서울시내 일부 여고생의 食行動 및 家族環境과 관련된 營養攝取樣相 조사연구 (A Study on Nutrition Intake Related to Food Habit and Family Environmental Factor of High School Girls in Seoul)

  • The purpose of this study was to investigate nutrition intake of high school girls related to food habit, physical status, family environmental factor. The survey of 216 high school girls, aged 15 to 17 years old in Seoul area was conducted from April, 21 to 30, 1986. Food habit and family environmental factor were researched by means of questionnaires and nutrition intake was surveyed. by recording the kinds, amounts and ingredients of foods taken by the girls for two days, and height and weight were also measured during the period. The findings are summarized as follows: 1. Mean value of height and weight of the girls were 157.6cm and 50.9kg. 2. Number of family members per household was 5.2. Mean value of father's age was 47.1 and mean value of mother's age was 43.6. 44.9% of the girls had fathers who graduated the college, 41.6% of the girls had mothers who graduated the high school and 29.2% of the girls had mothers who had the job. 3. Breakfast missing rate was high, most of the reason for breakfast missing was 'have no time to eat' and time for breakfast was short. 64.4% of the girls had meal irregularly. 4. Mean daily intake of all nutrients except vitamin A and riboflavin was higher than Recommended Dietary Allowances. Mean caloric intake was 89.8% of R.D.A.. Breakfast intake of energy and most of nutrients was less than snack. Mean meal balance score was 47.9 and mean food diversity score was 13.4. 5. Mother's education level was related to intake of protein and calcium and height. Breakfast and lunch missing and number of snack intake were related with nutrition intake.

대학생의 거주형태에 따른 영양상태 및 식사의 질 비교 연구 (Nutritional Status and Dietary Quality by Their Residing Types in College Students)

  • The purpose of this study was to evaluate the dietary habit, nutritional condition and quality of everyday meal for college students. The number of the subjects was 102 and they were divided into three groups by their residing types; students living with their parents (n=34), students living in dormitory (n=34) and students living independently off the campus (n=34) Questionnaire, 24hour dietary recall for food intakes, and body composition analysis were used. SPSS program was used for the statistics. In general health matter, the average age for each group of students was $21.2kg/m^2$, $20.9kg/m^2$, and $21.9kg/m^2$ respectively. And heights, weights, muscle mass, body fats and BMI were not significantly different between groups. Results on dietary habit showed that students living with their parents had better meal pattern and regularity for breakfast than other groups. Also, for dietary evaluation, students living with their parents showed better extent of intake of milk than other groups. Evaluation on nutrients intake showed that amount of calcium, vitamin $B_2$, folic acid intake in student living independently off the campus were lower than those of the other groups(P<0.05). And MAR(Mean Adequacy Ratio) was not significantly different between groups, however INQ(Index of Nutritional Quality) and NAR(Nutrient Adequacy Ratio) of calcium were lower in off the campus group than other two groups. In conclusion, students living independently had worse eating habits and showed lower intake of calcium than those living with their parents or living in a dormitory. Therefore nutritional education for improving well-balanced dietary habits and optimal intake of nutrients are required especially for students living independently off the campus.

충남 지역 중학생의 체질량 지수에 따른 체형 인식과 식습관에 관한 연구 (A Study on Body Image and Dietary Habits by the Body Mass Index of Middle School Students in Chungnam)

  • The purpose of this study was to provide basic informations for educating juveniles on desirable body image recognition by examining their body image recognition and comparing and finding problems according to gender and body mass index (BMI) in middle school students. The average age of the subjects was 15, their average height was 162.5 cm, their average weight was 53.5 kg, and their average BMI was $20.1\;kg/m^2$. Male students wanted to gain weight and female students wanted to lose weight. As for body shape, female students thought that they were fat more often than male students. Also the more overweight the students were, the higher their concerns and experiences toward weight control. Among weight control methods, exercise scored highest in all BMI groups. Over 80% of the respondents answered that their weight control effort were not systematic such as via professional counseling. As for the frequency of eating breakfast and dinner in female students, the more a student was overweight, the lower their frequency of eating breakfast and dinner. Many respondents answered that a typical meal time was '10~20 minutes'. The average eating habit score for all subjects was 38.0. The eating habit scores of male students were significantly higher than those of female students, and there were no significant differences among BMI groups. Eating habit score of 'I have more than two meals with rice everyday' in female overweight group was significantly higher than those of other two groups. These results indicate that the female students' degree of preference for a slim body shape were higher than those of male students. In addition, weight control by students is not systematic through professional counseling; instead they attempt to control their weight by themselves such as a meal skip, which lead to potential danger that they may lose weight carelessly. Therefore, correct body image recognition is greatly needed, and families and schools should make ceaseless efforts to help students properly control their weight and have correct eating attitudes.

