Evaluation of Physicochemical and Textural Properties of Low-Fat/Salt Sausages Manufactured with Two Levels of Milk Proteins

  • Low-fat (< 3%)/salt(< 1%) sausages were manufactured with two levels (1, 2%) of milk proteins(whey protein and sodium caseinate) to compensate for the textural problems due to reduced fat and salt(%). The addition of two levels of milk proteins into these meat products did not affect the most physicochemical and textural properties. As compared to regular-fat counterpart, higher expressible moisture of low-fat/salt sausages were observed. In addition, low-fat/salt sausages containing more than 2% of milk proteins reduced the textural hardness and gumminess, resulting in significantly lower these values, as compared to regular-fat counterparts. These results indicated that the low-fat/salt sausages were successfully manufactured with the addition of these milk proteins at the lower than 1% to improve the textural difference, however further research will be performed to improve the water holding capacity in these products.

Plasma Antioxidant Status and Platelet Antionxidative Enzyme Activities in Patients of Ischemic Heart Disease (허혈성심질환에서의 항산화영양소 상태와 혈소판 항산화계효소 활성에 관한 연구)

  • To investigate antioxidant status and platelet antioxidative enzyme activity in patients with ischemic heart disease, 36 male patients admitted to Kyungpook National University Hospital from June to December 1994 were compared to 36 healthy male control subjects. The percentages of heavy smoking and nonexercise were significantly higher in the patient group compared to the control, but the drinking status was not significantly different between groups. Food habit and food frequency scores were significantly lower in patients than in control subjects. Plasma retinol levels tended to be lower in the patient group, and plasma $\alpha$-tocopherol and $\beta$-carotene levels were not different between groups. There was no difference in the level of plasma thiobarbituric acid reactive substances(TBARS) and in the activities of platelet glutathione peroxidase and catalase. Our results indicate that oxidative stress, which is reflected by the plasma levels of antioxidants and TBARS, did not increase in the patients with ischemic heart disease, and the long-term effects due to smoking, poor food habit and other life styles could possibly contribute to the onset of the disease.

Korean Learners' Development of English Passive Constructions

  • This study investigates how Korean speakers develop their interlanguage of English passive constructions with a reference to the learners' grammar proficiency levels. Sixty two college students of different levels of English participated in this study. They were asked to complete a sentence-completion task. Their production was classified into accurate passives, malformed passives, pseudo-passives, unaccusatives, and actives according to the use of transitive, ergative and unergative verbs. They then were further analyzed depending on the subjects' levels of grammar by three main factors: L1 transfer, the English voice system, and universal cognitive factors. The results showed that the subjects of the lower group produced more pseudo-passives, malformed passives, and overpassivization than those of the higher group, and even subjects of higher group still made passives for ergative verbs. It was also shown that L1 and universal factors had more influence on the lower group than on the higher group. Based on the analyses of the subjects' responses, the development of the English passive system by Korean learners is shown and some implications are suggested for effective teaching of English.

Analysis of Intramolecular Electron Transfer in A Mixed-Valence Cu(Ⅰ)-Cu(Ⅱ) Complex Using the PKS Model

  • The transition probabilities for the thermal intramolecular electron transfer and the optical intervalence transfer band for a symmetric mixed-valence Cu(I)-Cu(II) compound were used to extract the PKS parameters $\varepsilon$ = -1.15, ${\lambda}$ = 2.839, and ${\nu}g$- = 923 $cm^{-1}$. These parameters determine the potential energy surfaces and vibronic energy levels. Three pairs of vibrational levels are below the top of the energy barrier in the lower potential surface. The contribution of each vibrational state to the intramolecular electron transfer was calculated. It is shown that the three pairs of vibrational states below the top of the barrier are responsible for most of the electron transfer at 261-306 K. So the intramolecular electron transfer in this system is a tunneling process. The transition probability exhibits the usual high-temperature Arrhenius behavior, but at lower temperature falls off to a temperature-independent value as tunneling from the lowest levels becomes the limiting process.

A Theoretical Treatment of the Resonances in the Predissociation of Lower Rovibrational Levels of the $A^2\Sigma^+$ State of OH

  • An exact quantum mechanical theory is employed to treat predissociation process of the $A^2{\Sigma}^+$ state of OH. The widths and positions of the lower (v= 2 and v= 3) rovibrational levels are calculated. Energy shifts of the resonances from the zeroth order (pure Hund'scase (b)) positions are shown to be small for N $\leq$ 10, indicating that the $A^2{\Sigma}^+$ state can be described as case (b) very well for low N. Due to the differential interactions of the $A^2{\Sigma}^+_{1/2}$ and $A^2{\Sigma}^+_{-1/2}$ states with $X^2II$and $2^2II$ states, small splittings between the $F_1$ and $F_2$ levels are predicted. Calculated lifetimes of the resonances agree with experimental results reasonably well.

