Lactobacillus plantarum (KACC 92189) as a Potential Probiotic Starter Culture for Quality Improvement of Fermented Sausages

  • This study was conducted to evaluate the effects of fermenting temperature on the applicability of Lactobacillus plantarum for production of fermented sausages as starter cultures, and its applicable efficiency was also compared with those inoculated with commercial starter culture or non-inoculated control. The L. plantarum isolated from a naturally-fermented meat, identified by 16S rDNA sequencing and again identified by de novo Assembly Analysis method was used as a starter culture. Six treatments: 3 with L. plantarum at different fermenting temperatures (20, 25 and $30^{\circ}C$), and other 3 treatments (1 with commercial starter culture, 1 with its mixture with L. plantarum and 1 non-inoculated control) fermented under the same conditions ($25^{\circ}C$) were prepared. Results revealed that the fermenting temperature considerably affected the pH change in samples added with L. plantarum; the highest pH drop rate (1.57 unit) was obtained on the samples fermented at $30^{\circ}C$, followed by those at $25^{\circ}C$ (1.3 unit) and $20^{\circ}C$ (0.99 unit) after 4 days fermentation. Increasing the temperature up to $30^{\circ}C$ resulted in significantly lower spoilage bacteria count (5.15 log CFU/g) and lipid oxidation level in the products inoculated with L. plantarum. The sensory analysis also showed that the samples added with L. plantarum at $30^{\circ}C$ had significantly higher odor, taste and acceptability scores than those fermented at lower temperatures. Under the same processing condition, although the L. plantarum showed slightly lower acidification than the commercial starter culture, however, it significantly improved the eating quality of the product.

Impacts of Irradiation Sources on Quality Attributes of Low-salt Sausage during Refrigerated Storage

  • This study was performed to investigate the impacts of irradiation sources on quality attributes of low-salt sausage during refrigerated storage. Control sausage was prepared with 1.5% sodium chloride (NaCl), whereas low-salt sausage was formulated with 0.75% NaCl (a 50% reduction; L-control). Sausage samples were vacuum-packaged, and low-sausages were irradiated with gamma-ray, electron-beam and X-ray at 5 kGy, respectively. The samples were stored at $4^{\circ}C$ for 28 d to determine changes in quality attributes. The pH of low-salt sausages was unaffected by irradiation at 5 kGy (p>0.05). Higher redness values were found at irradiated low-salt sausages compared to control (p<0.05). The hardness, gumminess and chewiness of control sausage were higher than those of low-salt sausages (p<0.05). However, there were no significant differences in the textural parameters between low-salt sausage treatments. The overall sensory acceptability score of irradiated/low-salt sausages were lower than L-control due to decreased scores for cooked meat flavor but increased radiolytic off-flavor (p<0.05). The initial 2-thiobarbituric acid-reactive substances (TBARS) values of irradiated/low-salt sausages were higher than control and L-control (p<0.05). However, the TBARS values of irradiated treatments were significantly lower than control at the end of storage. Irradiation could effectively inhibit the microorganism growth (total aerobic bacteria, coliforms, Enterobacteriaceae, and Pseudomonas spp.) in low-salt sausages (p<0.05). Therefore, our findings show that irradiation could be to improve microbial safety of low-salt sausages, and suggest that further studies should be necessary to reducing radiolytic off-flavor of irradiated/low-salt sausages.

Lotus (Nelumbo nucifera) Rhizome as an Antioxidant Dietary Fiber in Cooked Sausage: Effects on Physicochemical and Sensory Characteristics

  • The objective of this study was to determine the physicochemical and sensory properties of cooked emulsion sausages containing different levels of lotus rhizome powder (0, 1, 2, and 3%, based on total weight). Lotus rhizome powder had no significant (p>0.05) impact on pH, moisture, protein, or ash content of sausage. However, fat content was slightly but significantly (p<0.05) decreased when the level of lotus rhizome powder was increased in the sausages. The addition of lotus rhizome powder to sausages at over 1% resulted in significantly (p<0.05) darker and less red color of cooked sausage compared to control. Increase in lotus rhizome level slightly improved the emulsion stability and apparent viscosity. Significant (p<0.05) reduction in cooking loss was observed when more than 1% of lotus rhizome powder was added to sausages. The textural properties of sausages were unaffected by the inclusion of lotus rhizome except for springiness and chewiness. On the manufacture day, control sausage had significantly (p<0.05) higher TBARS value than treatments. Regarding sensory characteristics, increased levels of lotus rhizome powder decreased (p<0.05) color and juiciness scores. However, cooked sausages exhibited similar overall acceptability regardless of the level of lotus rhizome powder added to sausages. Therefore, lotus rhizome powder, an antioxidant dietary fiber, could be used as an effective natural ingredient in meat products for the development of healthier and functional food.

