대학생들의 영양표시에 대한 지식, 태도 및 행동 조사에 관한 연구 (The Study of Knowledge, Attitudes, and Behaviors of University Students Regarding Nutritional Labeling)

  • This study investigated the knowledge, attitude, and behavior of 280 University students towards nutrition labels. The purpose of the study was to examine knowledge, attitudes, and behaviors of university students regarding nutrition labeling, and whether body mass index (BMI) with nutrition labeling was associated with knowledge, attitudes, and behaviors. Descriptive statistics analyzed knowledge, attitudes, and behaviors of university students regarding food labeling. The ANOVA and ${\chi}^2$ analysis was evaluated and assessed for its relationship with BMI. Pearson's correlation coefficient analysis examined relationships between knowledge, attitudes, and behaviors. More than 90 percent of answers relating to 11 nutritional knowledge questions were correct. Only 30% of participants answered correctly regarding questions about plan source oil and cholesterol content. Attitudes and behaviors of nutrition labels were significantly higher among participants who were obese (p<0.001). Knowledge score was positively correlated with general label usage behavior (r=.169, p<0.01), and item buying behavior (r=0.142, p<0.05). Attitude also was positively correlated with behavior (p<0.01). Nutrition labeling education efforts are needed to provide university students with a nutritional education program and information on how to read nutritional labels and apply this information to their lives. University students need to understand their need for numerous nutrients instead of merely focusing on the fat and calories of foods.

충남 일부지역 고등학생의 성별과 비만도에 따른 영양표시 이용실태 (Use of Nutrition Labeling according to Gender and the Obesity Degree of High School Students in Chungnam)

  • The purpose of this study was to compare nutrition labeling use according to the gender and obesity degree of adolescents to help choose the healthy foods and improve dietary habits. This study surveyed the perception and use of nutrition labeling among 392 male and female high school students in Chungnam. It was found that 34.7% of the subjects read the nutrition labels, mostly for health reason. Calorie content was read the most among all components of nutrition labels regardless of gender or body mass index (BMI) status, especially among female students. Perception of nutrition labeling was 3.3 out of 5 points for all students, and there was no significant difference in scores between male and female students. However, there was a significant difference between the overweight group (3.4 points), normal group (3.3 points), and underweight group (3.1 points) (P<0.05). The frequency of reading nutrition labels by food group was highest for ramen, and lowest for fruits. Female students had significantly higher scores on the use of nutrition labeling for 8 food groups out of 12 groups compared to male students (P<0.05). In addition, the overweight and above group had significantly higher scores on the use of nutrition labeling for snack food and fruits compared to other groups (P<0.05). The proportion of students who received nutrition labeling education was 29.8%, and about half of students answered that such education and advertisement were necessary. These results suggest that nutritional education is needed to promote the use of nutrition labeling in adolescents.

경기지역 주부들의 영양표시 확인 여부에 따른 식태도, 식습관, 영양지식 및 영양정보의 실생활 반영정도 비교 (The Effect of the Use of Nutrition Labeling on Dietary Attitudes, Dietary Habits, Nutrition Knowledge and Application of Nutrition Information to Daily Life among Housewives in Gyeonggi-provincial Area)

  • This study surveyed 266 housewives residing in a Gyeonggi-provincial area for their dietary attitudes, dietary habits, nutrition knowledge, and application of nutrition information to daily life according to whether they use nutrition labeling. The survey on the dietary attitudes of the subjects showed that the points of "think that nutrition affects health", "quite interested in nutrition and health information", "like developing and trying new diverse recipes", and "persistently try new foods" were higher among those who check out nutrition labeling (Check group, n=112) than those who do not check out nutrition labeling (No check group, n=154). Reason for snacking, the Check group reported higher in the reasons of "for taking nutrients" but lower in the reasons of "do not eat enough meal" and "impulsively" than the No check group (p<0.01). Asked about why they check the nutrition labeling, the Check group answered "to compare products with each other" and "to purchase healthy food" whereas the No check group said "to decide whether the food is safe or not" and "to reduce body weight" (p<0.01). The Check group showed more recognition on the significance of the nutrition labeling and application to their actual daily lives than the No check group. Therefore, our results suggest that proper use of nutrition labeling is expected to improve dietary attitudes and dietary habits as well as enhance the application of nutrition information to actual daily life and promote health not only for the housewives but also for their family members as well.

