Evaluation of Eating Behaviors of children in Early Childhood Education Institution (유아교육기관에서의 유아 섭식 행동 평가)

  • The purpose of this study was to evaluate food behavior in relation to the program of kindergarten and day care center as well as to identify problems which can be aroused there. We conducted the survey repeatedly, ten times among same 124 preschool children below 5 years old. The instruments were categorized into 3 different parts: part 1 for pre-meal food behavior, part 2 for mid-meal food behavior, and part 3 for after-meal food behavior. These were types of checklists which consisted of guideline of habit formation for daily life, especially food habit were developed on the basis of the National Kindergarten Curriculum. We Have reached the following results. $\circled1$ The group of below 3 year-old children had lunch and snacks more frequently than other age groups. $\circled2$ The children's age did playa role as one of the factors which influences on children's food behavior. The less frequency of taking meals in day care center the better their food behavior score. $\circled3$ Therefore, the age of children whose age is 3 or Jess spent more (of day) time at care center and had significantly more number of meals and snack at the care center. In such case, the food behavior was found to be not in good shape. I-ence, the children who were more exposed to feeding meal in kindergarten and day care center, were like to form unfavorable food behavior. The average food behavior score is significantly correlated with pre-mea, mid-meal, and post-meal food behavior. The study suggested that feeding program for young children at kindergarten and day care center should be systematized and developed on the basis of the status of their food behavior.

A Study on Dietary Attitudes of Preschool Children in Child Care Center (어린이집 아동들의 식생활 태도에 관한 연구)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

Dietary Behavior in Relation to Health Indicators of Residents in Daegu(I) - Focused on Dietary Behaviors and Obesity of Housewives - (대구지역 주민들의 식행동과 일부 건강상태 지표와의 관련성(I) - 주부들의 식행동과 비만정도를 중심으로 -)

  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of health promotion at community level. Nutrients intake of 135 housewives were assessed by 24 hour recall methods. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Our results indicated dietary intake of calcium and vitamin $B_2$ were insufficient when they were compared to Korean recommended dietary allowances(RDA). Among five food groups, intakes of milk and dairy product was inadequate as compared to the recommended amount. When we compared the fatness indices to self-evaluated meal problems, overeating and speedy eating were significantly related to fatness indices. Fatness indices such as relative body weight(RBW) and body mass index(BMI) were significantly higher in the subjects who self-evaluated their unsound food behavior as overeating. However, there were no significant differences of food habit score and nutrition knowledge among groups classified by fatness or meal problem. Body fat ratio, frequencies of night snack and skipping meal significantly increased with age. Food habit score was positively related to health-concerned attitude and active attitude toward change. We concluded that nutrition education program for housewives should include detailed strategies to modify unsound food behaviors for healthy weight.

Development of Recipes for Family Meals (600 kcal) -Staple Meal, Main and Side Dish- (가정용 600 kcal 식단개발 -주식, 주찬, 부찬-)

  • In recent years, there is remarkable tendency of overconsumption and high calorie intake which may come from a high availability of foods, the increase of food production, processed food, and imported food. This cause chronic diseases such as obesity. high blood pressure inducing heart disease, and diabetics etc. Traditional Korean eating pattern and habit make too much waste of foods and wasting time for the food preparation. The dietary guideline used for the guidance of Korean diet pattern is composed of 'nutrients-ingredient-cooking-meal which is not visualized pattern. Therefore we made up menus in the pattern of meal-cooking-ingredient-nutrient, which is more brief, compact and more visualized pattern. We set 27,000 menus with 600 kcal/meal which is combined with staple meal-main dish-side dish (30 menus of rife meal, 5 menus of bread meal, noodle meal and one serving dish meal). 600 kcal menu is basically for volume of serving per one person according to the experimental cooking and reference. This has several advantages of simple procedure of cooking, easy practice to use menus, and good source of nutritional values. In addition to these, it also provides a new menu to decrease the calorie consumption reducing the risk of chronic disease, to prevent wasting foods, and to help single person.

A Survey on the One-Sided Dietary Habit of Primary School Children (국민학교 아동의 편식에 대한 실태조사 - 서울시내 일부지역 아동을 대상으로 -)

  • In this study was made a survey of the dietary habit with too many likes and dislikes (one-sided dietary habit) of first grade primary school children on 1098 primary school children, in an attempt to provide data for an efficient nutrition management for children. The results of the survey were interpreted in term of the standard of education and the state of employment of the children's mothers, the standard of living, sex, the number of sibling, the order of birth, whether or not living together with grandmother, and the breast feeding period. From the results of this study it seems that the overprotection by mothers leads the children to one-sided dietary habit. The mothers listed the lack of nutrition knowledge and the lack of efforts for meal management as major reasons for that they failed to help their children form a good dietary habits.

Relationship between Dietary Habits, Health Status and Health Management of Rural Residents (농촌주민의 식습관과 건강상태 및 건강관리와의 관계)

  • This study investigated and tested the overall level of dietary habits and health status/health management of the residents in a rural area. The interview survey was performed in March 2004 with a structured questionnaire to 510 residents who lived in Muan-Gun of Jeonnam province. The questionnaire was the abridged Scale of Dietary Habits and Health Status which surveys the morbidity, subjective health status, health management, and health examination. The Chi-squire method was used for some of the cross-sectional data. The 510 adult respondents were composed of 61.2% male and 38.3% female. In regularity of meal time, 56.3% of the subjects had a meal regularly(eating time), while 73.5% had a balanced diet(eating number). The habit of regular meal time was significantly higher in old people than in young people. The majority of the subjects had an appropriate meal amount. Unbalanced diet was higher in young people than in old people. 51.4% had the dining out and was significantly higher in younger people than in old people. In other questions, 60.7% of the subjects took a snack, 77.3% were under regular health management, and 49.6% had health examination. A minority of the respondents (31.3%) had disease, while 13.5% chronic disease, and 17.8% had acute disease. The level of dietary habits and general characteristics were positively correlated with each other, as were habits and health status. These results suggest the need for nutritional education programs directed at young people with a special emphasis on regularity of meal time. unbalanced diet, dining-out and a snack.