Effects of Hydrated Potato Starch on the Quality of Low-fat Ttoekgalbi (Korean Traditional Patty) Packaged in Modified Atmosphere Conditions during Storage

  • This study was carried out to investigate the effects of hydrated potato starch on the quality of low-fat ttoekgalbi (Korean traditional patty) packaged in modified atmosphere conditions during storage. The ttoekgalbi was prepared from 53.2% lean beef, 13.9% lean pork, 9.3% pork fat, and 23.6% other ingredients. Two low-fat ttoekgalbi treatments were prepared by substituting pork fat with hydrated potato starch; either by 50% fat replacement (50% FR) or 100% fat replacement (100% FR). Both 50% and 100% FR increased the moisture, crude protein, and decreased fat content, cooking loss, and hardness. For MAP studies, 200 g of ttoekgalbi were placed on the tray and filled with gas composed of 70% $O_2$: 30% $CO_2$ (70% $O_2$-MAP) and 30% $CO_2$: 70% $N_2$ (70% $N_2$-MAP), and were stored at $5^{\circ}C$ for 12 d. During the storage time, both 50% and 100% FR showed higher protein deterioration, while no differences were found in CIE $a^*$, CIE $L^*$, lipid oxidation, and bacterial counts in comparison to control. The ttoekgalbi with 70% $O_2$-MAP was more red, lighter in color, and showed higher TBARS values compared with 70% $N_2$-MAP. The meat with 70% $N_2$-MAP showed lower aerobic bacterial counts in control than those with 70% $O_2$-MAP. The lower anaerobic bacterial counts were observed only in 50% FR and 100% FR packed with 70% $N_2$-MAP in comparison with 70% $O_2$-MAP. In conclusion, the fat replacement with hydrated potato starch showed no negative effects on the quality of low fat ttoekgalbi during storage and 70% $N_2$-MAP was better than 70% $O_2$-MAP for low-fat ttoekgalbi packaging.

홍삼추출물 첨가가 저염, 저지방 돈육 소시지의 품질 특성에 미치는 영향 (Effect of Red Ginseng Extracts on the Qualities of Low Salt and Low Fat Pork Sausage)

  • 본 실험은 홍삼추출물의 농도별 처리를 통한 저염, 저지방 소시지 개발을 위하여 무처리(C), 아스코르빈산 나트륨 0.1%(V), 홍삼추출물(RGE) 0.5%(T1), 1%(T2) 및 1.5% (T3)를 첨가하여 품질 평가를 실시하였다. pH, 가열감량, CIE $b^*$은 T3처리구가 다른 시험구보다 높게 나타났으며(p<0.001). 명도(CIE $L^*$) 및 적색도(CIE $a^*$)는 낮게 낮아졌다(p<0.001). 또한, T3이 C보다 경도(hardness) 및 표면경도(surface hardness)가 낮게 나타났으나(p<0.01), 응집성(cohesiveness)은 RGE처리구가 높게 나타났다(p<0.05). 관능검사 측정결과 향기에서 T2 및 T3이 C 및 V보다 높게 나타내었지만(p<0.05), 육색, 맛, 조직감, 다즙성 및 종합적인 기호도는 시험구간 유의적인 차이를 나타내지 않았으며, 저장 1, 2 및 3주차의 TBARS에 있어 T3가 다른시험구보다 유의적으로 높게 나타났으나(p<0.01), T2 및 T3는 저장기간 동안 TBARS의 유의적인 변화가 나타내지 않았다(p>0.05). VBN 및 총균수는 저장 3 및 4주차에는 RGE처리구가 C보다 유의적으로 낮게 나타났다(p<0.01). 이상의 결과, 1% 이상의 RGE첨가구가 지방산화, 향기, 미생물학적 측면에서 우수한 결과를 나타내었다.

Influence of Perilla frutescens var. acuta Water Extract on the Shelf Life and Physicochemical Qualities of Cooked Beef Patties