전주지역 초등학교 고학년 남.여 학생의 식습관 및 식행동, 영양지식에 관한 연구 (Eating Habits, Eating Behaviors and Nutrition Knowledge of Higher Grade Elementary School Students in Jeonju Area)

  • The purpose of this study was to investigate the eating habits and eating behaviors, nutrition knowledge of students in 4, 5 and 6th graders of elementary school in Jeonju Area. The subjects for questionnaire were 2,568 elementary school students (boys 1,364, girls 1,204). The results were analyzed by SPSS program, and were as follows. In anthropometric data, there were significant differences between boys and girls. In eating habits and eating behaviors, there were significant differences in the rate of 'Hasty eating habit(p<0.01)', 'Most heavy meal(p<0.01)', 'Eating when receive stress(p<0.05)', and 'Frequency of snack eating per day(p<0.01)' between boys and girls. In total scores of nutrition knowledge, there were significant differences between boys and girls. In nutrition knowledge, there were significant differences in the rate of 'Carbohydrate and fat give heat and force.(p<0.001)', 'Carbohydrate is nutrient that make muscle and blood of our body.(p<0.01)', 'Overeating of carbohydrate does not contribute gain of weight. (p<0.05)', To intake vitamin, it is good to eat fresh fruit and vegetable.(p<0.01)', 'Calcium deficiency is leading to anemia.(p<0.001)' between boys and girls. In conclusion, systematical educational programs need to be developed at elementary school. These should include information about achieving a balanced diet, good eating habit and behavior, meal management and Korean dietary culture. Also, nutritional education at home must be emphasized.

식습관 개선을 위한 음식 짠맛센서 개발 (Development of a Salt Taste Sensor for Improvement on Meal HabitDirection Method)

  • The amount of salt intake of Korean people is 11.4 grams per a day, which is 2.3 times of the recommended daily salt intake by WHO - 5 grams of salt a day. The relationship between high salt consumption and increased risk of high blood pressure, observed not only in hypertensive but also in normotensive patients. High salt intake is also associated with an increased risk of heart attack, cerebral ischemia and osteoporosis. Therefore, this research is for developing a salt taste sensor to reduce sodium consumption and improve meal habits for the perception of a more bland taste of most foods. When the sensor was put into food sample, current intensity achieved with distribution cables. Current intensity was correlate with a simple equivalent of salt taste stimulus intensity. The salt taste sensor consists of salinity & temperature measuring probe, signal processing circuit and LCD display & LED warning light. When salinity is going over a set point, LCD displayer indicate salt taste on LCD panel by percent value (%), and at the same time, blue LED light change to red LED light. So we could know the grade of salt taste in soup before meals conveniently and objectively. The results show that operating range of 10 to $80^{\circ}C$ and accuracy of ${\pm}0.1%$ were achieved with an analysis time of about 2 or 3 sec. Moderate reductions in salt intake can help to avert adult diseases and lead a healthy life.

거처지별로 비교한 대학생의 식생활 행태 (Comparison of Dietary Behaviors by Type of Residence among College Students)

  • This study was carried out to investigate the differences of the dietary behavior of the college students by the type of the residence, that is, home-living, dormitory-living, and self-cooking. The responses of 307 students to the questionaire were analyzed. The average meal frequency of the students was 2.4 times a day. Breakfast was skipped most frequently, especially in dormitory-living and self-cooking students compared to home-living ones. Forty-three percent of the students were found to eat breakfast less than twice a week. Such a poor eating habit was mainly due to insufficient time or idleness. When the quality of the meal was evaluated, dormitory-living and self-cooking students had worse scores than home-living ones. The formers had poor dietary habit in terms of balanced breakfast and food diversity of each meal compared to the latter. Fast foods and coffee were consumed more frequently by dormitory-living and self-cooking students than home-living ones. The main food they eat was rice. However, female dormitory-living students had a higher tendency to enjoy bread for breakfast and noodle for dinner compared to the other groups. Home-living and self-cooking students had snack more frequently than dormitory-living ones, and female than male. In terms of snack time, most of the respondents had snack between lunch and dinner or after dinner. The percentage of those who had snack after dinner was greater in dormitory-living and self-cooking students than home-living students. Results of the food preference test showed that their favorite dishes were fruit salad, Bulgogi, uncurdled Tofu stew, Kimbab, and boiled rice. We observed that dormitory-living and self-cooking students had more problems in their dietary behavior. Therefore, they need to learn how to manage their own meals. This study might be helpful to develop nutrition education materials for the dietary improvement of the college students.

