중국 현지인의 한식에 대한 인식과 한식 레스토랑 만족도 및 재방문의도 - 방문 경험과 방문 빈도 차이를 중심으로 - (Chinese Customers' Perception of Korean Foods and Satisfaction and Revisit Intentions to Korean Cuisine Restaurants - A Focus on Visiting Experience and Frequency of Visits -)

  • The purpose of this study was to investigate Chinese customers' perceptions of Korean foods and their satisfaction toward Korean cuisine restaurants. The subjects of this study were 202 Chinese individuals who visited Korean cuisine restaurants in Shanghai, China. The subjects viewed Korean foods as favorite foods and perceived them as fresh and seasonal, and mostly composed of cereals and vegetables however they did not view Korean cuisine as good for health. As compared to customers visiting a Korean restaurant for the first time, those who had visited Korean restaurants previously agreed more strongly with the following items: 'Korean food has a beautiful color', 'Korean food is familiar', 'Korean food smells good', 'Korean food is healthy', 'Korean food is nutritious', and 'Korean food is salty and spicy'. In addition, as compared to occasional visitors, frequent visitors of Korean cuisine restaurants more strongly agreed with the followings: 'Korean food has a beautiful color', 'Korean food is expensive', 'Korean food is healthy', 'Korean food is nutritious', 'Korean food is salty and spicy', and 'Korean food includes many fermented foods'. The subjects considered 'appearance of menu', 'variety of menu', 'nutrition of menu', and 'Chinese characters for menu and ingredients' as the most important attributes when choosing Korean cuisine restaurants. The frequent customers of Korean cuisine restaurants considered 'kind service', 'employee knowledge of Korean foods', 'operation hours of restaurant', and 'cleanliness of restaurant' as the most important restaurant attributes. In addition, the frequent customers of Korean cuisine restaurants were more satisfied than the occasional customers with the followings: 'nutritional quality of menu', 'quick service', 'cleanliness of restaurant', 'appearance and signboard of restaurant', and 'image of restaurant'. The implications of the data are discussed.

사회적 기업 형 카페 선택속성의 중요도 및 수행도 분석 (Importance and Performance Analysis of Customers' Selection Attributes for Social Enterprises Type Cafe)

  • The purpose of this study was to investigate the consumers' selection attributes of social enterprises type cafe by IPA(Importance-Performance Analysis). Data were collected through a self-administered questionnaire by 309 random consumers in several social enterprises type cafes in Seoul and Gyonggi area. The data was analyzed using SPSS windows(ver. 17.0) for descriptive analysis, t-test, one-way ANOVA and factor analysis. The importance of cafe's selection attributes were divided into five factors including 'promotion and menu', 'service quality and atmosphere', 'location', 'taste', and 'brand name'. The mean scores of importance and performance for cafe selection attributes were 4.01 and 3.68 out of 5, showing a significant difference between importance and performance. According to the IPA results of 17 selection attributes for social enterprises type cafe, the selection attributes with relatively low performance but high importance(II quadrant) was 'easy accessibility'. The factor to be improved through the IPA was accessibility factor, showing that the consumers had a low satisfaction compared to the significance of cafe's location.

서울.경기지역 일식체인 레스토랑의 선택속성에 관한 연구 (A Study on the Customer's Selection Attributes for Japanese Chain Restaurants in Seoul.Kyunggi Area)

  • The specific purposes of this study are that ; 1) to investigate the distinguished selection attributes on performance of Japanese chain restaurant according to general characteristics of the respondent ; 2) to find out relationships between selection attributes on performance for Japanese restaurant and customer's satisfaction Frequency analysis. one-way ANOVA, reliability analysis, factor analysis, multiple regression were used to analyze the data. Total 350 questionnaires were distributed and 312 were replied(89.14%). Selection attributes on performance for Japanese chain restaurant was divided into 7 factors. There are Factor1 'Store Image & Kindness', Factor2 'Sanitation & Taste', Factor3 'Approximation & Children's Menu', Factor4 'Delivery & Business Hours', Factor5 'Food Quantity & Korean Food', Factor6 'Service & Parking' Factor7 'Price & Publicity'. Monthly income, eating-out expense per once and type of companion have significant influences on selection attributes for performance. Customer's total satisfaction is significantly affected by selection attributes on performance. Factor7 'Price & Publicity' has the most significant influence on customer's satisfaction. We expect that the results can be used to provide basic information to plan marketing strategies, and take improved customer's satisfaction for Japanese chain restaurants.

