비선호 부위 소고기의 저온처리에 의한 품질향상 및 소고기의 숙성효과 (Quality improvement and aging effect of beef by low-temperature treatment of non-preferred parts of beef)

  • 본 연구에서는 1++등급 소고기에 비해 1등급 저온처리 및 숙성기간에 따른 소고기의 품질향상 및 숙성효과를 시도하였다. 1++등급 소고기의 지방함량과 전단력은 13.03%와 114.26N이었으나, 1등급 소고기는 3.21%와 149.67N이었다. 한편, 1등급 소고기를 -26℃에서 12시간 저온처리하고 0℃에서 14일간 저온 숙성한 결과 전단력은 87.85N으로 크게 감소하였으며 전체적인 기호도, 부드러움, 다즙성, 풍미 및 씹는 질감는 향상되었다. 필수 유리아미노산 함량은 1++ 등급 소고기에서 22.17mg/100g으로 낮았으나 1등급 3개 시료에서 41.31~45.11 mg/100g으로 함량이 높았으며, 저온처리에 따른 함량 변화는 없었다. 소고기의 특정 성분으로 타우린은 30.94~34.41 mg/100g으로 소고기 등급에 따른 함량차이는 적었지만 Anserine과 Creatine은 19.68 mg/100g, 소고기 1++등급은 70.01 mg/100g으로 낮았다. 단일불포화지방산/포화지방산 비율로서의 올레산(c18:1)/스테아르산(c18:0)의 함량비는 1++등급 소고기는 5.29로 낮았으나 1등급 쇠고기는 6.13~6.78로 높았다. 또한 1등급 소고기는 저온처리 조건 및 숙성기간에 따른 이들 지방산의 함량비에 변화가 없었다. 본 연구 결과, -26℃에서 12시간 동안 저온 처리한 후 0℃에서 14일 동안 숙성함으로써 1등급 소고기의 품질을 향상시킬 수 있었다.

Isolation of Debaryomyces hansenii and selection of an optimal strain to improve the quality of low-grade beef rump (middle gluteal) during dry aging

  • Objective: The objective of this study was to evaluate the effect of Debaryomyces hansenii isolated from dry-aged beef on the tenderness and flavor attributes of low-grade beef during dry aging. Methods: Five D. hansenii strains were isolated from dry-aged beef samples. The rump of low-grade beef was inoculated with individual D. hansenii isolates and subjected to dry aging for 4 weeks at 5℃ and 75% relative humidity. Microbial contamination levels, meat quality attributes, and flavor attributes in the dry-aged beef were measured. Results: Of the five isolates, the shear force of dry-aged beef inoculated with SMFM201812-3 and SMFM201905-5 was lower than that of control samples. Meanwhile, all five isolates increased the total free amino acid, glutamic acid, serine, glycine, alanine, and leucine contents in dry-aged beef. In particular, the total fatty acid, palmitic acid, and oleic acid contents in samples inoculated with D. hansenii SMFM201905-5 were higher than those in control samples. Conclusion: These results indicate that D. hansenii SMFM201905-5 might be used to improve the quality of beef during dry aging.

Effect of Modified Atmosphere Packaging and Vacuum Packaging on Quality Characteristics of Low Grade Beef during Cold Storage

  • Many studies have been carried out with respect to packaging methods and temperature conditions of beef. However, the effects of packaging methods and temperature conditions on the quality characteristics have not been extensively studied in low-grade beef. Low-grade beef samples were divided into 3 groups (C: ziplock bag packaging, T1: vacuum packaging, and T2: modified atmosphere packaging (MAP), $CO_2/N_2$ = 3:7) and samples were stored at $4^{\circ}C$ for 21 days. The water-holding capacity (WHC) was significantly lower in T1 than in the other samples up to 14 days of storage. The thiobarbituric acid reactive substances and volatile basic nitrogen values were significantly lower in T1 and T2 than in C after 7 to 14 days of storage. The total bacterial counts were significantly lower in T1 and T2 than in C after 14 days of storage. In a sensory evaluation, tenderness and overall acceptability were significantly higher in T1 and T2 than in C at the end of the storage period (21 days). We propose that the MAP method can improve beef quality characteristics of low-grade beef during cold storage. However, the beneficial effects did not outweigh the cost increase to implement MAP.

