Objectives: The purpose of the study was to develop a series of education materials as a card news format to provide nutrition information for pregnant and lactating women. Methods: The materials were developed in seven steps. As a first step, the needs of pregnant and lactating women were assessed by reviewing scientific papers and existing education materials, and by interviewing a focus group. The second step was to construct main categories and the topics of information. In step 3, a draft of the contents in each topic was developed based on the scientific evidence. In step 4, a draft of card news was created by editors and designers by editing the text and embedding images in the card news. In step 5, the text, images and sequences were reviewed to improve readability by the members of the project team and nutrition experts. In step 6, parts of the text or images or the sequences of the card news were revised based on the reviews. In step 7, the card news were finalized and released online to the public. Results: A series of 26 card news for pregnant and lactating women were developed. The series covered five categories such as nutrition management, healthy food choices, food safety, favorites to avoid, nutrition management in special conditions for pregnant and lactating women. The satisfaction of 7 topics of the card news was evaluated by 140 pregnant women, and more than 70% of the women were satisfied with the materials. Conclusions: The card news format materials developed in this study are innovative nutrition education tools, and can be downloaded on the homepage of the Ministry of Food and Drug Safety. Those materials can be easily shared in social media by nutrition educators or by pregnant and lactating women to use.
The purposes of this study were to investigate changes in serum lipid levels with age and gender, and to determine which factors affect the serum lipid profiles. The anthropometric parameters(height, weight, waist girth, hip girth) and biochemical status(cholesterol, triglyceride, HDL-chol.) were measured for clinically normal adults(male 89, female 91) in Yeongdong area. The results are as follows: 1. The obesity index was significantly higher in female($115.2{\pm}15.2%$) than in male($109.9{\pm}13.4%$), but waist/hip girth ratio(WHR) was significantly higher in male ($0.89{\pm}0.05$) than in female($0.81{\pm}0.06$). 2. Male subjects had higher triglyceride and atherogenic index and lower HDL-cholesterol and relative cholesterol than those of female subjects. 3. Prevalences of hypercholesteolemia, hypertriglyceridemia and hypoHDL-cholesterolemia were 9.0%, 9.0%, 14.6% respectively in male and 9.9%, 2.2%, 4.4% in female. 4. WHR positively correlated with serum cholesterol, TG, LDL/HDL and A.I., and negatively correlated with HDL-chol. and relative chol. Correlation analyses indicated that WHR seemed to be more closely associated with serum lipid levels(rather than obesity index). 5. Age showed positive correlations with waist girth, WHR, cholesterol, LDL-cholesterol, LDL/HDL and A.I., but negative correlations with height, body weight and relative cholesterol. 6. There was significant differences in TG concentration between drinker($169.3{\pm}130.0mg/dl$) and non-drinker($111.4{\pm}64.5mg/dl$), and smoker($165{\pm}103.6mg/dl$) and non-smoker ($110.8{\pm}39.0mg/dl$). That is to say that as risk factors for hyperlipidemia are obesity index, serum lipid concentration, life style(such as alcohol drinking and smoking) and age. Specially major risk factors are drinking, smoking and regulated exercise in male and age is an important risk factor in female.
This study compared and analyzed existing studies and released papers to identify the "definition and scope of urban agriculture" which correspond to the circumstances of Korea based on the fact that urban agriculture was selected as one of the measures to pursue green growth by the Presidential Committee on Green Growth (PCGG) and the discussions and deliberations among PCGG, government, academia, civic organizations, and experts. It also aims to present the ways of policy to facilitate the development of urban agriculture based on the mentioned identification. This research proposes the definition of urban agriculture as 'all agricultural activities that incorporates multi-functional public benefits of agriculture performed within the administrative district of a city. However, the scope of urban agriculture should exclude the agricultural sites, the methods, and the activities that are against the multi-functional public benefits of agriculture, which will be determined depending on the spaces, methods, and purposes of planting food crops. In order to facilitate the development of urban agriculture, the government should implement the policy measures as following: (1) to analyze spaces for farming, and provide the spaces to the citizens; (2) to prepare legislation and institution that will allow citizens to use the farming spaces continuously; (3) to develop Korean-style urban agriculture model that fully reflects the features of Korean cities; (4) to develop a system where the urban citizens can easily learn and experience the urban agriculture; and, (5) to provide incentives that will attract active participation of urban citizens such as carbon mileage. (6) to analyze effect of urban agriculture to save energy and food self-sufficiency.
