Inflammation is a complex process resulting from a variety of mechanisms. Combined inhibition of the activities of enzymes involved in the process may therefore be considered more important in anti-inflammatory property of plant extracts than any single contribution. In this study, the inhibitory effects of the ethanol extracts of thirty plant foods on the activities of secretory phospholipase $A_{2}$ ($sPLA_{2}$), cyclooxygenase-1 (COX-1), cyclooxygenase-2 (COX-2), and 12-lipoxygenase (12-LOX) were examined. Several legumes, mungbean sprout and some leaf vegetables inhibited the activity of $sPLA_2$, upstream enzyme of inflammation pathway. Only soybean sprout and mungbean sprout significantly inhibited 12-LOX activity. Although most of extracts inhibited the activities of both COX-1 and COX-2, water dropwort and amaranth showed selectivity for the inhibition of COX-2 over COX-1. Especially, mungbean showed anti-inflammatory property at both upstream and downstream of inflammation pathway with relatively low $IC_{50}$ values for $sPLA_{2}$ and COX-2 enzymes. Mungbean sprout exhibited inhibitory effects on all enzymes related to early and late inflammation and soybean sprout suppressed 12-LOX and COX-2 simultaneously, although the activities of these plants were showed at relatively high concentration. Therefore, mungbean, mungbean sprout, and soybean sprout appear to exhibit anti-inflammatory effects by combined inhibition of inflammatory enzymes.
The purpose of the present study is to provide preliminary data for turning sweetpotato leaves into dehydrated vegetables. To achieve this goal, we have gone through the process of hot-air drying the leaves of sweetpotato that are usually thrown away and examined the drying speed and rehydration resilience, then made a comparative analysis of the general ingredients, lutein, $\beta$-carotene and chromaticity. The drying speed reached the peak at a temperature of $70^{\circ}C$. As for other general ingredients, there was no significant difference according to temperature. The content of lutein, which is a functional ingredient, was large in Shinmi with $171.59{\mu}g/g$ at a temperature of $40^{\circ}C$; small in Hayanmi with $73.75{\mu}g/g$ at a temperature of $70^{\circ}C$. The content of $\beta$-carotene was large in Shinmi with $379.59{\mu}g/g$ at a temperature of $40^{\circ}C$; small in Hayanmi with $170.78{\mu}g/g$ at a temperature of $70^{\circ}C$. The content of functional materials was the largest at a temperature of $40^{\circ}C$, and decreased in the order of temperatures at $50^{\circ}C$, $60^{\circ}C$, and $70^{\circ}C$. As for rehydration stability, rehydration rate in both Shinmi and Hayanmi was the highest at a temperature of $40^{\circ}C$ with 233.93% and 223.47% respectively. To summarize, the quality of dried sweet potato leaf was more affected by temperature than by drying time, and low temperature drying resulted in better product value.
Due to climate change, the occurrence of abnormal weather conditions has become more frequent, causing damage to vegetable crops grown in Korea. Hot pepper, Chinese cabbage and radish, the three most popular vegetables in Korea, are produced more in the field than in the greenhouse. It has been a trend that the time for field transplanting of seedlings is getting earlier and earlier as the spring temperatures keep rising. Seedlings transplanted too early in the spring take a longer time to resume the normal growth, because they are exposed to suboptimal temperature conditions. This study examined the influence of air temperature during seedling growth on the time required to reach the first fruit maturity and yield of hot pepper. Seedling plants of 'Super Manita' hot pepper was grown in temperatures $2.5^{\circ}C$ and $5.0^{\circ}C$ lower than the optimum temperature (determined by the average of temperatures for the past 5 years). Seedlings were transplanted into round plastic containers (30-cm diam., 45-cm height) and were placed in growth chambers in which the ambient temperature was controlled under natural sunlight. The growth of seedlings under lowered temperatures was reduced compared to the control. The mineral (K, Mg, P, N) concentrations in the leaf tissues were higher when plants were grown with the ambient temperature $2.5^{\circ}C$ lower than the optimum, regardless of changes in other growth parameters. Tissue calcium (Ca) concentration was the highest in the plants grown with optimum temperature. The carbohydrate to nitrogen (C/N) ratio, which was the highest (18.3) in the plants grown with optimum temperature, decreased concomitantly as the ambient temperature was lowered $2.5^{\circ}C$ and $5.0^{\circ}C$. The yield of the early harvested fruits was also reduced as the ambient temperature became lower. The first fruit harvest date for the plants grown with optimum temperature (June 27) was 13 days and 40 days, respectively, earlier than that in plants grown with $2.5^{\circ}C$ (July 10) and $5.0^{\circ}C$ (Aug 6) lower ambient temperatures. The fruit yield per plant for the optimum temperature (724 g) was the greatest compared to those grown with $2.5^{\circ}C$ (446 g) and $5.0^{\circ}C$ (236 g) lower temperatures. The result of this study suggests that the growers should be cautioned not to transplant their hot pepper seedlings too early into the field, since it may delay the time of first harvest eventually reducing total fruit yield.