  • This study investigated the effects of Perilla frutescens var. acuta water extract (WEP) on the shelf life and physicochemical qualities of cooked beef patties. The WEP contained phenolic compounds (80.65 mg gallic acid equivalents/g) and had half-maximal effective concentrations of 0.437 and 4.509 mg/mL for scavenging of DPPH and ABTS+ radicals, respectively. Treatment with 0.6% WEP inhibited the growth of Escherichia coli O157:H7 (p<0.05). Based on the result of the antioxidative potential and antimicrobial potential of WEP, beef patties were prepared with three treatment groups: (1) beef patties without added antioxidant (control); (2) beef patties with 0.02% ʟ-ascorbic acid (BAA); and (3) beef patties with 0.6% WEP (BWEP). The pH and cooking loss of BWEP were lower and higher than those in the control, respectively (p<0.05). When cooked beef patties were stored for 21 d at 4℃, the total number of aerobic bacteria in BWEP was lower than those in the control on all days except day 14 (p<0.05). The TBARS values in BWEP were lower than those of controls on days 7, 14, and 21 (p<0.05). Compared to control and BAA, BWEP had lower L* and b* values and higher a* values throughout the storage period (p<0.05). Except on day 0, acceptability was higher in BWEP than in control and BAA (p<0.05). According to results, WEP can be used as a natural ingredient that improves the shelf life and sensorial qualities of meat products.

어육의 배소에 의한 지질산화에 관한 연구 II. 백색육어의 배소 및 재가열에 의한 지질의 산패 (Lipid Oxidation in Roasted Fish Meat II. Rancidity in Roasted and/or Reheated White Musled Fish)

  • 수산물 열처리과정이나 식생활에서 행해지는 배소, 가열 및 재가열 등 연속적으로 또는 시차를 두고 되풀이되는 가열에 따른 지질산화 경향을 검토하기 위하여 백색육어인 각시가자미와 조기를 단계적으로 가열처리한 후 지질 산패도에 대해서 조사하였다. 총지질의 지방산 조성은 포화산의 경우 각시가자미가 $27.4\%$, 조기가 $33.4\%$였으며 monoene산은 $36.5\%$$38.7\%$였다. 또한 polyene산에서는 각시가자미가 $34.5\%$인 반면 조기는 $26.5\%$였다. 각시가자미와 조기의 불포화지방산대 포화지방산 (UFA/SFA)의 비는 2.6과 2.0이였으며, 총지질함량은 $1.4\%$$0.8\%$였다. 과산화물가는 각시가자미의 경우 배소 후 과산화물가가 증가하였으나, 가열 후부터 감소하였다. 조기의 경우는 배소에 의해 생성된 과산화물이 가열 후 분해되어 감소하였으나 재가열 후에는 다시 증가하였다. 따라서 초기산화의 진행은 총지질 함량과 polyene산의 조성비에 따라 다른 것을 알 수 있었다. TBA가는 배소 및 가열 후 증가하였으나 재가열 후 크게 감소하였다. 배소, 가열 및 재가열 후 유리지방산의 생성은 지속적으로 증가하는 경향이었으며 특히 불포화지방산의 비율이 높은 각시가자미가 조기보다 생성된 유리지방산이 많았다. 공역이중결합은 배소처리 후에는 온도에 따른 산화양상은 그다지 큰 차이가 없었으나 가열, 재가열처리에 의해 초기 산화가 상당히 진행된 것을 알 수 있었다.

일시다획성 적색육어류를 이용한 중간식품소재 개발에 관한 연구 2. 저염 고등어 Fillet의 가공 (Processing of Ready-to-Cook Food Materials with Dark Fleshed Fish 2. Processing of Ready-to-Cook Low Salt Mackerel Fillet)

  • In previous paper (Lee et al., 1983) processing method of sardine meat "surimi" was described as a part of the wort to develop new types of ready-to-cook food materials with dark fleshed fishes. As the other part of the work, processing of low salt mackerel fillet was investigated, in this paper, in which fresh mackerel was filleted, salted in brine or with dry salt for an adequate time until the expected salt concentration reached, washed, air dried (3 m/sec, 15 to $20^{\circ}C$), and finally packed individually in K-flex film bag by vacuum or $N_2$ gas substitution. Salting time and salt concentration of brine was decided by the salt level penetrated into the fillet. As the final salt level was fixed to 4 to $5\%$, salting for 20 hours with $10\%$ dry salt or in $15\%$ brine at $5^{\circ}C$ was enough to get that level of salt. If the final salt level was set 5 to $6\%$, salting for 20-24 hours with $15\%$ dry salt or in $20\%$ brine was adequate. Salt penetration, however, was not much influenced by salting method and temperature. Changes in VBN and salt soluble protein occurred more rapidly in cases of salting with dry salt at $20^{\circ}C$ than salted in brine at $5^{\circ}C$, although it was not significant in the period of 20 to 24 hours. Oxidation of lipid and histamine formation during salting at $20^{\circ}C$ could not be neglected if it was delayed loger than 25 hours. Insolubilizing the salt soluble proteins during the storage of salted fillet occurred rapidly regardless of storage temperature. Browning and histamine formation, however, was depended on temperature and packing condition. In case of air pack, deterioration by browning and rancid was deeply developed but not the case for the packs by vacuum or $N_2$ gas substitution. The shelf-life of the salted mackerel fillet based on panel scores of brown color and rancidity, appeared 21 days for the air packed, and more than 30 days for vacunm or $N_2$ gas packed fillet at $20^{\circ}C$.

