Ready-to-eat chicken breasts were packaged in a multilayer, gas-tight tray with top film and various quality changes were investigated during the 24 wk of storage at $10^{\circ}C$. Over the storage period, total aerobes, mesophilic aerobic and anaerobic spore formers, and Clostridium spp. were not detected above 1.0 log CFU/g (detection limit). The residual oxygen ratio in the head space of tray and pH values tended to decrease with storage time, namely from initial values of 5.7% and 6.56 to 3.3% and 6.34 at week 24, respectively. Thiobarbituric acid reactive substances and volatile basic nitrogen values increased from 0.52 mg malonaldehyde (MA)/kg and 2.1 mg/100 g initially, to 3.70 mg MA/kg and 39.9 mg/100 g at week 24, respectively. In terms of the change in meat color during storage, the samples showed a slight increasing trend of CIE $a^*$, $b^*$, and ${\Delta}E$ values over the storage period until week 24 (p<0.05). The change in brine color showed a similar trend with meat of which Hunter $b^*$ and ${\Delta}E$ values increased slightly during storage during 24 wk (p<0.05). The values for the transmittance degree of brine in the samples tended to decrease. Moreover, values for the absorbance degree tended to increase with storage time until week 24. The sensory scores for color, texture, odour, and flavour were evaluated below 5.0 (marketability level) after 24 wk of storage. Based on this sensory evaluation, it could be concluded that retorted RTE chicken breast could remain marketable for at least 20 wk at $10^{\circ}C$.
This study was conducted to find out the effects of $CO_2$ fertilization (1,000ppm) on the quality and storability of 'Maehyang' strawberry fruits. Qualities such as firmness, soluble solid, and acidity of strawberry fruits showed higher numbers in those treated with $CO_2$ fertilization compared to those after harvest. Strawberry fruits were stored at $8^{\circ}C$; MA condition using $20,000cc{\cdot}m^{-2}{\cdot}day^{-1}{\cdot}atm^{-1}$ OTR (oxygen transmission rate) films and conventional condition using unsealed PE box stored for 20 and 10 days, respectively. Fresh weight loss rate was less than 1.0% in MA storage regardless of $CO_2$ fertilization treatment. Concentrations of oxygen, carbon dioxide, and ethylene in OTR films did not show any significant difference between $CO_2$ fertilization treatment and control (nontreatment) during storage. $CO_2$ fertilization treatments maintained higher firmness after storage regardless of storage methods, but soluble solid, acidity, and surface color did not differ among the treatments. Visual quality and off-flavor based on sensory evaluation was the highest in $CO_2$ fertilization treated strawberry and stored at a MA condition, and was the lowest in $CO_2$ fertilization treated strawberry and those stored in a conventional condition, respectively. The fungal incidence rate of strawberry fruits showed less in $CO_2$ fertilization treatment than control during both MA and conventional storage. These results suggest that $CO_2$ fertilization can improve firmness, increase visual quality after harvest and storage at $8^{\circ}C$, and the MA storage method enhances the shelf-life of 'Maehyang' strawberry fruits.

Ham, sausage and bacon were treated with common household processing techniques including refrigerated storage(0, 14, 28 days) and cooking(pan-frying, microwaving, boiling). Lipid oxidation was evaluated by measuring fatty acid composition, malonaldehyde(MA), TBA values and by measuring fluorescent products. Major fatty acid composition were oleic acid and followed respectively palmitic acid, stearic acid, linoleic acid, linolenic acid. There was no significant difference in fatty acid composition by cooking method but there was a tendency of being increased of unsaturated fatty acid during 28days storage. Ma, TBA and fluorescent products showed a tendency of being increased continually according to storage days rather than cooking method.

This study was conducted to determine types of oxygen transmission rate (OTR) films suitable for modified atmosphere (MA) storage treatment of strawberries (cv. 'Maehyang') for export and examination related changes in quality of strawberries during simulated shipping distribution conditions ($2^{\circ}C$ for $10days{\sim}8^{\circ}C$ for 11 days). Strawberries were packed by 1,300, 10,000, 20,000, and $30,000cc/m^2{\cdot}day{\cdot}atm$ OTR films for MA storage treatment and perforated film as the control for MAP. Fresh weight loss rate was less than 0.5% in OTR films except for the perforated film. Carbon dioxide and oxygen content in packages prevailed in permissible range for strawberries under recommended CA/MA conditions (i.e., $CO_2$: 15~20%, $O_2$: 5~10%) at 10,000 cc, 20,000 cc, and 30,000 cc OTR films. Ethylene content in OTR films did not reveal significant differences during storage. The 1,300 cc OTR film revealed highest off-flavor and lowest fungal incidence rate by sensory evaluation. The firmness, soluble solids, and visual quality were preserved the highest at 10,000 cc OTR film. In conclusion, 10,000 cc OTR film preserved the highest quality and extended shelf-life by 13 days if compared with conventional distribution conditions.
This study was carried out to investigate the MA response of fresh lemongrass (Cymbopogon citratus) depending upon film sources and storage temperatures. The fresh weight loss was significantly lower at 5 and $0^{\circ}C$ than those of higher temperatures. And ceramic $80{\mu}m$ film (CE 80) was more effective in preventing weight loss than CE40. The contents of $CO_2$ and ethylene were much higher in CE 80 wrapping than those in CE 40 ones. Rapid accumulation of $CO_2$ was observed at high storage temperature. However, the ethylene content during whole storage period was higher at $0^{\circ}C$ than those at $5^{\circ}C$, but the level of ethylene was remained below 1ppm and did not adversely affected to lemongrass quality. The treatment of CE 80 at $5^{\circ}C$ was most effective on keeping visual quality and chlorophyll content. The storage durations were up to 48 days at $5^{\circ}C$ and 35 days at $0^{\circ}C$, respectively. Results indicated that CE 80 at $5^{\circ}C$ is an optimal condition for MA storage of lemongrass.