Eating quality is a reflection of consumer satisfaction, while beef quality grade describes carcass characteristics of chiller assessment which are largely influenced by production systems including breeding and feeding schemes. On the other hand, it should be emphasized that high palatability of beef is a function of production and processing components including breed, nutrition, animal handling, post-slaughter intervention and cookery. Numerous efforts have been made by Korean beef industry and research institutes to deliver high quality beef with which domestic beef consumers are satisfied. However, majority of studies have tended to focus on improvement of intramuscular fat content with little attention on its effect on consumer-based eating quality. Furthermore, there is very limited accessible information(if any) on relative importance of eating characteristics (eg, tenderness, juiciness and flavor intensity) to consumer satisfactory rate and palatability grade. On this regard, our recent results indicated, for example, that when m. longissimus was prepared by a thin-slice style BBQ, relative weightings of tenderness, juiciness and flavor intensity for consumer satisfactory rate were 0.4, 0.35 and 0.25, respectively. When eating quality was graded into 4 groups by a sum of tenderness, juiciness and flavor intensity after multiplying these coefficients, consumers responded that the palatability score for high quality beef should be higher than 79 points. Based on our recent experiments, the current report is intended to highlight relative importance of eating quality characteristics on consumer satisfactory rate, and threshold of eating quality grade. In addition, post-slaughter intervention techniques such as electrical stimulation and tenderstretch are given as examples of critical control points of palatability assurance program of Hanwoo beef.
The purpose of this study is to find differences in dietary patterns through menu analysis by economic status. The data was obtained from the 1998 and 2001 National Health and Nutrition Survey of Korea. The main variables were economic status, sex, and area by urbanization. The economic status was classified into low, middle, high, and top classes using a poverty line based on the 1998 and 2001 minimum standard cost of living. The areas were divided into metropolis, small city, and rural areas. The dishes of 3 meals were classified into 29 categories by cooking method. The most frequent pattern was "rice + soup + kimchi". The frequency of this Korean basic dietary pattern was the lowest in the top income class and metropolis areas, while the highest in the low income class and rural areas. The frequency of Korean recommended dietary pattern, that is, "rice + soup or stew + kimchi + side dish" was the highest in the top income class. The metropolis group preferred side dishes using meat and a cooking method that saved time, but the rural group preferred side dishes using vegetables and cooking methods that take a longer time. In comparison of dietary pattern between male and female by economic status, the higher economic status, the male's dietary patterns showed more side dishes than those of female. But the main side dish was kimchi in male low class. Consequently, the major dietary pattern in Korea is rice-style, though the western pattern is increasing in the top income class, especially in metropolis areas. Therefore, to make a better dietary pattern, we should develop and spread low-priced recipes of various side dishes and teach financial skills such as ability to make a food budget for lower income classes. Also, we should emphasize the importance of the balance between meat and vegetables and traditional diet and western diet for the top income class, especially in the metropolis areas.
Underreporting of dietary intake is common and might distort analysis and interpretation of dietary surveys. This study was designed to investigate the degree of underreporting and characterastics of under-reporting group in Korean college female students. Dietary survey of 1-day 24-hour recall method was conducted on 379 college students in Seoul and Chonan areas. Physical activity and life style were aquired from questionnnaires. Underreporting was defined as energy intake(EI) lower than 0.9BMR(based metabolic rate), since EI<0.98BMR is statistically judged as bias in 1-day 24 hour recall. BMR was calculated from Schofield's equation. Proportion of underreporting was 18.7% and it's not so different from one of American or European women. Intake of nutrients except vitamin A by underreporting group was lower than other groups(p<0.001). Proportions of subjects with nutrient intake level less than 75% of Korean RDA were more than 80% in protein, Ca, Fe, vitamin A, riboflavin, niacin, zinc as well as energy. Dietary quality of underreporting group was also worse than other groups. Proportion of subjects less than 3 food groups among 5 food group was higher in underreporting group. The number of foods eaten by underreporting group were also less than those of other groups. BMI and body weight were the largest in underreporting group(p<0.05) and the trial of weight reduction was shown higher trend(p<0.01). Different in PAC and other characteristics between underreporting group and other group were not significant. Not only dietary quantity but also dietary quality were worse in the underreporting group. Furthermore underreporting in college female students seemed to be affected by body weight and concern for weight reduction.