Establishing new principles for nutrient reference values (NRVs) for food labeling purposes

  • Many countries such as The Republic of Korea have established their own nutritional standards, collectively termed Nutrient Reference Values (NRVs), and they vary due to the science which was reviewed, the purposes for which they are developed, and issues related to nutrition and food policy in the country. The current effort by the Codex Alimentarius Committee on Nutrition and Foods for Special Dietary Uses (CNFSDU) to update the NRVs that were established following the Helsinki Consultation in 1988 represents an opportunity to develop a set of reference values reflecting current scientific information to be used or adapted by many countries. This paper will focus on possible approaches to selecting or developing reference values which would serve the intended purpose for nutrition labeling to the greatest extent possible. Within the United States, the Food and Drug Administration (U.S. FDA) is currently reviewing regulations on nutrition labeling to better address current health issues, and is expected to enter into a process in the next few months to begin to explore how best to update nutrient Daily Values (DVs), most of which are still based on the Recommended Dietary Allowances (RDAs) of the Food and Nutrition Board, U.S. National Academy of Sciences, last reviewed and revised in 1968. In this presentation, I review the current purposes in the U.S. for nutrition labeling as identified in the 1938 Food, Drug, and Cosmetic Act as amended, the scientific basis for current nutrition labeling regulations in the United States, and the recommendations made by the recent Committee on Use of Dietary Reference Intakes in Nutrition Labeling of the Institute of Medicine (2003) regarding how to use the DRIs in developing new DVs to be used on the label in the United States and Canada. Based on these reviews, I then provide examples of the issues that arise in comparing one approach to another. Much of the discussion focuses on the appropriate role of nutrient labeling within the Nutrition Facts panel, one of the three major public nutrition education tools in the United States (along with MyPyramid and Dietary Guidelines for Americans).

성인 대상 영양표시 교육프로그램 개발 및 효과평가 (Development and Evaluation of Nutritional Education Program on Nutrition Labeling for Adults)

  • The aim of this study was to develop and evaluate a nutrition education program that was designed to increase the knowledge, attitudes, and skills of Korean adults regarding nutrition labeling. The education program was 45 minutes of short-term training, which was conducted in the form of lectures and exercises. The contents of the program were as follows: in the introduction stage, talking about status and reasons for checking nutrition labels; in the development stage, explanation of nutrition labeling and their content, reading, and identifying sample nutrition labels, as well as comparing nutrition labels and selecting better foods; in the closing stage, summary of nutrition labeling and a pledge to check nutrition labels when purchasing processed food. A total of 53 adults (88.5% female) aged 30 years and over participated in this study. The nutrition labeling awareness of the subjects was increased significantly from 55.8 to 96.2% after the education. After the education, the correct recognition rate of a nutrition label was increased significantly from 26.9 to 78.8% for the amount of food, from 25.0 to 73.1% for the calorie content, from 36.5 to 69.2% for the nutrient contents, and from 30.8 to 82.7% for the percent daily value. The self-efficacy of checking nutrition labels was also increased significantly compared to that before the education. The overall satisfaction score of the nutrition education program was 4.2 out of 5. The outcome showed that the nutrition education program of nutrition labeling improved the participants' awareness and self-efficacy towards checking nutrition labels.

GMO 표시제 강화로 인한 물가 상승시 소비자의 지불 의향 (Consumers' Willingness to Pay for Price Increases by the Expansion of GMO Labeling)

  • This study analyzed consumers' willingness to pay for price increases to avoid the purchase of GM foods by the expansion of GMO labeling. The subjects were asked about their knowledge of GM, concerns of potential hazards, and sources of obtained GM information. The logit model was employed and marginal effects were calculated to interpret the results. The results showed that consumers who perceived the safety of GM technology were less likely to pay for price increases, while consumers who had concerns about GM foods were more likely to pay. In addition, the study demonstrated that consumers residing in urban areas and with low levels of education and income were also less likely to pay for price increases.

