가공 및 저장 방법이 다른 오리 가슴육의 기계적 판별 (Possibility of Instrumental Differentiation of Duck Breast Meat with Different Processing and Storage Conditions)

  • 본 연구는 오리 신선육과 냉동 후 해동육의 구별을 손쉽게 할 수 있는 방법을 제시하고, 오리육의 처리형태별 저장기간에 따른 미생물, 드립감량, 관능검사 등 품질변화를 연구하여 기계적 방법(토리미터)을 이용한 신선도 측정 시 객관적인 등급판정 기준을 제시하기 위해 실시되었다. 오리가슴육 중 냉동 후 해동육 껍질(skin)색에서 신선육이나 토치육에 비해 명도가 낮아지고, 적색도가 증가하였으며, 드립감량은 냉동 후 해동육이 다른 처리구에 비해 유의적으로 높았다(p<0.05). 일반 호기성 미생물은 1일차에서 토치육이 신선육에 비해 낮았으나 3 및 7일차에는 모든 처리구간에 유의적인 차이는 없었다. TBARS값은 저장기간 동안 증가하였으나 처리구간 유의적인 차이를 보이지는 않았다. 관능검사결과 냉동 후 해동육이 관능검사의 모든 항목에서 유의적으로 낮은 결과를 나타내었다(p<0.05). 토리미터 값은 오리 가슴 껍질(skin)과 육(meat) 모두에서 냉동 후 해동육이 다른 처리구에 비해 유의적으로 낮게 나타났다(p<0.05). 오리육의 토리미터값과 품질특성과의 상관관계를 분석한 결과 육색을 제외한 일반호기성미생물, 지질산패도, 드립감량 및 저장기간과의 밀접한 관계가 있는 것으로 확인되었다. 이상의 결과에서 냉동 후 해동된 오리 가슴육은 신선육이나 토치육에 비해 육색의 변화나 드립 감량 증가가 빠르게 이루어짐을 알 수 있었고, 토리미터 값의 측정은 냉동 후 해동육을 신선육이나 토치육으로부터 구별하는 신속한 방법으로 이용이 가능할 것으로 사료된다.

뽕잎과 오디분말을 이용한 육류용 소스 제조 및 품질평가 (Quality Characteristics of Sauce for Meat prepared with Mulberry Leaf Powder and Mulberry Fruit Powder)

  • Recently, the incidence of cardiovascular diseases including high blood pressure and heart disease has increased with increased meat consumption in Korea. This study was performed to determine the optimal mixing ratio among ratios of 0, 1:0, 0:1, 1:1, 2:1, and 1:2 of mulberry leaf powder to mulberry fruit powder based on the anti-inflammatory effects. Then, the quality characteristics of the sauce for meat prepared with different mixing ratios (0, 1:1, 1:2, 1:3, 1:4, and 1:5) of mulberry leaf powder to mulberry fruit powder were assessed. The inhibitory effects of ML2MF1 (2:1 ratio of mulberry leaf powder to mulberry fruit powder) on NO and TNF-${\alpha}$ production were superior to those of other mixing ratios. With respect to color values of the sauce for meat prepared with different mixing ratio of mulberry leaf powder to mulberry fruit powder, as the mulberry fruit powder mixing ratios was increased, redness was increased but lightness and yellowness were decreased. The sensory evaluation of ML1MF5S (1:5 ratio of mulberry leaf powder to mulberry fruit powder) sauce for meat showed the highest score with respect to color, smell, taste, harmony with meat and the overall preference. In conclusion, as the mulberry leaf powder mixing ratio was increased, the anti-inflammatory activities were increased. But sensory evaluation scores were increased as the mulberry fruit powder mixing ratio was increased. Therefore, by performing further study, the method to increase mulberry leaf powder in the mixing ratio for improving the sensory evaluation should be provided.