선행조직자로서 중학교 가정교과서 '식단과 식품 선택' 단원의 도식자(Graphic Organizer) 개발 (Graphic Organizer Development as Advance Organizer on the 'Menu Planning and Food Selection' in the middle school Home Economics Textbook)

  • 본 연구는 2007년 개정 기술 가정 교육과정에서 중학교 2학년 '식단과 식품 선택' 단원의 교육내용요소를 추출하고 이를 바탕으로 도식자를 개발하는데 목적이 있다. 내용요소를 추출하는 과정은 3차에 걸쳐서 이루어졌다. 1차 내용요소는 2007년 개정 교육과정 해설서의 5학년부터 10학년까지 식생활영역 성취기준에서 교육내용요소로 제시하는 문장이나 개념을 분석하여 추출하였다. 본 연구 단원에서는 4개의 1차 내용요소가 추출되었는데 '우리나라 전통 식사의 건강적 측면의 우수성, 영양적 식품적 문화가치', '균형잡힌 가족의 식단 작성', '식단에 따른 식품의 계획적 구입', '다양한 식품표시정보를 통한 식품 선택'이다. 2차 내용요소는 본 연구 단원의 1차 내용요소를 구체화하여 다른 학년의 1차 내용요소에서 발생한 중복성을 해결하고 학년간 연계성을 이루도록 하여 추출하였다. 3차 내용요소는 2차에 추출된 내용요소를 더욱 세분화하여 추출하였는데 이를 위해 7차 교육과정 교과서, 전문기관에서 발행하는 자료, 관련전문서적 등을 분석 참고하였다. 이어서 추출한 내용요소를 바탕으로 기술 가정 8학년 '식단과 식품선택' 단원의 도식자를 개발하였다. 도식자는 허인숙(2000)의 개념도 작성방법의 순서를 따라서 개발되었다. 개발된 도식자는 총 10개로 '계절음식의 영양적 가치', '식품의 조화와 배합', '천연양념과 고명', '조리법', '발효식품', '전통도구와 그릇', '식품구입목록표 작성', '식품위해요소', '식품표시', '식품품질인증'으로 구성된다.

패스트푸드 레스토랑의 서비스 품질과 브랜드 신뢰, 브랜드 차별, 그리고 재방문 의도 간의 영향관계에 대한 연구 (A Study on the Relationships among the Fast-Food Restaurants' Service Quality, Brand Trust, Brand Distinctiveness, and Revisit Intention)

  • This study was conducted to identify the relationship among various service quality clues, brand trust, brand distinctiveness and revisit intention focusing on fast-food restaurant consumers. Using online questionnaires tool in South Korea, a total of 450 questionnaires were distributed and 390 participants were used for further statistical analysis through SPSS 21.0 and AMOS 21.0 for Windows. Four service quality factors (menu, interior, exterior, staff) were extracted from twelve questions. According to the result of this study, several service quality factors of fast-food restaurants' have positive effects on brand trust and distinctiveness. Specifically, staff and menu and exterior were significant predictors of brand trust, and staff and menu of fast-food were critical antecedents of brand distinctiveness. In addition, the brand trust has positive influence on brand distinctiveness as well as revisit intention. Although there are many studies which proved the relationships among various selection attributes and other outcome variables such as brand loyalty or image, little research explained the relationships among service quality factors of fast-food restaurants, brand trust, brand distinctiveness, and revisit intention. Therefore, present study will contribute to provide significant results and some practical implications in both the fast-food restaurant industry and academic research.

