HACCP 시스템 적용 학교급식 위생관리 수행수준에 영향을 미치는 요인 - 서울, 경기, 강원, 충청지역을 중심으로 - (Factors Related to Sanitary Management Performance Based on HACCP System in School Foodservice - Seoul, Gyeonggi, Kangwon and Choongchung Areas in Korea -)

  • The purpose of this study was to analysis the sanitary management performance based on HACCP system for school foodservice. This study was carried out from September 2008 until December 2008 and is targeted towards schools' dietitians that work at schools with school foodservice. The regional distribution of this research is as follows; 377 schools in Seoul, 648 schools in Gyeonggido, 160 schools in Kangwondo, 438 schools in Choongchungdo equaling 1,623 schools in total. When school foodservices were put through sanitation management achievement level analysis applied by the HACCP system, results displayed that management of temperature (3.96 points), time (4.08 points), and cross-contamination (4.07 points) were all below the average achievement level. HACCP system's achievement level based on the TQM showed that areas for strategy development, leadership, information and analysis had low achievement levels. Achievement levels for CCP are quality check, delivery/distribution process, sterilization/cleansing of food's contact surface. As a result of multiple regression analysis of the factors that influenced sanitation management achievement level of school foodservice HACCP system; sanitary job standard showed 35.6% and CCP achievement levels showed 26.8% explanatory rate. In particular, Kangwondo's number of foodservice provided to per cook was small. Also, the better the processing management was assessed, the higher the sanitary job standard achievement level became resulting to a explanatory rate of 39.5%. Elementary schools showed a higher explanatory rate of 37.0% than middle and high schools. CCP achievement levels in middle and high schools with self-operated foodservice had a 28.0% variable explanatory rate, which was the highest. The better the drainage system, leadership and assessments turned out to be, the higher the CCP achievement levels became. In summary, to revitalize HACCP system that is based on the TQM, it is considered that proper database of HACCP system for school foodservice's sanitation management be constructed and more emphasis should be put on strategy development to improve customers' satisfactory level. In addition, improvements in achievement levels of time, temperature, and cross-contamination for sanitary job standard and CCP achievement level are essential.

CEO특성과 경영통제간의 적합성에 관한 연구 (A Fitness between CEO Characteristics and Management Control)

  • 본 연구는 상황분석이론을 적용하여, 최고경영자(CEO)의 특성과 경영통제시스템간의 적합성이 존재할 때 기업의 조직성과에 유의적인 영향을 미치는 가를 구조방정식을 적용하여 실증 분석하고자 하였다. 이를 위해 한국의 제조기업들을 대상으로, CEO의 특성을 크게, 위험감수성향과 성취동기로 구분하였고, 경영통제시스템을 행동통제와 결과통제로 구분하였다. 그리고, 조직성과의 경우, 주로 재무적 특성을 지닌 성과를 적용하여 분석하였다. 각 변수들간의 관계에 대해 개별적 또는 종합적으로 분석하기 위해 구조방정식을 적용하여 분석하였다. 본 연구의 결과, 성취동기와 위험감수성향 중 위험감수성향은 행동통제와 결과 통제에 유의적인 양의 영향을 미치고, 위험감수성향은 행동통제에 음의 영향을 미치는 것으로 나타났다. 위험감수성향에 음의영향과 성취동기에 양의 영향을 받은 행동통제는 조직성과에 유의적인 양의 영향을 미치는 것으로 파악되었다.

패션 산업의 SCM 활동수준과 물류성과에 관한 연구 - 어패럴업체의 공급 사슬을 중심으로- (A Study on the Activities and Logistics Performance of SCM in Fashion Industry - Focused on the Supply Chain of Apparel Companies -)