The effects of packaging conditions on the freshness extension of table grapes were investigated during storage for 14 days at $25^{\circ}C$ The storage life of tables grapes was influenced by both packaging methods (corrugated cardboard and MA film with box) during storage. The fresh weight, vitamin C content, reduced sugar and titratable acidity of table grapes decreased during storage. The change of vitamin C content and acidity was influenced by both packaging methods during storage. The quality of table grapes packed with 20CE, 20LD film was better than the other packaging methods.

In order to study the storage stability of winter date (Zizyphus jujuba Miller) with functional MA film storage, linear low density polyethylene $(LLDPE,\;30{\mu}m\;and\;60{\mu}m)$ film packaging and non-packaging were compared $30{\mu}m$ LLDPE packaging, $60{\mu}m$ LLDPE packaging and non-packaging samples were stored at $0^{\circ}C,\;8^{\circ}C$ (low temperature) and $25^{\circ}C$(room temperature) for 10 weeks. Weight loss of $30{\mu}m$ LLDPE packaging, $60{\mu}m$ LLDPE packaging and non-packaging in room temperature were decreased by 3.6% 0.4% and 36.1% respectively. Titratable acidity showed the trend of similarity in all treatment during the storage conditions, and especially LLDPE film packaging showed higher than non-packaging in the last storage. Soluble solids showed an increase in non-packaging, a decrease in LDPE film packaging highly. Vitamin C content showed the trend of decrease in all treatments, but non-packed jujubes sustained higher than LLDPE film packaging.

This study was carried out to compare the storability in MA storage and quality of paprika fruits among 9 cultivars grown in 2011 and 12 cultivars in 2012. 'Mosanto 7044' was the most proper cultivar in red-type paprika has grown in 2011 for MA storage, because it showed relatively higher fruit weight, firmness, soluble solid content, and the lowest ethylene production rate, as well as the second longest shelf life. 'Stayer' was suitable cultivar in yellow-type paprika cultivated in 2011, because it showed higher firmness, soluble solid content and lower ethylene production rate than other cultivars. 'Nagano' was the most proper cultivar in red-type paprika has grown in 2012 for MA storage. Because it showed relatively higher fruit weight, firmness, flesh thickness and the lowest ethylene production rate and decay ratio, although the shelf life of 'Nagano' was the third longest (28 days). 'Freestar' was the excellent cultivar in yellow-type paprika cultivated in 2012, because it showed higher firmness, vitamin C content and lower respiration rate than other cultivars and the longest shelf life of 26 days. The shelf life had a high correlationship with ethylene production rate (r = -0.5504), and soluble solid (r = 0.6112), as comparing with the shelf life and the fruit characteristics of 21 cultivars paprika has grown in 2011 and 2012.
The effects of modified atmosphere (MA) storage far fresh red pepper and red bell pepper fruits were investigated with storing in high and few density polyethylene films (HDPE, LDPE) with various NaCl contents(0 g, 15 g, 20 g, 25 g). During the storage of pepper fruits, the weight loss, color change, mold emergence, and firmness were evaluated. The weight loss of pepper fruits packaged in HDPE and LDPE without NaCl was 3∼5%, even though it was 6∼19% in pepper fruits packaged with NaCl. The lutes of mold emergence of red pepper and red bell pepper fruits were lowered to 20∼45% as stored in HDPE and LDPE with NaCl but those of fruits stored in films without NaCl were high as 55∼65%. The color and firmness of pepper fruits were not much changed in comparison with those of non-packaged fruits as stored in HDPE and LDPE with or without NaCl.
Oriental melons hold at $38^{\circ}C$ for 48 hours before storage increased their soluble solid, titratable acidity, vitamin C contents and ${\alpha}$-tocopherol activity. These heat treated oriental melons maintained lower production of carbon dioxide, ethylene and acetaldehyde and loss of fresh weight than untreated them, called control, during $3^{\circ}C$ MA storage. After 39 days in storage, the last day of storage, visual quality and internal quality, such as firmness, soluble solid, titratable acidity, vitamin C and ${\alpha}$-tocopherol activity, showed higher in heat treated oriental melons. Especially, Ion leakage of flesh, index of chilling injury, increased remarkably in control, so that heat treatment had to alleviate chilling injury in oriental melon. Moreover, while Alternaria rot was shown in control plot after 25 days in $3^{\circ}C$ MA storage, oriental melons treated heat were not appeared any decomposition after 39 days in $3^{\circ}C$ MA storage. As storage life of oriental melon was calculated by regression equation between visual quality and days in storage, that was longer 8 days in heat treated than control. Consequently, heat treatment that was mild, $38^{\circ}C$ and long period, 48 hours, executed before storage, sterilized surface alleviated chilling injury and lengthened storage life in oriental melons.