A combination of postmortem ageing and sous vide cooking following by blowtorching and oven roasting for improving the eating quality and acceptance of low quality grade Hanwoo striploin

  • Objective: It is well recognized that beef cuts from a low quality grade are usually associated with tougher, drier and less flavorful. Thus, the present study aimed at investigating the combined effects of postmortem ageing and sous vide (SV) cooking followed by oven roasting or blowtorching on the eating quality of low quality grade Hanwoo beef striploins. Methods: Hanwoo beef striploins (quality grade 3) obtained from 36 month-old Hanwoo steers were used, and the samples were chiller aged for 0 and 14 d at 4℃. After ageing, the samples were prepared into 2.5-cm steaks which were then SV cooked at 55℃ for 5 h and then raised to 60℃ for 1 h, and thereafter the SV-cooked the steaks were further roasted in oven for 20 min (SV+OV) or blowtorched (SV+TC) for 2 min. The cooked samples were analyzed for microbiological quality, browning index, Wanrner-Bratzler shear force (WBSF), aroma flavor compounds and sensory properties. Results: The SV cooking significantly reduced the WBSF values in beef samples (p<0.05). Blowtorching after SV cooking led to a browner surface of the beef steaks (p<0.05). The samples treated with SV+OV or SV+TC exhibited higher levels of Maillard reaction-derived aroma flavor compounds such as; pyrazines and sulfur-containing compounds compared to those just SV cooked. More especially, the SV+OV- or SV+TC- treated samples presented significantly higher flavor and overall acceptability scores compared to those just SV cooked (p<0.05). Ageing beef for 14 d significantly improved the tenderness by reducing the WBSF and increasing the tenderness scores. Conclusion: Thus, the combination of postmortem ageing and SV cooking followed by additional treatments (blowtorching or oven roasting) could be used to improve the eating quality especially tenderness and flavor as well as overall acceptability of low grade Hanwoo beef.

상등급과 등외등급 쇠고기의 기호특성 비교 (Comparison of the Palatability Related with Characteristics of Beef Carcass Grade B2 and D)

  • 도축 후 24시간 냉장한 상등급(B2 등급)과 등외등급(D 등급) 쇠고기 지육에서 등심부위를 분할하여 두 쪽으로 나누어 한 쪽은 랩으로 싸서 1일간 냉장하고, 다른 한 쪽은 500g씩 자르고 진공포장하여 30일간 냉장하여 전자는 신선육, 후자는 냉장육이라 하였다. 상등급육과등외등급육의 기호특성을 비교하고 등외등급육의 냉장효과를 알아보기 위하여 신선육과 냉장육의 색도, 연도, ATP 관련물질, 지방산 조성 및 관능평가에 대한 실험을 하였다. 신선육의 경우 상등급육이 등외등급육에 비하여 pH. 젖산함량, 미오글로빈 함량이 낮고 표면색이 우수하였다. 상등급육은 경도와 저작성이 낮으면서 근원섬유 소편화도가 높아 연한 현상을 보였다. 상등급육은 포화지방산 함량이 낮고 단일 불포화지방산에 대한 포화지방산의 비율(MUFA/SFA)과 ATP 함량이 높고, 생육향이 우수하였다. 상등급육은 가열감량 및 가열단축도가 낮은 반면 가열육의 기호성이 현저히 우수하였다. 등외등급육은 상등급육에 비해서 경도, 저작성, 근원섬유 소편화도 및 MUFA/SFA에 대한 냉장효과가 크게 나타났다. 그러나 냉장육의 연도, 가열육 향 그리고 기호성이 등외등급육에 비해 상등급육이 현저히 우수하였다.

