Effectiveness of Nutrition Counseling on Dietary Behavior and Serum Levels of Lipids and Antioxidants in Patients with Cardiovascular Disease (영양상담에 의한 심혈관질환자의 식행동, 혈청 지질 및 항산화영양소 상태 변화)

  • The purpose of this study was to investigate whether nutrition counseling could lead to a beneficial outcomes in patients with cardiovascular disease(CVD). Fifty CVD patients(23 men and 27 women) participated in a dietary counseling program which was based on serum lipid management. Various markers of disease risk including lifestyles, anthropometric indices, eating behaviors, serum lipids, antioxidants, lipid peroxides were measured before and after the program. The program lasted 3-11 months depending on individuals. Waist/hip ratio decreased after nutrition counseling only in women. Smoking and alcohol drinking status did not change significantly after counseling. Food habit score increased significantly in both men and women(p<0.05), and patients consumed mixed cereal rice, fruits, seaweeds, legumes more frequently and snacks less frequently after nutrition counseling (p<0.05). Although intakes of energy, carbohydrate and vitamin B1 were reduced significantly after nutrition counseling, nutrient densities of calcium and iron of diets have increased significantly after nutrition counseling, and those of other micronutrients were not different Serum total cholesterol decreased significantly in men and LDL cholesterol decreased significantly in women. In women lipid peroxide level decreased and $\alpha$-tocopherol level increased significantly, while there was no significantly change in men. We conclude that well-planned nutrition counseling would reduce risks of cardiovascular disease through improving dietary behavior, lipid profile and antioxidant status.

The activity of ${\alpha}$-amylase and ${\alpha}$-glucosidase as anti-diabetic function

  • BACKGROUND/OBJECTIVES: We investigated total 26 ingredients of Saengshik which will be commercially produced as an anti-diabetic dietary supplement. SUBJECTS/METHODS: Thirteen vegetables, nine cereals, three legumes and one seed were extracted with aqueous ethanol for 2 h at $60^{\circ}C$, and evaluated for their inhibitory effects against ${\alpha}$-amylase and ${\alpha}$-glucosidase and for total phenolic and flavonoid contents. RESULTS: All ingredients inhibited ${\alpha}$-amylase activity except cabbage. Strong inhibitory activity of ${\alpha}$-amylase was observed in leek, black rice, angelica and barley compared with acarbose as a positive control. Stronger inhibition of ${\alpha}$-glucosidase activity was found in small water dropwort, radish leaves, sorghum and cabbage than acarbose. All Saengshik ingredients suppressed ${\alpha}$-glucosidase activity in the range of 0.3-60.5%. Most ingredients contained total phenols which were in the range of 1.2-229.4 mg gallic acid equivalent/g dried extract. But, total phenolic contents were not observed in carrot, pumpkin and radish. All ingredients contained flavonoid in the range of 11.6-380.7 mg catechin equivalent/g dried extract. CONCLUSIONS: Our results demonstrate that Saengshik containing these ingredients would be an effective dietary supplement for diabetes.

Vegetarian Diets and Estrogen Metabolism in Korean Premenopausal Women

  • It has been suggested that dietary fat increases the risk of breast cancer by elevating serum estrogen concentrations. However, studies on a relationship between fat intake and breast cancer risk have shown contradictory results, possibly because the levels of fat intake in study populations were too high to observe differences. Also, the effect of other dietary factors may present. The present study was performed to investigate the relationship between diet and estrogen metabolism in premenopausal women whose usual fat intake is relatively low compared to their western counterparts. Twenty lacto-ovo vegetarians (LOV) and twenty omnivores participated in the study. Three day food records including a Saturday or a Sunday were used to estimate nutrient intake. Serum lipids, estradiol, sex-hormone binding globulin, and urinary estradiol were measured. Study results showed $24.8\%$ and $20.9\%$ of energy intake were provided from fat in omnivorous and LOV subjects, respectively. Serum and urinary levels of estradiol were two times higher in omnivores. Fat intake was not related to either serum estradiol nor urinary estradiol when the Spearman correlation coefficient analysis was performed. Carbohydrate, total dietary fiber and soluble dietary fiber intakes were negatively related to serum estradiol concentration. Legumes, vegetables and fruit consumption showed significantly negative relationships with both serum and urinary estradiol concentrations. These results indicate lower estrogen availability may be associated with plant food­based diets in premenopausal women whose usual diets contain less than $25\%$ of energy as fat.

