimensional simulation, which is mainly because of the numerical model chosen for the present simulation, the rarification of the plasmas near the x-point is observed. Field aligned currents are observed in the late expansive stage of the magnetospheric substorm. These field aligned currents flow from the tail toward the ionosphere on the dawn side from the ionosphere to ward the tail on the dusk side, namely in the same sense of the region 1 current. As the field aligned currents develop, it is found that the cross tail current in the earth side midnight section of the magnetic x-point is reduced.

A Case Study on Quality Improvement of the Food Services for Patients - Focused on back-up orders - (환자 급식서비스의 질 향상 사례 연구 - Back-up 처방 중심으로 -)

  • The purpose of this research which, surveyed target hospitals, was to evaluate job operations by surveying the influences of Quality Improvement (QI) activities in various divisions related to a decrease in their back-up orders. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows Before QI there were 147 cases of back-up orders ; after QI there were 83 cases, decrease of 64 cases. This was 44%, less than the projected goal of 50%. For each item, there was a decrease of 40 nurse cases, 9 patients and patron cases,9 test surgery deliverly cases and 5 doctor cases after QI. The registering of midnight meals was not shown after QI, due to the Order Communication System (OCS) settlement. After performing QI, the average manual operation per month was reduced from 840 minutes to 498 minutes, of which the difference was 342 minutes, and the average of 342 minutes per month could be used for the peculiar operation of each division. This QI activity provided a good opportunity for establishing cooperation among divisions in providing meals to patients through interactions among divisions. It was recognized that these interactions were effective only when medical services were achieved through organized cooperation among divisions. Among the 7 items included on the patient satisfaction questionnaire, “satisfaction with offered menus” (p<0.01) showed significantly higher scores before QI. However “satisfaction with meal times” (p<0.01) showed significantly lower scores before QI.

Growth and Flowering of Orostachys japonicus A. Berger as Affected by Phosphorus and Potassium Fertilization (인산과 카리 시비량에 따른 바위솔의 생장과 개화)

  • Shoot weight of Orostachys japonicus should determine its profitability. The study was done to determine the effect of phosphorus and potassium fertilization (0, 5, 10, 20 kg $P_2O_5$ or $K_2O$ /1000 $m^2$) on its growth, morphological characters, and flowering. Night-break treatment of 2 hours at midnight were done since Aug. 25 when afterward samples were taken every 4 weeks to Nov. 16. Growth, morphological and flowering related characters were measured from each sample. Plant height, inflorescence length, number of leaves including bracts and stem diameter were increased with increased P and K levels. Leaf and bract, floret, shoot and total dry weights showed similar response to the above morphological characters although P fertilization more increased them than K fertilization. Florets were more formed with increased P and K levels but were not flowered due to the night-break treatment, meaning that P and K fertilization had little effect on anthesis of the florets formed.
