도라지 쓴맛 개선을 위한 공정개발 연구 (Development Process for Decreasing Bitterness of Doraji (Platycodon grandiflorum))

  • 본 연구는 다양한 생리활성을 지닌 도라지의 쓴맛을 완화시켜 식품소재로서의 활용도를 높이고자 동결온도와 탈수방법 및 횟수에 따른 품질 변화를 조사하였다. 수분을 제외한 일반성분 함량에서는 -20 및 $-70^{\circ}C$에서 동결 처리한 도라지가 -5 및 $-10^{\circ}C$에서 동결 처리한 것에 비해 그 함량이 대체적으로 많았다. 조단백질 함량은 1, 2 및 3 차 동결과 탈수 처리 모두 $-20^{\circ}C$에서 동결한 도라지에서 가장 높았고, 같은 동결온도에서는 3차 동결 처리했을 때 단백질 함량이 가장 높았다. 조지방 함량도 -20 및 $-70^{\circ}C$의 처리구가 -5 및 $-10^{\circ}C$ 결과치보다 높았다. 대체적으로 $-5^{\circ}C$ 동결 처리한 도라지가 가장 낮은 수준의 조단백, 조지방, 조섬유 및 조회분의 함량을 가진 것으로 나타났다. 동결온도와 가공횟수에 따른 무게 변화는 온도가 낮을수록 컸으며 가공을 반복할수록 더 크게 나타났다. 색도에서 L 값은 $-20^{\circ}C$ 동결을 제외하고 2회 가공한 도라지에서 가장 낮은 것으로 나타났고, b 값은 $-5^{\circ}C$$-10^{\circ}C$에서 각각 1회 가공한 도라지를 제외한 나머지 처리구가 대조구와 유사한 값을 나타내었다. 도라지의 조직감 중 견고성은 처리구가 대조구보다 감소하였으나, $-20^{\circ}C$에서 3회 가공한 도라지와 $-70^{\circ}C$에서 2회 및 3회 가공한 도라지는 대조구보다 견고성이 증가하였다. 탄력성은 $^-70{\circ}C$에서 3회 가공한 도라지를 제외하고는 대조구보다 낮은 값을 나타내었으며, 씹힘성은 대조구와 처리구간에 유의적 차이를 나타내지 않았다. 사포닌 함량은 각 온도별 가공횟수가 증가할수록, 동결온도가 낮아질수록 감소하였다. 페놀 함량은 $-5^{\circ}C$에서 1~3회 가공처리 한 도라지의 경우 대조구보다 높은 함량을 나타내었으며, 가공횟수가 증가할수록 그 함량은 증가하였다. 동결온도가 낮을수록 페놀 함량은 감소하였다. 주사전자현미경으로 도라지의 단면을 관찰해본 결과 동결과 가공 공정이 진행됨에 따라 세포벽이 주름진 것처럼 보이고 더 큰 구멍이 보임을 확인하였다. 기호도 검사를 통하여 $-5^{\circ}C$에서 동결한 도라지가 다른 처리구에 비해 높은 기호도를 보였으며, $-5^{\circ}C$에서 동결과 탈수과정을 2회 거친 실험처리군이 쓴맛의 개선 효과도 가장 좋은 것으로 나타났다. 따라서 $-5^{\circ}C$에서 동결과 탈수를 2회 반복한 도라지가 대조구와 가장 유사하며 사포닌과 페놀의 함량이 증가하였고 쓴맛이 완화되어 식품소재로서의 활용이 증가될 수 있을 것으로 판단되었다.

식도암 절제후 식도 재건경로의 비교 (Comparison of the Reconstruction Routes after Esophagectomy for Esophageal Cancer)