대학급식 영양정보 표시에 관한 대학생의 인식 조사 (College Students' Perception toward Nutrition Information at University Dining Services)

  • The purpose of menu labeling is to offer eating environments with improved healthy food selection. Similar to U.S. policies, the Korea government enforces the Special Act on Children's Food Safety and Nutrition for provision of nutritional labeling in chain restaurants. Considering the importance of dining services for college students and their interests in health, this study examined college students' perception toward nutrition information provided by university dining services. A survey was conducted for university students. Students' recognition of nutrition information for university dining services was lower than recognition of nutrition information for commercial food services. The most common reason cited by students for considering nutrition information of university dining services was customer rights, followed by health maintenance. Students showed a high tendency to use nutrition information of university dining services. College students' motivation for knowing nutrition information of university dining services included health and value interests. Students' knowledge of nutrition had a positive effect on their intention to know nutrition information. The findings of this study offer university administrators and contract food service management companies directions for developing menu labeling for university dining services.

컨조인트 분석을 통한 대학급식소의 효율적인 운영에 관한 연구 (Research on Efficient Operation of University Foodservice through Conjoint Analysis)

  • The purpose of this study is to make special study of the efficient operation of university foodservice. The concrete results through the conjoint analysis can be elicited as follows. First, through the interview in depth we draw out the efficient attribute comparing and analyzing elements of selecting menu and main reasons for selecting either student cafeterias or general cafeterias. Second, we elicit the best attribute based on the results of analysis on preference. Third, we present an improvement program for operating student cafeterias through simulation. As a result of conjoint analysis of the main reason for selecting a cafeteria and the utility of each attribute, the most important factor comes price (34.95%), the time required (33.20%), food taste (30.45%), and various menu (1.42%) in that order. What draws attention in the research is that price (34.93%) is not the only factor which influences students' choice of a cafeteria. Location (33.20%) and food taste (30.45%) are all equally important. These results show that students' expectation for cafeterias is getting various. Basically, all customers look for a nearer restaurant where its food taste is good and menu is various at a low price.

수해양 교육을 위한 웹페이지 프로토타입 설계 연구 (A Study on the Design of Prototype for Developing Webpage of Fisheries and Marine Education)

  • The purpose of this study is to design of prototype for developing webpage of fisheries and marine education especially in the field of Busan area. For this, we extract the guideline for development from literature review, need and task analysis, and advices of subject domain experts. Followings were the results of the research: (a) We make the prototype for main menu and screen based on institute, time, subject, and location. (b) We make the prototype for program approach guide, which is consisted of location based menu constructing prototype guide, activation prototype guide, and selection prototype guide. (c) We make the prototype for functional guide, which is consisted of information section, participation section and other sections.

학교급식의 효율적 개선방안 - 조리설비를 중심으로 - (Study to Improve School Catering Service Quality Through Cooking Hardware Upgrade)

  • The school catering service has gained national attentions and has been expanding unto high schools after offering meals at elementary schools over years. This study is to identify problems and solutions in kitchen hardware areas to provide nutritiously balanced meals to schoolchildren through establishing standard menu planning. The survey analysis shows that 59.2% of dishes except for rice, Kimchi and soup are prepared by oil deep-fired or oil pan broiled. This indicates that school meals are so limited to serve baked or steamed dishes. Main reasons on the limited menu selection is that schools don't have equipment to prepare baking and steaming dishes mainly due to budget issues. All the dietitians who answered the surveys have been requesting to purchase Convotherm Ovens. Improvement solutions to the problems are: Publish the Revised Standard Equipment Layout that may allow to serve baked and steamed dishes. Establish Budget Support Program from the Government.

캐드 환경에서 플라스틱 사출 금형 설계 시스템의 개발 (Development of Plastic Injection Mold Design System on the CAD Environment)

  • In this work, we have been concerned with developing an intelligent mold design system for plastic injection molding on the AutoCAD. We have concentrated on building a viable environment, including a mold parts database and a menu-driven user interface. This provides a more interactive and interface for selection of optimal mold-base and mold parts in mold design system. This work presents a method which allows the designer to select the mold parts and mold-base directly within an AutoCAD environment. It can also automatically generate detailed 3D drawings of the mold parts and mold-base. The system shows its potential capability for future enhancement. Since the system is independent of the data, it could easily be extended to other mold-bases and mold parts. In addition, it can be linked to the molding analysis system by creating subtracted 3-D models.