  • The purpose of this study was to evaluate the level of SCM activities and the logistics performance by SCM of the three company types in fashion industry· fabric suppliers, apparel manufacturers, and retailers. The level of SCM activities was estimated through the examination of seven factors: commitment and leadership of a top management, flexibility of management, understanding of demand characteristics, integrated management organization, information system, cooperative partnership and communication and exchange of opinion. The logistics performance was measured by improvement in customer service(on time delivery ratio of products, returning rate, treat ratio for A/S, order fill rate, substitute providing capability for being out of stock) and delivery cost reduction. Through questionnaire survey, a total of 214 data for 108 companies of three company types were collected: 46 for 40 fabric suppliers, 123 for 64 apparel manufacturers and 45 for 4 retailers. The analysis of SCM activity levels showed that fabric suppliers had higher degrees in the factor of understanding of demand characteristics, and apparel manufacturers had higher degrees in the factor of information systems. For retailers, the factor of communication and exchange of opinion represented higher degrees. The study on relationship between the SCM activity levels and logistics performance showed that the SCM activity factor of understanding of demand characteristics greatly improved a substitute providing capability for being out of stock in fabric suppliers, and information system improved a substitute providing capability for being out of stock, on time delivery ratio of products and order fill rate in apparel manufacturers. In retailers, the SCM activity factor of understanding of demand characteristics decreased returning rate highly and improved on time delivery ratio of products. The study results showed that SCM activities in fashion industry brought more improvement in customer service levels rather than in delivery cost reduction.

호텔외식 기업 조리부서에서의 6시그마 기법이 메뉴관리, 업무몰입, 조리품질성과 및 고객만족에 미치는 영향 (The Effect of a 6 Sigma Program on Menu Management, Work Commitment, Culinary Quality Performance and Customer Satisfaction in the Hotel & Food Service Culinary Division)

  • This study was conducted to investigate the effects of 6 Sigma on menu management, work commitment and quality in the culinary division of hotels and family restaurants. In addition, this study sought to identify the effects of menu management, work commitment and quality performance on customer satisfaction. Furthermore the relationship between menu management and culinary quality was evaluated here. The subjects evaluated in this study were employees of culinary division of hotels and family restaurants that implemented or were about to adopt the 6 Sigma program. A total of 385 questionnaires were analyzed using factor analysis, a reliability test, and covariance structural analysis. The results revealed that the 6 Sigma program influenced menu management, work commitment and culinary quality. Moreover, menu management, work commitment and culinary quality performance were found to impact customer satisfaction and culinary quality performance. Based on these findings, culinary divisions of hotels and family restaurants should incorporate the 6 Sigma program as soon as possible. To implement this program, faultless data for the 6 Sigma program should be collected using sufficient preparation procedures. After the data were collected, a task force team should be developed, experts should be cultivated and employees should be trained as necessary. Finally, the current level of product and services should be measured and reported to all employees in the culinary division and a challenge spirit should be brought with understanding for the reason for implementation of the 6 Sigma program. In implementing the 6 Sigma program, the leadership of the top manager and the head of the culinary division is very important.

산학협력에서 경로 의존성에 대한 연구 - 산업계의 자발적 참여 관점 (Path Dependence in Industry-University Cooperation - In terms of Industry's Voluntary Participation)

  • Purpose - The Korean university education system is facing innovation and change, including cooperation between industry and university, Therefore It is important to activate the industry-university cooperation. This paper aims to demonstrate the factors that activate industry-university cooperation, particularly about the voluntary participation induction by industry and researching in path dependency perspectives. Research design, data, and methodology - The subject of this research were companies that are aware of the industry-university cooperation program. This research hypothesis is derived from the literature of previous studies of industry-university cooperation, This study have constructs that was defined operationally with reference to previous studies, this research model design to figure out structural relationship among technology leadership of university, university specialization, local network strength, fixation of local economy, recognition of path dependence, participation by industry, performance of industry-university cooperation. From 2017 July. 1 to Sept. 31, questionnaire survey targeting company staff who is involving in industry-university cooperation. 257 questionnaire survey had conducted. 249 investigated data were used for empirical analysis except wrong data. This data were used for AMOS(structural equation) & Regression statistics to verify hypothesis which developed by researcher. Results - The results of this study are as follows. First, technology leadership of universities has a significant effect on voluntary participation by industry. University specialization has significant effect on voluntary participation by industry. Second, local network strength has significant effect on voluntary participation by industry. but fixation of local economy does not affect voluntary participation by industry. Third, recognition of path dependence has moderating effect between Independent(university, company characteristics) and dependent variables(voluntary participation by industry) When recognition level of path dependence is high, preceding factors have a significant effect on voluntary participation by industry than recognition level of path dependence is low. As a result, the degree of recognition of path dependence was shown important variables that induce voluntary participation of industry for industry-university cooperation program. Conclusions - This study suggests that voluntary participation of industry is a very important factor in the achievement of industry-university cooperation. Recognition of interdependence as well as leading factors that encourage voluntary participation of industry is also just as important. If recognition of path dependence was high, Industry's voluntary participation was high.

