THE EFFECTS OF DIETARY ENERGY ON THE TOTAL SULPHUR AMINO ACID REQUIREMENTS OF BROILERS DURING TWO GROWTH PERIODS

  • There levels of dietary ME (3,000, 3,200 and 3,400 kcal/kg) and four levels of Total Sulphur Amino Acid (TSAA) (0.73, 0.83, 0.93 and 1.03%) were studied in the starter period (0-3 wks) of the broilers. Three levels of dietary ME (3,000, 3,200 and 3,400 kcal/kg) combined with four levels of TSAA (0.65, 0.72, 0.79 and 0.86%) were studied in the grower period (3-6 wks). The crude protein content of the diet of the starter period was 23% while the diet of the grower period was 20%. The performance data of the starter broilers indicated that the dietary energy levels had no significant effects on body weight gain, feed intake and feed:gain ratio. However, TSAA levels had a significant influence on the growth and feed parameters. The response pattern for the grower period was similar to the starter period. The present experiment showed that in the tropics the TSAA requirement for the starter period was between 0.83 to 0.93% which is similar to the values recommended by NRC while for the grower period the TSAA requirement was between 0.79 to 0.86% at all the three energy levels which is higher than the values recommended by NRC.

  • Studies on the effects of protein levels on the total sulphur amino acid (TSAA) requirements of chickens were conducted on the starter broilers by feeding four levels of crude protein(16, 18, 20 and 23%) at three levels of TSAA (0.83, 0.93 and 1.03%) and on the grower broilers by feeding three levels of crude protein (16, 18 and 20%) at three levels of TSAA(0.72, 0.79 and 0.86%). The metabolisable energy of the diets was maintained constant at 3,200 kcal/kg and the experiments were carried out for two growing periods: starter (0-3 wk) and grower (3-6 wk). The results showed that there were significant differences in body weight gain, feed intake and feed:gain ratio under different protein levels of the starters. Crude protein, ME and TSAA intake were significantly affected by increasing the CP levels. The TSAA requirement of the starter broilers is recommended at 0.93% and it is not influenced by different protein levels used in the experiment. For the grower period, body weight gain and feed:gain ratio improved significantly at higher protein diets. Birds fed higher protein diet consumed greater quantities of protein. Responses to TSAA supplementation for body weight gain, feed intake and feed:gain ratio were not significant. The present results showed that the TSAA level of 0.79 to 0.86% was required for grower diets and that the protein levels of the diet did not influence the TSAA requirement.

우리밀을 이용한 Sourdough Starter 특성에 관한 연구 (A Study on the Properties of Sourdough Starters using Korean Wheat)

  • 우리밀을 이용하여 제조한 sourdough starter가 starter로 사용하기에 적합한가를 알아보기 위한 연구이다. 글루텐 함량, pH 및 TTA 측정, 발효율, mixograph, crumbScan과 관능검사를 통하여 분석하였다. 실험에 사용된 모든 우리밀은 pH의 수치가 4.0에서 4.5 사이로 나타나 sourdough starter로 사용하기에 적당하였다. KWF 5와 KWF 6은 다른 우리밀에 비하여 기공의 조밀도가 높았고, 찌그러짐의 정도가 적게 나타났다. 관능검사에서 KWF 6이 우리밀 중에서 텍스쳐와 껍질의 생상에서 좋은 평가를 받았다. 결과적으로, 비록 강력 밀가루를 사용하여 제조한 sourdough starter SF를 첨가하여 제조한 식빵인 sourdough bread SF를 관능검사 결과에서 가장 선호하는 것으로 나타났지만, 결과에서 보여지듯이 대조구보다 우리밀을 이용하여 제조한 sourdough bread KWF 6이 좋은 sourdough starter로 사용하기에 적합한 것으로 나타났다.

THE EFFECTS OF DIETARY PROTEIN LEVELS ON THE CARCASS COMPOSITION OF STARTER AND GROWER BROILERS

  • Carcass analysis of most economical parts of broilers were studied after they were fed with different protein levels of 16, 18, 20 and 23% for the starter period and 16, 18 and 20% for the grower period. The energy value of the feed was constant at 3,200 kcal ME/kg. The results for the starter and grower broilers showed similar pattern of responses. There were significant increased in weight gain, feed intake, protein intake, while there were significant decrease in the feed conversion ratio (FCR), abdominal fat and carcass fat when dietary protein increased. For the economical parts of the carcass, most of the fats were found in the thigh meat, while the lowest was found in the breast meat. The protein levels did not influence the meat production of the breast, drumstick and thigh portion. Increasing the protein intake, increased the broiler performance in relation to increased protein content of the breast, drumstick and thigh meat. The different fat contents of the meat might be due to differences in the rate of lipogenesis and fat deposition of the meat.