여중생의 월경 불편감과 식습관 관련 특성 (Menstrual Discomfort and Dietary Habits in Adolescents)

  • Purpose: This study was done to identify menstrual discomfort and dietary habits, and factors related to the menstrual discomforts. Method: Participants were 320 female middle school students in G city. The Menstrual Discomfort Questionaire(MDQ) and dietary habit lists were used as tools. Results: Factors related to MDQ were found to be the VAS scores (r=.361, p=.002), a mount of menstrual bleeding (r=.131, p=.019), height (r=.134, p=.016), adequacy of meal time (t=7.19, p=.008), consumption of milk & milk products (F=3.20, p=.042) and, hot, salty & irritant foods (f=8.01, p=.000), eating more than 3 kinds of side-dishes with each meal (F=8.32, p=.000), and various protein foods (F=5.15, p=.006). In stepwise regression, 4 variables (VAS scores, height, hot, salty & irritant foods, more than 3 kinds of side-dishes with each meal) explained $20.3\%$ of the variance in the total MDQ scores. Conclusion: Reduction of hot, salty & irritant foods and having more than 3 side-dishes with each meal would be effective in menstrual discomfort management. As well, good and, balanced dietary habits should be encouraged for early adolescent girls. To keep up with the ideal dietary habits, nutritional education & counseling should be continued. In a further study, a replication study with larger samples and more specified nutritional assessment are recommended.

농촌(강원도 홍천군) 유아원 원아의 식생태 및 기생충 실태조사 (An Ecological Survery of Early Childhood Nutrition and Parasitic Infection of Young children of Rural Day Care centers Hongcheon County Kangwon Province, Korea)

  • An ecological survey of early childhood nutrition and parasitic infection was undertaken among 102 children aged 3 to 6 atteending the three day care centers of Hongcheon county Kangwon province between June and July 1987. In frequency of skipping meal 35.1% of subjects often skipped breakfast ; 3.1% skipped breakfast every day. About 53% of those children complained of having poor appetite at breakfast. The percentage of children having meals with all the family members was 94.8% for breakfast and 97.9% for evening meal. In eatinf behavior 20.6% of the subjects had meals while watching TV; 21.6% moved around during a meal ; 22.1% hadmeal talking loudly ; 35.1% had quiet meal. Approximately 63% of children used chopsticks and others used fork or spork. Concerning of dietary staple boiled rice was dominant. The diversity of food selection by those children was so linmited that simply only one or two items of side-dishes and /or souop were taken at home. Subjects liked yorgurt milk lavers fruits and Ramyun in contrast to the loweest preference for fermented fist aroma-tic vegetables butter and margarine. The positive prevealence of parasitic infection was 35.5% including than that observed in any other rural areas. Incidence of Fibricola seoulenis was caused by local habit of eating hibernate frogs without enough boiling.

영유아 보육시설 어린이의 식습관 및 기호도 조사연구 (A Survey of Eating Behavior and Food Preferences of Children in Preschool Nursery Facilities)

  • This study was aimed at examine eating behavior and food preferences of children in preschool nursery facilities. A survey was conducted on parents using questionnaires including general characteristics, eating behavior, and food habits at home and food preferences of children in 6 nursery facilities. The children involved in this study were 150 boys and 154 girls, aged 1 to 7 years old. Sixty three percent(187 children) of the children were on 'regular' meal times, and 37.0%(110 children) were on 'irregular' meal times. The major reason for their irregular meal times were 'their' concentration on other tasks'(26.6%) and 'no appetite'(25.5%). The meal eaten best by children was 'dinner' while that eaten worst was 'breakfast'. The major type of their eating habit problem was 'unbalanced diet'(62.1%), and their mothers' response to the unbalanced diet was 'trying to persuade the child'(71.6%). The number of snacks at home was one or twice a day(97.3%), and 'preference'(67.8%) was the main reason for selecting particular snacks. Their preferred staple foods were 'cooked rice with meat & vegetables and Chinese noodles', and 'noodles with bean sauce', and their preferred soup was 'seaweed soup' Also, their most preferred meat dishes were 'fried chicken' and 'thin sliced barbecued beef. Children preferred side dishes with animal foods to those with vegetable foods. Since children liked mixed dishes, it seems desirable to introduce foods which children dislike as ingredients in mixed dishes.

초등학생의 식습관과 영양지식 및 건강상태 조사 (A Study of Food Habit, Nutrition Knowledge and Health Status of Elementary School Students in Kyung-buk)

  • This study was conducted to investigate the food habit, nutrition knowledge and health status of elementary school students in Kyung-buk area. As for dietary Pattern, 65.8% of students ate breakfast and 82.9% ate dinner on a daily basis. Their main dish for the meal was boiled rice with soup and this combination accounted for 60.3% of the breakfast items and 67.8% of the dinner items. Students in both rural and urban areas had dinner more regularly than breakfast. Overall knowledge on nutrition was 7.31 points out of 10. Urban students earned 7.33 while rural students did 7.29. Out of the maximum of 20 points, the overall grades on physical health were 15.57. (15.44 in rural areas and 15.70 in urban areas). As a result of their spiritual health condition, rural children recorded 6.63 point and urban children recorded 6.81 point on a 10 point scale. Furthermore, 32.8% of the children of the respondents had spiritual awareness phenomenon. The better the understanding of nutrition, the sounder mind and physical health stemed from the good dietary habits. Also the data showed that relatively young Parents had better dietary habits than the older ones.