서비스경제시대 중소기업 경영자의 기업가지향성과 CEO역량이 경영성과에 미치는 영향 연구 (A study on the effect of entrepreneurship and CEO competency on management performance of SME managers in the service economy era)

  • 인류는 서비스경제시대를 맞이하였다. 새로운 경제는 새로운 경영을 필요로 한다. 새로운 경영의 핵심주체는 최고경영자다. 경영자 의사결정의 결과가 기업의 성과로 나타나며, 미래 성장동력의 기반이 된다. 본 연구는 중소 중견기업 경영자의 CEO역량, 기업가지향성, 경영성과가 서로 어떠한 영향을 미치는가를 실증분석 하였다. 연구에선 8개 변수간의 가설이 설정되었다. 또한 그동안 연구되어지지 않았던 기업가지향성과 CEO역량과의 관계도 규명하였다. CEO역량의 측정항목으로 개인효과성, 혁신의지, 기회인식, 정보인식, 관계형성, 사업관리, 리더십, 조직문화, 인적자원관리를, 기업가지향성 측정항목으로 위험감수성, 진취성, 혁신성을 설정하고 본 연구에 부합하게 조작적 정의를 한 후 분석을 진행하였다. 분석 결과 기업가지향성은 경영성과에 유의미한 결과를 도출하지 못했다. 그리고 CEO역량은 경영성과에 정(+)의 영향을 미치는 결과를 나타내었다. 이는 관리적 변인인 CEO역량이 경영성과에 긍정적인 영향을 미친 것으로 판단할 수 있다. 또한 기업가지향성과 CEO역량과의 관계에서도 유의미한 결과가 나타났다. 혁신성, 진취성, 위험감수성이 CEO역량에 긍정적인 결과를 나타낸데 시사점이 있다. 마지막으로, 기업가지향성은 CEO역량을 매개로 경영성과에 통계적으로 유의한 결과를 나타내었다. 연구 당시가 COVID19 바이러스의 세계적 대유행(펜더믹)의 발현시기라는 점에서 본 연구 결과에 주목할 만하다 하겠다. 향후 더욱 변화된 경제환경에서의 CEO관련 요인과 경영성과간의 관계에 대한 심층 연구가 필요하다.

간호사 핵심역량 개발 및 타당도와 중요도 대비 수행도 분석 (The development of nurses' core competencies and the analysis of validity and importance-performance)

  • Purpose: The purpose of this study was to develop nurses' core competencies and sub-competencies and to verify the validity and importance-performance of core competencies. Methods: The core competencies of nurses were derived through an analysis of strengths, weaknesses, opportunities, and threats, as well as a literature analysis of domestic and foreign accreditation institutions. Validity and importance-performance analyses were conducted on the core competencies derived from nursing colleges nationwide. Results: Six core competencies of nurses were revealed: integration of knowledge and nursing skills, critical thinking, communication, leadership, safety management, and global competency. Further, eighteen sub-competencies were derived. The content validity ratio values for the core competencies were higher than 0.74. Communication skills among multidisciplinary teams and communication skills among nursing teams were shown to be the most important competencies to be improved. Conclusion: The results of this study are meaningful in terms of how the core competencies of nurses were derived and evaluated for the fourth cycle of nursing education accreditation according to the changes of time and culture.

아파트 거주자의 안전의식이 화재대응성과에 미치는 영향 : 관리사무소의 관리역량 조절효과를 중심으로 (Effect of Apartment Residents' Safety Awareness on Fire Response Performance: Focusing on the Moderating Effect of Control Offices' Control Competence)