인천 일부지역 여중생의 학교급식 알레르기 유발식품 표시에 대한 인식 (Perceptions of Food Allergen Labeling in School Meal Service among Middle School Girls in Incheon)

  • The purpose of this study was to suggest strategies for effective food allergen labeling in order to prevent food allergies in school meal service. Food allergy experience, eating behavior, and perceptions of food allergen labeling in school meal service were surveyed and compared according to the food allergy experiences of middle school girls in Incheon. Seventy-eight students (17% of total subjects) experienced food allergies. For eating behaviors, students with food allergy experience had significantly higher scores for using nutritional knowledge in their life than inexperienced subjects. For the perception of food allergen labeling in school meal service, girls who had experienced food allergies more often checked labeling of school meals for allergenic foods than those who had no experience of food allergies (P<0.001). The most desirable method for displaying allergenic foods was an indication of the allergenic food name among students who had experienced food allergies and allergenic food number of the current method for students who had not experienced food allergies (P<0.001). Students who had not experienced food allergies showed significantly lower interest in food allergen labeling than subjects who had experienced food allergies (P<0.001). For the importance score of information items in nutrition labeling, allergenic food score was significantly higher in students who had experienced food allergies (3.9 vs. 3.4 points, P<0.001). These results indicate that students who have experienced food allergies are more interested in food allergen labeling of school meals and that they are more aware. Efforts to improve labeling method such as directly labeling allergenic food name and a more visible indication are required for efficient utilization of food allergen labeling in school meal service.

Industry and Consumers Awareness for Effective Management of Functional Animal-based Foods in South Korea

  • In recent years, manufacturers of animal-based foods with health claims have encountered difficulties in the labeling of their products because of a lack of regulation on defining the functionality of animal-based foods. Therefore, this study was conducted to establish the basic requirements for the development of a definition for functional animal-based foods by investigating consumer and industry awareness. Survey data were collected from 114 industry representatives and 1,100 consumers. The questions of the survey included items on production status and future production plans, functionality labeling, promotion plans, establishment of definition, the role of the government, consumer perception, and selection of products. The results show that both industry representatives and consumers believe that legislation and the provision of scientific evidence should be improved for the development of a functional animal-based foods market. The results obtained from this study will contribute to consumer trust by supplying correct information and can be utilized in the industry as basic data for the development of functional animal-based food products.

대구지역 주부들의 농산물과 가공식품 소비에 관한 인식 (A Study on the Consumer Perception of Housewives Living in Taegu Area for Farm Products and Processed Foods)

  • A sruvey was conducted to investigate the consumer perception of farm products and processed foods, and to figure out the future direction of food supply system to satisfy the consumer need. From the citizens in Taegu area, 532 housewives were selected as sample subjects by stratified random sam-pling procedure. The main criteria of consumers for purchasing farm products was quality and the main reason for purchasing imported products was cheap price(48.9%). Most of consumers(87%) thought that food safety of farm products was not belong to safe level. Consumers(79.7%) perceived that the labeling system for the place of origin and for the quality are necessary, but they did not have confidence in the current label. Nearly all the subjects(93.6%) were concerned about the hazardness of residual chemicals of imported products, desired the rigorous inspection system for imported products. Consumers in Taegu area had confidence in processed foods in the following order; farmerbrand-product(0.9%), government-authorized farm product(30.0%) and agricultural cooperative association product(26.4%). However, only 73.6% of the consumers had the experience to purchase farmers' processed foods. As a conclusion, it appeared that nutrition education for consumers on food-decision making is strongly required for the substantial segment of population who are still ignorant of safety of imported product and food distribution system.

경북지역 초등학교 학부모의 알레르기 유발식품 표시제도에 대한 인지도 및 자녀의 식품알레르기 실태 (Perception of Elementary School Parents in Gyeongbuk Area on Allergenic Food Labeling System and Children's Food Allergy Status)

  • The allergenic food labeling system for 12 foods has been operated in Korean school food service since 2012. This study was conducted to evaluate the food allergy status of Korean elementary school children's and their parents' perceptions of allergenic food labeling system. The parents of school aged(6-9yr olds) children in Gyeongbuk area were recruited to assist in this survey. Surveys were conducted by 404 parents. The prevalence of food allergy was 18.1%(73 students) and about one-half of the food allergic children had a family history of allergies, in particular, maternal family history. The major symptoms were related to skin and the major allergenic foods were mackerel, eggs, milk, wheat, crab and tomatoes. The parents eliminated the allergenic food from diet of 43.8% of the children with food allergy. Participants had an average knowledge score of 68% correct. The average knowledge score was higher for parents with food allergic children than for parents with intact children(p<.05). Over 61% of the respondents were not satisfied with allergenic food labeling system operated in school food service. The requirements for the allergenic food labeling system were the front-of-package labeling, conspicuous description and insert of warning sign. The parents estimated that the most important effect of the allergenic food labeling system was the improvement of psychological and physical health in children with food allergy. Because the only prevention method for food allergy is the restriction of allergenic food, the institutional device to expand the food labeling to unpackaged food as well as packaged food and to make people trust the food labeling should be prepared.