  • 배경: 식도암 절제 후 대치장기의 흉곽 내 경로는 환자의 상태, 암의 성상, 수술자의 기호나 경험 등에 따라 다양한 선택이 있다. 그 중 개흉술 후 피하 통로나 흉골하 통로를 이용하는 방법은 수술시간이 길며 술후 호흡기 합병증 등이 많이 발생한다는 보고가 있다. 본 연구는 대치장기의 흉곽 내 경로가 그러한 수술경과에 영향을 미치는지 확인하고자 계획되었다. 대상 및 방법: 식도암 절제 후 재건술을 시행 받은 131명의 환자 중, 대치장기의 경로가 후종격(I군, n=34), 흉골 하부(II군, n=31), 피하(III군, n=21)로 만들어 준 86명을 선택하여 각각의 조기 성적 및 합병증 등을 비교하였다. 결과: 남녀는 각각 79명 및 7명이었다. 암의 성상은 편평 상피암(squamous cell carcinoma)이 81명, 악성 선종(adenocarcinoma)이 5명이었다. 각 군의 수술 전 몸무게, 키, 나이, 식도암의 병기 및 위치, 전신상태 평가, 폐기능에서 차이가 없었다. 조기 성적에서 수술시간에는 유의한 차이 없었으나, 술후 인공호흡기 사용시간은 I군 (평균 20.6시간)에서 II군(7.8시간) 및 III군(3.4시간) 보다 유의하게 길었다(p=0.005). 중환자실 체류기간은 폐렴 등의 호흡기 합병증 때문에 III군(평균 6.4일)에서 I군(3.9일) 및 II군(3.1일) 보다 유의하게 길었으나(p=0.043), 술후 입원기간의 차이는 없었다. 술후 환자 일인당 수혈량은 I군에서 II군(1535mL), III군(1419mL) 보다 유의하게 많았으며(3833mL, p=0.04), 수혈을 받은 환자수도 II군(13/31명), III군(15/21명) 보다 I군에서 더 많았으나(30/34명, p=0.001) 출혈로인한 재수술 건수에는 차이가 없었다. 조기 사망률은 유의한 차이가 없었다. 조기 사망원인 중 패혈증은 I군에서 많았으나 문합부 유출과는 관계가 없었다. 그 외 조기 합병증과 후기 합병증, 평균 생존기간 등에서 각 군간에 유의한 차이는 없었다. 결론: 본 연구 결과는 후종격, 흉골 하부, 피하 경로간에 조기 성적이나 합병증 및 생존율에서 차이가 없음을 보여 주었다. 따라서, 식도암 절제 후 재건술에서 대치장기의 흉곽 내 통로 선정은 수술자의 기호와 경험이 수술 결과에 중요하다고 판단한다.

UV 조사시간에 따른 원목표고당화물의 유용성분 및 항염증 효과 (Anti-inflammatory effect and useful contents of saccharification extract powder using hot water extract from log cultivation Lentinula edodes by different UV irradiation)

  • 원목표고는 수확시기, 재배지역 같은 요인들에 의하여 품질과 가격의 차이가 다양하다. 가을에 생산되는 표고는 수량은 많지만 화고로 불리는 고품질의 표고 생산량이 적고, 등급이 낮은 표고 생산량이 많아, 주로 표고가루로만 가공되고 있다. 이에 따라 가을에 생산되는 등급이 낮은 표고 가공품 개발이 요구되어 진다. 원목표고당화물의 𝛽-glucan, vitamin D2 함량은 UV 조사시간을 7분 적용한 원목표고당화물에서 가장 높게 나타났다. Ergosterol 함량은 UV 조사 7분 시험구에서 가장 낮은 함량을 보였다. 원목표고당화물의 환원당 함량은 62.4 mg/L~68.2 mg/L로 확인되었다. 원목표고당화물의 유리아미노산 함량을 분석한 결과, 총 16종의 유리아미노산이 검출되었으며, 대조구로 사용한 원목표고 열수추출물에 비하여 원목표고 당화물들의 유리아미노산 함량이 높음을 확인하였다. UV 조사시간에 따른 유리아미노산 및 필수아미노산 함량은 큰 차이를 보이지 않았다. 원목표고당화물의 세포독성을 확인한 결과 500 ㎍/mL 농도에서도 90%이상의 높은 세포 생존율을 보여, 대조구로 사용한 원목표고 hot water 추출액과 원목표고당화물 모두 세포독성은 없는 것으로 확인하였다. 원목표고당화물의 항염증 효과는 농도 의존적으로 높은 활성을 나타냈으며, UV 조사 7분 시험구에서 100 ㎍/mL이상의 농도에서는 90% 이하의 낮은 NO 생성능을 확인하였다. UV를 7분 조사한 원목표고당화물이 ergosterol을 제외한 유용성분 함량과 항염증 활성이 가장 높게 나타나, 원목표고당화액 제조 최적 UV 조사 시간은 7분으로 결정하였다. 본 연구결과 UV를 7분 조사한 원목표고당화물들은 안전성과 버섯의 유용성분 함량이 높아, 향 후 천연감미료 및 건강식품 소재로 다양한 활용이 기대된다.

