HACCP 인증 축산물 판매장의 제조 환경 및 식육의 미생물 관리수준에 관한 연구 (A Study on Microbial Management Level of Manufacturing Environment, Raw Meat and Products in HACCP Implemented Meat Market)

  • 식육은 미생물이 증식하는데 필요한 각종 영양소 및 수분이 풍부한 식품이다. 그러므로 식육은 도축, 운반, 가공, 판매 과정에서 미생물이 오염되거나 증식되기 쉽다. 이러한 이유로 가공 및 유통과정에서 병원성 미생물의 증식으로 인해 여러 나라에서 집단 식중독이 발생한다. 식육의 유통과정에서 식육 판매업소는 소비자와 직접적으로 접촉하는 최종 단계이므로 위생관리가 매우 중요하다. 한국에서 식육의 미생물 기준은 돈육의 경우 일반세균수는 107 CFU/g 이하, 대장균은 104 CFU/g 이하로 설정하여 이를 준수하도록 권장하고 있다(식품의약품안전처, 2014). 본 연구에서 식육 및 제조환경에 대해 미생물검사 권장기준을 초과한 경우는 HACCP 미인증 업체에서 6건으로 나타났다. 원료 돈육의 일반세균수의 경우 HACCP 인증 판매장이 평균 6.2×105 CFU/g 수준으로 모두 식약처 권장 범위였다. 그러나 미인증 판매장은 평균 1.8×106 CFU/g 수준으로 식약처 권장기준을 초과한 판매장은 2곳이었다.

식육판매장 HACCP 선행요건의 효율적인 적용을 위한 비교분석 (Comparative analysis for improving the effective application of HACCP prerequisite items in meat markets)

  • We analyzed the HACCP prerequisite of National Veterinary Research and Quarantine Service (NVRQS) and the Food Establishment Inspection Report of US Food and Drug Administration (FDA) to recommend contents and ranges to be complemented and used for preparation of guidelines for more effective application of HACCP prerequisites. We used the HACCP inspection reports implemented by Korea Livestock Products HACCP Accreditation Service from 2007 to 2009, FDA Food Code 2009 Guide 3-B Instructions for Marking the Food Establishment Inspection Report, and Retail Food Establishment Sanitation Requirements of 410 Indiana Administrative Code. Major non-compliance items were open doors and windows, insanitary cleaning of in-use utensil, inadequate record of warehousing, and improper storage, transportation, and labelling. Hot water supply, personal hygiene, and regular product testing were additional week points which should be more strongly controlled by detailed operating guidelines. Also, current prerequisite items were required revision into more precise contents to enhanced the effective evaluation and practical application in meat markets.

Small Ruminants: Imperatives for Productivity Enhancement Improved Livelihoods and Rural Growth - A Review

  • Small ruminants form an important economic and ecological niche in small farm systems and agriculture. Their current low level of contribution is dismal, and is not commensurate with the potential capacity for higher levels of production. The context for productivity enhancement and increased socio-economic contribution relates to large sizes of small ruminant populations; wide distribution across various agro-ecological zones and production systems; and diversity of breeds, where 66% of all goat and 57% of sheep breeds in Asia are found in China, India and Pakistan. The advantages and disadvantages of small ruminants over larger ruminants are enumerated with reference to adaptation and environment, small size, production systems and products and interactions with the environment. Discussion focuses especially on efficiency of meat production and niche markets for higher-priced goat meat, and inefficient marketing systems given an estimated 40-45% loss of income to farmers presently. Increasing the quantity of meat produced is related to live weight and the total number of animals at Slaughter, which in turn, depend on the total number of offsprings weaned and lifetime productivity. At the national level, priority attention is essential to build up numbers in concerted breeding programmes, selection for efficiency of reproduction and meat production, and improvements to make traditional markets and marketing systems to respond to the changing environmental and consumer preferences. Post-production systems are neglected and improvements are associated with collection, handling, marketing, slaughter facilities and consumer requirements. Potential opportunities to expand and benefit from integrating small ruminants into annual and perennial cropping systems remain largely unexplored. Important development imperatives include choice of species and better use of available breeds, appropriate production systems that match available feed resources, and linkages between production, products and by-products to markets. Affirmative action is necessary, backed by official policy support, institutional commitment and increased resource use, that can target poverty and directly benefit the poor, and shift subsistence production to a more market-oriented opportunity. These efforts together constitute the challenges for both the owners and producers of small ruminants in the immediate future, as also the will to accelerate increased productivity, improve their livelihoods and promote rural growth.

  • Sheep meat is the most expensive meat in developed countries. Consumption is dependent on cultural factors and will increase as population and incomes grow. In the main exporting countries (New Zealand and Australia), sheep numbers are decreasing as the market for wool is declining. Sheep meat production will develop in small and medium scale commercial systems, close to their markets.