Sweetpotato shoot tops (leaves, tips and petioles) are known to be very useful parts as vegetables because of their high nutritive values and great biomass yield. In this study, the phenolic compound contents, antibacterial activity, mutagenic activity, and antimutagenic activity were investigated in sweetpotato tips that were 10-15cm of shoot top including stems, petioles and tender leaves after sprout of storage roots. The study was done by extracting sweetpotato tips with 80% ethanol and the ethanol fraction was re-extracted with hexane, chloroform, ethyl acetate, butanol and water. In ethyl acetate and butanol fractions, total phenolic compounds contained 95. 6mg/g extract and 69.3 mg/g extract, respectively, The antibacterial activity was measured using the paper disk method with concentrations of 1, 2, 5 and 10 mg/disk of butanol and ethyl acetate fractions against L. monocytogenes and S. Typhimurium strains. Higher doses of solvent extracts showed the higher antibacterial activities. In addition, 5, 10 and 20 mg/mL of the extracts were tested to determine the antibacterial activity in liquid culture. The sweetpotato leaf extract by ethyl acetate showed 1 log reduction compared to control after 24 hrs on Listeria monocytogenes, but 20 mg/ml of butanol extract completely inhibited the growth of the pathogen after 12 hrs. The extracts from ethyl acetate or butanol on Salmonella Typhimurium did less than 1 log reduction during cultivation compared to control. The numbers of S. Typhimirium TA98 and TA100 revertant colonies were 29-33 and 159-188 CFU/plate, respectively, indicating that solvent extracts were no mutagenic activity. The antimutagenic test was performed by adding direct mutagen 2-NF and MMS, and butanol and ethyl acetate showed antimutagenic effect. Thus, this study showed that sweetpotato tips had high phenolic contents and both antimicrobiol and antimutagenic properties. Sweetpotato tips would be good nutritive source because of their high nutrient content without any toxicity in consuming.

Changes of the growth, quality and physiological response of Chinese cabbage cv 'Chunkwang' in response to five different temperature treatments based on climate change scenario were investigated during the growing season. The treatments consisted of normal year temperature $-2.0^{\circ}C$ (I), normal year temperature (II; Control group), normal year temperature $+2.0^{\circ}C$ (III), normal year temperature $+4.0^{\circ}C$ (IV), and normal year temperature $+6.0^{\circ}C$ (V). Regarding fresh weight, number of leaves, and leaf area were high in group IV, and V before the head formation stage, but it has decreased during the later growth period. Rate of frangibleness sympton was the highest in group V as 85.7%, and it was decreased in group IV (64.3%), group III (28.6%), group II (14.3%), and group I (7.1%). Regarding photosynthetic rate, group III, IV, and V showed relatively high photosynthetic rate at 20 DAP but it was reduced dramatically during the later growth period. Transpiration and stomatal conductance showed the similar trend with the photosynthetic rate. When comparing the chlorophyll fluorescence reaction of each treatment group at 50 DAP, Fv/Fm in group I was highest as 8.04 among all treatment groups and the lowest in group IV as 7.15.