중앙아시아의 신에 관한 연구 -타지크(Tadzhik)를 중심으로- (A Study on the Foot Wear -On the Tadzhik of central Asia-)

  • All the cultures are enriched and developed themselves through the contact with another culture, which propagate and transplant its new cultural elements to a time-honoured tradition. Therefore, the investigation of the origin of each culture means to find out the all the elements of each culture itself in the end. In Korean Costume, we can find both the Costume of frizid jone and that of temperate jone togther, effected by the influence of typical continental climate. Accordingly, we can also realize that both Lee, of southern tribe and Haw, of northern tribe suitable for the protection of cold weather, existed in Korea. Even Lee and Hwa were used together, Hwa had been appeared earlier than Lee along with the Skitai Costume and we can find its origin in the line of Skitai costume. In Central Asia, Tadjhik was the only race tracing their ancestry from ancient Iranic genuinely and they had been keeping the culture of Skitai origin continuously. The purpose of this thesis is to examine Korean's own culture of the footwear through the investigation of Tadjhik's culture of costume, specially through the culture of Tadjhik footware. To reach the conclusion of this thesis, the comparision and investigation between Korea and Tadjhik was made carefully for the followings, culture of life and costume, forms and materials of footwear. 1. The treasers and boots made by leather and felt was the origin of costume culture of Central Asia and aboves were appeared in persian costumn for the first time. We can consider that those had connection with Korean culture of costume. 2. Form of Tadjhik footwear can be devided by hwa and Lee, and there was a big difference in form between that of mountain area and plain area. We can find more rariety in footwear of mountain area. 3. If we compare the form of Hwa and Lee of Tadjhik with our own footwear, we can find out many things in common and there are lots of similarities particularly in form and material. 4. We can say that the difference of Tadjhik and Korean was the preference of Hwa for Tadjhik and Lee for Korean, aboves came from the different totography, climate condition and life style. 5. The form of male and female footwear of tadjhik was almost similar, but female footwear had various and beautiful decorations for the ornament. 6. The materials of Tadjhik footwear was mostly leather, and Hwa was used particularly for labour purposes. 7. We can expect that Tadjhik of Central Asia and Korea had a similar orgin and style on the footwear. It can be expected that we can find out many common things in further investigation of the study of Tadjhik costume and will exert the examination continuously.

악골에서 발생한 치성 낭종제거 후 골이식 여부에 따른 치유속도와 양상 비교 (Comparison of healing pattern with or without bone graft after odontogenic cyst enucleation)

  • Introduction: Bone defects in the jaw are frequently observed after odontogenic cyst enucleation. The success of bone healing appears to be related to the size of the bone defect, the anatomical location, the patient's age and other parameters. The use of bone grafting material is dependent on the operator's preference. No evidence-based definite treatment protocol has been established. This study evaluated the effect of a bone graft into the defect after odontogenic cyst enucleation. Materials and Methods: A total of 55 patients, who had been treated for an odontogenic cyst with cyst enucleation from 2000 to 2009 at the department of Oral and Maxillofacial Surgery, Samsung Medical Center, were included in this study. Patients who were followed-up for more than 1 year were included. Two groups were defined according to the bone graft (with or without a bone graft) after cyst enucleation. The differences in the healing periods and patterns of bone healing were compared clinically and radiologically. The postoperative 1 year radiographs were analyzed for bone healing and density. Statistical analysis was performed using a Pearson chi square test and Wilcoxon rank-sum test. Results: More infection signs were observed in the bone graft group than in the other group, but there was no statistically significant difference. Radiographically, there was also no significant difference in the size of the radiolucent lesions between the two groups. Conclusion: There was no significant difference in healing between the groups with a bone graft and without bone graft after cyst enucleation.

상악전치부 심미에 대한 인식도 평가 (PERCEPTION ASSESSMENT OF ESTHETICS OF UPPER ANTERIOR TEETH)