Characterization of Diarrheagenic Escherichia coli Isolated from Fresh Beef, Pork, and Chicken Meat in Korean Markets

  • Diarrhea is a major public health concern associated with pathogenic Escherichia coli infections. Food-borne pathogenic E. coli can lead to large diarrheal outbreaks and hence, there is a need to estimate the frequency of pathogenic E. coli load in the various types of meat available in markets. In the present study, we classified and characterized diarrheagenic E. coli isolates collected from 399 raw meat samples from retail sources in Korea. Shiga toxin-producing E. coli (STEC) were detected in 11 (9.7%) samples, including nine strains (8.0%) in beef and two strains (1.8%) in chicken. The frequency of the detected virulence markers were as follows: astA, 28.3%; escV,18.6%; eaeA,17.7%; ent, 7.0%; EHEC-hly, 4.4%; stx1, 3.5%; and stx2, 3.5%. We did not observe any typical EPEC, EIEC, or ETEC virulence determinants in any of the samples. The STEC serotype O26 was detected in one sample, but no other serogroups (O91, O103, O128, O157, O145, O111, and O121) were found. Further research is needed to better understand the virulence mechanism of STEC serotypes, their ecology, and prevalence in animals, food, and the environment. These results will help improve risk assessment and predict the sources of food poisoning outbreaks.

Antibiotic Resistance and Virulence Potentials of Shiga Toxin-Producing Escherichia coli Isolates from Raw Meats of Slaughterhouses and Retail Markets in Korea

  • In this study, the prevalence of Shiga toxin-producing Escherichia coli (STEC) was investigated among raw meat or meat products from slaughterhouses and retail markets in South Korea, and their potential for antibiotic resistance and virulence was further analyzed. A total of 912 raw meats, including beef, pork, and chicken, were collected from 2008 to 2009. E. coli strains were frequently isolated in chicken meats (176/233, 75.9%), beef (102/217, 42.3%), and pork (109/235, 39.2%). Putative STEC isolates were further categorized, based on the presence or absence of the Shiga toxin (stx) genes, followed by standard O-serotyping. Polymerase chain reaction assays were used to detect the previously defined virulence genes in STEC, including Shiga toxins 1 and Shiga toxin 2 (stx1 and 2), enterohemolysin (ehxA), intimin (eaeA), STEC autoagglutination adhesion (saa), and subtilase cytotoxin (subAB). All carried both stx1 and eae genes, but none of them had the stx2, saa, or subAB genes. Six (50.0%) STEC isolates possessed the ehxA gene, which is known to be encoded by the 60-megadalton virulence plasmid. Our antibiogram profiling demonstrated that some STEC strains, particularly pork and chicken isolates, displayed a multiple drug-resistance phenotype. RPLA analysis revealed that all the stx1-positive STEC isolates produced Stx1 only at the undetectable level. Altogether, these results imply that the locus of enterocyte and effacement (LEE)-positive strains STEC are predominant among raw meats or meat products from slaughterhouses or retail markets in Korea.

서울 및 경기지역 식육판매업소의 위생관리 실태분석 - HACCP 지정업소와 미지정업소 비교를 중심으로 - (Survey of Hygienic Condition and Management of Meat Markets in Seoul and Gyeong-Gi Area, Korea - HACCP-certified and Non Certified -)

  • 본 연구는 서울 및 경기 지역 식육판매업소를 대상으로 HACCP 지정업소 15곳과 HACCP 미지정업소 141곳에 대하여 평가를 위한 체크리스트와 공정한 평가를 위한 체크리스트 기준서를 개발하여 2008년 12월~2009년 8월까지 실시하였다. 체크리스트는 업체 일반사항과 위생 관리로 구분하였으며 평가한 내용을 요약하면 다음과 같다. 첫째, 156곳 식육판매업소의 작업장 면적은 평균 $71.05^2$이었고 전체 직원은 평균 1.76명의 정규직원과 평균 1.31명의 비정규직 직원을 고용하였다. 거래업체 중 원료공급 업체는 평균 1.56개였으며, 그 중 도매업체가 평균 60.6%로 가장 높은 비율을 나타내었고 다음으로 도축장이 평균 26.4%로 나타내어, 공급원료의 형태는 지육 보다는 대부분 정육인 포장육인 것으로 나타났다. 평균 2.71개로 조사된 제품납품업체에는 일반소비자가 평균 75.4%로 가장 높은 비율을 나타냈으며, 다음으로 일반식품 접객업소가 평균 8.7%로 나타났다. 조사대상 업소의 지역적 분포는 서울이 85.3%, 경기도가 14.7%이었으며 건물 소유 형태로는 자가 건물이 10.3%, 임대가 89.7%였다. 둘째, 식육판매업 위생관리실태조사의 5개 영역 중 가장 높은 점수를 획득한 영역은 제조시설관리 영역(1.00점/2.0점, 50.0%)이었고, 다음으로 보관 및 운반관리(1.93점/2.0점, 96.5%), 작업장관리(0.76점/2.0점, 38.0%), 개인위생관리(0.75점/2.0점, 37.5%), 검사관리(0.22점/2.0점, 11.0%)의 순으로, 검사관리 영역이 가장 낮은 점수를 보였으며, HACCP 지정업소의 평균점수가 5개 영역 모두와 전체 항목에서 미지정업소에 비하여 유의적으로 높았다(p<0.05, p<0.01, p<0.001). 이상의 결과로 식육판매업의 HACCP 지정업소가 미지정업소보다 위생관리를 잘 하고 있는 것을 알 수 있었다. 그러므로 식육판매업의 HACCP 미지정업소에서는 위생관리상태의 개선이 필요하며 축산물 유통의 안전성을 위해서 좀 더 지속적인 위생지도와 관리가 필요할 것으로 여겨지고, 최종적으로는 HACCP의 적용을 통해 위생안전관리를 확보하는 것이 필요할 것으로 판단된다.