Microbial, Physicochemical, and Sensory Characteristics of Quality Grade 2 Beef Enhanced by Injection of Pineapple Concentrate and Honey

  • This study investigated the effect of injecting pineapple concentrate and honey into low marbled beef in order to enhance its sensory qualities, particularly tenderness and flavor, without compromising its fresh appearance. Beef loin was injected with a solution of 6.0% pineapple concentrate, 2.5% honey, 0.5% monosodium L-glutamate, 0.5% phosphate, and 0.3% salt (w/w) to 120% (w/w) of initial meat weight and stored for 14 d. Non-injected beef loin served as a control. Total aerobic bacterial counts, surface meat color, shear force, reducing sugar content, and sensory evaluation of the beef were analyzed at 0.5, 7, and 14 d of storage. Injection did not affect the total aerobic bacterial counts or color of the beef. However, injection increased the stability of meat color, compared with that of the control, during storage. The shear force value was significantly lower in the injected beef than that in the control. The injected beef had a significantly higher reducing sugar content compared with that of the control. In sensory evaluation, tenderness, juiciness, flavor, and overall acceptance of the injected beef were significantly higher than those of the control at 0.5 d. In conclusion, injection of pineapple concentrate and honey can improve the sensory qualities of low marbled beef, during short storage periods, without changing the fresh appearance of the beef.

고급 및 저급 한우육의 저장중 품질 특성 (Quality Characteristics of High and Low Grade Hanwoo Beef During Storage at $1^{\circ}C$)

  • $1^+$등급과 3등급의 우육안심을 함기포장한 후 $1^{\circ}C$에서 저장하면서 이화학적, 미생물학적 품질변화를 측정하였다. 조지방의 경우 $1^+$등급 우육이 3등급 우육에 비해 높은 지방함유율을 나타내었고, 냉장중 조지방의 변화는 저장초기부터 저장 21일째까지 뚜렷한 변화는 관찰되지 않았다. 수분함량의 경우 $1^+$등급 우육이 3등급 우육에 비해 낮게 나타났으며 $1^+$등급과 3등급 우육의 저장기간 동안 수분 함량은 뚜렷한 변화를 나타내지 않았다. $1^+$등급 우육의 총균수는 저장 21일째 약 $10^6\;CFU/cm^2$ 이하를 나타낸 반면 3등급 우육은 $10^8\;CFU/cm^2$을 나타내었다. 휘발성 염기태 질소 함량(VBN)은 저장기간 동안 $1^+$등급 우육에 비해 3등급 우육이 높게 나타났다. drip 발생량은 저장 14일째 $1^+$등급, 3등급 우육 각각 4.19%와 6.06%로 3등급 우육의 drip량이 현저히 높게 나타났다. a 값과 b값은 저장 전기간 동안 $1^+$등급 우육이 3등급 우육에 비해 높은 값을 나타내었고, b 값은 저장 21일째까지 b 값은 저장기간이 경과할수록 낮아지는 경향을 나타내었으나 저장 28일째의 $1^+$등급 우육과 3등급 우육은 각각 3.83, 2.60의 b 값 을 나타내어 저장 초기의 4.42, 3.22보다는 b 값이 감소하였으나 유의적인 차이(p<0.05)는 관찰되지 않았다.

Sensory Quality and Histochemical Characteristics of Longissimus Thoracis Muscles between Hanwoo and Holstein Steers from Different Quality Grades