쑥 첨가방법이 유화형 소시지의 냉장 저장 중 항산화, 총미생물수 및 아질산염 소거에 미치는 영향 (Effect of the Addition Method of Mugwort on Antioxidant Effect, Total Plate Counts, and Residual Nitrite Content of Emulsified Sausages during Cold Storage)

  • 제조 방법을 다르게 처리한 쑥을 유화형 소시지 제조 시 첨가하여 냉장온도($4{\pm}1^{\circ}C$)에서 4주간 저장하면서 pH, TBARS, 총 미생물수, 아질산염잔존량 및 육색을 조사하였다. 시험구는 쑥을 첨가하지 않은 대조구, 쑥 분말 첨가구는 T1, 쑥 즙 첨가구는 T2, 쑥 에탄올 추출물 첨가구는 T3, 쑥 중탕 추출물 첨가구를 T4 등 5개 처리구로 나누어 0, 1, 2, 3 및 4주간 저장하면서 실험하였다. pH는 저장기간이 경과하면서 모든 처리구에서 서서히 감소하는 경향으로 대조구와 T4는 유의성이 없었고, T1과 T2 및 T3는 저장기간 동안 다소 낮았다(p<0.05). TBARS는 저장기간 동안 증가하였으며, 쑥 즙과 에탄올 추출물을 첨가한 유화형 소시지는 대조구보다 낮아 쑥의 첨가는 지방산화를지연시켰고, 특히 에탄올 추출물 첨가구인 T3에서 TBARS값은 가장 낮은 경향이었다(p<005). 총 미생물수는 저장기간이 지나면서 모든 첨가구에서 증가하였고, 저장 0주에는 처리구간 유의성이 없었으며, 처리구간에는 T3가 유의적으로 낮은 미생물수를 나타내었다. 아질산염잔존량은 저장기간이 경과하면서 감소하였는데 T3에서 다른 시험구보다 유의하게 감소하였다. 육색은 저장기간이 지나면서 CIE $L^*$값과 CIE $b^*$값은 감소하였고 CIE $a^*$값은 증가하였으며, 처리구간에는 CIE $L^*$값과 CIE $a^*$값은 쑥 첨가구에서 낮았고, CIE $b^*$값은 대조구와 T1에서 높은 결과로 쑥 추출물의 첨가는 소시지 색을 어둡게 하는 경향이었다. 결론적으로 쑥 에탄올 추출물 첨가는 지방의 산화와 미생물 성장 억제 및 아질산염잔존량 감소에 효과가 있을 것으로 기대된다.

  • 유화형 소시지에 제조 방법을 다르게 추출한 솔잎 추출물을 첨가하여 냉장온도($4{\pm}1^{\circ}C$)에서 30일간 저장하면서 pH, TBARS, 총 미생물수, 육색 및 아질산염 잔존량을 조사하였다. 시험구는 솔잎을 첨가하지 않은 대조구, 솔잎즙 첨가구는 T1, 솔잎 에탄올 추출물 첨가구는 T2, 솔잎중탕 추출물 첨가구를 T3 등 4개 처리구로 나누어 0, 10, 20 및 30일간 저장하면서 실험하였다. pH는 저장기간이 경과하면서 모든 처리구에서 서서히 감소하였다(p<0.05). TBARS와 총미생물수는 저장기간 동안 증가하였으며, 솔잎 즙과 에탄올 추출물을 첨가한 유화형 소시지는 대조구보다 낮아 솔잎의 첨가는 지방산화와 미생물 성장을 지연시켰고, 특히 에탄올 추출물 첨가구인 T2에서 TBARS 값과 미생물수는 가장 낮은 경향이었다(p<005). 육색은 저장기간이 지나면서 CIE $L^*$ 값과 $a^*$ 값 및 $b^*$ 값은 감소하였고, 처리구간에는 CIE $L^*$ 값과 $a^*$ 값은 T1과 T2에서 낮았고, $b^*$ 값은 T1과 T2에서 높은 결과로 솔잎 추출물의 첨가는 소시지 색을 어둡게 하는 경향이었다. 아질산염 잔존량은 저장기간이 경과하면서 감소하였는데 T2에서 다른 시험구보다 유의하게 감소하였다. 이상의 결과를 종합적으로 고찰해보면 솔잎 에탄올 추출물 첨가는 지방의 산화와 미생물 성장 억제 및 아질산염 잔존량 감소에 효과가 가장 있을 것으로 생각된다.