  • Statement of problem : The beauty has a little different meaning according to a time, culture, and nation. Purpose : This study was undertaken to determine the Korean perception of the altered upper anterior dental esthetics including the lack of symmetry, the midline deviation, the gingival exposure, the inclination of incisal plane, the type of incisal plane, and the type of gingival line. Material and Method : 670 subjects were participated in this survey. A questionnaire accompanied by 12 sets of computer-manipulated images using 3D MAX 4.2 software was used to record the ranking of the geometric preference related to the anterior esthetic discrepancies in three or four degrees of alteration. The statistical significance of the differences between the groups was determined by a one-way ANOVA and a t-test. Results : The results obtained were as follows: 1) The Korean perception of the anterior dental esthetics according to the subjects' occupation, sex, and age was most affected by occupation. 2) The masked image emphasizing the dentition and lips appeared stranger than the non-masked image at the same alteration. 3) The lack of symmetry, which was expressed as a unilateral discoloration of the tooth, showed incongruity in any teeth of the anterior dentition. The incongruity was more severe as the degree occurred closer to the midline. 4) The deviation of midline was showed more severe strangeness as the degree of deviation increased. However, more than half of the subjects did not perceive a deviation of 5mm. 5) During smiling, the exposure of the upper gingiva showed more severe incongruity as the degree of gingival exposure increased. 77% of the subjects perceived strangeness at the gingival exposure of 4.5mm. 6) The inclination of the incisal plane appeared stranger as the degree of inclination increased. 62% of subjects perceived strangeness at the $7.5^{\circ}$ inclination of the incisal plane. 7) The type of incisal plane showed increasing strangeness in the order of convex/downward, straight/horizontal, and concave/upward. 80% of subjects perceived strangeness at concave/upward. 8) The type of gingival line was showed increasing incongruity in the order of the same, a little above, and a little under the zenith of the lateral incisor to the line joining the zenith of the central incisor and the canine. However, less than half the subjects did not perceive strangeness at any alteration of the gingival line. Conclusion : The Korean perception of the upper anterior dental esthetics was different to the westerner's perception in the some respects.

모발(毛髮) 염색(染色)에 관(關)한 실태(實態) 조사(調査) - 창원시(昌原市) 여성(女性)을 중심(中心)으로 - (Research on the Actual Condition of Hair Coloring - Focusing on the Women in Changwon City -)

  • The beauty industry of today tends to gradually develope as one of the important marketing strategies along with the total fashion sector. Hair color, being one of the factors of hair style, especially builds his or her own image and even becomes the nonverbal communication method which let others know him/herself. Therefore, women's needs and expectations of hair coloring are varied. To meet these need, it is urgent to figure out, most of all, the status of customers' awareness about hair coloring. Thus, in this study, research and analysis on hair coloring were made, focusing on the women utilizing 20 beauty shops in Changwon city. And the goal that this study set is to use as the study material for the hair coloring consulting in the beauty industry and the basic data for marketing in the industry job-sites. The conclusion by the three factors(age, job, monthly income) were as follows: 1. Dandyism was on the 1st order in the reason for coloring hair regardless of age, job, and monthly income. This seems to be speaking for the change of women's awareness of coloring hair. 2. The subject of making decision upon whether she was going to color her hair or not was herself regardless of age, job, and monthly income. Among the people belong to these three factors, brown was the color in overall preference. 3. More than half of those who belong to the three factors were not aware of the hair color, but their senses and interest in the color in vogue were high. 4. In terms of the hair coloring periodic time, many people had $2{\sim}3$months, but it was possible to know that they were interested in improving their images, considering the fact that most of the salaried people had their hair dyed within a month and the people in service job over a month. 5. The acquaintance around me had the strongest effect in collecting information from the people in those three factors and mass media was the next. The results of this study, in my opinion, would help the customers have beautiful and healthy hair and make images of their own by making the hair designers develope professional knowledges and skills on the hair coloring and improve the quality of beauty services.

군대급식 표준식단중 수산물 이용 메뉴 분석 연구 (A Study on Seafood Dishes in Military Standard Menu)

  • This was preliminary study that was to find out the developing point in military meal service to focus on seafood dishes that recently increased plate waste. This study was conducted to analyze menu patterns in military meal service. The result of this study was using to develop new seafood dishes in military meal service. On the basis of some findings, several developing points how to plan meals include many kinds of seafood dishes and to modify taste and cooking method that was more highly prefered by young military persons were suggested. This preliminary study findings were as follows: 1. Each meal was served cooked rice and 4 kinds of dishes(soup or stew, main dish, side dish and kimchi) 2. The seafood dishes was served as 28.6% in soup or stew, 35.0% in main dish and 36.4% in side dish of total serving of seafood dishes. 3. All of raw materials of seafood were supplied by frozen, several items were supplied dried material. Supplying seafood items were limited. Numbers of using seafood items were using 2.7 times per day. Laver and squid was most frequently used. 4. Seafood dishes were frequently serving in breakfast, especially seasoned & toasted laver was served 28.8% of seafood menu in breakfast because of convenience. 5. The nutrients contents of each dishes were as follows, the soup was $86.5{\pm}3.2kcal$ and $10.9{\pm}8.9g$ of animal protein, stew was $165.3{\pm}70.2kcal$ and $13.3{\pm}7.9g$ of animal protein. Nutrients content of other main dish and side dishes was different from 108.1kcal (in steaming dish) to 412.4kcal (in deep-fat frying dish) according to different cooking method. The highest animal protein dish that contented $18.9{\pm}5.1g$ of protein was pan-frying dish or grilling dish. Lowest one was $8.4{\pm}4.9g$ in braising dish. 6. Major cooking method of seafood was stew and the next was deep fat frying, stirfrying and braising. Pan-frying or grilling was seldomly used in military menu because of limitation of kitchen facilities and cooking utensils. On the basis of these findings, newely developing military seafood menus were focused on combination dish(such as seafood cooked rice or seafood fried rice) and many kinds of sauce that was applied to deep-fat frying dishes.