Glyphosate did not affect subsequent oversown pasture species in both grasses and legumes. fistuccr arundinc~cea and Pou pratensis were the most tolerant pasture species to herbicide residue while 7'rzfi,lium pyatense and Medicugo suti~u showed a wsceptible response regardless of herbicide.

Study on the Effect of Early Grazing Management in the Oversown Mountainous Pasture (겉뿌린 산지초지의 초기 관리방목에 관한 연구)

  • This experiment was performed in order to investigate the effect of the early grazing management on the forage yield and sward composition of oversown pasture. Two levels of the grazing intensity were treated when the grasses were 15cm, 25cm, and 35cm high. It was observed that the treatment C (light grazing intensity at the 25cm grass height) increased the dry matter yield and the botanical composition of the introduced grasses and legumes. From these facts it is suggested that the early grazing management contribute to the high forage yield and good sward composition of the oversown mountainous pasture and can take the place of cutting or other methods economically.

Rapid Separation of Cellular Cyclosophoraoses Produced by Rhizobium Species

  • A very rapid and efficient separation technique for cellular rhizobial cyclosophoraoses was developed based on fractional precipitation and partition chromatography. Cyclosophoraoses are known to function in the osmotic regulation and root nodule formation of legumes during the nitrogen fixation process. Cyclosophoraoses are produced as unbranched cyclic (1longrightarrow12)-${\beta}$-D-glucans in Agrobacterium or Rhizobium species. Recent research has shown that cyclosophoraoses can form inclusion complexation with various unstable or insoluble guest chemicals, thereby implying great potential for industrial application. Typical separation of pure cellular cyclosophoraoses has been so far carried out by several time-consuming steps, including size exclusion, anion exchange, and desalting liquid chromatographies, with a relatively poor recovery. However, the proposed method demonstrated that the successive application of fractional ethanol precipitation and one step of silica gel-based flash column chromatography was enough to simultaneously purify neutral or anionic forms of cyclosophoraoses. This novel technique is very rapid and provides a high recovery.

Ruminal Solubility of Trace Elements from Selected Philippine Forages

  • The ruminal solubility of copper (Cu), manganese (Mn), molybdenum (Mo), and zinc (Zn) in eight Philippine forages was studied. These forages were: 1) grasses: paragrass (Brachiaria mutica (Forsk.) Stapf), stargrass (Cynodon plectostachyum Pilger), and napiergrass (Pennisetum purpureum Schumach.); 2) creeping legumes: calopogonium or calopo (Calopogonium muconoides Desv.) and centrocema (Centrocema pubescens Benth.); 3) tree lequmes: gliricidia or kakawate (Gliricidia sepium (Jacq.) Walp.), leucaena or ipil-ipil (Leucaena leucocephala (Lam.) de Wit.), and sesbania or katuray (Sesbania grandiflora (L.) Poir). Nylon bags with samples were incubated for 0, 3, 6, 12, 24, 48 and 72h in three rumen cannulated sheep fed with timothy hay (Phleum pratense L.) at 2% body weight/d. The 0-h bags were washed with deionized water. There were species differences (p < 0.05) on the different solubilities of trace elements. At O-h incubation, the trend of solubility was Mo (54%) > Zn (43%) > Cu (38.7%) > Mn (29.5%). At 3-h incubation, all the elements except Mn had an average solubility above 50%. Combining particulate passage rate (1.9%/h) and various trace elements disappearance rates, the effective ruminal solubilization (ERS) of trace elements were computed. The ERS across species ranged from 44.6 to 89.9% for Cu, 29.9 to 84% for Mn, 66 to 95.1% for Mo, and 30.1 to 82.3% for Zn resulting to a trend of Mo > Zn > Cu > Mn.