Changes in Food Habit, Nutrition Knowledge and Nutrition Attitude of University Students during Nutrition Course (교양 영양학 강좌 전후의 대학생의 식습관, 영양지식 및 영양태도 변화)

  • This study was to investigate the changes in food habit, nutrition knowledge, and nutrition attitude of 406 university students during nutrition course and to find topics to be more emphasized at the lecture. The survey was conducted at the beginning and the end of nutrition course. Before instruction, BMIs of male and female students were 21.5 2.0 and 19.3 1.6 respectively, and after that those were 21.7 1.9 and 19.2 1.8, respectively. There was no significant change in BMI during nutrition course. After instruction, there was an somewhat increase in response to focus on meal to maintain health instead of exercise, even though this change was not significant. While the rate of skipping meals had not decreased, that of overeating had significantly decreased. Students considering changes food balance at meal seemed to be increasing during nutrition course. During nutrition course, there were no significant changes in the habits of smoking and alcohol drinking except in the amount of smoking and the rate of male's alcohol drinking. The nutrition knowledge score had increased from 9.9 $\pm$ 1.8 point to 10.8 $\pm$ 1.8 point and the uncertainty of knowledge had decreased significantly. Also, there was a significant increase in the nutrition attitude score from 66.3 $\pm$ 7.0 point to 68.3 $\pm$ 7.2 point. The nutrition knowledge score was significantly correlated with the nutrition attitude score. In female group, but there was no significant difference between male and female in the nutrition attitude score. These results suggest that nutrition course help university students change their food habit, nutrition knowledge and nutrition attitude and the content of the lecture need to be strengthened especially in the part of smoking and alcohol drinking.

  • This work was researched by practical methodology in-depth study of a subjectivity dimension study, in sloughing away a past habituation of functional quantity analysis on perception-effectivity and a habit of dietary life for effective health-promotion. The perception patterns be generated from this study were classified into three types in Q-method. They are as follows ; it is that divided into 'I[(n=9) : eating type in morning], II[(n=11) : type of no having a midnight meal], III[(n=9) : type of mealing after taking exercise]'. Like this, it found that is very different type all over. Finally, this paper is to examine an acceptance behavior about reception type on effectiveness and a habit of dietary life for effective health-promotion ; to make a proposal in a developmental and creative opinion about it.

Survey of Life and Dietary Styles on Patients with Gastroesophageal Reflux Disease (역류성 식도질환 환자의 생활습관 및 식습관 조사연구)

  • Objective: It was surveyed how to help patients get better treatment for their disease by making complements based on the survey outcomes when the pharmacists guide how to administer medicine. Methods: A total of 142 gastroesophageal reflux disease (GERD) patients answered the self-answering questions consist of 15 items about their general characteristic, lifestyle and dietary style. The frequency of survey materials was analyzed to find out specific figures of surveyed patient's general characteristic, lifestyle and eating habits. Results: Based on the outcomes on analysis there was no difference between female and male patients. The characteristic based on the age group, as ones grow older, the number of GERD patients also increased. In case on the characteristic in lifestyle, many patients had improper habit to treat GERD. The items were smoking habits, stress control habit, sleeping postures and the way in wearing outfits. In case of postures after having a meal, they had right lifestyle. Patients had improper habit in eating food. They enjoyed pungent food and drinks which can hinder the treatment. In case of the time of having meal, eating habit of meat and vegetables and eating food less than an hour before go to bed, this research showed that they have the right lifestyle. Conclusion: This research indicate that pharmacists give guidance GERD patients to stop smoking that is causative of GERD and guide patients have mental stability, and patients avoid pungent food and drinks such as coffee, soda, chocolates and mint candies.

A Study on the Relationship between Nutrition Knowledge and Food Habit of Mothers and Food Preference and other Factors of their Elementary School Children. (어머니의 영양지식 및 식습관과 국민학교 아동의 식품기호와의 관계에 관한 연구)

  • This survey was carried out to investigate the correlationship between the nutrition knowledge scores and food habit of the mothers and food preference and other factors of the 272 elementary school children in Masan. The results were summarized as follows : 1. Children's most favorite food was fruits, but they dislike spicy vegetables and some fermented foods. Preferences of the male children to food groups such as protein, calcium and carbohydrate were significantly higher than those of the female children. 2. The rate of the children who take between-meal snacks 2 o 3 times a day was high and those children who skip breakfast take snacks more often. They prefer to eat fruits, dairy products and cakes as their snacks. The body weight of the children who take snacks more frequently was rather lower. 3. As the mother's nutrition knowledge scores rise, so do those of food habit scores. The nutrition knowledge scores go up according to the education degree of the mothers, but the food habit scores seem to have little to do with their education degree. The nutrition knowledge scores of the working mothers were lower than those of the non-working mothers. 4. There was strong positive correlation between the food preference on the food group and those on the other food groups of the children. As the food habit scores of the mothers rise, the children prefer to take calcium and carbohydrate group. Those who take more fat showed higher body weight.