1920-30년대 한국의 이상적 '신여성' 이미지와 패션 (The Ideal Image and Fashion of the 'New Woman' in Korea in the 1920s and 1930s)

  • The term "new woman" (신여성 [Sinyeoseong], 新女性) refers to an idealized image of contemporary women during the so-called modern period in East Asia. In Korea, these "modern girls" were also referred to as modan (毛斷), or "cut-hair", reflecting changes in appearances that rejected the traditional value system in favor of "the new" in everyday life. Although it was used to refer to the perceived educated leaders of this new period, it also had the negative connotation of referring to frivolous women only interested in the latest fashion. The popular discourse on this "new woman" was constantly changing during this early modern period in East Asia, ranging from male-driven women's movements to women-driven liberal and socialist movements. The discourse often included ideals of what constituted female impeccability in women's domestic roles and enlightened views on housekeeping, yet in most cases the "new woman" was also expected to be a good wife and mother as well as a successful career woman. The concept of the "new woman" was also accompanied by an upheaval in women's social roles and their physical boundaries, and resulted in women repositioning themselves in the new society. The new look was a way of constructing their bodies to fit their new roles, and this again was rapidly reproduced in visual media. Newspapers, magazines, and plays had gained immense popularity by this time and provided visual material for the age with covers, advertisements, and illustrations. This research will explore the fashion of the "new woman" through archival resources, specifically magazines published in the 1920s and 1930s. It will investigate how women's appearances and the images they pursued reflected the ideal image of the "new woman." Fashion information providers, trendsetters, and levels of popular acceptance will also be examined in the context of the early stage of the fashion industry in East Asia, including production and distribution. Additionally, as the idea of the "new woman" was a worldwide phenomenon throughout the 19th and early 20th century, the effect of Japanese colonialism on the structure of Korean culture and its role as a cultural mediator will also be considered in how the ideal image of beauty was sought, and whether this was a western, colonial, or national preference.

장기적 관점에서의 모듈러 주택 공사비 절감기회 분석 (An Analysis of Cost Reduction Potentials for Modular Housing from the Long-term Perspective)

  • 모듈러 주택은 많은 장점이 있음에도 불구하고, RC구조에 익숙한 소비자들의 모듈러 주택에 대한 낮은 선호도가 모듈러 주택의 높은 공사비를 초래하고 있다. 모듈러 건축물의 공사비는 RC 구조 대비 130% 전후로 형성되어 있어 모듈러 건축물의 경제성 확보가 시급하다. 따라서 본 연구에서는 모듈러 주택의 공종별 절감가능 금액을 산출한 후, 장기적 관점에서의 경제성 분석을 진행하였다. 연구 진행을 위해 모듈러 주택의 내역서를 공장제작분 및 현장설치분으로 분개하여 공종별 발생하는 재료비, 노무비, 경비를 비교 분석을 진행했다. 그 후 파레토도를 작성하여 비용 누계 80% 내외에 포함되는 핵심 공종을 찾아 공사비 절감 가능대상으로 선정하였다. 국내 모듈러 건축의 시장규모가 일본, 유럽 국가 등 모듈러 선진국 수준과 비슷하다는 가정하에 전문가 인터뷰를 통해 모듈러 공법의 특성을 반영한 비용절감 방법을 설정하였고, 모듈러 업체 전문가를 대상으로 한 설문조사를 통해 비용절감 방법을 적용했을 때의 공종별 절감 가능 금액을 산출하고, 총 절감가능 금액을 산출했다. 비용절감 방법 중 '자동화 및 기계화'방법을 적용했을 때의 절감가능성이 1.54%로 가장 큰 것을 알 수 있었고, 국내 모듈러 생산 과정이 전자동화 및 기계화가 된다면 공사비 절감 뿐만 아니라 공기 단축도 기대해 볼 수 있다고 판단한다.
