콩절편의 조리 방법에 따른 관능적 특성 (Sensory Characteristics of Soybean Jeolpyon by Different Cooking Method)

  • Sensory evaluation and Instron test were carried out to study me effect of different cooking methods on the quality of soybean jeolpyon. Cooking methods studied were rice cake steamer, steaming pot, pressure cooker and microwave oven. 1. There were no significant difference in color and flavor between samples cooked by various methods. Moistness of samples by steaming pot and rice cake steamer was similar. Tenderness of samples by rice caker and pressure cooker was better man others. 2. After 24 hours elapsed, me quality of soybean jeolpyon showed me order of by rice cake steamer, steaming pot, pressure cooker and microwave oven. 3. It showed mat soybean ieolpyon by microwave oven was harder man others through Instron test. 4. Hardness of jeolpyons were increased as storage time increased. The rate was higher by pressure cooker and microwave oven man by rice cake steamer and steaming pot.

약과의 조리 및 저장에 관한 연구 - 제1보 ; 튀김조건에 따른 약과의 물성 평가 - (Studies on the Experimental Cookery and the Preservation of the Traditional Korean Fried Cookie , Yackwa)

  • This study has investigated a scientific approach to the manufacture of Yackwa, made by different frying conditions and has assessed texture characteristics through sensory evaluation and instrumental test. A standard Yackwa was made by frying at 150$^{\circ}C$ for 8 minutes and then soaking for 10 minutes in the newly developed syrup whose viscosity and sweetness were similar to expensive honey. The mixing ratio of the developed syrup was corn syrup: sugar: dextrose=32 : 1.5 : 1 (by weight), and me syrup was double-boned in a water bath for 20 minutes and men cooled to 25 C. As me results of sensory evaluation and instrumental test for Yackwa made by various frying conditions, the lower the frying temperature or me longer the frying time was the higher values of hardness and fracturability, while adhesiveness was the lower in almost all conditions. In the sensory evaluation of Yackwa with the similar outer color, mere were significant differences in me inner color, Crispiness and levels of rising and cracking.

5종의 네오니코티노이드계 약제에 대한 솔수염하늘소의 살충활성과 꿀벌독성 (Insecticidal Activity of Japanese Pine Sawyer (Monochamus alternatus) and Toxicity Test of Honeybee (Apis mellifera) using 5 Kinds of Neonicotinoids)

  • 5종의 살충제를 사용하여 솔수염하늘소(Monochamus alternatus) 성충에 대한 약제 감수성과 잔효성을 조사하였고 꿀벌(Apis mellifera)에 대한 급성 및 엽상접촉독성과 엽상잔류독성을 평가하였다. 약제 처리 후 48시간 기준 충체 분무법을 이용하였을 시 5종의 네오니코티노이드계 약제 모두 80% 이상의 살충률을 보였다. 그러나 가지침지법에서 80% 이상의 살충률을 보인 약제는 acetamiprid ME, acetamiprid+buprofezin 2종이었다. 솔수염하늘소 성충에 사용한 5종의 약제에 대한 잔효성 실험에서는 모든 약제에 대하여 60-80%의 살충활성이 나타났으나, 약제처리 1일 후에는 약효가 급격히 감소하였다. 솔수염하늘소 성충에 사용한 5종의 약제에 대한 꿀벌의 급성독성과 엽상접촉독성실험에서는 acetamiprid ME가 가장 낮은 독성을 보였다. 꿀벌에 대한 엽상잔류독성을 조사한 결과에서는 acetamiprid ME와 acetamiprid+buprofezin 2종의 약제에서 매우 낮은 잔류독성을 보였다. 그러나 약제처리 1일 후에서는 모든 처리약제의 잔류독성이 10-30% 이하로 감소하였고, 시간이 지남에 따라 잔류독성은 더욱 감소하였다. 이러한 결과를 통해서 본 실험은 5종의 네오니코티노이드계 약제 중 acetamiprid ME가 솔수염하늘소에는 높은 살충활성을 보인 반면에 꿀벌에 대해서는 비교적 낮은 접촉 및 잔류독성을 보였기에 소나무재선충병 매개충 방제에 acetamiprid ME가 효율적으로 이용 될 수 있을 것으로 생각된다.