Virtual water is defined as the volume of water required to produce a commodity or service. The degree of food self-sufficiency is currently about 27 % in South Korea, so that Korea is one of the largest net virtual water import countries for agricultural product, thus it is necessary to estimate suitable virtual water for South Korea. The objective of this paper is to quantify the agricultural virtual water use (AWU) and virtual water content (VWC) using the method suggested by Chapagain and Hoekstra during the period 1991-2007. To calculate the virtual water content, 44 different crop production quantity and harvested area data were collected for 17 years and FAO Penman-Monteith equation was adapted for computing crop consumptive use of water. As the results, AWU has been estimated at 15.1 billion $m^3$ in average showing a tendency to decrease. Rice has the largest share in the AWU, consuming about 10.1 billion $m^3$/yr which is about 75 % of gross AWU, and the VWC is 1600.1 $m^3$/ton for paddy rice. The largest VWCs of crops are oilseed and tuber crop, and the smallest are leaf and root vegetables. The primary crop production VWC can be used for calculating the VWC of various secondary products using the contribution ratio, therefore the results of this study are expected to be used as basic data for national agricultural water footprint.
Due to increase of interest in 'carbon neutrality', attempts at agricultural use of CO2 are increasing. In this study, we used the dry-ice made by CO2 as by-product in thermoelectric power plant on CO2 fertilization for production of leafy vegetable in greenhouses. The dry-ice was supplied on three leafy vegetable farms (Allium tuberosum Rottl. ex Spreng, Aster scaber, and Oenanthe stolonifera DC.) located in Hadong, Gyeongsangnamdo. Two greenhouses were used in each leaf vegetable crops, one greenhouse used as the control (non-treatment), other greenhouse used as supplied CO2. For CO2 fertilization, a gas sublimated from dry ice was supplied to the greenhouse using a specially designed prototype supply machine. A. tuberosum greenhouse has no difference of CO2 concentration between the control, and CO2 fertilization and shown high CO2 concentration both greenhouses. However, the CO2 concentrations in A. scaber and O. stolonifera greenhouses were increased in CO2 fertilization treatment. The growth of A. scaber and O. stolonifera were increased in CO2 fertilization, and the yield also increased to 36% and 25% than the control, respectively. As a result of economic analysis, the A. scaber has increase of income rate, however A. tuberosum and O. stolonifera has decreased income rate. Thus, the use of the dry-ice made by CO2 as by-product in thermoelectric power plant has possibility to increase productivity of the leafy vegetable in greenhouse and have agricultural use value.
The brassica leaf beetle, Phaedon brassicae Baly (Coleoptera: Chrysomelidae), is one of the important pests infesting cruciferous vegetables. In order to understand the biological characteristics of the insect, we investigated the effects of temperature on development of each life stage, adult longevity and fecundity of P. brassicae at four constant temperatures of 15, 20, 25 and 27.5℃ for immature life stage and five constant different temperatures of 10, 15, 20, 25 and 27.5℃ for adult stage. Eggs and larvae successfully developed next life stage at temperature tested. The development period of egg, larva, and pupa decreased as temperature increased. Lower developmental threshold (LDT) and thermal constant (K) were calculated using linear regression as 8.7℃ and 344.73DD, respectively. Lower and higher threshold temperature (TL and TH) from egg to adult emergence were estimated by Briere function as 5.3℃ and 40.4℃, respectively. Adults produced eggs at the temperature range between 10℃ and 27.5℃, and showed an estimated maximum number, ca. 627.5 eggs at 21.7℃. Adult oviposition models including aging rate, age-specific survival rate, age-specific cumulative oviposition, and temperature-dependent fecundity were constructed. Temperature-dependent development models and adult oviposition models would be useful components to understand the population dynamics of P. brassicae and to establish the strategy of integrated pest management in cruciferous crops.