THE INFLUENCE OF COPPER ON THE TOTAL SULPHUR AMINO ACIDS REQUIREMENT OF BROILERS DURING TWO GROWING PERIODS

  • A study was conducted to assess the influence of copper on the total sulphur amino acid requirements of broiler chickens reared under two growing periods. The TSAA levels used were 0.73, 0.83, 0.93% with copper levels of 0, 125, 250 and 375 mg/kg for the starter period and the TSAA levels of 0.72, 0.79 and 0.86% with copper levels of 0, 125, 250 and 375 mg/kg for the grower period. Total feed consumption, body weight gain and feed L gain ratio were used as the parameters for the assessment. The results showed that adding copper at 250 mg/kg to the diets improved feed : gain ratio of the starter broilers and resulted in small improvement of body weight gain and feed : gain ratio of the grower broilers. Growth was depressed in relation to the reduction of feed intake on the chicks fed diet containing 375 mg/kg copper. There was a significant interaction between dietary TSAA and copper levels for feed intake, hence, indicating that the supplementation of copper at the level of 375 mg/kg increased the TSAA requirement of the starter broilers, although no interference with the requirement of grower broilers.

Effects of Feeding Levels of Starter on Weaning Age, Performance, Nutrient Digestibility and Health Parameters in Holstein Dairy Calves

  • To evaluate the effects of feeding four different levels of starter in male Holstein dairy calves, a completely randomized study was conducted, using 28 calves with initial body weight of $40.5{\pm}2.4$ kg. The animals were fed iso-nitrogenous starter and were weaned when they consumed 350, 500, 650 and 800 g/d of starter for 3 d consecutively. Starter and water were available ad-libitum throughout the experiment. Body weight at pre-weaning (less than 5 wk) and post-weaning (8 wk) was lower in calves that received 350 g/d of starter than in the other treatments (p<0.05). Feed conversion ratio (FCR) was the highest among all treatments in pre-weaning period (p<0.05). Dry matter intake (DMI) at weaning and total DMI was higher in that calves received 800 g/d of starter compared with other treatments (p<0.05). Calves fed 350 and 500 g/d of starter were weaned earlier (p<0.05) and showed lower milk consumption (kg, DM) compared with other treatments whereas no significant difference was observed between calves fed 350 and 500 g/d of starter (p>0.05). Dry matter, organic matter and crude protein digestibilities were lower in calves that received 350 g/d of starter compared with other treatments (p<0.05). No differences were observed in acid detergent and neutral detergent fiber digestibility among all treatments (p>0.05).Treatments had no significant effect on time of starting rumination, respiratory score, and days of drug administration for pneumonia. There were no meaningful differences in feces, fecal odor scores, body temperature, and days of drug administration for diarrhea among all treatments (p>0.05). Total dry matter intake at the end of experiment showed no significant difference among calves fed 600 and 800 g/d of starter, but calves fed 350 and 500 g/d of starter showed more dry matter (DM) intake than calves in the 600 and 800 g/d groups (p<0.05).

Improvement in the Quality of Kimchi by Fermentation with Leuconostoc mesenteroides ATCC 8293 as Starter Culture

  • To investigate the effect of the predominant microorganisms in kimchi on quality, Leuconostoc mesenteroides ATCC 8293 was used as starter culture during kimchi fermentation. A higher number of lactic acid bacteria and lower initial pH were observed in starter kimchi than in non-starter kimchi in the early stage of fermentation. The concentrations of the main metabolite, lactic acid, were 69.88 mM and 83.85 mM for the non-starter and starter fermented kimchi, respectively. The free sugar concentrations of starter kimchi decreased earlier than those of non-starter kimchi, and the levels of free sugars in both kimchi samples decreased during fermentation. At the end of fermentation, non-starter kimchi had a softer texture than starter kimchi, suggesting that L. mesenteroides is useful in extending shelf life. Sensory evaluation showed that starter kimchi had higher sourness and lower bitterness and astringency values, resulting in high sensory quality. These results suggest that the L. mesenteroides ATCC 8293 strain could be a potential starter culture in kimchi.

육계의 생산에 있어 단백질수준 및 급여시기에 관한 연구 (Effects of Different Protein Levels and Time of Change from Starter to Finisher Ration on the Performance of Broilers)