  • 이 연구에서 우리는 아파트 세대 내에 화재발생 시 대피요령에 따른 화재의 불안요인을 낮추며 관리사무소의 관리역량이 안전의식 및 화재대응에 미치는 영향력에 대한 조절효과를 분석하였다. 연구결과는 첫째, 아파트 거주자의 안전의식 및 관리주체의 인식이 화재대응성과에 정(+)의 영향을 미치는 것으로 나타났다. 이는 아파트 거주자의 안전의식 및 관리주체의 인식수준이 높을수록 화재대응성과도 높아짐을 알 수 있다. 둘째, 관리사무소의 관리역량 수준이 높을수록 안전의식 및 관리주체의 인식이 화재대응성과에 정(+)의 영향을 미치는 것으로 나타났다. 이러한 결과는 관리사무소장의 리더십이 높을수록 아파트 거주자의 주거만족도도 높은 경향을 보이고 거주자와의 소통하는 자세가 높을수록 화재대응성과에도 긍정적인 영향이 있음을 의미한다. 마지막으로, 관리사무소 관리역량은 아파트거주자의 안전의식 및 관리주체의 인식수준이 화재대응성과에 미치는 영향을 조절하는 효과가 있는 것으로 분석되었다. 이러한 결과는 모형의 R2 값의 변화량이 1단계보다 2단계가 증가하였고 3단계에서는 조절변수의 상호작용 항을 추가함에 따라 단계적으로 증가하였다. 따라서 조절변수인 관리사무소 관리역량은 아파트거주자의 안전의식 및 관리주체의 인식수준이 화재대응성과에 미치는 영향을 조절하는 효과가 있는 것으로 분석되었다.

초기 및 후기 기술창업기업 창업가의 역량 모델에 관한 연구 (A Study on the Entrepreneurial Competency Model in Early-and Late-Stage Technology-Based Ventures)

  • 본 연구의 목적은 기업의 성장단계별로 창업가가 갖춰야 할 핵심 역량요인이 반영된 통합 창업가 역량 모델을 제시하여 기술창업기업의 성공률을 제고하는 것이다. 연구의 목적을 달성하기 위해 본 연구는 초기 및 후기 기술창업기업의 핵심 창업가 역량과 기업성과 간의 관계, 그 관계를 강화하는 학습 역량의 조절효과를 실증분석 하였다. 연구의 결과는 다음과 같다. 첫째, 초기 기술창업기업 창업팀의 기술 기능적 역량, 창업가의 자원 활용 역량, 그리고 사업계획 수립 역량은 기업의 비재무적 및 기술적 성과를 모두 향상시키는 것으로 나타났다. 또한 기회 인식 역량은 비재무적 성과를 높이는 것으로 분석되었다. 이때 높은 수준의 학습 역량을 가진 창업가는 기술 기능적 역량과 자원 활용 역량 수준이 높아질수록 비재무적 성과를 더욱 향상시키며, 사업계획 수립 역량 수준이 높아질수록 기술적 성과를 더욱 향상시키는 것으로 확인되었다. 둘째, 후기 기술창업기업 창업가의 리더십과 자원 확보 역량은 기업의 비재무적 및 기술적 성과를 모두 향상시키는 것으로 나타났다. 또한 창업가의 전략적 역량은 비재무적 성과를 향상시키는 것으로 나타났다. 여기에서 학습 역량 수준이 높은 창업가는 전략적 역량 수준이 높아질수록 기업의 비재무적 성과를 더욱 향상시키는 것으로 분석되었다. 마지막으로 초기 및 후기 기술창업기업의 비재무적 성과와 기술적 성과는 모두 재무적 성과를 유의하게 향상시키는 것으로 나타났다.

말콤 볼드리지 모형을 이용한 2차 의료기관의 전사적 품질관리와 성과 간의 인과관계 연구 (A Study on Causality between Total Quality Management and Performance of Secondary-Care Hospital Using Malcolm Baldrige National Quality Award Model for Healthcare)

  • Purpose: The purpose of this study is to lay groundwork for future research on the outcomes of national quality awards for secondary-care healthcare organizations. Methods: For this study, a secondary-care hospital was selected through a convenience sampling method and all of its organizational members participated in complete enumeration survey using 109 survey questions derived from the MBNQA criteria for healthcare through structural equation modeling (SEM) Results: As a result, Leadership was shown to drive Foundation and Direction, which affect System that creates Results with 12 hypotheses supported out of 18 hypotheses established. Conclusion: The findings of this study will provide valuable implications to the top management of secondary-care hospitals for self-examining quality management and promoting sustainable competitiveness.
