Prevalence of Metabolic Syndrome and Related Risk Factors of Elderly Residents in Andong Rural Area 2. Based on the Biochemical Measurements and Nutrient Intakes (안동 농촌지역 중년 및 노인 주민의 대사증후군 유병율과 관련 위험요인 분석 2. 생화학 측정결과와 영양소 섭취를 중심으로)

  • This study was performed to identify the association between the metabolic syndrome and the biochemical measurements and nutrient intakes. A total of 1,431 people (533 males, 898 females) aged over 45 years living in Andong rural area participated in this study in 2003. Plasma aspartate aminotransferase (AST), alanine aminotransferase (ALT), $\gamma$-glutamyl transferase ($\gamma$-GT) and thiobarbituric acid reactive substances (TBARS) levels in metabolic syndrome were significantly higher than those in normal group. In multiple logistic regression, those biochemical measurements were found to be positively associated with the metabolic syndrome as the adjusted odds ratios (OR) 1.839 (p<0.001) by AST, 2.302 (p<0.01) by ALT, 2.143 (p<0.001) by $\gamma$-GT, and 1.874 (p<0.001) by TBARS. We also found that the increased level of those measurements tended to be strongly associated with high triglyceride among the metabolic syndrome components. However, the nutrient intakes between the metabolic syndrome and the normal group were not significantly different. Also, we could not find any nutrient intakes significantly associated with the metabolic syndrome, except high carbohydrate intake (>70% of kcal) compared to normal intake (55~70% of kcal) showed OR 0.781 (p<0.05). In analyzing the association of nutrient intakes with metabolic syndrome components, we found that the calorie intake was negatively associated with abdominal obesity (OR 0.696, p<0.05) and high fat intake (>25% of kcal) was positively associated with low HDL-cholesterol (OR 1.864, p<0.05). This study revealed that the biochemical measurements, such as plasma AST, ALT, $\gamma$-GT, and TBARS, are associated with metabolic syndrome, but considering the nutrient intakes, we suggest that further studies are needed to identify the associations.

  • Turanose is a potential candidate for use as a functional sweetener because of its gentle taste, low calorie, and non-cariogenicity. The aim of this study was to replace sucrose with turanose to produce health-beneficial maesil-cheong. Quality effects of turanose on maesil-cheong were evaluated by determining the contents of free sugars, organic acids, amygdalin, and antioxidant activity. The pH and Brix values of sucrose- and turanose-based maesil-cheong remained at the same level between 2.83 and 3.00 and 54.6-58.6°Bx, respectively, after 90-day storage. Among oxalic, malic, and citric acids, citric acid content was the highest in both maesil-cheong samples. Turanose did not significantly hydrolyze in maesil-cheong, whereas sucrose was completely hydrolyzed to glucose and fructose. Thus, turanose is suitable for the development of acidic maesil-cheong to improve its health promoting effect. Turanose showed product qualities similar to sucrose-based maesil-cheong. Turanose can be used as a functional sweetener or bulking agent in processed foods.

  • This is the mass study in Human Nutrition which deals with the dietary servey of 360 woman's college students who lived in the dormitory from September 1967 to June 1968. Only those subjects in apparent good health were included and food intake for 7 day was studied at each season respectively. Ages of the subjects ranged from 17 to 24 years old. Of all the subjects, 70 percent were found among the students 19, 20 and 21 years of age. The caloric intake of subjects was generally low at each respective season. Among them the highest level of caloric intake occured in the spring. The other season, in order of caloric intake were summer, automn and with the lowest number of calories, Winter. The amount of nutrients for each season indicated the same seasonal rank-spring, summer, automn and winter-as was found for the caloric intakes. The protein level was near the recommended dietary allowences given by the Nutrition Committee of the F. A. O. in Korea. About one third to half of the proteins came from animal sources. The intake of calcium and of vitamin A in winter was distinctly lower than that of the other seasons. Vitamin C and niacin were comparatively higher than the recommended allowences. With the exception of winter, the intake of vitamin $B_1\;and\;B_2$ was reasonable. The major reason for the different amount of food intake at each season especially during winter, related directly to the quality of foods available and the possibilitie for a varied menu. Another reason for the differences was the fact that some of the subjects occasionally had their meals or snacks outside of the dormitory because they did not have enough food at meal time. However, another reason for this fact was that the majority of the subjects prefered to change their routine once in a while and have a meal or snack outside the institution.

Effect of Feeding High Carbohydrate-Low Fat Fermented Feed on the Meat Quality Characteristics in Finishing Pigs (저탄수화물 고지방 발효사료 급여가 돈육의 육질 특성에 미치는 영향)

  • A total of ninety swine ($79.0{\pm}2.2\;kg$) were employed for 58 d to determine the meat quality of pigs fed fermented agricultural by-products (FAB) mainly consisting of brewers grain shell. FAB was replaced with commercial feed at dietary levels of 20%, 40%, 60%, 80%, and 100% (T1) and 30%, 60%, 100%, 100%, and 100% (T2) at 1, 2, 3, 4 and 5-9 wk, respectively. Compared with the control (CON) feed, FAD feed had lower moisture and nitrogen-free extract content, and higher crude fat, crude fiber, and total calorie (p<0.05). The protein content, amino acid profile, and pH values of pork loin were not affected by dietary treatment. However, higher moisture, crude ash, and meat cholesterol, and lower fat, were found in CON compared with treatment (p<0.05). FAB treatment significantly improved drip loss and cooking loss value (p<0.05), and increased the CIE $L^*$ values of loin and back-fat surface, whereas it decreased the CIE $a^*$ values of loin surface (pp<0.05). The results indicate that dietary FAB affected meat cholesterol and fat content, and improved drip loss and cooking loss, but had no affect on amino acid composition.
