한우 도체형질 및 도체 일반성분 유전모수 추정 (Estimates of Genetic Parameter for Carcass Traits and Chemical Composition Analysis in Hanwoo)

  • 본 연구의 목적은 한우 도체형질과 등심에 대한 일반성분(수분, 조지방, 조단백질, 조회분) 분석을 통한 등심의 영양학적 가치와 유전모수 추정을 통한 개량형질 적용 가능성을 확인하기 위하여 실시하였다. 본 연구에 이용된 공시 재료는 한우 후대검정우 47차부터 57차까지 실시한 2,033두에 대하여 등심 1kg을 시료를 채취하여 분석한 자료를 이용하였다. 연구결과 한우 도체형질인 도체중, 등심단면적, 등 지방두께, 근내지방도에 대한 유전력은 각각 0.37, 0.51, 0.44, 0.57로 추정되었으며, 일반성분 분석인 수분, 조지방, 조단백질, 조회분에 대한 유전력은 각각 0.62, 0.64, 0.58, 0.12로 추정되었다. 그리고, 도체형질과 일반성분간의 유전상관은 도체중과 조지방에서 0.35, 근내지방도와 수분, 조지방, 조단백질, 조회분에서 각각 -0.966, 0.964, -0.924, -0.664으로 고도의 유전상관을 보였다. 수분과 조지방, 조단백질간의 유전상관은 각각 -0.998, 0.969로 분석되었으며, 조지방과 조단백질에서 -0.979로 고도의 유전상관을 보였다. 일반성분 분석치인 수분, 조지방, 조단백질에서 고도의 유전력을 보였으므로, 개량형질 이용 가능성이 있을 것으로 사료된다.

Effects of Morphological Characteristics of Muscle Fibers on Porcine Growth Performance and Pork Quality

  • The aim of this study was to investigate the effects of morphological characteristics of porcine muscle fibers on growth performance, muscle fiber characteristics, and pork quality taken from the longissimus dorsi muscle. A total of 239 crossbred pigs (164 castrated males and 75 females) were used in this study. Experimental pigs were categorized by the total number of muscle fiber (TNF: High and Low) and cross sectional area of muscle fiber (CSAF: Large, Middle, and Small). Their combinations were classified into six groups (High-Large, HL; High-Middle, HM; High-Small, HS; Low-Large, LL; Low-Middle, LM; Low-Small, LS). The TNF and CSAF were significantly (p<0.05) correlated with growth rate and carcass productivity, while the only of the type I number had no meaningful relationships excluding the correlation with loin area (p<0.001). The proportion of type I area was positively correlated with pH45 min while the proportion of type IIB area was negatively correlated with pH45 min and pH24 h (p<0.05). Drip loss and protein denaturation had strong relationships with the proportion of type IIB number or area. The HL group exhibited the greatest growth performance. In addition, the HL group had significantly greater values in protein solubility than the other groups. In conclusion, this study suggest that high TNF combined to large CSAF improve the ultimate lean meat productivity and assure normal meat quality simultaneously with increased both proportion of number and area of type I, type IIA muscle fibers and lowered proportion of number and area of type IIB.

Breeding potential for pork belly to the novel economic trait

  • Pork is known as one of the preferred part of meat worldwide. Especially, the belly, known as 'Samgyeopsal' in South Korea, has been preferred by consumers in South Korea. Pork belly contained various component muscles, intermuscular and subcutaneous fat. The high-fat belly cut (containing 50%-60% fat ratio) has a low preference in South Korea whereas, the standard belly cut (20%-40% fat ratio) of the consumer preference was different. In addition, the evaluation system focused on lean meat production, represented by loin eye area and back fat thickness. In this review, we discussed the pork belly structure, phenotypic correlation with lean meat production ability and meat quality, and genetic potential to confirm to possibility of application to pig breeding. Moreover, the confirmed possibilities considered that could be a base on the evaluation of standard for the pork belly as an economic trait.