Plastic Deformation Behavior of Ti-51.5at.%Ni Shape Memory Alloy Single Crystals (Ti-51.5at.%Ni 형상기억합금 단결정의 소성변형 거동)

  • Deformation behavior of nickel-rich Ti-51.5at.%Ni single crystals was investigated over a wide range of temperatures(77 to 440K) and strain levels(up to 9%) in compression. These alloys combined superior strength with wide range of pseudoelasticity temperature interval(~200K). The slip deformation in [001] orientation did not occur due to the prevailing slip system, and consequently, exhibited pseudoelastic deformation at temperatures ranging from 77 to 283K and 273 to 440K for the solutionized and over-aged cases, respectively. The critical transformation stress levels were in the range of 800 to 1800MPa for the solutionized case, and 200 to 1000MPa for the over-aged case depending on the temperature and specimen orientation. These stress levels are considerably higher compared to these class of alloys having lower Ni contents. The maximum transformation strains, measured from incremental straining experiments in compression, were lower compared to the phenomenological theory with Type II twinning. A compound twinning model depending on the successive austenite(B2) to intermediate phase(R) to martensite(B19') transformation predicts lower transformation strains compared to the Type II twinning case.

Evaluation of Nutritional Quality of Packaged MealsProduced by Packaged Meal Manufactures in Seoul and Kyungki-do (시판 도시락의 영양평가 및 품질관리 방안에 관한 연구)

  • To investigate the nutritional quality of packaged meals produced by packaged meal manufactures, a nutritional evaluation was conduced. Samples examined in this study were 95 Products which composed of 86 Doraks, 7 Kimplabs and 2 Yubuchopabs Produced in packaged meal manufactures in Seoul City and Kungki-do province The distribution of food groups showed that amounts of animal foods were abound, but amounts of green vegetables, limited in Dosirak comparing to one meal RDA levels. Amounts of meats, fishes and shells are increased more than amounts of egged and legumina with increase of price of Dosirak. The total kinds of food and the amounts of certain food in Kimpab and Yubuchopab were lower than Dosirak. The energy and protein contents of Dosirak were found to be higher than one meal RDA levels, with exception of protein content in Dosirak of the price 1000 won. The contents of energy and protein in Kimpab and Yubuchopab are less than one meal RDA levels. Calcium and iron contents in Dosirak, and calcium content in Yubuchopab were present in excess compared to the one meal RDA. However, In Kimpab, calcium and iron contents were lower than the one meal RDA. On the whole, vitamin contents of Dosirak were sufficient whereas vitamin contents of Kimpab and Yubuchopab were lower than the one meal RDA. Number of side dishes used in Dosirak were 6-23 items depending on prices. Guidelines were suggested for effective nutritional quality control of packaged meals.

Detection Characteristics of Blood Lipid Lower Agents (BLLAs) in Nakdong River Basin (낙동강 수계에서의 고지혈증 치료제 검출 특성)

  • The aims of this study were to investigate and confirm the occurrence and distribution patterns of blood lipid lower agents (BLLAs) in Nakdong river basin (mainstream and its tributaries). 4 (atorvastatin, lovastatin, mevastatin and simvastatin) out of 5 statins and 2 (clofibric acid and zemfibrozil) out of 3 fibrates were detected in 29 sampling sites and simvastatin (>50%) was predominant compound followed by atorvastatin, lovastatin and clofibric acid. The total concentration levels of BLLAs on April, August and November 2009 in surface water samples ranged from ND~25.7 ng/L, ND~18.8 and ND to 38.8 ng/L, respectively. The highest concentration level of BLLAs in the mainstream and tributaries in Nakdong river were Goryeong and Jincheon-cheon, respectively. The sewage treatment plants (STPs) along the river affect the BLLAs levels in river and the BLLAs levels decreased with downstream because of dilution effects.

Effects of Dietary Cu Levels and Kinds of Dietary Lipid on the Lipid Metabolism in Rats (식이내 Cu의 수준과 지방의 종류를 달리 하였을때 흰쥐의 체내 지방대사에 미치는 영향)

  • This study was performed to investigate the effects of different levels of Cu(0,6,60 ppm ) and kinds of lipid(corn oil, sesame oil or butter) in the diet upon lipids metabolism and Cu & Fe contents in weanling rats. The results obtained were summarized as following : 1) Food consumptions, total body weight gains and F.E.R.s showed no significant differences among groups with different dietary Cu levels and the kinds of lipid. 2) Weights of liver, hind limb muscle, kidney, spleen and epididymal fat pad showed no significant differences among groups. 3) The contents of total lipids and total cholesterols in serum, hind limb muscle were significantly higher in low Cu groups than in control and high Cu groups. But the contents of total lipid in liver were significantly lower in low Cu groups than in other groups. 4) The contents of total lipid and total cholesterol in serum, liver and total lipid in muscle were significantly higher in butter groups, but the contents of total cholesterol in muscle were significantly lower in butter groups. 5) The Cu concentrations in serum, liver, muscle and feces were significantly higher in high Cu groups than in control and low Cu groups. The Fe concentrations in serum tended to be lower and those in muscle were significantly higher in low Cu groups.

Effects of Dehairing Methods and Sex on Pork Quality and Boar Taint Compound Levels in Tissues

  • The objective of this study was to investigate the effects of dehairing methods and sex on various traits of pork quality, as well as on tissue levels of the boar taint compounds androstenone and skatole. At the early postmortem period, dehided pigs showed higher muscle pH levels (p<0.05), lower temperatures (p<0.05) and lower drip loss (p<0.001) than scalded pigs. Thus, the dehairing method can affect the early postmortem glycolytic rate and water-holding capacity. Moreover, the differences in meat quality traits between the genders were small, and not considered to have practical importance. The scalding method had only a limited effect on the androstenone content. On the other hand, the scalded entire males exhibited a lower content of skatole than the dehided entire males (p<0.01). These results appear to indicate that the heating treatment from the scalding process influenced the reduction of skatole content for the scalded entire males.