Prevalence of Clostridium difficile Isolated from Beef and Chicken Meat Products in Turkey

  • The concern about the possibility of food can be a vehicle for the transmission of Clostridium difficile to humans has been raised recently due to the similarities among the strains isolated from patients, foods and food animals. In this study, therefore, the prevalence of C. difficile was investigated in beef and chicken meat products collected from 57 different butcher shops, markets and fast food restaurants in Sakarya province of Turkey. Two out of 101 samples (1.98%) was positive for C. difficile indicating a very low prevalence. The pathogen was isolated from an uncooked meatball sample and a cooked meat $d{\ddot{o}}ner$ sample, whereas not detected in chicken meat samples. The meatball isolate was resistant to vancomycin and tetracycline, while the cooked meat $d{\ddot{o}}ner$ isolate was resistant to vancomycin and metronidazole. Both isolates were sensitive to moxifloxacin and clindamycin. Toxins A and B were not detected. This study reveals the presence of C. difficile in further processed beef products in Turkey.

국내 시판 육제품의 이화학적, 조직적 특성 및 미생물의 성상 (Physico-chemical and Textural Properties, and Microbial Counts of Meat Products Sold at Korean Markets)

  • 본 연구는 시중에 유통되고 있는 육가공품들을 구입하여 이화학적 및 조직적 특성 및 미생물 검사를 통해서 소비자들의 기호성과 적합한 육가공품을 개발하기 위한 기초 자료를 제시하고자 실시하였다. 측정한 19가지 육제품은 소시지와 햄으로 pH는 $5.46{\sim}6.69$, 수분은 $47.6{\sim}65.3%$, 지방은 $14.2{\sim}34.7%$, 그리고 단백질은 $9{\sim}20%$에 이르기까지 다양하였고 햄의 단백질 함량이 소시지에 비하여 높았다. 진공감량은 $2.40{\sim}7.44%$ 범위로 나타났고 원심분리에 의한 유리수분의 함량은 $6.10{\sim}28.3%$의 범위로 독일형 소시지의 보수력이 비교적 낮았다. 육색은 명도가 $59.6{\sim}75.7$, 적색도는 $11.6{\sim}21.1$, 그리고 황색도는 $2.30{\sim}11.4$로 나타났으며 조직감은 각 제품 별로 다양한 수치를 보여 부서짐성, 경도, 탄력성은 계육으로 제조한 Frank A가 가장 높은 반면 응집성, 검성, 저작성은 로인햄과 Beershinken이 비교적 높아 단백질 함량과 상관관계를 보였다. 미생물 검사 결과 총균수는 대부분에서 3.00 log CFU/g 이하이었고 대장균군은 검출되지 않았다(< 2.00 log CFU/g). 이러한 결과로 볼 때 시중에서 판매되는 육제품은 매우 다양하고 비교적 위생적이지만 현대 소비자들의 용구를 충족시키기 위한 기능성 저지방, 저염 기능성 웰빙 육제품의 개발이 필요로 된다.

Contamination Level of Hygiene Indicator and Prevalence of Foodborne Pathogens in Retail Beef in Parallel with Market Factor

  • In this study, the contamination levels of hygienic indicators and foodborne pathogens in retail meat products were investigated in relation to the various market factors including processing temperature, processing area, and market type. Ground beef samples (n=80) were purchased from 40 meat markets and investigated for microbiological quality. Beefs processed below $20^{\circ}C$ had significantly lower numbers of total coliforms (TC) than these processed over $20^{\circ}C$ (2.01 vs. 2.79 log CFU/g; p<0.05). Interestingly, separation of processing area did not affect the contamination levels. Remarkably, the contamination levels of hygienic indicator differ among market types, indicating that not only processing condition but distribution structure that is directly related with storage period could affect the final microbiological loads of the meat products. In addition, the prevalences of Listeria monocytogenes (a psychrotroph), Enterococcus faecium, and Enterococcus faecalis were 7.5% (6/80), 10.0% (8/80), and 20.0% (16/80), respectively, which is irrelevant to market factors except meat products from wholesale markets where no L. monocytogenes were found among 30 samples. The results of this study indicate that the contamination level of hygiene indicator and foodborne pathogens in retail beef is more related with processing temperature and storage period than other environmental factors.