  • The present study was performed to elucidate desmutagenic principles from Ecklonia stolonifera extracts against 2-amino-1-methyl-6-phenylimidazo[4,5-b] pyridine(PhIP) and 2-amino-3,8-dime-thylimidazo[4,5-f]duinoxaline(MeIQx) with Salmonella/mammalian-microsome mutagenicity test. Alginate, phenols, chlorophyll and carotenoids from Ecklonia stolonifera were extracted and their desmutagenicities were assayed. Alginate hydroysates showed desmutagenic activities against PhIP and MeIQx at high level dose. Phenol fractions and bromophenol showed desmutagenic activity of about MeIQx at high level dose. Phenol fractions and bromophenol showed desmutagenic activity of about 90% per 0.5mg against PhIP and MeIQx. Chlorophyllin among chlorophyll derivatives exhibited remarkable desmutagenic activities of 92.9% and 82.7% at 20uM against PhIP and MeIQx, respectively. Carotenoids, such as lutein and $\alpha$-cryptoxanthin isolated from Ecklonia stolonifera exerted also high desmutagenic activity. Major desmutagenic substances from Ecklonia stolonifera are considered to be chlorophyllin, phenols, lutein, $\alpha$-cryptoxanthin and low molecular alginates.

Determination and Prediction of Digestible and Metabolizable Energy from the Chemical Composition of Chinese Corn Gluten Feed Fed to Finishing Pigs

  • Two experiments were conducted to determine the digestible energy (DE) and metabolizable energy (ME) contents of corn gluten feed (CGF) for finishing pigs and to develop equations predicting the DE and ME content from the chemical composition of the CGF samples, as well as validate the accuracy of the prediction equations. In Exp. 1, ten CGF samples from seven provinces of China were collected and fed to 66 finishing barrows (Duroc${\times}$Landrace${\times}$Yorkshire) with an initial body weight (BW) of $51.9{\pm}5.5$ kg. The pigs were assigned to 11 diets comprising one basal diet and 10 CGF test diets with six pigs fed each diet. The basal diet contained corn (76%), dehulled soybean meal (21%) and premix (3%). The ten test diets were formulated by substituting 25% of the corn and dehulled soybean meal with CGF and contained corn (57%), dehulled soybean meal (15.75%), CGF (24.25%) and premix (3%). In Exp. 2, two additional CGF sources were collected as validation samples to test the accuracy of the prediction equations. In this experiment, 18 barrows (Duroc${\times}$Landrace${\times}$Yorkshire) with an initial BW of $61.1{\pm}4.0$ kg were randomly allotted to be fed either the basal diet or two CGF containing diets which had a similar composition as used in Exp. 1. The DE and ME of CGF ranged from 10.37 to 12.85 MJ/kg of dry matter (DM) and 9.53 to 12.49 MJ/kg of DM, respectively. Through stepwise regression analysis, several prediction equations of DE and ME were generated. The best fit equations were: DE, MJ/kg of DM = 18.30-0.13 neutral detergent fiber-0.22 ether extract, with $R^2$ = 0.95, residual standard deviation (RSD) = 0.21 and p<0.01; and ME, MJ/kg of DM = 12.82+0.11 Starch-0.26 acid detergent fiber, with $R^2$ = 0.94, RSD = 0.20 and p<0.01. These results indicate that the DE and ME content of CGF varied substantially but the DE and ME for finishing pigs can be accurately predicted from equations based on nutritional analysis.

감마선과 Methyl Bromide 처리가 녹두의 살충 및 이화학적 특성에 미치는 영향 (Comparative Effects of Gamma Irradiation and Methyl Bromide Fumigation on Disinfestation and Physicochemical Properties of Mung Bean)