Effect of Inorganic and Organic Trace Mineral Supplementation on the Performance, Carcass Characteristics, and Fecal Mineral Excretion of Phase-fed, Grow-finish Swine

  • Concentrated livestock production has led to soil nutrient accumulation concerns. To reduce the environmental impact, it is necessary to understand current recommended livestock feeding practices. Two experiments were conducted to compare the effects of trace mineral supplementation on performance, carcass composition, and fecal mineral excretion of phase-fed, grow-finish pigs. Crossbred pigs (Experiment 1 (Exp. 1), (n = 528); Experiment 2 (Exp. 2), (n = 560)) were housed in totally-slatted, confinement barns, blocked by weight, penned by sex, and randomly assigned to pens at approximately 18 kg BW. Treatments were allocated in a randomized complete block design (12 replicate pens per treatment) with 9 to 12 pigs per pen throughout the grow-finish period. In Exp. 1, the control diet (Io100) contained Cu as $CuSO_{4}$, Fe as $FeSO_{4}$, and Zn (of which 25% was ZnO and 75% was $ZnO_{4}$) at concentrations of 63 and 378 mg/kg, respectively. Treatment 2 (O100) contained supplemental Cu, Fe, and Zn from organic sources (Bioplex, Alltech Inc., Nicholasville, KY) at concentrations of 19, 131, and 91 mg/kg, respectively, which are the commercially recommended dietary inclusion levels for these organic trace minerals. Organic Cu, Fe, and Zn concentrations from O100 were reduced by 25% and 50% to form treatments 3 (O75) and 4 (O50-1), respectively. In Exp. 2, treatment 5 (Io25) contained 25% of the Cu, Fe, and Zn (inorganic sources) concentrations found in Io100. Treatment 6 (O50-2) was identical to the O50-1 diet from Exp. 1. Treatment 7 (O25) contained the experimental microminerals reduced by 75% from concentrations found in O100. Treatment 8 (O0) contained no trace mineral supplementation and served as a negative control for Exp. 2. In Exp. 1, tenth-rib backfat, loin muscle area and ADG did not differ (p>0.05) between treatments. Pigs fed the control diet (Io100) consumed less feed (p<0.01) compared to pigs fed diets containing organic trace minerals, thus, G:F was greater (p = 0.03). In Exp. 2, there were no differences among treatment means for loin muscle area, but pigs fed the reduced organic trace mineral diets consumed less (p<0.05) feed and tended (p = 0.10) to have less tenth-rib backfat compared to pigs fed the reduced inorganic trace mineral diet. Considering that performance and feed intake of pigs was not affected by lower dietary trace mineral inclusion, mineral excretion could be reduced during the grow-finish phase by reducing dietary trace mineral concentration.

한우의 성장 및 도체형질에 대한 유전모수 추정 (Genetic Parameter Estimation on the Growth and Carcass Traits in Hanwoo(Korean Cattle))

  • 본 연구는 농협중앙회 가축개량사업소가 보유하고 있는 1998년부터 2005년까지 실시한 한우 당대검정 대상우 2,532두의 자료와 1996년부터 2002년까지 실시한 한우 후대검정 대상우 1,819두의 자료를 이용하여 당대 및 후대의 형질을 다형질 개체모형을 이용하여 유전모수를 추정하였다. 적합한 통계분석모형을 찾기 위하여 각 형질별로 회귀분석을 통한 변수선택방법으로 고정효과와 공변량을 결정하고, MTDFREML 패키지를 이용하여 유전모수를 추정하였다. 분석형질은 등지방두께, 도체중, 도체율, 등심단면적, 근내지방도 및 12개월령 체중으로, 이들의 유전력은 각각 0.51, 0.32, 0.27, 0.33, 0.50 및 0.26로 나타났다. 한편 유전평가에서 제외되었던 등지방두께 및 도체율의 유전력이 각각 0.51 및 0.27으로 추정되어 이에 대한 선발이 가능할 것으로 나타났다. 특히 등지방두께는 현 육량지수 산출식에서 그 영향력이 매우 크므로 한우보증씨수소 선발지수에 포함하는 방안을 고려할 필요가 있을 것으로 사료된다. 도체형질간의 유전상관은 등지방두께와 등심단면적을 제외하고 모두 양의 상관을 나타났다. 그러나, 12개월령 보정체중과 도체율 및 근내지방도의 유전상관은 각각 0.09 및 0.27으로 나타나 현행 한우개량체계에서 처럼 당대검정우를 12개월령 체중으로 선발할 경우 등심단면적과 근내지방도가 우수한 개체가 탈락할 가능성이 있는 것으로 나타나 이의 보완을 위한 혈통지수의 활용방안이나 초음파단층촬영기술의 이용방법에 대한 추가연구가 필요한 것으로 사료된다.