  • 본 시험은 육계사료의 단백질수준 및 급여시기가 육계의 생산성에 미치는 효과를 구명하기 위하여 전기와 후기사료의 단백질수준을 각각 22%와 20%, 20%와 18%로 하고 전후기사료의 교체시기를 2, 4 및 6주령으로 하는 6개처리에 육계초생추 216수를 공시하여 1984년 12월 14일부터 1985년 2월 8일까지 8주간에 걸쳐 축산시험장에서 시험을 실시한 결과를 요약하면 다음과 같다. 1. 증체량은 단백질수준이 높을수록 증가하였으며, 전후기사료의 교찬시기가 빠를수록 점차 감소하였지만 사료교체시기에서 4주령과 6주령 간에는 차이가 없었다. 2. 사료섭취량은 처리간에 차이가 없었으며, 사료요구율은 전후기 사료의 단백질수준 22% 및 20%를 4주령 또는 6주령에 교체했을 때 가장 유리하였다. 3. 단위증체당 단백질요구량은 단백질수준이 높아질수록 증가하였다. 4. 육성율은 단백질수준이나 교찬시기에 의하여 영향을 받지 않았다. 5. 도체율은 처리간에 차이가 없었지만 복강지방 축적율은 단백질수준이 증가할수록, 그리고 교체시기가 늦어질수록 점차 감소하였다. 6. 수당소득은 전후기사료의 단백질수준 22% 및 20%를 4주령에 교체한 처리에서 가장 높았다. 이상의 결과를 종합해서 볼 때 육계 전기 및 후기사료의 단백질수준은 각각 22%와 20%, 교체시기는 4주령이 적합할 것으로 사료된다.

Evaluation of Fermented Sausages Manufactured with Reduced-fat and Functional Starter Cultures on Physicochemical, Functional and Flavor Characteristics

  • Fermented foods with probiotics having functional properties may provide beneficial effects on health. These effects are varied, depending on the type of lactic acid bacteria (LAB). Different probiotic LAB might have different functional properties. Thus, this study was performed to evaluate the quality of fermented sausages manufactured with functional starter cultures (Lactobacillus plantarum 115 and 167, and Pediococcus damnosus L12) and different fat levels, and to determine the optimum condition for the manufacture of these products. Medium-fat (~15%) fermented sausages reduced the drying time and cholesterol contents, as compared to regular-fat counterparts. In proximate analysis, the contents of moisture and protein of regular-fat products were lower than medium-fat with reduced fat content. The regular-fat products also had a lighter color and less redness, due to reduced fat content. Approximately 35 volatile compounds were identified in functional fermented sausages, and hexanal, trans-caryophyllene, and tetradecanal were the major volatile compounds. Selected mixed starter culture showed the potential possibility of replacing the commercial starter culture (LK30 plus) in flavor profiles. However, medium-fat fermented sausage containing selected mixed starter culture tended to be less acceptable than their high-fat counterparts, due to excess dry ring developed in the surface. These results indicate that the use of combinations of L. plantarum 115 and 167, and P. damnosus L12 as a starter culture, will prove useful for manufacturing the fermented sausage.

Chlorella 추출물 첨가가 Yoghurt Starter의 산 생성 및 증식에 미치는 영향 (Effect of Chlorella Extract on Acid Production and Growth of Yoghurt Starter)

  • Chlorella 추출물을 첨가한 yoghurt를 개발하기 위한 기초 연구로 chlorella 추출물의 첨가가 yoghurt starter의 산 생성 및 증식에 미치는 영향을 조사하였다. Str. themophilus, Lac. acidophilus, Lac. casei, Lac. bulgaricus를 단독 균주 및 혼합 균주로 접종하여 배양하면서 생균 수와 pH 및 적정산도를 측정하였다. 단독 균주의 경우 chlorella 추출물 분말의 첨가 농도(0.5%, 1.0%, 2.0%, 3.0%)를 달리 하였을 때 Str. thermophilus, Lac. casei와 Lac. bulgaricus는 chlorella 추출물 분말 0.5% 첨가 시 9시간 배양에서, 그리고 Lac. acidophilus는 1.0% 첨가 시 15시간 배양에서 최대 균수를 나타내었으며, 이들 중 Lac. casei가 0.5% 첨가 시 배양 9시간에 3.63${\times}$$10^{9}$ CFU/mL로 가장 높은 생균 수를 보였다. 또한 이들 유산균의 산 생성도 chlorella 추출물 분말을 0.5% 첨가하였을 때 가장 많이 증가하였다. 혼합균주의 경우 chlorella 추출물 분말을 0.25%, 0.5%, 1.0%, 2.0%로 첨가하였을 때 저농도(0.25∼0.5%)의 chlorella 추출물 분말 첨가에 의해 모든 유산균 혼합 균주의 증식이 촉진되었고, pH가 크게 하락하였으며 적정산도가 크게 상승하였다. Str. thermophilus와 Lac. casei를 혼합 배양하였을 때 chlorella 추출물 분말 0.25% 첨가 시 12시간 배양 후 1.13${\times}$$10^{8}$ CFU/mL로 생균수 가 가장 높아 4.12 의 log cycle 증가를 나타내었다. 따라서 chlorella 추출물 첨가 yoghurt 제조 시 chlorella 추출물 분말을 0.25% 첨가하여 혼합 starter로 Str. thermophilus와 Lac. casei 혼합균주를 사용하는 것이 이들 유산균의 생육이 촉진되어 가장 적합한 것으로 나타났다.