  • This study compared the meat quality characteristics, palatability, and histochemical characteristics of low-marbled Hanwoo and Holstein steers of different beef quality grades (1, 2, and 3). No differences were observed in muscle pH24 h and cooking loss between the groups (p>0.05); however, quality grade 1 of Hanwoo steers (HA1) showed a darker muscle surface compared to grade 1 of Holstein steers (HO1) (30.9 vs. 33.9, p<0.05). The HA2 group exhibited a lower value of Warner-Bratzler shear force compared to the HO1 and HO3 groups (60.8 vs. 69.2 and 87.8 N, p<0.001). For sensory quality attributes, steaks from the HA1 group showed higher scores of softness, initial tenderness, and amount of perceptible residue than steaks from the HO1 group (p<0.001). Within the quality grade 2, Hanwoo steers had a higher score of softness compared to Holstein steers (p<0.001). There were no differences in juiciness and flavor intensity between Hanwoo and Holstein steers at the same quality grade (p>0.05). This difference in tenderness attributes between the breeds within the quality grade was associated with morphological traits of muscle bundle, and Hanwoo steers had smaller bundle area (0.37 vs. 0.50 mm2, p<0.05) and higher fiber number per bundle (88.2 vs. 121, p<0.05) compared to Holstein steers. Therefore, bundle characteristics of longissimus thoracis muscle can be crucial for explaining factor for the explanation of tenderness variations between different breeds at the same beef quality grade or marbling.

Effects of Dry- and Wet-ageing on Flavor Compounds and Eating Quality of Low Fat Hanwoo Beef Muscles

  • The present study aimed at investigating the effects of dry- and wet-aging methods on flavor compounds and sensory properties of low fat Hanwoo beef muscles. All the beef samples were obtained from 2-grade carcasses of Hanwoo cows. The beef samples used in the dry- and wet-aging methods were prepared in the forms of quarter beef (bone-in) and cuts (boneless), respectively. The dry-aging was carried out at $2^{\circ}C-4^{\circ}C$ and humidity of 65%-85%, while the wet-aging was done at $1^{\circ}C$ for 0, 20, 40, and 60 d. At each aging time, three muscles: longissmus thoracis (LT), glutaeusmedus (GM) and semimembranosus (SM) were taken from the corresponding quarters and cuts, and used for the flavor compounds and sensory analyses. Results showed that both aging methods significantly increased the concentrations of flavor compounds and total amount of all classes of the flavor compounds as the aging time increased (p<0.05). In the dry-aging method, the GM and SM muscles presented significantly higher total amounts of pyrazines and sulfur-containing compounds compared to the LT muscle (p<0.05). Both the aging methods improved the eating quality attributes, indicating by increased scores of sensorial attributes with increased aging time for all the muscles studied (p<0.05). However, compared to the wet-aging, the dry-aging method resulted in significantly higher scores of tenderness and flavor for the GM and SM muscles after 40 to 60 d. Thus, postmortem aging, especially the dry-aging method could be used to improve eating quality attributes (tenderness and flavor) of low fat beef muscles such as GM and SM.

Fatty acid compositions, free radical scavenging activities, and antioxidative enzyme activities of high-preference and low-preference beef cuts of Hanwoo (Bos taurus coreanae) cows

  • Objective: This study compared fatty acid compositions and antioxidant activities of high-preference cuts (loin, tenderloin, and rib) and low-preference cuts (brisket, topside, and shank) of Hanwoo (Bos taurus coreanae) cows to obtain potentially useful information for promoting the consumption of various low-preference cuts. Methods: Individual 500 g samples of fresh beef were collected from each of the six cuts from 10 Hanwoo cows (quality grade 1) and immediately freeze-dried. The dried samples were evaluated for fatty acid composition, free radical scavenging activities (hydroxyl, alkyl, and 2, 2'-diphenyl-1-picrylhydrazyl [DPPH] radical), and antioxidative enzyme activities (glutathione peroxidase [GPx], glutathione-S-transferase [GST], and superoxide dismutase [SOD]). Results: The percentages of total polyunsaturated fatty acids were significantly higher in low-preference cuts than in high-preference cuts (p<0.05). Hydroxyl, alkyl, and DPPH radical scavenging activities were significantly higher in low-preference cuts than in high-preference cuts (p<0.05). In addition, the activities of antioxidant enzymes, such as GPx, GST, and SOD, were significantly higher in low-preference cuts compared with high-preference cuts (p<0.05). Conclusion: These results may influence consumers to include more low-preference cuts in their selections based on the nutritional facts, which could help to balance the beef market in South Korea.