Association between phytochemical index and metabolic syndrome

  • BACKGROUND/OBJECTIVES: Although previous experimental studies reported the health benefits of foods rich in phytochemicals, few epidemiologic studies have investigated the associations between phytochemicals and metabolic disorders. This study aimed to calculate a phytochemical index (PI) and examine its association with metabolic syndrome in the Korean population. SUBJECTS/METHODS: Data of Korean adults aged ≥ 19 years who participated in the 2008-2016 Korea National Health and Nutrition Examination Surveys were analyzed. The PI was calculated using 24-hour intake recall data regarding whole grains, vegetables, fruits, legumes, nuts and seeds, and soybeans and soy products. Demographic and lifestyle data were obtained using self-administered questionnaires. A multivariable logistic regression was performed to calculate the adjusted odds ratios (ORs) and 95% confidence intervals (CIs) for the prevalence of metabolic syndrome and its components according to PI quintiles. RESULTS: Overall, 31,319 adults were evaluated. Compared with men, women had a higher median PI level (9.96 vs. 13.63) and significantly higher caloric intake levels from most PI components (P < 0.05), except for soy products. After adjusting for multiple confounding variables, participants in the highest PI quintile had significantly lower prevalences of abdominal obesity (OR: 0.90, 95% CI: 0.81-0.99), hyperglycemia (OR: 0.83, 95% CI: 0.74-0.94), high blood pressure (OR: 0.82, 95% CI: 0.73-0.93), hypertriglyceridemia (OR: 0.84, 95% CI: 0.75-0.94), and metabolic syndrome (OR: 0.78, 95% CI: 0.69-0.88). CONCLUSIONS: Higher intakes of phytochemical-rich foods are associated with a lower prevalence of metabolic dysregulation and consequently, cardiometabolic diseases.

A Comparison of Serum Lipid Levels between Vegetarians and Nonvegetarians (채식자와 비채식자의 혈청지질 함량 비교)

  • The effects of the vegetable diet on the levels of the serum lipids, particularly the level of the serum total cholesterol which is most concerned with coronary heart disease (CHD) were investigated in 30 male SDA (Seventh Day Adventists) group and 30 male omnivorous group (control group). SDA participated in this study intaked relatively few animal origin foods whereas they intaked plant origin foods largely; they seldom or sometimes intaked meats, fishes, butter, margarine, beverages and coffee, but often unrefined cereals, legumes, vegetables and fruits. In the both systolic pressure and diastolic pressure, there was no difference between two groups. The levels of the serum total cholesterol, triglyceride and phospholipid were lower in SDA group than in the omnivorous group. Among them the difference was statistically significant in the level of the serum total cholesterol. HDL-cholesterol was more or less higher in SDA group than in the omnivorous group, but the difference was no significant. The result that SDA group had lower level of the serum total cholesterol than the omnivorous group suggested that that they might be less prone to CHD than the omnivorous group. Though this possibility, however, was derived from the fact of the lower level of serum total cholesterol of SDA group, it might by partly responsible for their habit that they never smoke and drink alcohols and coffee.

Development of flavonoid database for commonly consumed foods by Koreans (한국인 상용식품의 플라보노이드 데이터베이스 구축)

  • Flavonoids have been hypothesized to reduce the risk of chronic diseases, but the lack of a flavonoid database hampered epidemiological studies addressing this issue in Korea. In this study, we developed a flavonoid database, based on a systematic review. A total of 1549 food items containing flavonoids were selected using the Korean Nutrient Database. Among them, flavonoid contents for only 649 food items were evaluated with analytical values and the remaining 900 items were replaced with adaptations or calculations from similar items. The developed flavonoid database covered 93.2% of fruits and fruit juices, 76.1% of vegetables, 98.4% of legumes and legume products, and 85.0% of all plant foods overall (1,549 items) as reported by the 24-hr dietary recall method regarding the 2008 Korean National Health and Nutrition Examination Survey. We found that this flavonoid database, overall, included 95.6% of all mainly consumed plant foods by Koreans. This flavonoid database is expected to be useful in regards to the correlation study of flavonoid intake and chronic diseases.