상업용 일반육계, 국내 토종닭, 유기농 육계의 닭고기 육질 비교 분석 (Comparison of the Meat Quality Characteristics among Commercial Broiler, Korean Hanhyup 3 and Organic Chicken)

  • 본 연구는 국내에서 국내 유통 중인 일반육용 broiler와 토종닭과 같은 전통적인 육류 제품을 바탕으로 유기농 및 일반생산 닭고기의 육질 특성을 비교하기 위해 수행되었다. 각각의 품종을 처리구로 하여 총 3처리구: 일반육계; broiler, 국내 한협3호 토종닭; Korean hanhyup 3-ho chicken(HH3), 유기농 닭, Korean organic chicken(KOC)에서 얻어진 닭가슴육과 닭다리육을 분석하였다. 유기농 닭은 broiler에 비해 높은 수분함량과 낮은 조지방, 조단백질, 조회분 함량이 나타났으며, 토종닭에서 가장 높은 조단백질 함량이 나타났다. 유기농 닭은 세 품종 중 가장 높은 pH가 측정되었다. 유기농 닭은 세 품종 중 유의적으로 가장 높은 보수력과 가장 낮은 가열 감량을 나타내었다. 유기농 닭과 토종닭은 닭가슴육에서 broiler 대비 높은 전단력을 나타내었다. 유기농 닭은 닭가슴육과 닭다리육에서 높은 적색도(a*)가 나타났고, 닭다리육에서 낮은 명도(l*)와 황색도(b*)가 관찰되었다. 관능평가 결과 유기농 닭의 닭다리육에서 가장 높은 전체 기호도가 나타났다.

Evaluation of Ultrasound for Prediction of Carcass Meat Yield and Meat Quality in Korean Native Cattle (Hanwoo)

  • Three hundred thirty five progeny testing steers of Korean beef cattle were evaluated ultrasonically for back fat thickness (BFT), longissimus muscle area (LMA) and intramuscular fat (IF) before slaughter. Class measurements associated with the Korean yield grade and quality grade were also obtained. Residual standard deviation between ultrasonic estimates and carcass measurements of BFT, LMA were 1.49 mm and $0.96cm^2$. The linear correlation coefficients (p<0.01) between ultrasonic estimates and carcass measurements of BFT, LMA and IF were 0.75, 0.57 and 0.67, respectively. Results for improving predictions of yield grade by four methods-the Korean yield grade index equation, fat depth alone, regression and decision tree methods were 75.4%, 79.6%, 64.3% and 81.4%, respectively. We conclude that the decision tree method can easily predict yield grade and is also useful for increasing prediction accuracy rate.

Porcine Blood Plasma Transgluataminase Combined with Thrombin and Fibrinogen as a Binder in Restructured Meat

  • The purpose of this study was to use pig blood plasma transglutaminase (TGase) combined with thrombin and fibrinogen as a binder, which was applied to restructured meat, and to investigate its effect on the restructured meat quality. Pig meat was obtained 10 h post mortem from a traditional market was ground using a 10 mm aperture plate. A binder admixture was added (TGase:thrombin:fibrinogen mixed as 0.5:1:20 (v/v/v) to which was added 12% of its volume of 0.25 M calcium chloride) at 0, 5, 10, 15 and 20% of meat weight. Measurements included cooking loss, shrinkage rate, shear value, total plate count, pH value, TBA value, color difference, tension strength and sensory evaluation. The results showed that ground meat containing 20% w/w of binder admixture had higher cooking loss, shrinkage rate and shear value (p<0.05). Addition of different percentages of binder admixture did not affect total plate count, pH value, TBA value, and sensory evaluation of restructured meat (p>0.05). Tension strength was increased with increased level of binder admixture. Addition up to 15% binder admixture to restructured meat showed better scores of sensory texture, flavor and total acceptability (p<0.05).

Quality Assessment of the Breast Meat from WoorimatdagTM and Broilers

  • The objective of this study was to compare the characteristics that define the quality of Woorimatdag$^{TM}$ (WM, a certified meat-type commercial Korea indigenous chicken breed) and a commercial broiler breed (Ross, CB). Two hundred WM and 200 CB chickens that were 1-d-old and mixed sex were obtained from a commercial hatchery and randomly assigned to floor pens (20 chickens per pen, $3.0{\times}2.0m$) and raised under the same environmental conditions. WM breast meat contained significantly higher crude protein and ash as well as lower crude fat than CB breast meat (p<0.05). WM breast meat had slightly higher alanine, histidine, isoleucine, and glycine as well as lower phenylalanine content than CB breast meat (p<0.05), and the WM breast meat had a low ratio of unsaturated to saturated fatty acid composition (p<0.05). However, arachidonic acid composition was higher in the WM than the CB breast meat. In addition, the inosin-5'-monophosphate content was also higher in the WM compared with the CB breast (p<0.05). The WM breast meat had higher total collagen content compared with CB breast meat. WM soup taste received higher scores with regard to sensory evaluation compared with CB soup (p<0.05). From these results, we conclude that higher amount of protein and flavor precursors and lower amount of fat in the breast meat of WM could be attractive by consumer when compared with CB.