  • 녹두의 가해해충 살충방법을 연구할 목적으로 현행 검역해중 살충방법인 methyl bromide(MeBr) 훈증처리와 감마선 조사에 의한 살충효과와 몇 가지 이화학적 특성에 미치는 영향을 비교하였다. 국내산 녹두의 가해해충은 팥바구미(Calloso-bruchus chinensis Linne)로 확인되었으며, 살충처리 후 5일째에 MeBr 처리는 완전한 살충효과를 보였다. 같은 시기에 3 kGy 이상의 감마선 조사는 유충에 대하여 완전한 살충효과를 보였고, 2 kGy 조사구에서도 약 90%의 살충률을 나타내었다. 그리고 녹두의 성충은 유충에 비해 방사선 감수성이 큰 것으로 나타나 처리 후 10~15일 경에 두 충태 모두 1 kGy 조사구에서도 100%의 누적살충률을 보였다. 살충조건에서 녹두의 이화학적 품질특성을 비교해 본 결과, 질소용해도, TBA가, 총아미노산 및 지방산 조성과 함량은 25 kGy 조사구 및 MeBr 처리구에서 대조구와 유의적인 차이를 보이지 않았다. 그러나 녹두의 기계적 색도는 MeBr 훈증처리에 의해 명도의 감소와 적색도 및 황색도의 증가로 전반적인 색차(${\Delta}E$)에서 느끼는 정도(NBS 2.61~2.94)의 색 변화를 가져왔다.

LM 가이드의 내마모성 향상을 위한 Me-DLC 코팅박막의 성능평가 (The Performance Test on Me-DLC Films for Improving Wear Resistance of LM-Guide)

  • Recently, surface modification technology is of importance to improve the wear resistance and the corrosive resistance for high accurate mechanical parts such as LM guide, Ball Screw and Roller Bearing etc., Those has generally featured on rolling contact mechanism to improve not only the wear and the friction, but also the accuracy and the corrosion performances. For surface modifications of high accurate mechanical parts, normally thermal spray, PVD, CVD and E.P. processes have been used with many materials such as DLC, raydent, W, Ni, Ti etc. Diamondlike carbon (DLC) films possess a combination of attractive properties and have been largely employed to modify the tribological behaviors such as friction, wear, corrosion, fretting fatigue, biocompatibility, etc. However, for rolling contact mechanism mechanical parts DLC films are needed to study for commercial benefit. Rolling contact mechanism has features on effects of cyclic motions and stresses, and also not simply sliding motions. The papers focused on the performance test of wear and corrosive resistance according to Me-DLC film thickness. And also, its thickness effect of wear analysis was carried out through the simulation of the maximum shear stress under the rolling contact surface. As the results, Me-DLC films have more potential to improve the wear resistance for high precision mechanical parts than raydent films.

Efficient Inter Prediction Mode Decision Method for Fast Motion Estimation in High Efficiency Video Coding

  • High Efficiency Video Coding (HEVC) is the most recent video coding standard to achieve a higher coding performance than the previous H.264/AVC. In order to accomplish this improved coding performance, HEVC adopted several advanced coding tools; however, these cause heavy computational complexity. Similar to previous video coding standards, motion estimation (ME) of HEVC requires the most computational complexity; this is because ME is conducted for three inter prediction modes - namely, uniprediction in list 0, uniprediction in list 1, and biprediction. In this paper, we propose an efficient inter prediction mode (EIPM) decision method to reduce the complexity of ME. The proposed EIPM method computes the priority of all inter prediction modes and performs ME only on a selected inter prediction mode. Experimental results show that the proposed method reduces computational complexity arising from ME by up to 51.76% and achieves near similar coding performance compared to HEVC test model version 10.1.

대칭적 Triazine 유도체들에 의한 중성 유제층의 경막시험에 관한 연구 (Studies on the Hardening Test of Neutral Emulsion Layers by Derivatives of Symmetrical Triazine)

  • In this paper, we describe a study on the relationship between neutral emulsion manufacture and hardening test of films. The hardeners were prepared by condensation of equimolar amounts of trichlorotriazine with benzene- or naphthalene-based amino or oxy acids at 0 to $5^{\circ}C$ and at pH 7, and used as hardening agents for gelatin. The hardening test of neutral emulsion layers was studied at pH 7.0. For example I(R=ONa) had strong hardening properties, I substituted with an aminobenzosulfonate moiety $(R=NHC_6H_4-p-SO_3Me$ where Me = K, Na) was a much weaker gelatin hardener, and when substituted with amino- or oxynaphthalene derivative (II, III) did not harden gelatin at all. Compound with 2 dichlorotriazine groups as IV exhibited hardening properties. The hardener can be used in neutral emulsion layer of film and showed good hardening effect.