돼지에 있어서 양적 형질 유전자좌(QTL) 발현 특성 분석을 위한 통계적 검정 모형 설정 (Designing of the Statistical Models for Imprinting Patterns of Quantitative Traits Loci (QTL) in Swine)

  • 요크셔종과 버크셔종 교배 실험 집단을 활용하여 양적형질 유전자좌 (QTL)의 발현 특성 관련 유전 양식을 조사하였다. 총 512두의 F$_2$ 자손이 F$_1$간의 65교배 조합으로부터 생산되었으며 표현형 조사 기록은 일당증제량(ADG), 평균 등지방 두께(ABF), 10번째 등뼈 부위 등지방 두께(TRF) 및 등심단면적(LEA), 최후 척추부위 등지방 두께 (LRF)였다. 125종의 유전자 표지 (microsatellite)에 대한 3세대 개체별 유전자형이 분석되었으며 이들 정보를 통하여 최소자승 회귀 모형을 이용한 interval mapping 방법을 적용하였다. QTL의 유전양식 여부 검정에 대한 절차를 도식화하기 위해 귀무가설인 통상의 벤델리안 모형에 근거를 두고 수행하였다. 경험적 다중 검정 통계량에 대한 임계치는 단일 개개의 염색체 수준과 게놈 전반에 걸친 실험수준으로 유도하였으며, permutation에 의해 유도된 임계치의 유효성을 검증하기 위해 본 연구에 활용된 실험축 집단 구조와 유사한 simulation 집단 구조에 의해 산출된 결과들과 비교하여 유효성이 인정되었다. 본 연구에 활용된 실험축 집단구조와 Genome 전반에 걸친 QTL imprinting 여부를 조사한 결과 13종의 QTL 에 대한 imprinting이 확인되었으며 이들 중 9종의 QTL 유전 양식은 부계로부터 전달된 자손에게만 발현되는 것으로 추론되었다.

  • 양적형질 유전자 좌위 (QTL)의 탐색과 이들의 발현 양상 규명을 위해 Berkshire종과 Yorkshire종 간의 교배를 통해 생산된 F$_2$ 실험집단에서 regression interval mapping이 이루어졌다. 모두 525마리의 F$_2$ 자손들에서 일당 증체량, 평균 등지방 두께, 배장근 단면적이 표현형으로 조사되어 분석에 이용되었으며 모돈의 번식능력에 관련된 QTL 존재 여부 추정을 위해 간접 형질로 인정되고 있는 생시체중과 이유 시 체중을 분석에 포함하였다. 양적형질의 분리 여부를 추론하기 위하여 돼지의 2번 염색체에서 8종의 microsatellite 표지인자가 선택되어 유전자형이 조사되었다. 각각의 유전적 모델에서 산출된 통계량으로부터 QTL 존재 여부와 특정 QTL 발현 양상에 대한 여부를 나타낼 수 있는 인정되는 수준의 type I 오차율을 제어할 수 있는 임계값 (threshold)을 permutation test에 의해 제시하였다. QTL의 존재와 그 QTL의 Imprinting 여부는 부계와 모계를 통해 원가계 1세대의 대립유전자가 전달되는 과정에서 발현되는 특성을 분리시키는 통계적 의형을 설정하여 검정 통계량을 산출하였다. 분석에 이용된 3가지 형질과 연관된 3종류의 QTL 존재 가능성을 돼지의 2번 염색체에서 확인하였으며, 이들 중 평균 등지방 두께와 배장근 단면적에 각각 영향을 미칠 것으로 추론된 2종류의 QTL 발현은 정상적인 Mendelian 유전양식을 따르지 않고 imprinting된다는 증거를 얻어냈다. 또한 이들 imprinting되는 QTL은 이미 imprinting 표현 양식을 가진다고 알려진 IGF II 유전자의 위치와 거의 동일한 염색체강의 지점에서 부계로 전달되는 QTL만이 발현되는 특징을 보이는 것으로 밝혀졌다. 한편 Mendelian 모형과 imprinting 모형 모두에서 유의적인 임계값 이상을 보이는 검정 통계량이 산출된 일당 증체량 연관 QTL은 두 모형간의 적정성 분석을 위한 검정을 퐁해 Mendelian 양식을 따른 것으로 최종 확인되었다.