Enhanced oxidative stability of meat by including tannin-rich leaves of woody plants in goat diet

  • Objective: The aim of this study was to evaluate the effect of dietary incorporation of tanninrich woody species on meat oxidative stability, carcass traits and meat quality in goats. Methods: Two tannin-rich species were tested using a three-treatments feeding trial, where treatments consisted of: Larrea divaricata and Acacia aroma both at 12.5% in dry matter basis of the diet and a control diet (alfalfa hay). All feeding diets were iso-protein and iso-energy. Carcass conformation, carcass compactness, carcass fatness and subcutaneous fat deposition were evaluated. Intake, liveweigh, Longissimus thoracis et lumborum muscles of goats were analyzed in order to evaluate quality parameters such as pH value, instrumental color evaluation, water holding capacity, total phenolic content, antioxidant activity, meat oxidative stability and fatty acid profiles in meat. Results: Feed intake, liveweight gain, carcass, and meat traits did not differ among treatments. Changes in meat lipid profile among treatments were observed for oleic and elaidic acid contents. Meat total phenolic content and antioxidant activity did not differ among treatments; although, meat oxidative status after storage at room temperature, as well as under refrigerated and frozen conditions were different between control and both supplemented groups. Conclusion: The inclusion of Acacia aroma and Larrea divaricata leaves in goat diet enhanced meat oxidative stability. Modulation of the ruminal biohydrogenation of fatty acids produced by condensed tannins of these plant species need to be further investigated.

Protein Quality Evaluation of Cooked Hagfish (Eptatretus burgeri) Meats

  • The effect of cooking methods on in vivo and in vivo indices of the protein quality of hagfish meat were investigated. In vivo protein digestibilities of cooked meats (81.3~83.5 %) were not significant different (p<0.05) from those of van meat (82.9%), with the exception of steamed (11$0^{\circ}C$, 15 min) meat (86.3 %). Convection oven cooking (22$0^{\circ}C$, IS min) resulted in a higher trypsin indigestible substrate (TIS, 49.2 mg/g solid) compared with that of raw meat (38.9 mg/g solid). free amino acid content of raw meat was decreased after boiling (10$0^{\circ}C$, 10min). Both convection oven and microwave cooking (2,450 MHz, 3 min) decreased available lysine from 4.9g/16g N to 3.8~4.1g/16g N. In vivo apparent protein digestibilites (AD) of hagfish meat were similar fur raw (92.4%) and cooked meats, but were somewhat lower than ANRC (Animal Nutrition Research Council) casein (945%). The PERs (3.7~4.1) and NPRs (3.7~4.9) of cooked meats were significantly higher (p<0.05) than those of raw meat (PER 3.3, NPR 3.6 and ANRC casein (PER 2.5, NPR 2.6), despite their lower in vivo protein digestibilities. These results demonstrate that cooking at optimal conditions resulted in remarkably positive effects on in vivo and in vivo protein qualities of hagfish meats. Therefore, steamed hagfish meat is an excellent source of high quality protein from seafood products.

프로폴리스 첨가 양미리 연육 튀김 어묵의 품질특성 (Quality of Fried Fish Paste Prepared with Sand-lance (Hypoptychus dybowskii) Meat and Propolis Additive)

  • We made sand-lance meat paste containing 0.1-0.5% propolis to improve the quality of the product. The quality characteristics were analyzed by the acid value, peroxide value, volatile basic nitrogen, pH, viable cell count, and sensory evaluation. The fried sand-lance meat paste made with added propolis had a lower acid value, peroxide value, and volatile basic nitrogen content after frying compared to the control prepared with potassium sorbate. The antioxidant and antispoiling effect of propolis on the fried fish meat paste increased with the amount of propolis added. The fried sand-lance meat paste made with 0.2% added propolis was very acceptable. In addition, the bitter taste of the sand-lance meat paste containing 0.2% propolis was blocked by adding 2% sweet amber powder to the paste.