The prevalence of obesity in children has steadily risen during recent years in developed countries. Child obesity has become a major concern to health providers since it has grown to epidemic proportions over the past few decades. This study was conducted to investigate the biochemical status, dietary habits and life styles according to the obesity degree among obese children residing in the Gyungbuk area. The subjects were 148 elementary school students (boy 103, girl 45) and classified as mildly obese (n = 56), moderately obese (n = 61) and severely obese (n = 31) by the obesity index. The average body weight and height increased significantly according to the obesity degree (p < 0.05, p < 0.001). Serum cholesterol concentration came under the normal level in all groups. Serum AST activity increased according to the obesity degree but it was not significant. Serum ALT activity increased according to the obesity degree (p < 0.05). Dietary habit score was lower significantly according to the obesity degree (p < 0.01). Life style of the subjects was significantly different for the level of 'healthy state (p < 0.05)', 'body perception (p < 0.01)', 'watching TV and video (p < 0.05)', 'normal sleeping hour (p < 0.05)' and 'degree of stress (p < 0.05)' according to the obesity degree. A positive relationship between obesity index and blood pressure, ALT has been shown in the subjects. Obesity index and dietary habit scores were negatively associated. Therefore, these results suggest that a practical nutrition-exercise education program for the prevention of child obesity should be provided to elementary school children. This study was administrated to find the effects of dietary habits and nutrient intakes on the development of cardiovascular disease in the elderly aged over 60. The 40 healthy elderlies(18 males, 22 females) and 40 hospitalized elderlies with the cardiovascular disease(23 males, 17 females) were subjected for the study. Body weight, height, BMI and blood pressure were measured. Also, health behaviors such as exercise, smoking, drinking and dietary habits, frequency of intake lipid food in the past, nutrient intake at the present were assessed by interviews and questionnaire. The results of this study are as follows. 1. Body weight and the BMI were higher in hospitalized male elderlies significantly than those of healthy male elderlies(p<0.05). But the blood pressure wasn't different between two groups. 2. The ratio of male subjects who do regular exercise was significantly higher in healthy group(p<0.01). And significant difference in the extent of stress was found between two female groups(p<0.05). 3. The amount of meal and salty taste showed significant difference between two female groups(p<0.01) but the other dietary habits such as meat preference were not different between healthy and hospitalized elderlies. 4. Compared with healthy male elderlies, hospitalized male elderlies showed significantly higher frequency of intake of fish in the past(p<0.05) and frequency of intake of lipid food such as pork and chicken was also higher in the hospitalized male elderlies, but no significant difference in nutrient intake at the present was found between healthy and hospitalized elderlies. 5. Nutrient intake of elderlies showed in the average daily intake of energy, Ca, vitamin $B_2$were lower than Korean recommended dietary allowances(CRDA). For female subjects, the cholesterol intake was positively correlated with body weight, meats and eggs intake showed positive correlation with body weight and the BMI(p<0.01).
This Study investigated kindergarten parents' attitude, satisfaction and demand in the school meal service programs (SMSP). The subjects were 2450 parents that their child attended at kindergarten's SMSP from 16 provinces. To com-pared children's eating habits according to their parent age group and residence area, the percentage of regularly breakfast eating were lower in 'below 30 years old' group and large city residence than 'above 30 years old' group and middle and small city residence. And taking breakfast item was partially different pattern according parent age, 'below 30 years old' group and large city child ate more bread and milk as breakfast than Korean style breakfast with steamed rice and soup and side dish. In the prefer types of school meal service, most prefer types of meal service was fully meal service at kindergarten, $79.1\%$ subjects wanted this type. But 'below 30 years old' group's parent answered 'lunch box brings from home' ratio was higher than 'above 30 years old' group. Most parents accepted the present meal cost and $63.8\%$ of subjects was willing to pay more money to improve the quality of SMSP Twenty-six precent parents was responded that no improvement children's eating habit through SMSP. And they answered the key point of SMSP management was 'cooking sanitation'($65.1\%$) and 'nutrition' ($50.0\%$) and they answered the urgent improvement point at SMSP was 'Improvement taste and quality of meal' ($62.6\%$). Kindergarten parents' attitude about catering service as SMSP as not to prefer, but $10.4\%$ of subjects answered that catering service is ideal meal service type in kindergarten and they expected the advantage of catering service was 'convenience of foodservice'($40.7\%$) and 'support foodservice facilities and labor'($32.4\%$) and they also pointed out disadvantage was 'lower in meal freshness'($53.9\%$) and 'sanitation Problem'($51.9\%$).
The purpose of this study is to examine the effect of breakfast eating on learning attitude, academic efficacy and self-rated mental health. Survey was carried out with 460 subjects of the 5th grade elementary school student in Daejon area. The study subjects were divided into 3 groups with frequency of eating breakfast defined as an intake of 7 d/wk, 3-6 d/wk and 0-2 d/wk. The results are summarized as follows. The frequency of eating breakfast was 7 d/wk in 52.4%, 3-6 d/wk in 35.4% and 0-2 d/wk in 12.2% of the subjects. The most common pattern of breakfast was the traditional Korean style. The students who have breakfast every day(7 d/wk group) show better learning attitude and academic efficacy(p<.001) and positive on self-rated mental health while 3-6 d/wk and 0-2 d/wk groups were negative(p<.001). In conclusion, regular breakfast eating group shows better learning attitude, academic efficacy and self-rated mental health so that they have positive health status and academic achievement.