Genetic parameter estimation for reproductive traits in QingYu pigs and comparison of carcass and meat quality traits to Berkshire×QingYu crossbred pigs

  • Objective: The QingYu pig is well known for its excellent meat quality attributes in Sichuan province, China. In order to improve its production efficiency, the determination of genetic factors contributing to quantifiable economic traits of livestock is important. Moreover, the cross-breeding of QingYu pigs with western breeds possessing strong growth attributes is an efficient way to improve the performance of this breed. Methods: Here, the genetic parameters of several important reproductive traits of QingYu pigs were estimated, include total number born (TNB), number born alive, litter birth weight, individual birth weight, number of piglets weaned, litter weaning weight, and individual weaning weight. The data was analyzed using the ASReml 3.0 software (NSW Inc., Sydney, Australia). Furthermore, the effects of crossing Berkshire with QingYu (BQ) pigs on carcass and meat quality traits, as well as the effects of slaughter weight on carcass and meat quality of BQ were characterized. Results: QingYu pigs exhibited superior reproductive traits. The TNB available to QingYu pigs was more than 8 per parity. The observed repeatability of the reproductive traits of the QingYu pigs was between 0.10 and 0.23. The significantly correlated genetic and phenotypic of reproduction traits were consistent. Interestingly, the BQ pigs exhibited improved carcass quality, with a significant increase in loin muscle area, lean percentage and reduction in sebum percentage. As a result, BQ had higher L45min, lower cooking scores, and lower drip loss. In addition, the loin muscle area, body length, and sebum percentage were significantly higher in 90 and 100 kg animals. Cooking loss showed a significant increase at 80 kg, and marbling increased significantly from 90 kg. Conclusion: The results of this study suggest that QingYu pigs exhibit excellent reproductive properties and heritability of these traits. Crossing with Berkshire is an efficient strategy to improve the carcass and meat quality of QingYu pigs for commercial operations. Furthermore, it appears as though the optimal slaughter weight of BQ pigs is at approximately 90 kg.

Effects of Flaxseed Diets on Fattening Response of Hanwoo Cattle : 1. Performance and Carcass Characteristics

  • Two separate trials were conducted to determine effects of dietary level of whole flaxseed (WFS; 0, 10 and 15%) on feed intake, weight gain, and carcass yield and quality of Korean Hanwoo cattle. The daily gains of bulls (Trial 1) were not different among treatment groups, but those of cows (Trial 2) fed WFS 15% were higher (p<0.01) than others. Feed intake of both bulls and cows tended to decrease as dietary level of WFS increased. However, feed conversion ratio (feed/gain) of bulls tended to be improved by dietary inclusion of WFS and was significantly improved (p<0.01) in cows by increasing level of WFS. Neither carcass weight nor dressing percentage were affected by WFS level. Back fat thickness of bulls was decreased (p<0.01) by dietary inclusion of WFS and the same trend was observed in cows without statistical significance. Loin-eye area of bulls was not different among treatment groups but was significantly higher (p<0.01) in cows fed WFS. Carcass yield and quality were not improved by WFS addition. The results indicate that WFS is an acceptable fat source in diets of finishing beef cattle to increase energy density without any adverse effects.

FRESH CASSAVA AS A FEED FOR FATTENING PIGS

  • An experiment was conducted to investigate the effects of feeding fresh cassava roots on the performance and carcass quality of pigs raised from $15{\pm}1kg$ to 85 kg live weight. Fresh unpeeled cassava roots were chopped into chips and offered separately along with a protein concentrate made up of copra cake and meat and bone meal, and a local mineral-vitamin premix. Commercial pig grower and finisher diets served as control. A total of 24 pigs were used in an incomplete randomized split-plot design experiment. Pigs fed fresh cassava-based diet grew as fast, 0.78 vs 0.77 kg/day, and were as efficient, 3.74 vs 3.77 in converting feed into body weight gain as those fed the commercial control diet. Similarly, there were no differences in carcass quality measured in terms of dressing percentage, 77 vs 77; backfat thickness, 2.76 vs 2.78 cm; loin eye muscle area, 29.2 vs $29.1cm^2$ and in the relative proportions of the different carcass cuts between the two dietary treatments. The use of fresh cassava along with the protein and the local mineral-vitamin premix however, resulted in lowered total feed cost and cost per unit of live weight gain. It is concluded that fresh cassava roots can be fed along with copra cake, meat and bone meal protein concentrate and a local mineral-vitamin premix to fattening pigs with no adverse affects on performance and carcass quality.
